I hope this is an isolated and atypical event, because damn...those oysters from Washington and British Columbia are superb. One of the strains is also called Cholera, so that should give you a sense of how bad it can be! But I'll still eat oysters. Dessert? Sticky Toffee Pudding of course. It's one of my favorites, and it's pretty easy to make, so don't think it is some special and difficult thing. The version I make isn't particularly sweet, which I think is the allure for many people. J.J. Sefton and I will sometimes chat about food before we record our podcasts. He recently mentioned a delicious-sounding chicken dish by a British chef who is completely unknown to me! Rick Stein? Who? But his stuff looks solid, especially this! Rick's crab and sweetcorn soup sounds like a festive meal for those of you who like seafood during Christmas. It reminds me a bit of a Thai seafood soup I used to obsess over when I was a callow youth. What the hell happened to all the vegetables? Prime rib into the refrigerator tonight for a two day thaw. Salted on Christmas Eve and seared then smoked on Christmas. Local beef that should be delicious.

I just finished the last of my eggnog from last weekends Christmas party; will have to make more on Christmas Eve.
Also made some snacking food for the leadup into Christmas. Chickpeas, a small potato, and a little red onion, with enough olive oil to make it fluffy. Basically a hummus with potato added because potato makes everything better. And breakfast this morning was a surprisingly good rice pudding, with only honey for the sweetening. Last night I didnt think it had turned out, but this morning it was the best rice pudding Ive had. It was basically a dump recipe for rice pudding: beat the eggs in a casserole, then whisk in the milk, honey, and (cooked) rice. Bake, cool, and refrigerate overnight. I was at the library picking up a reserved book yesterday, and the Christmas display had "The Harry Potter Official Christmas Cookbook." The whole Harry Potter franchise is pretty far in my past now that my kids are in their 30s.
It's a lovely book, though, with beautiful pictures and festive recipes. Including one for Yorkshire Pudding! If you or your family is into HP, I'd recommend it. You have a sucky hobby for 5 months 26 days but you're here so it's good. Back to food, we have 5 more Costco hot dogs I have to cook. I'm thinking of creating an affront to humanity and taking 2 pieces of bread, putting a couple of slices of cheese on one piece of bread, slicing the hot dogs and placing them on the cheese, cover with mustard, ketchup and relish. Christmas is always the Christmas story dinner of Peking duck - I cut my own cucumber and scallion and make a fruit tray to go with, and we decide what other Chinese we want, if any. We'll have hot cocoa cookies and chocolate chip cookies for dessert (aka what I baked today for my brother's visit tomorrow and for Christmas Eve/Christmas - they'll be gone by then, even with 10 dozen done - 5 of each)... Two years ago my daughter and son in law gifted me a Blackstone flat top. I have been going to town on it on a regular basis. It’s amazing what you can cook on it. Also, it helps to follow a few of the flat top u-tube channels and see how versatile it is.

That crab soup does sound good. But good crab has exploded in price. I cook my mom king crab legs for her birthday (January 1) every year. Not long ago, it was easy to find at good seafood stores, and maybe $25 a pound. Not any more. I was lucky to find some yesterday for … $65 a pound. I bought 4 nice legs. Over $250.

Xmas eve dinner is always lasagna. My mom makes it from scratch. A simple recipe (no meat) but not easy to get right. Hard to manage the moisture so it’s not too dry or too soggy. She serves it with a fat pile of sausage and meatballs. It’s the same dinner she makes for my birthday. Coincidence?

Had a win with chocolate fudge this afternoon, the Hershey's stovetop kind that is tricky. I've found when I make only half the recipe, it turns out creamy and silky, and still makes enough for a party. It's so interesting that many people have lasagna at Christmas time. We haven't before but this year son and DiL are making that for Christmas day. I did short ribs in the Instant Pot and they turned out fine. Unfortunately, beef fat is causing some acid reflux issues, so I'm going to avoid it for a bit. I make tomato sauce and a homemade (fake) bechamel sauce, so with the ground beef and noodles, it's a sauce on sauce affair. The allure of Yorkshire pudding is then gravy one can construct from the roast beef drippings generated, 90% 0f the flavor is there. I've enjoyed some epic gravies ladled over the mashed on many occasions, even green beans are edible smothered in the stuff. Baked ziti (actually rigatoni and penne) for din-din tonight. Had Tomatoes we canned a couple of years ago and had to use up. Pasta and sauce for the bottom layer, mozzarella and cottage cheese next, the sauce only for the top layer. Monterey Jack and Parmesan for the topping.
For an easy throw together recipe try Chef John's Lazy Hazy Chili. Everythings canned except the frozen hamburger, so you can pull it off the shelf when you don't feel like prepping and still have a tasty hearty meal. I havent tried Sabrett yet, but Hebrew National is my other goto when I need hot dogs. Mostly for trying out vintage recipes from the sixties and seventies. It seems a little silly paying extra for hot dogs for those kinds of dishes, but (a) if Im going to eat it, I want quality ingredients, and (b) hot dog quality, or at least flavor, seems to have dropped a lot over the years since then. Oh my - this was spicy, tasty, fresh, vibrant, and everything that Indian food (which I can't eat anymore b/c of the dairy) used to be. The spouse knows we now have to switch here from his desired Indian with Nepalese place - funny enough, he didn't like the Indian as much b/c it wasn't saucy enough... The barrel and upper receiver just fits across the diagonal of the lower half of the case, and lower, with handgrip and stock, fits nicely into a recess cut into the liner of the upper half of the case, with two strips of plastic from the cut-out lower case liner to act as retaining strips. I have been making a standing rib roast for Christmas Eve dinner for quite a while. And because the fat that renders below the roast is miraculously there, I also make Yorkshire pudding. It was a revelation to my husband, who reaches a crescendo of anticipation by December 23. In honor of my Cuban relatives as well as what we had when I was growing up, I also make yellow rice and black beans. I used to make the full-on Cuban roast pork for Xmas Eve (my Cuban grandpa used to get the pork roasts from Ybor City every year and bring them to my mom (NOT Cuban!) to cook, and every year he brought a bigger one until the last year before he died he brought one so big my mom finally objected (she cooked it anyway)) but then I went to a German dish of cod on sauerkraut (delicious!!) and then tried the beef. We have done the rib roast now for 14 years.

Forget that stupid 2-1 ratio for cooking rice. Use a hell of a lot of water, as if you're cooking pasta. Strain it when the rice is cooked and all the sticky starch goes away. You've got fluffy rice ready for some gravy.

re, the Sticky Toffee pudding.
In Australia, we call it Sticky Date Pudding as we reckon the dates are the star of the show. The dates need to be chunky also, none of that pureed stuff thanks. A suggestion on serving the pudding. Instead of fiddling around with muffin tins for individual portions, I use pretty cups to bake mine in. Sit them on a saucer and you also have a neat place to sit your spoon for eating It's a little thing, but the cups and saucers look lovely for special or not so special occasions.
