Food Thread: Stop Ribbing Me!

Oh wow...I love beef ribs. But they are difficult to get around here, and even when they show up they are trimmed to within fractions of an inch of the bones, so they aren't much of a meal. Of course I am talking about the beef ribs, not the short ribs from the plate; but those are good too!

What I really want is a slab of beef ribs like the slab of pork ribs we all know and love. Sort of like in the photo, only with more meat. A lot more meat, so it's not just gnawing on the connective tissue (which is good).

I could settle for the short rib version of it, which is what a lot of BBQ joints use for their "Dino-Ribs" or whatever they call them.

But I'm a traditionalist! I want a rack of true ribs, and I will keep looking until I get them!

This is the dirty little secret of the deeply dishonest organic food industry. Plants have naturally occurring pesticides and antimicrobials that in some cases are quite dangerous for people. So man bred them so that those chemicals were eliminated or minimized, so we could eat plants without getting sick. But we also had to deal with the bugs, so we used man-made pesticides.

It works. Very, very well. Modern agriculture produces an amazing abundance of food at low cost and high safety.

But when people fixate on organic rather than safe and tasty, we get things like this: German survey finds low awareness of natural toxin risks.

Hey folks...there ain't no free lunch. The bugs are there, and we either kill them, or let the plants kill them with their own pesticides, that you then eat!

Poached eggs...are you for them or against them?

I like them, but mostly as a vehicle for fun stuff, especially Hollandaise sauces and Eggs Benedict. Yeah...at breakfast joints I am easy. Biscuits and gravy, Chicken-Fried Steak, or Eggs Benedict, and I'm a happy camper.

Anyway, Misanthropic Humanitarian was, as usual, trolling me with a link to Epicurious, which I do not link anymore because of their asshole Woke bullsh*t. But they did have an easy recipe for poached eggs that I have done before.

It's simple...crack your eggs into a 1:1 solution of white vinegar and water (deep enough to cover the eggs), let sit for 10 minutes or so until the whites tighten up a bit and become more opaque. Then cook them in barely bubbling water for a few minutes...and you are done!

The vinegar denatures the surface proteins and that tightens the eggs, so you don't have tendrils of white all over the place.

It works. Of course there are other ways of doing it too, but this is definitely a keeper, because you can cook several eggs at a time.

We were visiting friends a few weeks ago and they made Chicken Scarpariello for dinner one night. It's a great dish, and pretty easy too. I'm not sure which recipe Mike used (I should have asked, but I was busy drinking his bourbon), and since he is a great cook he may have tuned up the one he did use. But Anne Burrell is a solid chef, so hers is a good start. I would modify her recipe by using chicken thighs, but using the whole chicken isn't a deal breaker.

I ate at a Montreal seafood restaurant last weekend, and was pleasantly surprised by the quality of the food. I mean, it's Canada after all.

But one dish was great. Fried octopus! No batter, just plain old boiled octopus that they dropped into the fryer to crisp up. It was served on a bed of pureed Northern beans, some olive oil, and maybe a few pickled onions. I'm sure I am missing something, because it was delicious, and the added texture from the frying was marvelous.

That crap about only using wine you want to drink is crap, I have ranted about it before, and I will rave again. In fact, anyone who uses good wine for cooking is a knucklehead. Use the cheapest stuff you can buy.

Who are those poor deluded souls who shake their Manhattans? These are the same people who drink fine bourbon with coke, and probably shake red wine with ice too.

However, I will give dispensation to those who use maple syrup on Brussels Sprouts! I tried that and it worked nicely. I still prefer Agave, but still...

And yes, I used to demand fancy bourbon, but let's face it, $1,200 for a bottle of bourbon is just stupid, insulting, and a ghastly affront to most people's palates and wallets. I think the sweet spot is $40-$60 for excellent and interesting bottles, and bumping that to $100 gets you an incremental improvement in quality, but nothing mind-blowing. More than that and I think you are paying for hype and rarity, which may look good in your liquor cabinet, but doesn't translate to more quality in the bottle.

And now I often microwave poach an egg, again for on toast. 45 seconds in a small ramkin with a third of a cup of water for a regular large egg. Very sensitive to a second up or down from eyeballing your egg size.
So not traditional drop in poach, but works.

35 Had beef ribs on the smoker. Salt pepper and rub. They were lean and somewhat dry. Those pictures of the poached egg and the salmon made my mouth water. Tonight it’s pork loin on the smoker with homemade coleslaw and watermelon for dessert. Bye the way CBD, thanks for throwing down on the organic BS, been a pet peeve of mine for awhile.

Oh, I might try that! I can't poach an egg to save my life. I've tried making a whirlpool in the water, vinegar in the water (not a 1:1 ratio though; I'd be afraid the eggs would taste of vinegar), etc and have yet to turn out a good poached egg.

Pretty much all you need is a blender and a grill and you're good to go.

As you can see, this recipe plays in the Thai neighborhood. So, the Shrimp Paste can be a bit of a challenge to find. But, not too much of a challenge.
I imagine in a pinch you could use fish sauce or anchovy paste without causing issues with the finished product. Hell, who knows Worchester Sauce might even fly here.

I also would extend the marinating time from the recipe's 15 mins to about 1 hour.

Everyone loved it and requested that it be made again soon.

Did I mention this is stupidly super easy to make?

38 Today's dinner is braised chuck roast (3 to 4 hours in the dutch oven with rustic veg at 300) and mashed potatoes. The beef absolutely melts apart. Sunday roast for my limey wife.

And yes you can use a KitchenAid to make mashed potatoes. Just don't mix for too long.

I was kind of meh about poached eggs because I grew up with the little metal cubs and couldn't get excited about them. DiL recommended microwaving in water. It takes some trial and error but now I really like them.

CBD--I love poached eggs in Eggs Benedict but I don't order it out anymore. A lot of places have some kind of unflavored yellowish sauce that ISN'T hollandaise. I'd rather make my own.

I pretty much suspect that cigar would murder the flavor of both the bourbon and the smoked salmon.

So, to avoid waste:

Substitute King Oscar Canned Sardines or Starkest Tuna for the snazzy smoked salmon, and-

Old Crow for whatever whiskey.

You won't taste the difference anyway.

52 Oh, I love poached eggs on a good Eggs Benedict (with REAL hollandaise sauce, please). Problem is (FWP) due to my transplant, I have to eat eggs fully cooked (or get eggs that have been irradiated to kill the bad bugs), so no runny yolks for me.
I tried ONCE, and had intestinal issues for more than a week, so it's a no-go.

63 I "cheat" when poaching eggs. Got some of those silicon egg cups from amazon. Spray a little oil in the bottom, crack the eggs in, and place them in a pan with low boiling water. They work great, and you can do a batch of eggs at the same time.

I'm about to use our Ninja Foodi Smart XL Grill to make a steak.

1.5in Ribeye, it'll take about ten minutes to cook to medium-rare after about ten minutes pre-heating the gill.

Tastes just like the real thing to us, and no smoke.

83 Huli-huli chicken:

Make a marinade of 1/2 c pineapple concentrate* 1/2 c soy sauce, 1/4 c ketchup, 3 T brown sugar, a knob of fresh ginger (grated) and 3 cloves of garlic (minced). Marinate the chicken for a half hour and throw on the grill. Keep mopping it with marinade until done. I put 1"+ chunks on skewers, but larger pieces of chicken work too.

*I can't find pineapple concentrate here, so I simmer the juice to 1/4 volume and freeze what I don't use for future huli huli.

86 CRAB CAKES -- PART ONE -- INGREDIENTS
Someone last week (possibly Miley) asked for crab cake recipes ... This one from "The Best Of America's Test Kitchen 2011 Edition" is our family's favorite.

1-lb. lump crabmeat, picked over for shells
1/2 cup saltine crumbs (grind 14 crackers in a
food processor), divide into two 1/4 cup portions
3 scallions, finely minced
2 Tbsp. unsalted butter, melted, plus
1 Tbsp. unsalted butter, softened
2 Tbsp. mayonnaise (not Miracle Whip)
1 large egg yolk
1 Tbsp. Dijon mustard
2 tsp. hot sauce
1 tsp. Old Bay seasoning
Lemon wedges, for serving

87 CRAB CAKES -- PART TWO -- DIRECTIONS

1. Dry the crabmeat well with paper towels. Using a rubber spatula, gently combine the crabmeat, 1/4 cup of the cracker crumbs, the minced scallions, melted butter, mayonnaise, egg yolk, Dijon mustard, hot sauce, and Old Bay in a large bowl.

2. Divide the mixture into 4 equal portions and shape into tight, mounded cakes. Press the top of each cake in the remaining 1/4 cup cracker crumbs. Transfer the cakes, crumb side down, onto a large plate and refrigerate, covered, for at least 1 hour or up to 8 hours.

3. Adjust an oven rack to be 6 inches from the broiler element and heat the broiler. Grease an 8-by-8-inch square area in the center of a rimmed baking sheet with the softened butter. Transfer the crab cakes to the prepared baking sheet, crumb side down. Broil until the crab cakes are golden brown, 12 to 15 minutes. Serve with the lemon wedges.

McDonald's reportedly plans to get rid of self-serve soda machines and, at some locations, do away with free refills. The fast-food giant plans to remove all its beverage stations from stores by 2032. Some restaurants that offer complimentary beverage refills may stop doing that as well.

It was. The meat was surprisingly gamey, which I mean as a compliment. Tons of flavor, even in the tenderloin portion of the porterhouses I ordered, but about 5x that in the strip portion. At first, I was a bit startled by the intensity, and used the strip portion for the best steak sandwiches ever. But now I am used to it, and I need more of these steaks.

friday i made some really good shrimp fried rice. i had more tail than i could address at the time and realized i should make shrimp stock to cook the rice in next time i make shrimp fried rice. shrimp stock underway in instant pot.

also there is about 2# of thin-sliced round steak in a dry rub. it will get in marinade in the morning and smoke overnight monday to tuesday for jerky. oh yeah.
