Hundreds of novel ingredients never encountered by human physiology are now found in nearly 60 percent of the average adult's diet and nearly 70 percent of children's diets in the U.S. An emerging health hazard is the unprecedented consumption of these ultra-processed foods in the standard American diet. This may be the new 'silent' killer, as was unrecognized high blood pressure in previous decades. Physicians provide important insights in a battle where the entertainment industry, the food industry and public policy do not align with their patients' needs. 1. It's biomedical research, which is famously inaccurate and often unrepeatable. 2. Physicians have pissed away about 99% of the trust that Americans feel toward them because of their catastrophic lies about Covid and their embracing of the big-government policy on just about everything. But...I think it is just common sense that "ultra-processed food," the stuff we used to call "junk food," probably isn't good for us. There are reasons other than thrift to make our own food from basic ingredients. It usually tastes better, it's probably more healthful, and it provides a respite from the hectic lives that most of us lead. Making dinner from raw ingredients separates us to a certain extent from a consumption-driven society. We aren't bombarded with ads to buy a raw chicken, some fresh vegetables, and some blueberries for dessert. And those few minutes of cooking time required to make a nice simple meal builds some resistance to the incessant hectoring that faster and easier and more convenient is the way to do everything. What do you think? I love chile-based sauces, and there is nothing about this dish that is bad, except maybe the fact that it doesn't have meat. I might add some carnitas, or even some unsmoked bacon. Huevos Rabo de Mestiza (Poached Eggs in Tomato-Poblano Rajas Sauce) But even as a vegetarian meal it sounds good. I used to use this site a lot as I tried to understand what cuts of beef were good for various cooking methods. It's always a good idea to understand where on the animal your food comes from, even if you aren't a geek like me. Here is the one I find most interesting: Cross-Section: Loin. The University of Nebraska-Lincoln: Institute of Agriculture and Natural Resources are the folks who built this tool, and look! They also have one for pigs! I have never heard chicken stew called by this name, but that doesn't mean that a regional twist isn't going to be good. Puerto Rican Pollo Guisado (Braised Chicken Stew) looks pretty damned tasty, although there is nothing particularly special about this recipe. It's just good technique with some nice spices. Bu that's what most good cooking is! There is very little truly original cooking, but that's okay...there are so many techniques and ingredients available to us that we could cook literally for our entire lives and never repeat a dish. This made me laugh! Well, I had some asparagus and it was pretty good, so..., and Flap Meat...whatever the hell that is...just send it, Broccolini that isn't $6/bunch, garlic...lots of garlic!, well-marbled hanger steaks and elk chops to: cbd dot aoshq at gmail dot com. However, I will give dispensation to those who use maple syrup on Brussels Sprouts! I tried that and it worked nicely. I still prefer Agave, but still... And yes, I used to demand fancy bourbon, but let's face it, $1,200 for a bottle of bourbon is just stupid, insulting, and a ghastly affront to most people's palates and wallets. I think the sweet spot is $40-$60 for excellent and interesting bottles, and bumping that to $100 gets you an incremental improvement in quality, but nothing mind-blowing. Since pesto was brought up, and since a lady at this week's soup dinner literally came up to me and told me she absolutely loved my pesto pasta from...last year...I guess I should give away my spring secret.
Never make your own pesto in the spring. And if you want to accommodate all allergies, just buy Kitchen of Love Cucina and Amore Vegan and Nut Free Pesto. I made that pasta dish (that apparently is memorable a year later) with 2 lbs of generic box rotini, 1 jar of the sauce, a ladle or two of pasta water, a handful of two of nutritional yeast (not sure how much b/c it was a year), a few glugs of Aldi olive oil, and salt. It took me 20 minutes, and 10 of those was boiling the water. And it sat 30 minutes before being eaten (always keep pasta wetter than you want if it's gonna sit - thus the pasta water)... The pesto went into my well received soup Friday and is going on my salmon tonight (to get rid of it). It is that good...more pistou than pesto, but no one cares... Now bell peppers are another story entirely. I hate the green flavor of both green and reds.

I mentioned to my vegan coworker that his diet of fake meat, fake milk, fake eggs and fake cheese has more chemicals and is heavier processed than my diet of meat, cheese and eggs. Plus I have cream in my coffee.

There used to be a chain of pizza places.in Washington and Oregon called Pietro's. Started in Kelso WA back in the 60's.

Son made an Armenia pizza for his cooking class. I don't recommend it, b/c it got 3 out of 5s from the 5 folks who could eat it here (mom, I've had worse in the cafeteria, but this isn't the best either - although it all got eaten)...
But it uses parsley (but not a lot), and I didn't make my tabbouleh last Friday, so for dinner with my salmon today, I'm doing a cous cous tabbouleh to use up the parsley and practice. Why cous cous? B/c I love it with salmon, it's way cheaper (got a hella deal at the Safeway), and I wanted to see how bumping up the grain-ish part works before I bring a quinoa one to soup dinner. Family will taste test it and let me know if I should go with this next week or make another thing. I don't think we eat much junk food or even fast food, but we do give ourselves permission for a bag of Cheetos on every road trip. Also a bag of Fritos for Frito Pie once or twice a year.

Many shriek about GMOs and how horrible they are unaware that their argument was lost about 6000 years ago. I eat the same crap a lot of people do but at the same time I love to throw in some items from scratch and do something with them. I made two beef stews in my crock pot over the past month and they turned out amazing with little effort. Drop everything in the pot, set the timer for 8 hours, done. But while moonlighting I'll have a bag of chips just to have a few empty calories to push me along until the store starts offering freshly made breakfast burritos with plenty of bacon.

The Huevos Rabo recipe is interesting, but if I'm going to go to the trouble to roast poblanos, I'd rather use them for Rajas Poblanos con Crema--poblano strips with veggies, cream, and cheese, typically dished out and served on tortillas.

Growing up we used to go to a pizza joint in Glenmont, MD called "The Trolly Car." They had a window where you could watch the guys make pizzas. They'd toss the dough, roll it, put the toppings on and we'd just watch until we saw ours being made.

I've been reading Richard Condon's "Prizzi's" novels, which deal with a Sicilian mafia family.
One of the things that Condon does often is describe a Sicilian dish which someone is making and they always sound delicious. Sicilian cooking appears to be one of those Reese's Peanut Butter Cup dealios where, "Hey, you got Italian stuff in my arab cooking! and "Hey, you got Arab stuff in my Italian cooking." Soooooo, the end result of this is i've thought i might try out some Sicilian recipes for the rotation. Anyone here of Sicilian decscent with some of their Nonna's recipes they feel they can share? Lightly Curried Beef Barley soup with Leek amd Savoy Cabbage this week. Stupidly easy and everyone loved it. I like the idea of adding less used grains like barley for soup instead of the usual rice or boring ole pasta. I think I'll test drive some weirdo grains in soup like Farro. That sort of thing. What's with the mushroom hate?
Yesterday, I had 15 folks demolish a tray of roasted green beans, white mushrooms, and yellow onions with just olive oil, salt, and black pepper. Nothing left for seconds - 5 kids, 6 teens/young adults, and 4 adults. If you want mushrooms on the pizza, the trick is to use fresh mushrooms (canned mushrooms are gross), and par roast them - then, they'll be perfect cooked the rest of the way on pizza. Toppings on pizza. I like a lot of toppings but not all at once. I want to be able to enjoy the crust as well as the toppings. In no particular order:
- bell peppers, onions, mushrooms (where the veggies are thick enough to be cooked through but keep some texture - Same as above but add either pepperoni or sweet Italian sausage, sometimes both - a white pizza with spinach, onions, and mushrooms (yes, I'm weird) REQUIRED: anchovies (if sharing the pizza, I'll take anchovies on the side and put on my slices) In my younger days I enjoyed chorizo pizza but most these days is too oily and doesn't sit well. If you like making your own deep dish pizza, a cast iron skillet is the best! I oil it and then sprinkle corn meal on the inside before laying the crust in. Gives it a consistent golden brown color.

When I was making my own pesto (gotta get back in to that) I grew my own basil in pots, chopped up the leaves, bought pine nuts locally (not cheap but I can't grow my own), olive oil and some chopped garlic cloves. Occasionally I would add some kind of hard cheese, grated Romano or parmesan. Chop it all up by hand without cooking any of it, the cooking comes with the main dish, usually pasta of some kind. I never wrote anything down just added ingredients until it looked right.

I gave up trying to make a perfect round pie. The dough never stretches right. So I just mash it into a greased cookie sheet, put it on a hob on medium, dress it, and throw it in a hot oven for 20 min. Last batch was a bit undersized but worked for the housemates.

Made a batch of chili for supper. It's the Cowboy Kent Rollins recipe but I tone it down by cutting back a little on the chili powder and the adobo chilis in a sauce. I do use sweet onions and increase the amount. I cut them chunky so even with all the simmering there is a bit of crunch.

Some of my most delicious meals are composed of items from the meat department and the produce department, along with olive oil, salt, and fresh-ground pepper. And that's it.

Bridgford pepperoni is available here in slices and sticks.

Every week I swear off mentioning sourdough recipes lest I be a one track pony. And almost every week I fail. Well, it’s a passion.
Newest recipe delight, apple muffins. Take your favorite muffin recipe which should include good, fat filled buttermilk, and add a finely chopped tart apple. Should have just a bit of sugar in your recipe, with that apple. Add 1/2 cup discard for a standard muffin recipe, reduce flour and liquid accordingly. I also added chopped pecans. Make a topping of brown sugar butter, oatmeal, and nuts and sprinkle over the muffins. This made a delicious muffin. I’m dreaming of apple cranberry next. CBD you don't really need sourdough for great pizza. Just use a small amount of yeast an a long fermentation. The Jim Lahey dough is awesome. Add more oil to it if you want to make it into a thicker pan style crust.
Ciabatta on the other hand benefits greatly from sourdough starter. The dough is wet and difficult to handle however. Watch some videos on it if you've never done it before. Don't be afraid to let the dough nearly triple in size before shaping. Posted by: ... at March 10, 2024 05:39 PM (lX8VI) 240

Other option for the oranges. Slice them up, get ziplocs, put 2 slices per bag, and bring them to your Church's Lenten dinner. I brought orange slices this week for the dessert table (since I bring the allergy safe food) and those things got demolished by everyone.

Cesar salad dressing is made with anchovies. If there are no anchovies, it isn't a Cesar.
Easy to make 1 egg yolk Fresh garlic Fresh lemon Dijon mustard Dash Worcestershire One anchovy fillet Olive oil Rub your wood salad bowl with a mashed fresh clove of garlic. Put that clove in your food processor. Add everything else but the oil Process until smoothe. Put in a bowl and whisk in the oil until incorporated. If you use the food processor in this step, it turns too thick, like mayo. Add an extra squeeze of lemon and lots of fresh ground pepper. I make the "classic" Caeser salad:
mash up anchovy filets and garlic (with a little kosher salt for abrasion) in mortar/pestle. Add dijon, Worcestershire, lemon juice, grated Pecorino Romano (or Reggiano), egg yolk, & cracked black pepper. toss by hand with whole romaine stalks & croutons and garnish with fresh-shaved Romano and more pepper. family LOVES this recipe. I tried Durian fruit.
You know, the stuff that smells so bad that people throw up from the smell of it. And in places it's banned on the subway (like Singapore). Friends thought they'd prank me, and hacked one open (outside at their house), to see if I'd retch. Instead, I didn't get bothered very much and the actual fruit inside was soft and a bit lemony but very, very delicate and tasty. The look on their faces was great because I'd been turning down other "local" food they'd been trying to get me to eat. Some of them even didn't like Durian. So - it does pay to try. Sometimes texture rather than taste can be off putting; for example, Lima Beans. So it can be with beef calves liver, but with the proper preparation it can be phenomenal. My mom used to make it for just her and I as the rest of the family were revolted by it. We would dine occasionally alone, and laugh about what everybody else was missing. It's interesting reading the sourdough stuff that pops up in my FB feed. I was chewed out for suggesting a few caraway seeds to get the starter working better. It shouldn't like I neede sterile lab type environment for the stuff. Now I'm seeing pushback by women that say they don't have time for that nonsense. They just bake with it.

The best Caesar salad I ever had was in the early 80s in One Fifth restaurant in NYC. (Don't know if Bourdain was in the kitchen at that time.)
Over the years, I've done my best to copy it at home. I rub garlic in a bowl and then whisk the egg yolk until it's thickened and gradually add the olive oil until I have a handmade mayonnaise. Then I add the minced garlic, anchovy (paste), Worcestershire sauce, about 1/2 a teaspoon of ground mustard seed, and lemon juice. I use walnuts in my pesto instead of pine nuts. Way cheaper and usually in my cabinet. I don;t use cheese because I genrally make a batch, freeze in ice cube trays, decant into plastic bags and usually make enough to last through the winter. Add cheese when used. Pesto on salmon is a new discovery. I'm not crazy about red sauce so adding a cube of pesto to oil and garlic, sun dried tomatoes is perfect light sauce for pasta. And asparagus over pappardelle. I did make a big batch of soup the other night.
Since I cheat, I started with a bag of Bear Creek cheddar and broccoli soup mix. To that I added chicken, barley, and hashbrowns (the only potatoes I had in the house), and seasoned with garlic powder, salt, pepper, and couple shakes of fried jalapeno bits. I was never a big believer in the "processed foods are evil" camp. But that ship has sailed and sunk. Processed foods, are a major contributor to the increases in disease. Yes, so is a lack of physical activity. But I can tell you a lot of "a" type personalities who exercise well above the average person have come down with diseases nowhere in their family tree. Only one thing has changes and that's the foods. From the increase in allowable pesticides which never get notices in your daily oatmeal, to the actual garbage you read on the label, there is no question you will probably live longer and better if you avoid them. I've talked to a few of the most respected nutritionists in our country and they ultimately believe the same thing.

King Arthur Flour has a good recipe for Detroit style pizza dough. I make it but cut the dough into three pieces for a thinner crust (which is still pretty thick by NYC standards.)

I just made hamburger casserole, substituting ground elk for beef. Lots of steps but very much worth it. Frozen mixed veggies along with tomato sauce, diced tomatoes, diced onions, egg noodles, seasonings , Worcestershire sauce, tomato paste, topped with 1/2 cheddar 1/2 mozzarella. Really good for an online recipe.

We all die, that's just a fact. But the goal is to live as long and healthy as God allows. He instructs us to take care of our earthly bodies and I aim to do that. That said, you can eat what you want and ignore actual scientific fact, which is people are dying younger and more people are contracting cancers that are not in their genetics. That leaves environmental factors, especially related to consumption. There is no question that processed foods contain ingredients, pesticides and additives that when consumed on a normal basis greatly increase your risk of disease. If you read what independent agencies put out and even the FDA they acknowledge that and the only dispute is related to how much you consume to approach that risk. Like other professions there are certainly a lot of harlequins in nutrition. But the people O have talked to largely deal with cancer patients and deal with it every day. Most of them have more knowledge and experience than any person writing theses studies. Listening to them have kept a lot of people alive and living healthy. YMMV. I overcame my aversion to tripe (calve's stomach lining) one particular Saturday afternoon. To this day, I can't say why, but while enjoying my sausage and pepper sandwich and watching the folks digging into their tripe in tomato sauce, this previously abhorrent food stuff suddenly looked good to me, and I asked to try it. My siblings thought I lost all my sense, but mom extended a cube of the stuff out to me and it was a revelation. It tastes nothing like it smells when cooking. That was always the turn off. Think nicely rendered beef fat. I've never cooked it myself, for fear of screwing it up, but someday...

We had that weird cold spell. Two days of cold temps with some snow the first day. All gone and up to 70 today. Didn't hurt my rhubarb at all.

I avoid the majority of processed foods and it has made a tremendous difference in how I feel. Could that be because I am making my own food so I am very conscious of what I eat as a result? Maybe. I truly eat a variety of food with a lot of whole grains, veggies, fruits, chicken, fish and yes, red meat. We need fats to lubricate joints and make us feel full, we need carbs for energy and fuel, we need protein to maintain or build muscle. All the things, and a few treats in moderation.

Dinner tonight: fajita burrito bowls.
1. My version of Mexican street corn rice (a little charred corn, garlic, epozote, chopped green chilis and rice) 2. Ground chicken with fajita spices - chili powder, garlic, salt, pepper, cumin, onion powder, chopped jalapeño. 3. Sautéed peppers (all the colors, rainbow is good here) and onions lots and lots lots of this. 3. Frijoles of ya want them, black or pinto, also spiced up. Make the bowls with 1/2 cup of the rice, tons of veggies, the meat and beans if you went with them. I top with sliced avocado and fresh salsa. I made Oporto tripe once, it had the tripe, the beans, the sausage and all. It was good but I felt at the time it would have been better without the tripe.

The King Arthur flour crispy cheesy pan pizza recipe is our go-to for making a deep dish style pizza. It’s cheese-only, just add the toppings you like. We’ve done Italian sausage and an ultimate style pepperoni, where we quartered the pepperonis to fill the top of the pizza.

And a better man you are for it! Honestly, the best pepperoni pizza I have ever had was in Hattersheim Germany in 1989; the joint was owned by an Eyetye immigrant and the whole pie was almost sexual.
