282, do you know the word? my understanding is 190 proof is as high as you can go with normal distillation. That’s why Everclear in those types of products at 190. They say you can increase the alcohol percentage but the cost of doing so it completely un worth it and you have to do it I guess in a laboratory setting.

304, even American apple brandy that are branded as applejack are not done this way anymore. When you freeze cider, or “jack” it you increase a lot of the Esthers and fusel oils so it will give you a huge headache and it is unhealthy. They all use classic distillation now like they do when making French Calvados.

Lairds, make some really good American apple brandies, they also make some crap ones on the low end. You need to read the label as some are 2/3 vodka. But the Laird company has one of the most amazing histories you’re ever going to read, and it does include George Washington by the way.. even to this day, they are still family owned, and they have one of the first patents ever issued in this country.

The think is that alcohol is hygroscopic, so if you leave the 100% open it will draw water from the air and give you more liquor than you had before.
