Food Thread: Vegetables...And Please Don't Take My Man Card!

I know, I know. That's a vegetable. It should be a steak or a pork chop or a gorgeous braised lamb shank or even a perfectly seared sea scallop.

It's called "Broccolini, " or "Long-Stemmed Broccoli." And it is delicious. And stupidly expensive. Why? I have no idea. Maybe it's difficult to grow, though I doubt it. Maybe it's difficult to harvest and pack? Maybe it's fragile? Who knows...it tastes good, but at $4 or $5 for a small bunch...a small serving for one, I am not eating it with every meal!

That's just nuts.

Regardless of financial circumstances, I think most people keep at least one eye on the cost of food. It's a part of the human condition, perhaps because we are not perfectly comfortable with unending abundance, and a small, primitive part of our brains is whispering..."winter is coming." Or maybe we just like variety, and a meal of leftovers and whatever is on sale is exactly what we crave the day before we splurge on the prime NY strip or the three-pack of Spaghetti'Os.

No point...I just needed an excuse to complain about the price of broccolini!

I wrote recently about a price reset, rather than a temporary increase in prices. It's easy to be fooled, because volatile products like fuel bounce around all the time. And with food, the most obvious one is eggs, which tripled for several months, then dropped back down ALMOST all the way. But not quite, and that is the reset!

Food is the most obvious segment because many of us shop for food several times a week, and almost all of us eat, so fluctuations in food costs are literally right in front of us. And that is why the government tries so hard to decouple food costs from their ridiculous, self-serving, and objectively incorrect inflation data and calculations. But energy and labor are huge inputs in food production, so the reality is that food prices are a reasonable indicator of inflation.

A winery in Portugal recently had a rather sad accident. Two of their storage tanks failed, and 600,000 gallons of wine rushed into the streets. What is embarrassing is the freak-out about the environmental effects! They actually diverted the flow onto a field instead of into a local river, which to me makes absolutely no sense. Wine is 90% water and some highly volatile alcohol that will evaporate in short order. What was the worry? That some fish might get drunk? [R]esidents were worried about the wine contaminating a local Certima river. Why weren't they outside collecting the runoff? What has happened to society? Have we lost all perspective?

I bought a 15 pound brisket from a mail-order place I have used in the past instead of a five pound flat for the same price at a local market. The problem? It's 15 f*cking pounds! My roasting pan barely handled it for the sear, and my stove didn't have properly placed burners, so I did a bit of juggling to get it in halfway decent shape for a very, very long braise. By the way, that's four pounds of onions, two pounds of carrots, one pound of celery, and 12 cloves of garlic (I should have used more).

But it was worth it. Nice and tender, with a ton of flavorful sauce that I blended about halfway so it was sort of smooth but with some texture. I chilled everything down, removed the fat from the sauce, and slice the brisket thin before putting it back into the liquid to warm up for dinner.

And I have several pounds of leftovers, which is always a good thing.

But what to do with the fat trimmings? Make cracklins of course!

I got about 12 ounces of beautiful beef fat out of them, and ate way too many of those things. Delicious. Just stupidly yummy. And rich. My liver is still angry at me!

I made Chicken Piccata this week, and it was successful. But it should have been...it's an easy dish. Yes, the sauce broke because I am an idiot and didn't monitor the temperature, but it was still delicious.

Anyway, when I went to the store to get chicken breasts, I discovered the stupidity of food pricing. The chicken breasts were more expensive than an entire chicken...and a fancy chicken at that! Pasture raised, massaged by buxom farm maidens, and lovingly slaughtered with only the finest and sharpest German steel.

So I bought a whole chicken, and was left with legs, thighs, and wings (I made a stock with the scraps..of course!). What to do...what to do? Well, asking Bluebell is usually a good start, and she directed me to her extraordinarily complicated recipe for chicken in The Deplorable Gourmet. Yup...it took all of 30 seconds to prepare, and 45 minutes in the oven. And it was delicious. And used garlic powder, to which I am constitutionally opposed. My attitude is fresh garlic or bust. But it worked perfectly, and I will be making it again.

There is something to be said for, "Quick, Easy, And Delicious!"

The oyster imperative remains in effect, especially now that we are in the summer months. Yup, I'm not afraid of oysters in the summer! (Except that my usual source was sold out, so I am an oysterless Dildo, and you know how bad that is!) And send pork rib roasts from the front end of the pig where all the good and fatty meat lives, carrots that don't taste like stalky chalk, garlic...lots of garlic! (but no basil! My basil is not doing well this year!), well-marbled NY strip steaks and elk backstrap to: cbd dot aoshq at gmail dot com.

And don't think that the rest of you are off the hook with maple syrup and French Toast: I'm still watching you! And I am watching you perverts who shake Manhattans and keeping a list for the Burning Times.

And yes, I used to demand fancy bourbon, but let's face it, $1,200 for a bottle of bourbon is just stupid, insulting, and a ghastly affront to most people's palates and wallets. I think the sweet spot is $40-$60 for excellent and interesting bottles, and bumping that to $100 gets you an incremental improvement in quality, but nothing mind-blowing. More than that and I think you are paying for hype and rarity, which may look good in your liquor cabinet, but doesn't translate to more quality in the bottle.

25 Some time ago one of the distilleries had a fire in a rickhouse (where the Bourbon barrels are aged.) Many gallons of Bourbon spilled as a result into a local stream.

You'd have thought it was radioactive waste by the hand-wringing, bitching and moaning about the "risk to the environment."

The distillery had to clean it up, pay a hefty fine and placate the locals.

I'm sure there's "some" risk to the environment with not-quite-aged Bourbon, but it was made out to be as bad as Palestine, OH.

31 We just returned from Alaska where we went halibut fishing one day. I had 40 pounds of files shipped home - it came to about 10.00 a pound. I made the fist filets yesterday. Pan fried in butter and olive oil with a light tack seasoning on one filet and salt and pepper on the other two I made homemade coleslaw and fried corn taco shells to make fish tacos. Added a slice of avocado - it was very good. I had the leftover today for lunch - flaked fish mixed with coleslaw on toast. (When I say $10.00 a pound, I'm disregarding the other $10K that the trip cost...rental car costs are ridiculous in AK.)

Also, broccolini sauteed in olive oil with garlic, lemon juice and sea salt flakes is a perfect accompaniment for virtually any meal.

We are in the midst of selling our house, and having to be gone long hours for showings. Kids generally eat at home (so many food allergies, so we don't eat out often) and are having sticker shock at the prices for buying simple fare at restaurants. My son had a conniption over 25 dollar cod.

55 If your digestion of broccoli is related to diverticulosis, eating the stems is a good homeopathic remedy. Chop the stems up in to small pieces and steam or sauté them for about a minute or 2. It's a good source of fiber, which is what you need for diverticulitis.

We have a really very good small, local BBQ shack down the street and gave up on ordering from there. The food is excellent, but they can't assemble an order to save their lives. Without fail, they leave stuff out of the bag you have paid for, put things into the bag and charge for items not ordered or just fail to prepare the order altogether. Not once in something like six tries have they gotten it right.I'm not sure how they can be so consistently terrible at completing an order without it being intentional.

66 I like tilapia a lot - it's an inexpensive white fish that's easy to cook with no strong flavor of its own, so it will hold whatever flavor of spices, etc, that you put on it. And having read the article, it's not quite fair to say the woman got the disease because she ate tilapia; rather, she got it from doing a Gollum and eating her fish raw.

It totally rules. Yes, it's expensive, and I don't always go for it - but damn is it ever good. Sautee in butter with garlic, onion and plenty of mushrooms. Deglaze with a little white wine, reduce for a minute, serve with steak. And put some ground coffee on the steak with your salt and pepper, it goes good with the little broccolis.

75 Mushrooms are another good side topic for a food thread. A friend of mine is a professor of mycology. He maintains that almost anything you buy in the store is flavorless (but safe) and is just there to soak up sauces. He knows how to pick the wonderful wild varieties. Having eaten those as a guest at his tables, I tend to agree. But, few of us have the know how to pick carefully. Or have a spare liver on hand when yours fails due to eating the wrong ones.

76 Vegetables - I made a dinner of acorn squash the other night, just because I hadn't done them in a while and they looked good sitting in the store. Very easy to make; cut in half, scoop seeds out of middle to make a little bowl in each half. Fill that bowl with butter, brown sugar, and a bit of salt, bake at 350 for about a half hour or until it looks done. Very tasty!

I have upped my toast game with brioche bread.

You'll never know unless you try. Yeast may just like the higher elevation. I can't think of any science that would make them reluctant to prosper in a thinner atmosphere. If you like a 'chewy' crust might be just the thing.

I would never, ever grill striped bass. Wrap in aluminum foil with a little tad of butter and a little squeeze of lemon juice then bake in the oven till it hits about 160 degrees.

Some strong flavored fish like salmon you can grill. Striped bass is much too mild a flavor to benefit in any way.

Once the big head has been harvested, the plant forms side shoots, which are delicious lightly steamed or in a stir fry - or raw garnished with a good blue-cheese dressing. The plants will bear until the first hard frost. The only limitations I've found is that the plants usually are available only in the early spring, since broccoli prefers cool weather; and I have to drape netting over the plants while they're young because birds love to munch on broccoli, too, and they can easily kill the immature plants.

141 Fast food report: we just had a "Killer Burger" open in my town. It's a chain, though I don't know how many stores there are or how many states they cover. I got the "Purist" burger which has bacon, cheese, mayo, and ketchup. It was pretty good, and the fries were good as well (not soggy like Five Guys usually are). They offer a couple of burgers with peanut butter as a topping, which is a big plus in my book. $12 for lunch, which isn't too bad, given that McD's will run at least $10 here.

When you plate the steak, throw a diced onion in the pan and let it cook in the residual heat while the steak rests. You're kind of deglazing the pan, picking up the meat drippings as you stir up the onions. Add some butter if the look a bit dry.

Tempted to do my ribeye in the fireplace as the weather is suboptimal for outdoor grilling. Very atypical weather lately...

Some varieties of broccoli make side shoots after the central head and some don't. If you find one you like, stick with it for your main crop.

You're right about birds eating the baby plants. We get lots of cabbage butterflies and moths out here, too. Plus a root worm that loves really fertile soil. Have to take care of that one when you plant.

Why would hornet sting me? I was moving up hill, slow but still 5mph or so. I see those murder hornets all the time and they leave people alone. I regularly get buzzed by the flies at that speed so I am thinking fly, but maybe hornet. I just don't know.

So on national holiday the clinics are all closed. That is primary access point for health care in Japan. Even hospitals have clinic hours and not emergency room.

If it is really serious they have emergency department, but not for day old bug bite. For bug bite I will have to wait for tomorrow AM.
