I have four little lamb riblets that I want to roast for snacks / sides to go with steak, since I'm not sure how we'll like them (or if I can cook them correctly). Most of the recipes I've found call for 450F which seems excessive, especially as I thought lamb was something that sucks if overcooked. Any youse Morons got suggestions? Thanks!

Unfortunately, after living north of Naples, and 20 minutes from the major Mozzarella producing area of Italy, nothing tastes as good as true buffalo milk mozzarella.

I always am. This week, Aldi's clearanced a deli-area cherry raspberry salsa (it was $1). Then, HMart had frozen tilapia filets on a great sale ($3.99/lb). So, tonight, the two are going together with some cumin/cayenne/garlic roasted potatoes and onions and a cherry, raspberry, and strawberry salad (and homemade biscuits my daughter made). My spouse and I have tried the salsa just to make sure this will work, and my spouse's face LIT UP b/c he was expecting a mild heavy fruit forward salsa, and it's the reverse - really spicy which more background fruit notes, which will work really well. But it might explain why it was clearanced - folks expected sweet and a tiny amount of heat, and got almost the reverse. I don't have mirabelle plums but I have a tasty yellow prune-like plum that I suspect will taste better. I am mostly looking to find out what the creme should be, or if I should just let the plum and sugar work its own special magic. I am sad to confirm your beef adventure at Costco with one of our own at a local Giant. Steaks got our anniversary, and they were tough and flavorless, despite cooking them precisely to med rare. I think prime and choice cuts are going to expensive restaurants or buyers, and the rest us on offer for the proles.

The good thing about it is you decide the proportion of fruits/nuts, for the most part. I use only enough red and green candied cherries to give it some festive color. I soak the fruit/nut mixture overnite in kirschwasser and then after the cake is cooled, I soak it with apricot brandy every couole days. It freezes well so if you decide to bake one around Halloween you can thaw it around Christmas, give it another little soak, and then maybe you too will convert some fruitcake-haters! Dinner was supposed to be roast chicken with carrots and asparagus, but the chicken wasn't thawed completely ( actually, at all) so I made stuffed shells with homemade meatballs and broccoli. No one seems to mind the switch, ygdnk goodness!

We weren't up to making our usual scratch pizza last Friday, so we went to that place downtown. We ordered a large pizza to go, she had a Greek salad while we waited, and I had a Guinness.
Of course, MiladyJo always has to add a twist, so she asked that the pizza be square-cut. (You can take the gal out of Chicago, but….) No problem said the waitress. When the pizza came, it was two pizzas! They had first cut it in triangles, and then re-did it, square-cut. Which was silly and unnecessary, but we got two for the price of one. Funny thing was, neither cut was very well done, but we had plenty of leftovers. Heating some up on the griddle right now. Want a slice? Looking at Powerline's "Week in Pictures" last evening and I saw a delicacy I never heard of before - Chicken Fried Bacon (with country gravy dip).
Why yes, I did make it this morning. It was good, not great, but I think next time I need to partially cook the bacon the evening before to render some of the grease from it before breading. My experience with Costco Prime NY Strip has been universally positive. Perhaps my palate is insufficiently refined, but it tastes great to me.

I sometimes have phone rudeness cuz I never remember to silence the darn thing if I haven't absent mindedly just left it behind . No, I don't check out texts, but I feel bad having the phone ring until I fish it out to silence it when I get a dumb spam call.

No pine nuts for pesto? I have in the past substituted crushed walnuts, which are similar in texture but have a very different taste, so don't use so many. We ate it, nonetheless.
We are going from 1 meatless day per week to 2 or 3, just because meat prices. Wife brought home some ribeyes the other night they were about $12 each. They were wonderful. I've used walnuts or almonds, the pesto was fine. It's just that the pine nuts in OG pesto are unique to the med basin and they have a special bite to them. As previously mentioned, VDH drops about 4 podcasts per week, these are usually in 3 parts.
First is current events, second is past events (wars), third is agriculture. In the most recent he discusses the dilemma of creating delicious fruit and having a roughly 24 hour window to get it to market, as opposed to farming varieties that are shiny, but bland tasting, hard as a baseball, and can be shipped thousands of miles. I made a lb of pork belly (HMart slices) crispy in the oven and made homemade croutons out of day old Safeway French bread. Everyone got a coffee cup of soup with a pork belly "straw" (like a Bloody Mary adds bacon) and a small pile of the croutons. It was great - and just $4 of meat, which for 7 is kinda unheard of (I had garden tomatoes and peppers and basil, so the soup was subsidized by my growing)... I purchased ground beef 93/7 at Harris Teeter in Raleigh this week. I cooked it to use in stuffed bell peppers. It tasted nothing like beef, and was impossible to chew. I spit it out. I wonder if it was 93/7 93=beef slime 7=real beef WTH I will only be buying meat from Whole Foods or a local butcher market.

As to beef I believe the redder it is the older the cow. So I pick the least red. But more important is the marbling, that's #1 consideration.

Martini Farmer, as others have mentioned pine nuts are wicked expensive these days. I just made some yummy pesto on Friday using ones I have in the freezer, and I might have just enough left for one more small batch. They were a gift from a neighbor - a thank you for something - can't remember what I did for her but whatever it was, she was happy about it!

It's Hatch Chile pepper season here in NE Arizona. I stopped at a roadside stand and had them roast up 10lbs. It took about 10 mins in this propane oven gizmo they have. Sounded like an F-15 taking off. The smell was heavenly.

Add some onion to those tomatoes! One of Peter Luger’s best sides is tomato and onion salad, which is just fat juicy tomatoes and spicy onions. Simple but delicious with some Luger sauce.

Beef tends to be decent here if sometimes tough. And there's a meat market with fancier stuff. The problem is chicken. Last whole one had that livery smell and I gave it to the dog. I buy the expensive brand when I want chicken. They do have frozen wings for 79 cents a pound. I was tempted to make stock. Just too busy right now.

I tend to eat fruit seasonally, except for blueberries. I am waiting for the Opal apples to come in. I think they are NZ too, big yellow apples. Those are my favorites in the store

I'm sure you're aware of this as far as beef preparation, but I always try to get it to room temperature before grilling it. I use a rub that's inspired by Outback -- paprika, pepper, garlic, onion powder, pinch of cumin -- and I dowse it in red wine.

Last weekend I attended my oldest nephews wedding in upstate New York. The ceremony and reception were held on a working farm that hosts about 15 weddings a year.
Besides the scenic back drop to the whole event (which also had a Welcome Dinner the night before), the food was amazing!! From what I was told, except for the meats, everything that we ate was from what the farm produced, and it was DELICOUS!! The caterer they used did a fine job and the band they got was kick ass!! We didn’t water it much this year and the biggest figs we had were golf ball sized. But most of them came in about 2/3 that size. It’s gonna get trimmed back pretty severely and we’re hoping it puts out next year with a little fertilizer and some more water.

I had a do park buddy in Cocoa Beach that ran a small fig tree operation. They would graft the fig onto something else's root system that was much more hardy and get them to where they wee about a foot tall and ship them out.

The ones Dad grew were called "white" figs. They stayed green mostly but the inside flesh was white with the inner part the usual purple-honey color. I recall they froze pretty well, so we were eating figs long after the trees were tucked in for their long winter's nap..

Tomatoes. Cut out the top where the stem was, so that its a depression you can fill each with about a half tablespoon of butter. Salt it and pepper it, maybe put in a slice of garlic.
