Little personal news: I asked the cobs to take over the blog for Monday and Tuesday. I just wanted a break. They were kind enough to say yes. Joe Mannix officially becomes a coblogger to help out.

I have a few posts in draft including the Cafes and will check in here and there, but I'm mostly leaving this in the capable hands of the cobloggers. Go easy on them!

Had this house that was very ill designed such where the main entrance was at a point where several roof line slopes converged. I think the architect was evil. The result was in a good TX rain storm, all of the rain that hit the front half of the house would funnel to the main entrance and opening the door resulted in a deluge waterfall.

Why do I bring this up? Because the neighborhood racoons would get on the roof and strategically use the two main roof creases as their latrine giving the hapless person at the doorway a shit shower.

I remember it coming out on HBO after I had snuck in to see it in the theater.
It was not the same movie.
Any time you see Gleason speak but don't see his face is edited and the voice noticeably changes. Sounds like Fred Flintstone over dubbed it.

Impossible for little kids to get hurt in the snowsuits. Told me "bring your skates". Told her "they're gone". She tells me to rent some at the hardware, which I did. Went to the pond, having fun, pushing the kiddies around, and Mom tells me to show 'em how it's done. Went out and attempted the ol' run on the tip toes, forgot I had hockey instead of figure skates, and slid about twenty feet. Mom, Wife, and Kids got a chuckle out of that.

I'm new to the canning thing (this is my third year) and I still worry I'm going to kill someone. But then I remember my sister-in-law telling me about her friend's father who used to make pickles in the back yard and fill up the barrels with the garden hose.

It always rains when I have "peak tomatoes" so I cut them in half and freeze them in gallon freezer bags. And I cuss continually, every year.

I can't seem to can tomatoes like my mom, so I cook them up and run them through the food mill and can the puree. It eats the same and looks a heck of a lot better.

Oh, I think I asked you about my canner last year because the lid doesn't fit tightly and water would boil out I tried wrapping a dish towel and using clothes pins to keep it tighter last year, but it didn't work great.

This year I just used a baking sheet instead of the lid, and it was much better.

183 The food mill is fairly cheap for what you do with them. I use them for apple sauce and tomatoes, and my wife is happy when I run the blackberries through it to reduce the seeds.
I also use it when I cook down the second peaches and the skins to make peach butter.
I don't skin tomatoes any more, since the food mill solves that for me.

I worked in the commercial canneries locally for six years canning beans, corn and other veggies. Pressure cookers are old tech and very convenient, and at least now I know that the beans are fully free of stems, leaves and mouse-parts.
The Presto and the All American are the best marks, as far as I can tell, and I have both. You can also can meats, beans and soups if you like.

Don't be scared. If you look back at 1980s and 1990s Southern Living magazines and cookbooks they would routinely have written directions for how to put things up. It isn't hard. We've been slowly conditioned to believe that everything is dangerous, though, and it makes people scared to do what folks routinely did up through the early 80s.

Start with something easy and work your way up. You can do it.

Oh there's no self control other than self preservation. I'd eat half a dozen and drink a quart of milk. But then I'd go comatose in the chair and wake up a few hours later with a splitting headache, and a dreadful thirst. Same thing happens with alcohol.

The three best resources I know for canning information is the Ball Blue Book of canning, the Fillmore Container Company blog ( https://www.fillmorecontainer.com/blog/ ) and locally the state extension service. I am told the Mormon Temples can get you pointed at classes too
My goal in 2020 was to get my Master Food Preserving certification from the extension service, but that has not happened yet.

Canning is not difficult, just pay attention to the pressure and the time, and you are good to go. The instructions work, after all Ball and Fillmore understand if you get food poisoning you won't buy more lids I use a propane stove to do the canning over since it keeps the house from being heated up, and if I spill I just have to move a foot or so away and let the ants clean it up.

222 Since this is a food thread now, I bought a "Stove Whirl" or something air fryer attachment that you place over pans and it is supposed to circulate air while using the stove eye as the heat source. Clever idea. It's... okay. Maybe. Overall it's not worth the time or effort, though. I found it on clearance for next to nothing so I wasn't out much (and I'm still returning it), but I feel bad for folks that paid $50 or whatever for it.

I was hoping it would be a good option because it could fit in the storage under the oven and clear up some counter space, but I guess I'll keep the big ol' air fryer sitting always in the way.

I was complaining mildly one year, and one of Dad's cousins went on about how his mom would can in a double boiler on the wood stove and the whole house would be 100F and she wouldn't let anyone open the windows or doors because she was worried about the jars breaking.
And I though, yeah, Propane outside sounds much better.

I use it in the shade of the woodshed, now that I have one.

Thrift shops, charity shops, flea markets and garage sales are your best bet for cheap stuff, you have to keep an eye out that they are not damaged.
On the other hand a new Presto will run you here about $120, and an All American is around $350. Did you know you could also use them as an autoclave?

I also really enjoy learning about traditional foods cooking on the YouTube channel Mary's Nest.

I have learned all sorts of stuff like how to make apple cider vinegar, bone broth, etc. She has a very nice manner.

I just gave 7 jelly jars to a friend from church who picked 13 gallons of chokecherries for some inexplicable reason. Then she discovered she didn't have enough jars.

If I can manage it I will get some things put up this coming week. We'll see.

A lady at church told me to watch some Brenda Gantt. She's worth a watch if you haven't seen her. Mostly biscuits from what I've seen, but I appreciate her trying to help people get memorable biscuits for their kids to look back on and say "My mom made great biscuits" when they're older.

251 All American canners do not use gaskets. (Watch the Homestead Heart video on how to use one). They are easily three times as thick as most canners. I bought the smallest one they make and gave my bigger Presto to the kids. I haven't used it yet but seriously need to start buying and canning meat. The local store takes marked down meat that doesn't sell and puts it in the freezer. I'm thinking about looking for some cheap stuff there with recent dates to start.
