Food Thread: It IS The End Times: French Toast With Maple Syrup Is Back On The Menu!

Why yes, that is French Toast. With buttermilk ice cream. And cinnamon sugar. And maple syrup.

And I ate it.

No...not because I have had some sea change in my life that has driven me towards horrible food combinations. I am nothing if not rigid and unwilling to change. It was a far simpler reason.

It was polite.

At an excellent breakfast joint we shot the breeze with a charming and amusing waiter (actually a manager filling in) about food and travel and life. I think we spent half an hour chatting with him, and he brought us that dish as a treat.

So I dug in with gusto, ate the damned thing (far too sweet!), thanked him for the delicious dessert, and then went back to the hotel and brushed my teeth!

I am intellectually and emotionally allergic to French Toast with maple syrup, but not physically, so it never even occurred to me to decline the gesture.

Meals are not just for fuel. They are part of what makes us human, and the joy of sharing food with others, and even the process in a restaurant is a civilized and enjoyable thing that is completely separate from the act of eating.

At some level we were in his home, as it were, and refusing that hospitable gesture would have been unthinkable.

When we are invited into someone's home for a meal, I think that the assumption is, or certainly should be, that the event is for the enjoyment of each other's company, and that the meal is a delightful bonus. So what if you don't like peas or broccoli or lamb or hamburgers...eat it, smile, say how delicious it is, and enjoy the company!

Oh boy...here is some weapons-grade nonsense from an overtly political group whose entire raison d'être (aside from making money with their fake certifications) is the blending of politics and food production. Just look for the word "equity" in their blatherings as proof. How a strawberry grown by a farmer of color is better than the identical strawberry grown by a person of pallor is beyond me, but then I'm not a crypto-communist political agitator!

Environmental Working Group unveils its Dirty Dozen, Clean 15 for 2023

“Strawberries aren’t the only problematic produce item. 90 percent of blueberry samples were contaminated with toxic pesticide residues, including pesticides linked to cancer and nervous system harm,” according to the EWG.

“Among the 54 pesticides found on blueberries were several bee-killing neonic pesticides. Not only have these pesticides been linked to the massive decline in bee populations worldwide, they’ve also been linked to neurological damage in children.”

The organization says 75 percent of non-organic fruits and vegetables sold in the U.S. are “riddled” with potentially toxic agricultural chemicals. Some of the pesticides detected have been banned in the U.S. or Europe because of concerns about how they harm people.

“Despite the abundance of science linking exposure to pesticides with serious health issues, a potentially toxic cocktail of concerning chemicals continues to taint many of the non-organic fruits and vegetables are eaten by consumers,” said Alexis Temkin, EWG toxicologist.


Conspicuously absent is any data showing actual risk. Today's analytical technology is absolutely incredible. We can discover chemicals at vanishingly small concentrations...parts per trillion is easy! And that's how these organizations make their money. They terrify overwhelmed consumers with gloomy and scary articles and press releases about how they found 38 different carcinogens in their kids' fruit cup! But that's not the whole story, or even the most important part.

Yes, many chemicals are dangerous, but as is often quoted, "Sola dosis facit venenum" ..."the dose makes the poison. So PPT of some chemical that is associated with some heightened risk, but very possibly does not cause it is interesting but in most cases nothing of import.

And unsaid is the alternative to eating these foods...the higher cost of supposedly safer organic alternatives, or the alternative foods that may be less healthful.

These are fear-mongering scum, and we should attack them with the reality of the data, that modern agriculture is not perfect, but has done far more good than bad. We can feed the world...eliminate hunger...if it weren't for these busybodies who want everyone to be equally miserable in their food consumption.

Misanthropic Humanitarian is trolling me again. He sent an Epicurious article (I don't link them any more because they are anti-beef, anti-white commies) about a very interesting variation on a classic cream cheese frosting. But...it was written in that typical irritating style of too many food writers today...over-long, verbose, pompous, self-referential, and just generally irritating.

Here's the link if you must...but please don't! They Call This Cream Cheese Frosting Magic -- Who Am I to Argue? I have a PDF of the frosting recipe if anyone is interested...it looks like a pain in the ass, but I think I am going to try it, because it really does sound good!

Besides, another name for the frosting is "ermine," which is a type of weasel!

Commenter "Kathy" sent me an interesting recipe for homemade corned beef -- obviously for Saint Patrick's Day -- but I have been catastrophically disorganized the past few weeks and just didn't post it in time. But she also sent along a video
How to Make the Ultimate Tuscan-Style Roast Pork with Garlic and Rosemary, which is a classic dish done a little bit differently.

Pork loin is nice, but nothing spectacular until it is tuned up with extra flavor, which that recipe does rather easily. Kathy tells me that it was definitely worth the effort!

Maybe one day I will do that but with a bone-in pork roast. I'll bet it is possible to open it up the same way as the boneless version.

Anyone ever try that?

I came into work one morning and found this beer precariously positioned against the glass door to the cooler. I immediately said to myself "Heh. Schrödinger's Beer".

But as I am wont to do when by myself, I pondered over a greater issue, wondering if the fate of this Heineken was representative of the European beer market in the United States, alive and yet dead simultaneously, with the rise of the craft beer.

Being a child of the 70s means that I was a bartender and novice drinker during the cultural void of the 90s, a time when beer was largely associated with bikini clad twins, anthropomorphized bull terriers, the McKenzie Brothers and Bob Eucker, During those days, the burgeoning beer lover could still count on a few imports to class up even the shittiest of hole in the wall joints. A man could order a Heineken and drink it with his pinky sticking out for a touch of class, prove his manliness with the oversized Foster's Oil Can, drink for effect with a Molson Ice, or prove your worldliness with German lager or an English ale.

It was always fun to visit English or Irish themed pubs or European beer markets and try beers from around the globe. But of late, the frequency with which I see many of these old brands in grocery stores or bars seems to have diminished greatly in favor of a slew of sometimes good, sometimes mediocre craft beers.

My evidence of such a shift in preferences is largely anecdotal, though I have read some articles that have indicated that while imports as a whole are on the rise, it's largely due to the proliferation of shittier Mexican brands, while European beers are losing market share over the last 5 years or so.

Anyhow, if this be the way of the future, I'll always look back fondly on the era of the import, when the lovely St. Pauli girl adorned many a watering hole. I wonder what imported beers Teh Horde celebrated with in those days?

I remember seeking out Molson on tap when I was a callow youth. It was rare, and I guess good. Nowadays my taste has moved toward different sorts of beer, but whenever I see Molosn on tap I am reminded of evenings at Googly's (I think it is long gone) in the West Village...drinking pitchers of Molson and eating good burgers!

Passover is coming soon, and with it comes my yearly agony...what to serve for the main course at the Seder!

Lamb is a classic, for obvious reasons, and here are six recipes that have possibilities. two of them need tweaking (lavender with lamb? Pshah!), but they are all a good start.

Well, as long as you finish with "while this was so good...you know what would be even better next time...", so the host doesn't think you really, really like the dinner and make it every single time you show up. This is important if you have monthly game/dinner nights with friends.

And as an extra mention "this was so good - next time, I should make/bring X to go with it" - thereby ensuring you will have food you love that can fill up a lot of your plate.

9 The beer commentary I completely agree with. Not only is the market supersaturated with “craft” beer, but there seems to be a Most Obnoxious naming contest somewhere. Fortunately in the Houston area, we have St. Arnold’s, who puts out several quality beers and a couple seasonals that are very good.

Sometimes the IPA is good, sometimes it's not so good.

The last really good IPA I had was at this restaurant in Point Pleasant.

14 In food discount news, apparently all the stores in my area are deciding it's time for me to eat burgers, and they are clearance them out, probably b/c they are getting huge shipments in April/May for the new grilling season.

2lbs of Angus beef burgers from Safeway for tomorrow's dinner. Then 2lbs of 93%/7% turkey burgers for Tuesday's dinner (that I pick up from Target tomorrow). Both $2.50/lb.

But before that, with all its price increases, Aldi's did bring fresh salmon filet under $9/lb, so that's tonight's dinner (with a lemon/dill topping). To go with is Thursday's $1 coleslaw bag from Safeway and strawberries and blueberries from Aldi's. For the kid who hates salmon, I have the Aldi's prepped mac and cheese, which will be a side for everyone else not named me.

I have a nice sized crockpot. A bit over 6 Qts. I always put a bit too much food in it because I don't measure. I guess, wrong mostly. Anyway, I managed to squeeze everything in it and the cornbeef is just barely brushing the bottom of the lid. As the cooking process continues, the food will contract so all good.

With St Pat's day Friday, I'm not sure I'm gonna do a St Pat's meal this year. I skipped buying the corned beef b/c I wasn't in the mood, but I did buy the uber-cheap potatoes and cabbage. I expect the roast the cabbage in the oven with one of my burger meals...Martha Stewart gets the cook time and temp right, even if I ignore her seasoning prep...

It would have used up the microbrewers' slack time, given me a minor royalty for the use of my recipes, a minor profit on sales of supplies, and I figured the minor profits for one tavern is small, but the minor profits for a score of taverns could be a nice profit.

I have been avoiding IPAs whenever possible. The New England IPAs are the best of the bunch, but I'll try pretty much anything on a beer list instead of an IPA. I still avoid fruit-flavored beers, and darker beers are just not up my alley, but IPA madness needs to end!

39 I've tried about every VooDoo Ranger IPA brew they've put out. Just for the cans for garage decorations. One recently was probably the worst tasting swill I've ever come across. Tasted like rancid pineapple juice. But with a BAV of 9+ % you do what you must do....

55 I made an interesting collection of pies for March 14. For breakfast, a “banana icebox pie” from the 1972 Southern Living Pies and Pastries book. It’s a can of sweetened condensed milk, some lemon juice, and bananas. Poured into a pie crust (I did a cinnamon cornflake crust). Then whipped cream on top.

That made a good breakfast until this morning.

Then a “New England ham and apple pie” for dinner, which is less of a pie than a very sweet casserole. Ham, apples, brown sugar, salt, pepper, cinnamon, butter, and lemon juice, multiple layers. No pastry. a homemade “pancake batter” poured over the top, but of course it soaks into the layers of ham and apple.

An odd but good dish from a 1950s-60s Chicago-area TV chef, Eddie Doucette. From back when electric companies put on cooking demos to get people to use more electricity.

67 Well, I must be about 20 years older than Bitter Clinger but my prime beer-drinking years were in the 1980s and 1990s so I remember when European beers were prime. My go-to beer during all that time was Double Diamond Burton Pale Ale, reportedly the late Prince Philip's favorite brew as well. I still miss it.

Second place was probably Samuel Smith's Nut Brown Ale.

There are a lot of very good craft breweries near us now, but in general the pickings have been pretty slim for amber and dark lovers during these IPA-obsessed times.

Our D&D games are virtual now b/c we're in multiple states, but I remember being the game (and food) host pre-Covid...and that was helpful to make sure folks ate and felt good for 6 hours (we always had lunch games, so that was a little easier)...I did get food requests, especially for birthdays (although it was always a little sad when someone really requested hamburger helper - it's not bad, but it was a "but I can do better for you, but if that's what you REALLY want, you got it")...

122 Beer prices are a triggering subject with me. Scored a 12 pack of Becks (which, like all major brands, ain't what it used to be) for just under 12 bucks recently. Everything else of similar quality was getting 14 and up. Got a 4 pack of Guinness pint cans and that ran me about 3 bucks per. While I like Sam Adams, I can't justify $16-18 for the twelve pack. My go to these days? Rolling Rock, which I can still get for under $7. Of course, that's before you add the "deposit" and other taxes..

Beer used to be the adult beverage for the masses. Genesee, Shlitz, Black Label, Strohs - a guy could enjoy five or six on a hot day, have two more with dinner, without a thought to the financial impact of such an indulgence. Nowadays, it's a pricey affectation, ruined by hipster brewers trying to outdo each other with horrid flavor combinations masked by excessive hops.

126 Food experiment for the week was pork belly. I found a 6-pound belly in the freezer and smoked about 4 pounds of it with a salt-and-pepper rub. Smoked to 200 degrees internal temperature; it's like a pork version of Texas brisket.

Quite delicious in a sandwich or breakfast taco. The humans here like it, but the dog is obsessed with it. She'd walk through fire for some smoked pork belly.

I'm using the remaining 2 pounds or so for Sticky Chinese Pork Belly Bites, also an experiment. I'll report on that next week.

133 Speaking of easy foods, I got tons of unsolicited compliments for my "luck of the Irish" (allergy free except wheat) pesto pasta at the soup dinner Friday night. It's both good and bad that it was a jarred sauce (Cucina and Amore's Vegan nut free pesto) just expanded with pasta water, olive oil, nutritional yeast, and salt to cover 2.5 lbs of macaroni. Goes to show - folks don't care about your time/effort/costs, they care about results, b/c this was $10 of ingredients and 15 minutes of effort to feed 20...

I've recently re-discovered Pepperidge Farms Raspberry Turnovers. They're pretty epic, although almost absurdly pricey. In a pinch you can do a cheaper version with those tube crescent rolls and a jar of raspberry jam.

148 Earlier this week Doof, bless him, mentioned Buffalo Trace Bourbon Cream. My experience with cream liqueurs is not good but it sounded intriguing. Well, it was. The stuff is delicious!! Like a bourbon milk shake. Just enough bourbon flavor to be aware of so you don't chug it. It is like sipping an adult dessert. And it is affordable at 20 bucks a bottle.

168 Black coffee (or Tea) is maybe the best beverage ever, for people into intermittent (time restricted eating) fasting. Some people just have to have a splash of milk or cream, half and half in their coffee. But it's best not to snack or take in any calories when fasting. Bulletproof coffee is just butter, I don't even do that. 24 to 48 hour fasts are easy, once you practice a bit. Though not without coffee.

I've never cooked canned beef, but I'd imagine you use it for the protein over the taste and want to bury into something that tastes good if you use it...

But this comes from the person who's only cooked spam 3-4 times in her life, and all for the benefit of my spouse, since me and meat protein in cans just doesn't go together...which is funny, b/c I don't mind fish in cans, assuming I know what I'm getting (now that I know canned salmon is normally terrible, I have plans never to eat the meat, but to make broth with it when it's 99 cents again b/c fish broth grits are great and the cat can eat the flesh after)...

Recent find, a recipe for "crack cake" full of pecans. It is easy to make but there's a technique involved that made me incredibly skeptical. Nonetheless, I followed the recipe to the letter and ended up with a cake that was incredibly moist and tender, and surprisingly not too sweet. You can make a knockout of a dip with your cans of salmon. Take one of the cans and mix the salmon with a block of cream cheese, 1tbsp lemon juice, a dash of liquid smoke, a healthy dollop of horseradish, and some finely chopped pecans.

Or you can do a breakfast hash. Boil 2 red potatoes cut in pieces then drain. Sauté 1/2 small onion, chopped, and a red pepper, sliced. Stir in potatoes and a can of salmon, and top with fried egg.

Other than my fish broth idea, my other idea was to toss it all in the food processor and see what I had after (so I didn't have to pick through all the bones and skin). If it sucked, go back to broth and strain. If it seemed plausible, go for a salmon cake or mousse.

Salmon is the worst of the canned fish. I love tuna, sardines, and clams (and even mackeral) and have all in my pantry from great sales. Anchovies, too, but those are jarred...

191 While at the ABC store for the Buffalo Trace bourbon cream mentioned above, they had a bottle (one bottle) of Sazarac 6 year rye which has been hard to find locally. Sazarac gets great reviews so it came home and I'm glad. This is a delicious rye, in the same category as Pikesville 110 proof rye, my favorite. (Pikesville is also hard to find locally. WTF is going on with the booze industry?) Good sipping stuff, neat.

That ABC store had just received 6 bottles of Buffalo Trace bourbon which I hadn't tried in years. I got one.(Guess what, another hard to find booze in Virginia.) This is also good stuff but it improves with a little water. The water brings out a creaminess in the mouth feel and enhances the sweet flavors.

By my standards, this was a lot of whisky. I still just sip a small dram, slowly and usually neat, over several hours. So it is going to last a long time. This will take care of my hard booze buying for a few months.

It's when you look in the can and see the bones and skin, and realize the bones are still bony, and then you're throwing out the 1st dinner plan. Once I had that 1st experience, now I know what I'm getting each Lent when they make the crappy "everything and the kitchen sink" 14 oz cans 99 cents...

204 That pork roast they call arista: in Tuscany (where I lived for nearly 25 years) it refers to pork loin on the bone (ask a butcher for arista and he'll haul out the whole thing, asking you which part you want your bit cut from). Ask him nicely to cut the meat away from the blade bone on the bottom (you can do it yourself if you know what you're doing), then stuff your herbs and spices in there, tie it up and roast it. A good arista cooks long and slow, with frequent basting--one chef I knew in Florence actually poured a pitcher of water over it from time to time. The herbs should include wild fennel seeds along with the rosemary and garlic, all best ground in a mortar first.

All power to you if you like IPAs. I think most of them are one dimensional...the hops dominates everything. And they tend to be very high in alcohol, and I would rather drink more beer with less alcohol.

But, the brisket wound up perfect or near-perfect anyway cuz I had a secret weapon, which had been gifted to me recently.

A ThermoWorks Smoke bluetooth meat thermometer what comes with an ambient probe along with the usual meat probe.

The ambient probe gave me a perfect idea of just how wide the temp swings were in my ailing wood pellet grill, so I was able to compensate to keep the brisket on target cuz the meat probe in and of itself is super accurate. And I knew when it was ready.

Yay! Victory was mine!

Anyway, I guess I'll send my current wood pellet grill out on an ice flow and buy a new one this week.

I can't eat it, but even now, when it's on a HUGE sale, I do buy 3 boxes once a year for the kids and dad to have as a "special" treat for them. They say it's not as good as my cooking, but it's a really good dairy bomb and they always view it as a treat (my girls make it). They ask for the cheeseburger macaroni or the lasagna and always add extra cheese...and I usually buy myself a nice sushi box while they have this, so win/win...

Cook 2C macaroni, preheat oven to 375º. Sauté 1/3C minced onion in 4tbsp butter. Blend in 2 tbsp flour then slowly add 2C milk. Stir to smooth and thick.
Add 2 tbsp lemon juice, and 2 tbsp finely chopped parsley.

Put cooked pasta into a greased casserole dish. Drain salmon, break into bite-size pieces, and put atop pasta. Sprinkle on 1C shredded Monterey Jack, then pour sauce over. Sprinkle another cup of cheese on top. Bake 25 min.

The five different species of Pacific salmon:
Chum are also called silverbrite, and are not very good eating fish, the meat is mushy and not much flavor. Cats however, love chum salmon.
Pinks, also called humpbacks, return on odd years only to spawn in the Pac NW/Alaska. Usually smoked instead of filleted and cooked on a grill, better tasting than Chum but not by much, IMHO. 3-8 pounds.
Red salmon are sockeye salmon, the only salmon that does not eat other fish, rather only plankton. Many connoisseurs of fresh like a sockeye the most. Definitely the reddest flesh of all. Usually 3 - 7 pounds.
Silver, or Coho salmon, are great fish to catch, they are 3 - 15+ pounds depending where or when in the year they are caught. Best fighting fish pound for pound. I like to use my trout pole and setup to make catching silvers even more of a challenge.
Chinook, or King salmon are the biggie in size and often in desire to catch one. The oils in the meat of many King species make the flavor over a low bbq heat amazing.

1 12-ounce package egg noodles
1 – 1.5 pounds ground beef
1 sweet onion, chopped (about 1 cup)
2 tablespoons all-purpose flour
2 cups beef broth
1/2 cup sour cream
2 tablespoons Dijon mustard
1 tablespoon Worcestershire sauce
2 teaspoon better than bouillon beef (or 2 bouillon cubes)
Salt & pepper, to taste

Cook the noodles.
1. Brown the ground beef over medium high heat in a large skillet, breaking it up as you cook.
2. Add the onions to the pan and sauté, stirring frequently, until translucent and soft – about 5 minutes.
3. Sprinkle the flour over the beef and onion, stirring to evenly coat and allow the flour to absorb oil.
4. Add the beef broth, sour cream, Dijon, Worcestershire, and beef bouillon to the pan. Stir until combined, and allow the sauce to simmer until thickened.
5. Toss the noodles to coat evenly with the sauce.

You can use dairy free sour cream in this for those who are dairy free.

252 I stuck the grocery store corned beef in the crock pot for 6 hours for Friday dinner; added carrots to the water in the pot in the last hour or so. Baked a potato separately and sautéed some cabbage (mostly since I wasn't sure what else to do with it).

This morning I made corned beef hash with some of the leftovers, plus scrambled eggs and Irish soda bread.

There's still even corned beef more for my mom to make sammiches with. I found some Boar's Head sauerkraut which hopefully will be better than the jarred stuff.

Don't toss them - just take out 1/2 to 3/4 of the brine and put in water...the salt in the pickles should flow back out to the brine in a few hours (to a day) and you'll have good pickles...

My niece has gotten into baking so I got her a cool book on frosting -- "Frosted: Take Your Baked Goods to the Next Level with Decadent Buttercreams, Meringues, Ganaches and More"-- it's six (IIRC) basic styles of frosting that you can master and then pair w/your choice of cake. SHe loved it, so that's at least one person who liked it .

309 Biltong was the first recipe I saw that demanded toasted coriander seed (or any coriander seed). When I looked it up, I found it was of the same plant as cilantro (one the seed, one the leaf). I taste soap when i taste cilantro.
I LOVE coriander seed, and had never been exposed to it.
The Montreal Meat Recipe also used coriander seed, so I'm glad I ordered the big bag.

I have huge batches of it. Mrs Hades heard that it repels mosquitos so she planted a forest of cilantro, which of course we never harvested so we got bushels of coriander seeds. Same with rosemary, I have several bushes of it now.

Eh, not so much to my palate. Chickpea pasta isn't bad right away but it surely doesn't store very well, and it's better as smaller pasta than it is as spaghetti. And don't even get me started on shiritaki, if I want calamari I'll order the calamari.

Greetings GGE ... Have you ever tried the Palmini noodles made from hearts of palm ... I actually tested a Cajun dish tonight using the linguine cut -- am always looking for Keto recipes for oldest son -- and it tasted better than expected (just needed more Cajun seasoning and salt) ... Soaking the "noodles" overnight in milk made them much less acidic and able to take on the flavor of the cashew cream sauce (also Keto friendly) ... Palmini noodles are also available in Lasagna squares, so I may fiddle with those next.

I do something similar but with some quick oats (say, the one minute stuff) rather than flour as the binder. Fry up in heart-attack level amounts of butter and salt liberally when done.

Using good old San Francisco sourdough French bread to make French toast; great with maple syrup

Also James Beard's sour cream waffle recipe, which the site seems to think is spam. The only liquids in are sour cream and melted butter. Ok, egg yolks too. It's really good and worth searching for.
