First-World Problems...

Well, it's not really a First-World Problem as much as a "I can't grow anything worth a damn and will kill most plants without any effort at all" sort of problem.

The First-World Problem is that I forgot to plant garlic in the fall, so now I have to play catch-up. Not that I have ever done it before, or have any possibility of actually growing garlic for culinary use. But for a number of reasons I have been using more garlic in cooking, and a surprising amount of it is over the hill. Stores seem not to be able to stock garlic that isn't long in the tooth, drying out, sprouting, or even rotting.

I will have to resort to better quality stuff available from high-end internet purveyors, and that disturbs my basic sense of frugality, but buying a head of garlic in which there is significant decay makes me want to say bad things about the produce manager!

That's about all I know about garlic. The garlic capsules supposedly give the benefits without the garlic breath.

I used the powder on food frequently, not sure if that maintains the alleged health benefits. Fresh is always nice.

NJ is horrible for produce at supermarkets. I remember my 1st trip to a NJ Hmart - I could not believe that the NJ HMart was at all related to the VA one. Dingy, dirty, in a basement, crappy produce vs a dang farmer's market amount and variety of produce down here...and the produce prices - dang!

Had to consolidate the frozen stuff into one freezer in the garage... running my office gear, 2 'fridges and a freezer was a bit taxing on the Generac.

I just keep it in a open plastic bag underneath the sink. Last for about two weeks. I just peel off a clove at a time.

I'm stuck on using only roasted in my dishes; sit it directly on top of the range 'grate' on low/medium for a minute in the skin. Then peel off the skin and smash to a smoosh.

42 Have never tried garlic. Planning to try serious spring/summer onion farming (for the greens, not the bulbs). Got some seeds at a Japanese store last year labeled "Welsh bunching onions", and they've been stellar.

Cut them when high enough, they grow back. Did it 3 or 4 times before the bolted (and still, the stalks were usable).

57 What weft-cut said - I don't have a grate on the range, but you can roast the garlic cloves pretty quickly (in the skins) in a good cast iron pan or other pan at med-high heat - just be there to stir them a bit.

Now that we have ovens again, peeling the paper/drizzling with olive oil/wrapping in foil and baking in the oven for 3 minutes is my usual approach.

And have never stopped at Harris Ranch, a mistake, but certainly have "smelled it" on the 5. Friends actually got forced to stop/stay overnight there once by hellacious rain storm - they loved it. Of course the dinner was pretty good.

My garlic press gets used almost every day. Amazing stuff.

I had a mole on my shoulder which got nastier every day and I skipped the Dr/Dermatologist and went to straight Internet misinformation/junk science/old wives tale mode. Cut a clove of garlic, used band aid to attach to shoulder over mole. Went to sleep. Next morning peeled stinky garlic band aid off shoulder. Forgot about the experiment until a week later when the seemingly precancerous mole was completely gone. Not a trace.

Late uncle had a hell of a garlic patch, 30 years ago. I moved it with the tractor bucket. Now I have to hoe it out, and just save a few in a row each season. Comes up between the paving stones in the patio. Side note: it only repels rabbits until it doesn't.

Put them in a glass jar of olive oil. When you're done with the garlic, you have some righteous infused oil.

119 Garlic for most purposes.
I buy those bags full of fresh garlic heads. I usually let them mature until the heads shrink a little and the skin is looser.

I have heavy duty rubber gloves that I bought in a dollar store. I wear these gloves and roughly tear the garlic heads apar over a large SS mixing bowl.
After tearing them all down to lobes and removing the loose skins I use the rubber gloves to vigorously rub the lobes together and the rubber removes the inner skins. Then I pare the stem end off so that the lobes are ready to crush.(crushed garlic ruptures the cells and the oil leaks out)
I crush the all the garlic by running it through a meat grinder using the coarse blade.
After one pass through the grinder, I switch to the finer blade and run the crushed garlic through once more.

To finish, I stir in a quality olive oil to form a usable paste and store it in a quart mason jar.(the kind with the glass/spring lid)
The garlic paste will keep in the refrigerator for more than 2 years.
Been doing it this way for over 30 years.

124 I sold garlic spreads at famers markets in Florida for a while. Put it out on little bits of bread and the aroma does the selling. Get a little sales patter going and you can end the day with a couple hundred bucks. Just need some coolers, fold-up tables and a pop up canopy.

There's farmers markets almost everyday somewhere within the state. Gotta drive so gas is an expense.

All cash business you can do with little investment. Other folks selling stuff were always amazed at how much business I did. Women love the stuff and enjoy talking about recipes.

On big trucks the firs thing to break was the fuel gauge, well, besides the synchronizer. We used a yardstick and when we called in for a new load had to tell the dispatcher how much fuel we had. I got a few looks as passers by heard me say I had 11 inches.

None of our construction equipment (the other job) had fuel gauges; neither did the saddle tanks on the trucks. They all ended up with their own custom-length industrial grade dipstick. Foolproof, very accurate, and safe to use.

In Canada, the 10-speeds were long predated by the 3-speeds, which had an actual planetary transmission in the hub of the rear wheel. No coaster brake, they had hand brakes. The American style of fat-tired coaster bike never caught on, although we had skinny-tire coaster bikes. Raleigh and BSA (England), and CCM (Canada) were the big manufacturers.
