16 Apologies to ace but I wanted to jump on something from the last thread. Not looking to hijack, I just need attention.

Ok not really, I just want a few opinions and we seem to have plenty of those.

I may end up redoing my very modest kitchen in the near future. This will involve putting in a small island. I am a hobby baker so I am wondering what you good people think of a marble countertop, and - if you don't, is there is a sufficient, cheaper or better alternative.

I am not looking to compromise on this for no reason - like, it will be the most important part of my new kitchen. I've never "done" a kitchen (shut up).

If I redo the island at this place it'll be soapstone. There are much prettier colors of soapstone than the black chem countertops from school.

36 My new cat Hexie performed a prison break on New Year's Day. She was able to squeeze through a gap in the window screen in my sunroom. But she returned later that night.

I now keep all the windows shut tight. May have screw in the exterior window screens to keep her from escaping in the future.

Fun fact: the Indians who lived on Santa Catalina Island had a thriving trade in soapstone with other tribes up and down the coast, and well inland, too.

44 Yes, Duke, we did - hubby's birthday and that's what he wanted.

Ellipses, get the marble. If you like to bake, that is the best surface. Excellent for rolling out pie dough, because it stays cold, thus helping to keep the fat solidified and the final result flaky. Good for other baking as well, but that is reason enough for me. We like pie in our house.

A friend of mine is a professor and the college was switching to all whiteboards, no more chalkboards.
They threw them all out in a big pile. She hired a contractor to collect and install them in her kitchen. Darned if they don't make wonderful black countertops when cleaned up.

Ellipsis, marble is fine for baking--such as dough prep etc. but it does require more work such as sealing it on a regular basis and can stain quite easily.

All natural materials will stain to some extent if not sealed and cared for.

I have a slab of polished stone which I think is granite that I use for making peanut brittle. I've never noticed any discoloration.

Some of the newer synthetics--stone plus polymer binders like silestone quartz etc look like marble but don't have to be sealed.

Dunno about baking but basically you want something to act as a heat sink and marble was the old traditional. As someone mentioned, black marble might be an option as it is harder to stain it obviously.

I have two kinds of counter tops in my kitchen the main countertops are black granite with what's called an unpolished leather texture, they are beautiful.

My Island has a white marble countertop.

The kitchen is the wife's domain predominately, she bakes and makes her culinary extravagances on a daily basis.

The only thing I make are pierogis and stuffed cabbage.

That's my thing.

102 All my kitchen counters are butcher block. Stains easily and is difficult to clean. The previous owner was told to put butcher block in by their real estate agent because their countertops were too unsightly. I shudder to think what could be worse than butcher block.

I hate it but not enough to try to change it at the moment. Also all the cabinets, sink, walls, appliances, light fixtures, floor and pantry also suck. I may not hate the ceiling but I haven't really thought about it a lot.

But looking at the rig, it's gonna take a bit of a crew to manage. Straight up, old school, Jack Tar sailing, no different than hundreds of years ago.

I would think that other kinds of stone - that aren't vulnerable to acid - would be just as good as a heat sink for baking.

If you desperately want marble for use in baking, you can always get a marble slab that can be moved away from things that would damage it.

Soapstone for the win. Impervious to acids, stains, heat and cold. Only downside is it is comparitively soft - it will scratch but, if it bothers you, you sand it out, re-oil it (!?) and you are good to go.

High maintenance is all I'll say. They scratch easily, but the scratches can be buffed out.

To keep them looking sharp they need to be rubbed down with mineral oil.

You will break any glass or ceramic bowl you put down too hard, and if you drop cast iron on it you may chip it.

At some point you will want to clamp something, a mill, a cherry pitter, or something to it, and you will be afraid of chipping or marring it.

Corian and formica are far more forgiving and Corian is sturdier.
If you want the granite for a cold surface to work pastries on, look into getting a marble board to knead on. I was taught to not use your countertop to knead on, and always use a floured cloth, a board, or what I do now, use a large pasta serving platter.

Or not - The old house had them and I didn't put on the oil for 10 years. After a short time, it develops it's version of a patina and is care free. Another benefit - if you are a moron and forget to pull something out of the freeze to thaw to supper until you got home from work, go ahead - put that frozen whatever on the soapstone and it will thaw it quickly.

I'm long out of touch with the "Who's Who" of the local sailing school franchises. But, I'll mention that when I was G.M. of one such in Kemah, that the United States Sailing Association organization seemed to be a more squared away operation than the competing American Sailing Association. Either though, can and will get you a valid Blue Water Sailing/Navigation and Bareboat Charter Certification. Neither cuts corners in terms of getting you a solid sailing education, so I'll just tell you to research 'em, interview 'em, sort 'em out and pick the one you LIKE. Or, at least the one you'll think you'll like.

Don't hesitate to change one for the other, just so long as you do so while in the Basic Sailing courses. Once you've stacked up a wall full of certifications, the time and expense of re-doing it all would be daunting, indeed.

Another benefit - if you are a moron and forget to pull something out of the freeze to thaw to supper until you got home from work, go ahead - put that frozen whatever on the soapstone and it will thaw it quickly.

Heh. Quartz is probably the lowest maintenance option out there. We replaced our countertops several years ago and went through all the options back then--soapstone, granite, quartz, and so on. Didn't consider wood at all but wood works okay if you protect it by sealing it and sanding as necessary and don't use it as a cutting board.

On quartz, even if you do have it, not advisable to put hot pots on it directly. Use a trivet as it won't burn but it can crack.

227 Nice granite top on the island in the kitchen. Have now recently used both it, and a silicon mat placed on it, for working/rolling out pie dough. Not much difference, mat took a little less care/flour to keep things non-sticky.

I froze the butter and chilled the bowl and the flour, used only a baker's cutting tool and knife, and a big fork (never touched anything with my hands til the very final stage), chilled the dough for a few hours. It worked. Very flaky excellent crust for 4 small chicken pot pies. I used Italian Joe's (UToob chef) recipe, which subs in a milk/egg mixture for ice water. So that'll be my standard approach to pie dough now.

Do keep in mind, the context of my experience is 2001/2002.

Far as I know, now, Covid might've sunk the USSA operation, outright. They used to be very competitive organizations, and if you're seeing everything ASA, well... like I said, I'm long away from those shores.

Serious response, there's nothing wrong with however you feel about it.

Weddings can be awfully expensive for the couple, and if they need to limit how many people to invite, it makes way more sense to be all or nothing with whatever level of family you are or aren't inviting.

In other words, if you have siblings who are invited, and you're not, the couple is committing a pretty serious social mistake.

What kind of baking? If your doing pastries, marble is good... but you may not want it at regular counter level. I've seen them about 3-4" lower.

I wouldn't do the whole island as marble, because of upkeep. Do a portion, a bit lower, with the drawers underneath containing all your baking supplies. Have an outlet for you mixer on the island. This isn't an island, but you get the idea: https://tinyurl.com/yeh2j37v

OK got it thanks. Definitely distracted tonight. Our second oldest cat (could be the oldest as he was fully grown when he adopted us in 200 appears to be on his last legs and we are very sad. He must be over 15-16 years of age.

365 309 I make my pie crust in a food processor using Kenji Lopez-Alt's vodka recipe. It's never failed and I get perfect crust every time. Super easy.

I make mine by hand. I don't even have to think about it. I've done it for over 29 years, and it's pretty much automatic. It's sort of like making biscuits. Don't think, just cook.

Rhomboid I like to overcomplicate things so I invented a "hybrid" method where I start my dough in the food processor just to break the butter up, then I do the rest as you would by hand.

I routinely get told I make the best pie crust - but I will admit it's also very rich which people love. I use heavy cream as the liquid.
