When I worked in Family Medicine, one of the suggestions I would make to couple who were having a hard time getting pregnant was to take a few weeks off from trying, drink more booze and have happy, romping, fun sex. I just had the best maple creemee (soft-serve ice cream) ever from a local maple shop. In addition to using real maple syrup to make the ice cream, they use real maple sugar as the "sprinkles". Having some serious issues with ribs here. Twice now I have smoked ribs that came from the same package where one turned out perfect, literally meat candy and the other rack in the bag turned out to be a chewy tough inedible mess.
No idea how to fix the problem as they are being cooked the exact same way at the same temp with the same rub but one turns out to be garbage and the other is fantastic. I have not changed anything. I like cacio e pepe but the spaghetti(ni) must be drained well, almost dry.
I also like a similar one, pasta alglio e olio - oil, garlic to taste, usually pepper or cayenne. If you have very hot small peppers then fry those with the garlic. More sweet corn, nuked 14 minutes in the husk for 6 ears, to accompany cheeseburgers on toasted sourdough buns.
What a fantastic way to do corn. No mess and they shuck so easily with almost no silk to deal with. All you do is cut the ear an inch or so away from the stalk end, grab and squeeze while wiggling and the ear will slip right out. Should be noted oven mitts are needed during the operation. ---- I think a lot of casserole dishes fall into this category. You take a bunch of disparate ingredients, grind them up, mix them together and bake them in the oven until golden brown. On the one hand, casserole dishes can look very disgusting. On the other hand, they can also be incredibly delicious, with a complex mixture of flavors and textures. If you like oysters and clam chowder and lobster I highly recommend the Newport Oyster and Chowder Festival which is held in May on Bowen's Wharf in Newport, RI. RI has a lot of oyster farmers and the oysters from each farm taste a little different. You can sample a wide variety at this event and have some of the best clam chowder and lobster you've ever had to top it off.

I usually prefer red, garnacha or Bordeaux if I can get it. But sometimes white is nice and refreshing. This one is a blend of Sauvignon blanc and Malvaise, which is a new variety to me.

Comments on cacio e pepe (which is a wonderful dish):
1. Never use Barilla pasta, it's awful and no self-respecting Italian touches the stuff. Go for Rummo, Garofalo or Molisano. You're welcome. 2. In the video she talks about "risottare" (which didn't get translated). It means literally to make the pasta behave like risotto and involves cooking very al dente pasta in the sauce, adding the pasta water, with its starch, to finish cooking the pasta--it makes the pasta creamy without cream--just like risotto. 3. Yes cacio e pepe seems so simple but it is in fact devillishly difficult to keep the cheese from stringing up--the chef in the video actually mentions this as a possible problem (il formaggio si stringa). 4 The cheese MUST be pecorino romano NOT parmesan--it's a signature dish from Rome, keep that in mind. 5. And for crying out loud, resist the urge to cheat with cream. Italians classically rarely use the stuff and it's been the ruin of famous dishes like Alfredo, carbonara, pesto and God knows what else. I made a batch of tamari roasted almonds.

CBD, if you eat gefilte fish or any of that other nasty pickled or fermented fish, then you can eat surstromming. Personally, I don’t like any kind of pickled or fermented fish dish, whether it be Jewish or Swedish or Japanese in origin. Surstromming does indeed smell bad — although not as bad as the overacting YouTube clowns make it seem — but the taste is fairly standard salty/acidic fish. Not my thing, but not that bad either.

I ordered a set of bitters bottles a couple of weeks ago. I got them, but all three leaked out the threads, despite them coming with a silicone o-ring to make the seal. I figured out that the top of the bottle came nowhere near the o-ring, presumably because the thread on the bottle ended and the cap couldn't be screwed on far enough to make contact. Seems like one of those "made in China" problems.

A few days ago my oven wouldn't light. It's not that old, maybe 8 years old. Turned out, it needs to have the self cleaning 3 hour cycle run on it from time to time, which I've never done since I keep the oven impeccably clean manually.

When making Caesar salad, I put several anchovy filets into the coarser side and make instant anchovy paste. We like anchovies but find the paste distributes more evenly in the dressing. The greatest culinary inventions of the last 50 years has to be the temperature controllable wood pellet grill and the bluetooth constantly temperature monitoring meat thermometer. Between the two perfectly cooked BBQ (brisket, ribs, pork shoulder, etc)can be obtained each and every single time. With no muss or fuss. Unless you're a lame-ass. The lovely and delightful Mrs naturalfake made some absolutely delicious sautéed cauliflower recipe the other night that in part consisted of a nice dollop of catsup in the mix.

It's a simple thing but I've been enjoying sourdough toast, well buttered, then drizzle on honey (doesn't take much) and sprinkle with good cinnamon. I had cinnamon and sugar on sandwich bread toast as a kid but this version is much tastier. A couple of over easy fried eggs and strips of bacon makes a heck of a good breakfast.

A successful experiment this month was making and freezing sous vide chicken for unexpected dinner guests ... I seasoned the chicken with 2 parts Alabama white sauce and 1 part Lowry's seasoned salt ... Actually, it was Todd Wilbur's copycat version of Lowry's but the real thing should work just as well ... Anyway, after vacuum sealing the chicken, I water-bathed it at 150 degrees for four hours, chilled it down quickly in ice-water, refrigerated it overnight, then froze ... Now, for surprise guests, I can quickly thaw and warm the core by submerging in a container of hot tap water -- then quickly grilling (or broiling) to add color and crisp up any skin ... So far, the seasonings and textures of boneless breasts, thighs, and wings have all gotten thumbs-up!

My next cooking adventure will be about cast iron fry pans and dutch ovens. I'm thinking some durable cookware that can be used on the gas stovetop, in the wall oven, on the grill, in the smoker, and over a bed of coals in the firepit might just be the ticket when the SHTF.

Made some India Relish this week from a Michigan cookbook that called for green tomatoes. Couldnt find any, so I used tomatillos instead. Pretty good! It was also the first time I canned anything. It was an easy canningjust put it in a (clean) hot jar and put the lid on top. It was very satisfying to hear the lid click sealed about an hour later! Some morons seem to have it in for maple syrup, but having grown up in VT, it's my favorite.
I made one of my favorite fruit salads today. Whatever fruit I happen to have (usually start with banana or apple), mix with lemon juice, and then take a mix of two tablespoons maple syrup, 1/3 cup Greek yogurt, a touch of salt, and mix it in. Michigan maple syrup, from a cottage vendor a short walk out of town from where my parents live. Amazing place, Ive probably talked about them before. They just have an unmanned little shack next to the road, they put jams, jellies, maple products inside, and a sign with the prices. You take what you want and leave the money. A few weeks ago I mentioned my vacation time spent working in the sugar industry in Natal, South Africa. At the time molasses came up in recipes and also brown sugar. Now I'll tell you about real unrefined brown sugar.
Still at the Sugar Milling Research Institute. Every day we would receive samples of the day's unrefined sugar from each mill. (At one stage it was part of my job to drive to certain mills, chew the fat with the mill manager and pick up the samples. Enjoyed that). The samples were 10lbs or more each, several per mill and there were many mills. Each sample was 'sampled' scientifically by hand, sufficient set aside for various analyses (optical rotation, ash, pH, sucrose, etc.) and the rest dumped into a wooden barrel. Staff was allowed as much as they wanted of this raw sugar to take home. At first great new flavor for coffee and cakes, etc. After a few months, meh! Do NOT get me started about the self-cleaning feature on defective ovens. At this house the oven was a high-end Kitchenaid and if you used the self-cleaning feature AS DESCRIBED IN THE OWNER'S MANUAL it fried a thing on the back of the oven. $10 to replace but you had to pull the oven to replace it. (Same defect on all of the ovens from the same period by the same manufacturer, Whirlpool.)

When making Caesar salad, I put several anchovy filets into the coarser side and make instant anchovy paste. We like anchovies but find the paste distributes more evenly in the dressing.

Sugary cereal is the worst way to eat sugar. I mean, dump it in a bowl, pour milk, and tuck in if that's what you want, but don't add that garbage to some other dessert and imagine you're being clever.

When I was still a bachelor in Cambridge, MA, I would get home about 5:30 - 5:45, and a typical dinner would be: wrap some frozen drumsticks in foil after doing the Ska-n-Bake crumbs and stick them in a toaster oven for 60 minutes. While that was cooking I would grab a large Cadbury milk chocolate bar (made in Ireland) and a tall glass of milk, go to my room and watch Start Trek at 6pm. Those bars were thick, not the anemic ones of today. So I had my dessert before the entree. I would eat the chicken with a can of veg. and usually a fresh tomato. Other times it was pasta, either freshly made when I had time or leftovers.

Nope. Typical table sugar is called sucrose. Sucrose is 50/50 fructose and glucose. They are both sugars, but are *not* chemically identical. 151 ... The key to using cast iron is seasoning. The best method I found is by Cowboy Kent Rollins in his YouTube videos. I've used it on about six pieces and they are essentially nonstick and clean up with hot water. Also, unless I am satisfied with the smoothness of the cooking surface (new Lodge is not smooth), I sand it with regular sandpaper before seasoning. Definitely worth the slight effort.

Comments on cacio e pepe (which is a wonderful dish):
1. Never use Barilla pasta, it's awful and no self-respecting Italian touches the stuff. Go for Rummo, Garofalo or Molisano. You're welcome. 2. In the video she talks about "risottare" (which didn't get translated). It means literally to make the pasta behave like risotto and involves cooking very al dente pasta in the sauce, adding the pasta water, with its starch, to finish cooking the pasta--it makes the pasta creamy without cream--just like risotto. 3. Yes cacio e pepe seems so simple but it is in fact devillishly difficult to keep the cheese from stringing up--the chef in the video actually mentions this as a possible problem (il formaggio si stringa). 4 The cheese MUST be pecorino romano NOT parmesan--it's a signature dish from Rome, keep that in mind. 5. And for crying out loud, resist the urge to cheat with cream. Italians classically rarely use the stuff and it's been the ruin of famous dishes like Alfredo, carbonara, pesto and God knows what else. Crew that installed my new ovens and guy at design center that sold them to us all said don't use the self-clean billion-degree feature. Seems reasonable guess, though I don't know of course, that heat would be the factor that killed the old ovens (control board - no moving parts - died).
Of course manual has zero recos re cleaning apart from use the billion-degree feature. Think I'll call the company. Like so, so many consumer products now - poorly thought through, very poor or no information or instructions, lots of other often small flaws. I kid you not, that exact same thing happened to me. I was feeling pretty down and pretty anxious. Had to go to the local landfill and while I was there, emptying the truck, out of nowhere this random old man walks up and just starts talking to me. Tells me things are bad out there in the world, but don't lose faith. Then tells me his wife is sick with Covid. Told him I would pray for them both and he looks at me and says, 'will you?'. It wasn't a questioning of my intent, but a request that we pray, right there next to an open dumpster. Which I did. With a random old dude. He said thank you, that was a great prayer and I left. After that, I didn't feel down or anxious anymore. Gave me chills because I knew who sent him. Never saw him walk up. Didn't see him leave. Once I got in my truck he was gone. When they cracked the case of C-Rats open we fought to grab anything but ham and lima beans. I swear there were times I was so hungry I'd scrape the slop off and dig for the ham.

Two things I would not eat were the ham and mother fcvkers and the green eggs and ham. That was some nasty stuff. So, when you were told an allergy menu has food you can eat (the last time you didn't eat at this restaurant, but stopped by to see your sibling) and then you go eat there and find out there is food you can eat - ribs or Korean ribs. That's it. No sides, no salads, no fries - just ribs.

A former co-worker made me a large container of her Louisiana soul food spaghetti and gave it to me yesterday when I gave her and another former employee some items from my mom's estate.

I kid you not, that exact same thing happened to me. I was feeling pretty down and pretty anxious. Had to go to the local landfill and while I was there, emptying the truck, out of nowhere this random old man walks up and just starts talking to me. Tells me things are bad out there in the world, but don't lose faith. Then tells me his wife is sick with Covid. Told him I would pray for them both and he looks at me and says, 'will you?'. It wasn't a questioning of my intent, but a request that we pray, right there next to an open dumpster. Which I did. With a random old dude. He said thank you, that was a great prayer and I left. After that, I didn't feel down or anxious anymore. Gave me chills because I knew who sent him. Never saw him walk up. Didn't see him leave. Once I got in my truck he was gone. Sorry for posting on the food thread but really wanted to share that. I have two Viking brand carbon steel (pre-seasoned) pans from Sam's club. Very non-stick and work for nearly everything. $30 for both. Yes, you read the right. They are made in China , though. Also have two Made In steel pans (French). Not too expensive either. $60-$70 I think.

My KitchenAid Superba double oven took itself out with a self cleaning cycle. Cooked the master board, but good. First and Only time I used self cleaning. Of course, this happened just a few weeks past its 10yr warranty expiration.

Favorite thing I can't eat anymore: Old time flapjacks: The night before mix 1 cup starter, 1 cup water 2 cup flour, an let expand over night In morning mix in quarter cup dry milk, 2tsp salt, 2tsp sugar, Third cup melted shortening/butter/oleo, Two eggs (optional 1tsp baking soda) Pour the mix to cook on hot griddle. Serve with butter and real maple syrup. Note: if you've got a live starter you are feeding daily, you can use the evening discard as the starter for the mix.
