At least I haven't set up a slide projector in the living room! Now we get to the good stuff. This is the second night's appetizer (the Frogs call them "entrées"), and it was a doozy! Speaking of organ meats... This is a dish called ris de veau, which is the thymus gland (sweetbreads) from veal. I have never seen it served as a chunk in the United States; it is usually cut up into small pieces. That's an amuse-bouche we were served one night. I looked at it and thought, "Hmmm...the waitress screwed up and gave us someone's dessert order: Crème Brûlée." We spent part of the time on the French coast, mostly in Normandy. And when on a sea coast, my thoughts turn to oysters. Lots and lots of oysters! Say what you will about the French, but they appreciate a good oyster, and these were wonderful. Did I mention that I like oysters, and that the oysters in Normandy were great? I hadn't been to France in more than a dozen years, and I was curious how we would be treated, since 1) we are American and don't hide it, and B. the French are often notoriously smug, dismissive and rude with foreigners. But I was pleasantly surprised by how friendly most people were. I imagine that a difficult few years has focused the minds of the French and helped them realize that alienating foreigners who want to spend money in France probably isn't a good idea. And clearly English is much more popular as a second language than even a few years ago. We also tried to speak French whenever possible. That might have helped, even though my French is horrible. And a last and serious note. We visited the Normandy invasion sites, including The Normandy American Cemetery and Memorial in Colleville-sur-Mer. I did not know what to expect...part of me assumed that it would be diminished and disrespected. But I was very pleased to discover that not only was it physically in even better shape than the last time I visited; the other visitors were respectful and focused. We saw a large group of teenagers, all of whom were carrying small bouquets of flowers and a slip of paper on which was obviously the location of a particular grave. I did not probe, but the idea that a bunch of kids were going to honor some of the men who gave their lives in the summer of 1944...65 years before they were born...gave me pause. Is it possible that there is hope? Romaine lettuce that is green, instead of the white crap they sell that has never seen a photon, pork rib roasts from the front end of the pig where all the good and fatty meat lives, carrots that don't taste like stalky chalk, spare bottles of Van Winkle Special Reserve 12 Year Old Bourbon, an herb garden that actually produces herbs (but no basil!), well-marbled NY strip steaks and elk backstrap to: cbd dot aoshq at gmail dot com. Made Carne Guisada for today. A sort of Mexican stew with beef (cut up chuck) and a gravy made with onion, garlic, bell pepper, tomatoes, tomato paste, freshly ground cumin, chili powder, & beef stock.
The trad way to do it is to slow cook the beef in the gravy for several hours. But I don't always get the nice tender beef chunks. So I pressure cooked the beef and added it to the gravy. Tonight, the grocery sales decided what we're eating. It was fresh fish night, and I can't pay more (mentally) than $10/lb for salmon filet and $5/lb for swai. Well, salmon was $12.99/lb and swai was $4.99/lb, so swai it is.
I took my Polish guest to the Russian grocery here (now on CC's named the European grocery - yeah, they know there's a war on) and we got the tastiest Bulgarian spicy zucchini bruschetta. So, we're going to Easter Europe for dinner through Greece and having the swai coated in that bruschetta and some olive oil and s&p and baked. Then, I made a homemade baba ghanouj with some oregano and parsley and lemon zest (upping the Greek side). We're gonna dip a Russian rye bread and some roasted Chinese cauliflower in it. And then have my blueberry dragonfruit salad to use up the last blueberries from my farm box. Later this week, I am going to make a chocolate bundt cake (box) with a tahini peanut butter glaze (homemade) to use up the last of the tahini b/c my jar tells me it's time and I have the next one. I have heard nothing but nice things said about Normandy -- even by Quebecois, whose French is mocked in Paris. The cheap tours go only to Paris and the Riviera, but the inexpensive great food and wine that first made France famous are in the provinces. Much like here, there is a whole 'nother country there (maybe two or three, in France's case) that is not in the current movies.

But even I couldn’t stand tourists while there, And yes especially American ones, lol. Those stereotypes with the white sneakers and baseball hats and favorite sports team jerseys are, well annoying as fuck. Also now there is a Starbucks on every corner there. The best memories I have of France in 1975 were the cheeses and baguettes. probably because I can't get them here.
During my 3 month stay with a French family in Blois, I was introduced to cauliflower, leeks, asparagus, artichokes, arugula, endive and fresh baby carrots. At that time, none of that appeared in out kitchen. For Mom, most vegetables came in cans, and they were mostly corn, green beans, peas and carrots. I remember reading that the Normandy inhabitants were amazed at the Quebecois Canadian soldier who came in after D-Day, telling them "you talk just like us!!!" Apparently the Quebecois retained a Normandy accent, not a Parisian one. I was lucky enough to take a trip to Yorkshire some years ago with friends, and we were all amazed that the Yorkish accent was much easier and more familiar to American ears than the more well known London accent is. Those oysters DO look amazing. I saw that one batch had some mignonette sauce on the side. Being a southerner, I only knew ketchup-based cocktail sauce for many years...and then I discovered mignonette! I don't want it every time, but it is absolutely delicious with good oysters.

I spent some time in France on business a decade ago, mostly in a small town in the south central area near Poitier. They had an 'American' restaurant. I happened to be there on Thanksgiving, so I went with a colleague from Germany. One of the funniest things I ever saw. The food sucked, as we pretty much expected, but the decor was all 'cowboys and indians' wallpaper and statues, and let's just say that political correctness had not yet made an appearance that deep in the French countryside.

This will sound weird (because of the location) but one of the best meals I've had was at a French restaurant in Walla Walla WA. I had those crispy whole potatoes with calves liver in cream sauce. It was very very good.

The okra flower is quite amazing - it's a beautiful light green. It made me notice that almost all the vines have flowers that are the color of what they produce - pumpkins, squash, etc.

American food is OK, because it's a mishmosh of everything - but I remember that on my trip to the UK a few years back, the best meal we had the entire trip was an ordinary Hotel Buffet at an ordinary Hotel near Heathrow - but it was 3 big tables of dishes prepared by honest to god red-dot Indians straight from India - damn, that was incredible. The best buffet meal I've ever had, or ever will have.

Since we're talking seasonal produce, I had an oopsie turn into something really good this week.
I decided to roast tomatillos for the 1st time (since my spouse didn't want to get jalapenos from my farm box, so my normal tomatillo salsa prep was out) to go with a heavily discounted Aldi's carne asada. So, I roast 6 of them (about 1lb) with olive oil and s&p on parchment for an hour (per someone's 5 star rated technique), and they come out just hammered into almost a sauce. Not deterred, I microwaved 2 Aldi's rice bags (1 basmati and 1 jasmine b/c why waste the more expensive rice on an unknown) and tossed it in with a sprinkle of sugar, a bunch of hot sauce, and a chopped fresh tomato and stirred. Then, I threw it back in the warm oven (turned off) and left it for 15 minutes while I finished the carne. Damn if that wasn't the perfect side for the dinner that night (the rice soaked it all up, but didn't go mush or over). Everyone demolished it, and now the oops is on the "we can do this again" menu...maybe with some finishing cilantro on top next time - or some jalapeno... So, the delightful and fine-cooking Mrs naturalfake fixed one of her great fry-ups with 4 kinds of fried catfish (regular, spicy, curry, Japanese) and fried okra with calamari cuz the squid was fresh too. It's a good way to judge if the food, when done right, is to our liking or not. But the great thing about American foods is that they taste, with some lesser degree of variances, the same at Dave BBQ Palace at some roadside in Peoria, or at "Blue Smoke" in NYC (which wasn't really that good, honestly for all the hype). Finally! I made a pot of chili that tasted like chili. My past attempts, trying desperately to keep the spiciness down, came out like a watery hamburger and tomato soup. This time I used the Cowboy Kent Rollins recipe, chili peppers, chili powder and all.
It was about the hot spiciest thing I've eaten in many years, although for most folks it would be considered mild. But it was delicious (yes, I like kidney beans) and the slight sweetness of the chilis came through. But the great thing about American foods is that they taste, with some lesser degree of variances, the same at Dave BBQ Palace at some roadside in Peoria, or at "Blue Smoke" in NYC (which wasn't really that good, honestly for all the hype). It's pretty hard to fuck up, and the combinations of foods all spell 'Murica' no matter what order they're served in.

And I remember driving in Central Texas, in the 80's, about an hour out from College Station - it was dinnertime, and I notice this rundown looking concrete block 2 story building, decrepit looking , in the middle of nowhere - and yet there were well over 100 cars parked around it, and a line stretching far out the door. So I decided "well that's unusual!" and it was suppertime, and on a lark decided to check it out. When I got in, I found it that it was place that raised it's own herd of cattle, only served what they had slaughtered that day, and gave you (at a cheap price!) a huge thick steak that hung over the edges of the big plate they served it on. I went out to mow. When I came back in, Hubbymayhem was baking brownies from a recipe. Not a box mix, A for real recipe. He had already made the bean salad. He is now putting burgers on the grill. He says tomorrow is steak and potato salad.
He is the grilling guru and he is the one that makes bean salad, potato salad, Cole slaw, and persimmon pudding. I don't make those. He also makes the beer bread or banana bread. I do the zucchini bread. He has also been known to make red velvet cake for me. My mom used to make that for my birthday. There are box mixes for it but Hubbymayhem does it from mom's recipe. I never liked it as a child, but my mom loved it. Well, a while ago I got a craving for it and found a copycat recipe for the famous pimento cheese that they serve at the Masters golf tournament. I really liked it but thought it was slightly oniony for folks that don't like onions. Of course you could always reduce or omit the onions. CBD suggested I participate so here is my cooking adventure: I made a soup that was pretty tasty.
Pile (6) of pork steak on sale for $1.59/lb. Grill them all. Cut off the bone portion, separate most of the meat from the bones and set aside for the soup. Stick the bones in a pot of water, add splash of acv, and simmer for a day. Remove bones - Nice pork broth. Next day, bring broth to high temp, add cut up potato and finely cut kale. Soften the cream cheese until it can mix with the mayo. Add the spices, pimentos and onion to this and mix well. Finish by adding the shredded cheese. Refrigerate for at least an hour. Well, just had a happy cooking accident--tomorrow is my b'day and I was splurging on cooking myself a huge smash burger, along with onions and some sautéed red peppers from last year's garden.
I had put the red pepper chunks into the strainer to thaw, not seeing that there were already about 1/4 cup of blueberries left from what I rinsed yesterday. When I dumped them all into the cast iron skillet with chopped onions and olive oil and Kerrygold butter--red white and blue! When almost done add bag of mixed veggies for some color and the cut up meat from the bones. Oh, and add some sliced mushrooms Nice. Good way to make additional meals from one meat purchase. Also, if you're the bride and you only have to feed 20, do you want to do anything, or do you want to place a small catering order at a restaurant or grocery that does everything for you...or even a personal caterer. You give them the menu, and they just do it and deliver it. I was lucky enough to take a trip to Yorkshire some years ago with friends, and we were all amazed that the Yorkish accent was much easier and more familiar to American ears than the more well known London accent is. It sounded like some Northern US accent that you couldn't quite place. Also, if you're the bride and you only have to feed 20, do you want to do anything, or do you want to place a small catering order at a restaurant or grocery that does everything for you...or even a personal caterer. You give them the menu, and they just do it and deliver it.
If it were me, the disaster of my wedding morning (thanks to my sis) made me glad I wasn't actually lifting a finger for my wedding or reception that day. Same deal at a local, ordinarily-destination good Cheesesteak place that was bought out by an Asian couple. One bite and straight into the trash. I agree with you - a good Texas BBQ place is going to be one of my top go-to places ---- Back in 1974 I stopped at a place off the highway in Texas that advertised a 72 ounce steak. If you could theeat it with one bake potato and a small bred roll then it was on the house. The waitresses had menus in hip holsters. Anyone know of it? I don't remember the road but we were coming from CA and via the Grand Canyon. I think we went north then into OK, MO (St. Louis), probably passed close to where I am now in IL, on our way back to Cambridge MA.
