Food Thread: Get Some Tail...You Know You Want Some

I love tuna, and aside from overdone, I'll eat it any way you want to cook it, including not at all. Yeah, tuna tartare is a great dish, and if you can find high quality tuna I absolutely recommend trying it.

But finding good tuna for grilling is one thing...finding good tuna for eating raw is quite another thing. The connective tissue in the tuna meat cooks nicely, but when it is raw it can be unpleasant, adding an unappealing texture to a pretty expensive dish.

So look carefully, be picky, and try to get the tail of the tuna if you can. That seems to be the best piece for tartare. If we have any professional piscine anatomists around I would appreciate an explanation...

As I have complained many times in the past, I live in sort of a food desert. Not that there isn't an abundance of restaurants, it's that most of them are crappy. And stuff that one would assume will be good...just isn't. Pizza for example. A plain old NY style pizza pie is vanishingly rare, with most of the examples around here too doughy, too thick, and not cooked correctly.

That, plus being low-carb makes good pizza a fond memory. But our new neighbors (from Houston!) tried a pizza joint just a few minutes away that seems to be the best around. And it's been in business since before I arrived, which is a good indicator of my stupidity.

The moral of the story (in addition to not listening to me for pizza advice), is that there may very well be hidden gems in your neighborhood. I'm not talking about a wannabe white tablecloth clip joint; I am talking about the little mom-and-pop pizzeria or curry takeout place or the tiny little taco place inside the dry cleaners or...

You get the picture. Most of these places are inexpensive, they are probably family run, and there is a reasonably probability that you are going to get a reasonably good meal that won't break the bank.

In this current climate of overt government hostility toward small business, I think it makes more sense than ever to forego the big chain meals and try something local. Sure, it might suck, but you never know!

Armadillo Eggs sound ridiculous, completely over-the-top, and I would eat seven of them.

Thermoworks makes some great stuff, and I have recommended their simple cooking thermometers for years, but they are obviously trying to sell their products and are always going way overboard when it comes to the temperatures of things. This recipe simply doesn't require careful temperature regulation. But that doesn't mean I wouldn't eat it...who is going to make this for dinner, and what should I bring?

And speaking of over-the-top recipes...here's another equally ridiculous one, and yes, I would eat these too. But that one anemic slice of cheese is just embarrassing. It requires at least two, and I wouldn't argue if they sneaked in a third.

Hi, Birkenstock Cowboy here with a quick easy dish for four.
All ingredients from our local Dollar Store. Your Mileage May Vary.

Dollar Store Baked Penne
Feeds Four

2 cups Penne cooked .50
1 Jar sliced mushrooms 1.00
1 7 oz Jimmie Deans Sausage Links 1.00
1/2 jar diced garlic .50
1/2 can Diced Tomatoes and Chilies .50
1/2 can Garlic and Herb Tomato Sauce .50
1/4 cup Grated Parmesan Cheese .25
1 package Pepper Jack Cheese 1.00

Total 5.25

Brown Sausage and dice while cooking pasta.
Drain Mushrooms, Garlic, and Diced Tomatoes.
In a covered dish coat bottom with olive oil, add pasta.
Layer Sausage, Diced Tomatoes, Tomato Sauce, Garlic and Mushrooms.
Sprinkle Parmesan and top with pepper jack.
Bake 30 minutes @ 350F.
Cool 10 minutes.
Stuff faces.

My only comment? Double it. That way you don't have half cans of stuff to put away.

Seriously, this is fun food. Simple, hearty, big flavors, and it doesn't require much in the way of technique or preparation.

One of my young relatives moved out of the area, and her Guyanese nanny had given her a large container of chicken curry with Guyanese Roti, an Indian bread with new world twist. Luckily I got the curry and the bread, because it was fantastic!

The curry was just great stuff, but the bread was something new...sort of a take on pita, but with ghee in the dough to add richness and pliability.

Damned fine eating.

Now I just need to convince my wife that we need a nanny.

I do this too. I also put shredded dry cheese on it while it's on the grill. Sometimes I'll add breadcrumbs. They can get a bit burnt, but that's the best part.

I like the Indian grocery near my work. It's just a grocery store, with Indian stuff.

They don't light up a bunch of incense and have plastic elephant gods by the counter or a big pot of curry stewing where they smell like a bunch of turmeric eating curried bastards.

24 Halibut is outstanding fish. Very easy to overcook, however.
I like a mango, lime, sweet onion relish. Lots of fresh ground pepper. Watch the salt until plated. It can cause the fish to be tough.

26 Best (worst) part of curry "takeaway" in the UK is the ever present top layer of oil after you peel back the paper lid on the aluminum tray. First piece or two of roti or naan should be used to soak up all that goodness before you pour the tray over rice.

Local UDF was taken over by Indian owner. Stopped in there and the floor was filthy. I don't mean "needs a mopping", I mean hasn't been cleaned in years. Lots of heavy dust atop dry goods and drinks in the cooler too

Curiously, I buy a lot of produce from the 99¢ store (potatoes, onions, bananas, cauliflower, peppers, bagged salad, lemons, berries, watermelons, etc.) but I have only gone once into the canned goods, bottled goods or pasta area.

Maybe I'll go down the aisles next time and really look. Maybe my problem is that I go to the 99¢ store and not Dollar Shrub, Dollar Major, or Sibling Dollar or whatever those other stores are called.

In my area, the 99¢ Store is the only one that carries fresh produce.

I can't stand any form of white bread. 60+ years ago when my mom packed my school lunch I refused to eat a sandwich if it was white bread and I continue to refuse it to this day. I would only eat crackers with lunch meat because wheat bread was not widely available back in the 60s. I discovered wheat bread in the military when I left home.

Personally, I'll get something from Subway if I'm in need, but for all of the sodium I find the food bland.

Taco Bell got hit with a similar scandal when someone secretly tested their ground beef and determined that it contained a significant amount of "textured vegetable protein." I think all fast food restaurants go through this cycle of cost cutting fillers, clickbait bad publicity, class action lawsuits, and relaunched "better than ever" ingredient lists. It's especially bad with franchises that utilize local or regional suppliers too.

77 This year my blackcurrant bushes produced almost 6 lbs of berries! I was going to make jam out of them, but nobody eats it except me, so instead I made blackcurrant syrup, otherwise known as Cassis. It made just over 3 quarts, which I canned into jars, and put the remaining 1 cup in a fancy bottle with a cork. It's about the consistency of maple syrup, and much better than the store-bought variety. It's got a lovely tartness to go with the sweetness. So far I've poured it on ice cream, but I think it would make a great milkshake too.

I used to go to HI every single August/September for over a decade - half work half seminar half fun. The work part sucked. But always swing by the market which had easily a dozen types of poke (some sort of tuna), and get a couple of containers of the stuff for lunch/dinner.

I could get used to living in HI, even with the oversized bugs. It would be almost impossible to starve there, you can catch or spear your lunch in about 10 minutes and pick up mangoes & papaya falling on the ground along the road.

160 McIlhenney has a long history with the military, at least as far back as the Viet Nam war they were sending over cases of Tabasco to the troops gratis. They even had a C-Ration "cookbook" of sorts published. In later years the MRE rations had a small bottle of Tobasco provided in the accessory packet. That went away for a while, and after a brief hiatus I heard they are including the Tobasco again. I expect they aren't making bank on this, for that reason alone I kind of like to support Tobasco. Sure, there are "better" hot sauces out there, but it does the job.

When I was working on a failed natural product synthesis that could have turned any starch into bread, I would look at the Journal of Food Technology. Uhh ... Well I was in Kansas at the time, but it was an eye-opener.

ObSF Doc E.,E. Smith of the Skylark and Lensman series was a food chemist with a PhD from George Washington University. There was not a lick of recognition at GWU about him.

217 Suggested low alternative to breadcrumbs: crushed (original, un-fecked with) pork rinds. I've used this for pork chops, chicken breasts, and, yes, of course, bacon. For the chicken breasts, I use ~1 cup porkk rinds + 1/4 cup pParmesan cheese. Dip the meat of choice in a beaten egg (plus cream or milk), dredge in pork rinds, place on rack in baking pan. Bake @ 375F for ~30 minutes. Quite yummy.


The bacon is essentially bacon crusted bacon. I have pictures of the bacon on my cell phone, but I seem to be unable to e-mail them. If you wish, I will provide them.

He can only propose legislation, vote for or against legislation and make public statements on issues. He's been doing all three as best I can tell. He has the same issues as Trump had. No real support from the GOPe.

388 Here is the thing I have found today. My contention regarding demographics is correct. There is a massive underlying sea change ready to move, if only someone or a group can steer it in a direction.

The level of anger over the election and the events since the election (including the J6 political prisoners) is off the charts. This would naturally turn into a Republican landslide in 2022, but only if the GOP adopts and advances the agenda of this massive demographic. But as has been pointed out, this is unlikely to happen because what this group wants is not what the GOP leadership wants.

But this group is not accessible to the Democrats, they hate the Dems for what they are doing.

So what is going to happen? Does this majority give up and go home? Does someone else come along and motivate them into some action? Do they start marching in the streets like the protesters in France and the UK? Does the lower levels of the GOP in places like Florida and Arizona take over the national party and then steer this group?

Hell, I have no idea what is going to happen. But the data is there, we are getting close to a boiling point.

404 Some friends organized a FB restaurant group during covid. Every Wednesday we all ordered from a restaurant in town--after they had agreed on that day of course. A manager at one place seemed to be almost crying with joy as I ordered.

Now we're doing it for new ones rising from the ashes. It's really worth it--they are so grateful for the business!
