I'd use em. Freezing is supposed to be a decent way to preserve herbs. If they aren't gross from freezing and then thawing they should taste fine. But I just buy dried herbs so this is just spitballing.

You can use the leaves; not much different than drying them for later use. As long as they are not mushy, they’re good. The plant may recover from the roots in the spring so don’t be too quick to rip them out…

I planted my rosemary about six years ago. It has survived heat, drought, snow, ice and sleet. It is as robust as ever. The sage too, although not as hearty.

I tried using previously frozen fresh rosemary last year. Not real good IMO. More bitter than I'd expected and slimy.

My own first world problem is dad is on a random schedule for when he thinks its time to sleep and time get up (and mostly nap in his recliner.) Its not a huge deal when I'm WFH but he's probably going to have to suck it up for getting him to appointments I made with his audiologist and eye doctor. Hopefully both will help. I miss him keeping his schedule of watching his old westerns and a 24 hr cycle.

I have a huge rosemary plant outside my back door Haven't been able to kill it in 10 years. Also my client a med grill a few blocks away has them in pots outside his door. I put on some rosemary eau de toilette just a couple days ago

I have stripped off and dried rosemary "needles" many times. Didn't know there was any other way to keep them. You can crush them with a pestle. It gets messy if you try to chop them with a blade. The dried pieces really fly. They smell good, though.

My wife had a rosemary bush in a pot when she moved in that we managed to kill by forgetting about it and it dried out.
This fall, she got a bouquet of flowers and lo and behold, there were rosemary sprigs in it for color. I snipped them off and rooted them in water, and planted them in some pots. So far this winter they have been growing. Eventually I will be finding places to plant them Rosemary, Lavender, Basil and Thyme can be rooted from sprigs you get from the florist, or from the grocery store (or your neighbor's front yard I suppose) Posted by: Kindltot at January 08, 2023 02:27 PM (xhaym) 61

We dried our herbs at the end of the season. There's still a lot of sage and rosemary, but the basil is about gone. TBH it did not do very well this year anyway. Tried to dry chives but apparently did something wrong. They ended up brown. Next time they go in the dehydrator.

I've got about a half-ounce of fresh bud to dry out and pick the seeds from (going to plant them in the Spring). Not sure what I'll do with the bud itself. We dried our herbs prior to getting our dehydrator by hanging them upside down off a string in the den, over the fireplace since it wasn't being used at the time. A couple weeks later they were ready to be culled and put in jars/bags. Not as messy as it sounds. Plus when we vacuumed up the leftovers the machine smelled great for awhile... leaving a fresh herbal sent in the house for weeks after.

I actually have a little rosemary tree from TJ's that is limping along by my sunniest (which is not very sunny) window. I'm hoping it can hang on until spring when I can plant a new one outside. Mine never overwinter well.

If you establish an herb patch as a door garden, it will always smell good at your front door. They make various kinds of little flowers through the season, are always available for fresh cooking ingredients, and are easier to clear out at the end of the season than most flower patches. Remembering to cut them and lay them out for drying is just a bonus.

I think you mean "hardy" plants, but I get your drift. I put my plants through what I refer to as my Darwinian torture chamber. If they survive, they're my friends. 71 I've got about a half-ounce of fresh bud to dry out and pick the seeds from (going to plant them in the Spring). Not sure what I'll do with the bud itself. At the moment, after some waltzing and figure dances last night, and power walking up the hill 4 times this morning, I could really use a belt (to quote Sherman T. Potter).

I live in the Philadelphia area. Left a rosemary plant out on my patio all winter last year. Come spring, it had some little green sprouts so I planted it in a big pot. It turned into a bush by the end of summer.

Hahaha! Yep. Every year, I want Candy Corn plants and my husband would get them for my birthday...he would tell the kids, "Okay, we're going to get Mommy her plants...we know they're on plant train to..." The year he passed away, I had managed to keep them alive until the following spring. Since? The Black Thumb award remains in my possession.
