Food Thread: Getting Handsy With The Dough

Hands are a cook's best tool, and there simply aren't enough tools in the world to replace every process required by most cooks. Sometimes you'll just have to touch the food!

And that's okay with me. I enjoy using my hands for cooking...I think that's one reason why baking bread is fun, and why I don't have one of those newfangled bread machines.

It's not just bread that requires all of your fingers and toes. Spatchcocking a chicken or trimming a steak or slicing vegetables or hundreds of other simple actions in the kitchen are quicker when we use our hands. Sure, I can pull out the food processor and slice that tomato, but why?

And using one's hands provides lots of useful information about the state of the food. When I salt a strip steak, I pick it up and sprinkle the salt from a foot or so above while holding it in the other hand. I can feel whether the steak needs to be trimmed of that sometimes thick tendon on the outer edge. Or when I slice a tomato and it feels like a baseball under the knife, it's going into a sauce rather on the plate with some mozzarella, basil and a drizzle of olive oil.

But the best is baking. There is nothing quite like handling dough and feeling it slowly change as one kneads it, waiting for the right texture and stretch for the perfect pizza or a fantastic sourdough boule.

And...it's fun. I may be 29, but I still get a kick out of the simple pleasures!

I had this sauce recently and enjoyed it enough to buy several bottles as little gifts for the brats. But when they saw the brand they said something like, "Wow, you are such a loser. Everyone knows about this stuff!"

I have been Hot-Sauce Shamed!

In my defense, this stuff was a SoCal sauce, and I lived in Northern California. But it's good stuff...hot but in control, and with a very nice complex flavor.

There is a lot of meat on a deer that is just okay, so recipes like this allow hunters to use the entire animal, and I am all for that! My best chili was made from the last bits of venison from the last deer I ever shot...too many years ago. But it was great!

A good potato bun (commercial of course) is pretty close to the Platonic Ideal when it comes to hot dog buns for classic American hot dogs. But what about the bigger and thicker sausages that are just as good, but don't fit in those little buns? Enter King Arthur Flour's recipe for a "Chicago Red Hot" bun.

It was pretty easy except for the last forming of the dough. But they got better as I figured it out, so the next batch -- and there will be another! -- will be easier.

The texture was just right for the more substantial bratwursts and weisswursts that we had to accompany the classic...an American beef frank with skin, so everyone in the neighborhood can hear the snap!

This looks like it has definite possibilities! Muscovado sugar sounds like brown sugar to these non-Brit ears, and the measurements are metric, and that's sort of soccerish, but still, meringue on top of a brownie can't be a bad thing.

29 for a potluck I made shoo-fly pie, it is a wet-bottom molasses tart, that is keto unfriendly in all its elements except the one egg.

And I mentioned before that I am malting oats to use in baking. It is a learning experience, to figure out when the oats are sprouted enough and when they are dry enough. However it is not hard, it like making bean sprouts. I only make a couple cups at a time.

One of the things I have been fighting with for years is that my bread is always heavy and chewy, which is good some ways and bad in others. I am working with two changes, one to make sure the dough is warm all the way through, and the malt. Warm all the way through makes the loaf consistent all the way through when baked, and the malt seems to make a tighter crumb like a commercial bread, but not tough. It seems to relax the dough like adding potato flakes, without making it too soft.
The best extraction at the moment appears to be cold-steeping the malted grain, though I make "barley" tea with it and drink that all day when working so I always have boiled malt if I want it.

That's what me and the Misses do. I make a 3 pound roast with carrots, taters and onions. Then cut up everything the next night and fry it up in a skillet with a dollop of Butter.

They also have the one piece lids like you get on the commercial jars of spaghetti sauce that also take the standard mason lids. Those are not hard to use, but I will be happy to give you any advice I can.
The one piece lids that fit a mason jar are size 70-450 HI HEAT and have the plastisol sealer. You can get the ones with the pop button on the top for extra sure sealing. You can get them up to 1000ct boxes.

Keep those suggestions coming. Are there ingredients that would suggest a breakfast rather than a dinner hash? I would think an egg for the breakfast, and the celery for the dinner but its hash so why not put all that in either?

Fun! I am loving being out and about doing normal summer things -- and not seeing masks or that scared, anxious look people used to give you if you got too close. We went to our favorite seasonal ice cream place by the beach yesterday, so normal!

NL, Have you ever tried making bacon from pork belly. it's delicious. Or slather that belly with a vinegar based BBQ sauce and cook it for a couple of hours at 325. it will render the fat and get a little crispy. it is really delicious that way.

If you like that, check out the other series that Sue and a male cohost/food critic do. The Supersizers Do (fill in the blank). They spend a week in costume living a particular period in history and eating the typical cuisine. It's hilarious. The Regency and Victorian shows are particularly good. Should still be on YouTube.

I had beef tips with gorgonzola and noodles at a place years ago that was quite good. I think the sauce was rich beefy mushroom gravy and the noodles were tossed, but not drenched. Then cheese crumbled on top.

My wife and I binge-watched that show awhile back. While there is some drama, at least the hosts aren't assholes to the contestants.

We absolutely loved Noel and Sandy (didn't care for the original comedy relief).

And finally, look up the Studio C parody of the show on YouTube. With the exception of Paul being to skinny, they absolutely nail it.

Muscovado sugar is sugar that still has molasses and has not yet been refined to white, where "brown sugar" in America is normally sugar that has been refined to white, and then molasses added back in to make it brown. Different texture, slightly different taste, but will substitute one to one.

The "caster sugar" the meringue brownie calls for is usually called "Superfine sugar" on this side of the pond, and is just easier to dissolve into the meringue than regular, larger-granule sugar.

And that sounds like an absolutely lovely recipe to try. I wonder if I can talk my love into a trip to the British import store, under "I have to get these ingredients", or if he'll be wise to my plan and merely point me at the baking aisle of the local grocery store?

Heh. There's one cove here at Ky Lake that we call E.Coli Bay. 10 years ago with low rainfall they closed the cove due to high E.Coli levels. (Rain stimulates the water preventing that shit.) That's where I figured the houseboats were emptying there shitters.

Disable Javascript on the main page. You'll see how fast it loads then use the Comments link directly to read the articles. They load fast too. Notice that articles with comments are hosted on acecomments.mu.nu so disabling JS on ace.mu.nu doesn't affect articles with comments.

I haven't checked the source code of the main page but I suspect it's bloated with JS junk (aka trackers).

187 I make my own caesar salad.
Large wooden bowl,garlic,single egg, lemon, black anchovies(never white, they are disgusting)flat or rolled, worcesteshire and EVOO. Need a small wisk.

Cut the garlic in half and rub around the bowl. Drop the egg into boiliing water for 1 minute. Crack the egg and drain the white off. Drop the egg yolk into the bowl. Cut the lemon in half and squeeze into the yolk while wisking. Few drops of Worcesteshire and then drip olive oil while whisking. I usually put a couple of anchovies in and whisk them into the dressing. Sauce will thicken up a bit.Add romaine, croutons, parmesan, black pepper and anchovies and using your hands(best way), mix it all up.
The best Caesar you will ever eat.

Jalapeno based sauce. Pistola mash. Mostly garlic. Added cap. We made a concentrate meant to be diluted and sold to put in noodles. The concentrate was about (back of brain calculation) 7+ times as hot as standard Frank's Red Hot.

196 I worked with an NASA extreamly long-timer that was actually on console for the first US satellite, Explorer 1, We was mildly obsessed with Caesar salad dressing. During the moon race in Coco beach, a restaurant called Ramone's had a secret recipe that kick-off a small local war over having the best or most authentic Caesar salad recipe.

He wrote a book available on Amazon that details the history of Cesar salad dressing with a lot of local color.

His name is Terry Greenfield and he is one of my heroes. He just hung it up at the Cape a couple of years ago. You talk about "war" stories..whew I could listen to him forever.

All Marie Sharpe's hot sauces are outstanding. We used to bring dozens back when I lived there part of the year. We can get it on Amazon and specialty stores now. Unfortunately they're jams don't meet US standards so they can't be imported last time I check. God those are good.
