Food Thread: If Bacon Is A Rut, It Is A Fine Rut To Be In!

I am nothing if not obsessively repetitive. A few weeks ago I made pork tenderloin with bacon. And because it tasted good, I decided to make it again, but this time with MOR BACON! Yup...bacon-wrapped pork tenderloin, because one can never have enough bacon.

And guess what? it was damned fine eating. Simple and quick. The only slight complication was wrapping the bacon around the tenderloin. It separated a bit after cooking, but in the grand scheme of things it was a resounding success. A bit of salt (be careful because bacon is salty), pepper, some chopped thyme, a tiny drizzle of honey, and a quick sear to crisp the bacon a bit, then into the oven with a temperature probe. And done!

Temperature is one of two challenges with pork tenderloin because it is not particularly thick, and it doesn't have much fat (the other challenge) to cover you if you overcook it. That's why probes are so useful. I put the probe into the thickest part of the pork and pulled it as soon as it hit my target temperature of 139 degrees. You would be amazed...or not...by how quickly it carried over to about 143 degrees. Next time I will take it out of the pan as well as the pan out of the oven. The little bit of residual heat was enough to keep cooking it. But with all of that luscious bacon fat caressing it during the short roast it came out fine.

Anyone around here old enough to remember the first iteration of Mr. Potato Head? I wasn't old enough in 1964 to do much more than drool (much like today!), but I have a vague recollection of putting the pieces into a real potato, though that might have been contrary to the spirit of the play experience.

The Story of Mr. Potato Head's Jewish Roots

In 1952, Polish-Jewish immigrant brothers Henry, Herman and Hillel Hassenfeld saw a good future in the latest creation of Brooklyn-born toy inventor George Lerner, a Jew of Romanian descent.

Hassenfeld Brothers (later renamed Hasbro, and now the world’s third largest toy company) sold the first Mr. Potato Head as a kit of facial parts. It came with a Styrofoam head and instructions that suggested using real vegetables and fruits instead. After parents complained about rotting vegetables and new government safety regulations restricted toys with sharp pieces, Hasbro began selling the plastic potato body in 1964.

Fast forward to 2021 and we find that they are rebranding an amazingly long-lived toy to be more in tune with...what? Apparently "Mr." is somehow offensive to a massive 0.01% of the American people, so they will Remove it from the brand. Rest assured however, Mr. and Mrs. Potato Head will still be available, just not branded as such. So conventional ideas of marriage are now taboo? Or is it the shockingly binary concept behind the toys? Maybe they could add an intersex cauliflower cousin and maybe a post-op trans rutabaga for authenticity!

Everything the left touches turns to shit, even kids' toys.

From a regular named "Toby" comes a very appealing entry in the World Famous Frugal Festive Dinner Contest. Sort of retro, with a dash of thumb-in-your-eye, although I would have used spray cheese instead of peanut butter for the celery.
Do many people have ceci beans in their pantry? I never even heard of them.

Appetizers:
Celery filled with Kroger brand creamy peanut butter $5

Main:
Shepherds pie...that gets the main AND sides in 1 dish $15 gets you fancy veggies and extra butter in the mashed potatoes with some Kroger cheddar to top it.

Dessert:
Banana pudding $12 with real homemade whipped cream, jello brand vanilla pudding, but still use Kroger brand vanilla wafers.

Wash it all down with a case of PBR and you have one heck of a celebration for about $50. I actually like PBR believe it or not.

Oh, raisins are normal ingredients in empanadas in the Philippines. My wife adds pineapple and raisins to her pasta salad and it is fantastic.

Raisins in anything other than desserts seem more like Satan's dingleberries than food, but to each his own!

This loaf is the next data point in my continuing investigation of "autolyse," which is pretty much just hydrating the flour very well before one adds leavening and salt. The process I am using is a modification of a sourdough bread recipe that commenter "Bluebell (Yankees Fan)" was kind enough to share with me. It turned out extremely well and wasn't too tough to manipulate, even though it was more hydrated than anything I had ever done before. High hydration makes it more difficult to work with but yields better bread.

It's not just red food coloring. It's got cocoa powder and powdered sugar in the batter. These maniacs are actually trying to make a real red velvet cake fried chicken! Red Velvet Battered Chicken Fingers. it's not quite as offensive as putting maple syrup on French Toast, but it's pretty revolting sounding.

Which is why I am sort of tempted to try it.

Ina Garten rarely disappoints (unless we are observing her politics), and here is a classic pot roast recipe that is everything everyone's grandmother knew about cooking. Except for two things: don't you dare use good wine. Use cheap red wine from the remainder bin at your supermarket. The cheaper the better!

The other thing is: make it the day before and chill it. That way it is easy to skim the fat from the top, and that is a step that is counterintuitive to your fat-obsessed host, but which makes a big difference in the final result.

19 If you're going to wrap something in bacon, it's usually a good idea to blanch it in water for a few minutes first. Renders some fat and parcooks the bacon so everything comes out at the same degree of doneness. Works well with bacon-shrimp skewers. Trick learned from French club some mumbledy decades ago.

28 I had the famously bacony Ardbeg Uigeadail with crispy bacon last night. yes the ONT pic made me do it. As a kid of the 70s, we are supposed to respond to commercials. BTW, it was damn good. I had some tapioca pudding too. You don't need the bacon or tapioca but they do lend themselves to the bacony and sweet characteristics of that spirit.

btw, to the commenter, you are right on with PBR. You can get a 12 pack for under $10. It is as good as any macro lager and much better than most. I like basic American lager as a back up to a very nice Scotch whisky. If you go with the fru fru IPA's or whatever, the flavors get muddled. I have had all the exotic beers over the years other than some dumb stuff. But in recent years, I go more and more for a good, simple lager.

IIRC, Peter Beinart's books have a few recipes involving autolysis. The one thing I noticed about them was that the bread made from them was actually better on about the 2nd or 3rd day after baking, rather than right away...

44 if you asked me out of the blue for a recco for a really great beer. I would say try Samuel Smith's Nut Brown Ale. That has to be one of the finest, consistent, not freako, beers ever produced. Of course it helps to like brown ales.

but if you want something to go with all sorts of food and even to back up an Islay malt, you flat out can't go wrong with PBR.

47 I went to a local BBQ joint ( Pappas) drive thru for dinner last night. I ordered the large brisket plate that comes with 3/4 lb of sliced brisket and two sides. I also got a regular baked potato. $28 freaking dollars.

It was very good but I didn't anticipate I needed a bank loan. I guess my days of ordering what I want without looking at prices are done now that I'm semi retired.

56 I made a great coconut lime pie last week, from the Complete Galloping Gourmet cookbook. Grilled some chuck steak and vegetables in foil. Used up some sour milk by making oatmeal cookies. And had a sudden craving for egg salad, so I made turmeric egg salad sandwiches.

The turmeric egg salad was an idea from The Spice Cook Book (1964) by Avanelle Day and Lillian Stuckey (who is not, as far as I know, related to the Stuckey’s chain). I’ve had this book for a long time and it has never disappointed me.

I bought it this time to my shame. The brand was KozyShack, with no added sugar. But it is easy to get the stuff and make it yourself. I remember as a kid some friend's mother made it. I had never heard of the stuff. Since that time I have always loved it.

Yes! One of my favorites. I first ran across Samuel Smith’s Nut Brown Ale in college, which was at least 29 years ago.

Recently discovered a Texas beer that is extremely good, too, Coffee Porter, from Real Ale Brewing Company. Sadly, it’s a seasonal ale that they only make November through January—and I discovered it in February.

CBD mentions raisins. The funny thing is that when I was a kid, I couldn't get enough raisins. One of my most beloved raisin-infused items was raisin bread. I LOVED that stuff and couldn't quite eat enough of it, or those little boxes of Sun-Maid raisins that are still made and very much out there.

Now? Hard pass. Which leads me to a question I'll pose before the masses: what food items are you acquainted with that you loved as a kid but either don't care for or can't stand now? (Another thing for me: pears. I absolutely loved pears as a kid. Now? IF I eat them, I think to myself "What was I thinking? The texture is awful."

115 May sound odd but I got nostalgic for Jiffy mix. I'd bought their cornmeal muffin mix recently. I found that you can order the tour pack that they hand out to tours. It's 24 packages, everything they currently sell. The shipping was terrible but I bought it anyway. It's the perfect sized mix for me. And the sweet mixes aren't overly sweet.

As far as I know even the wireless ones are wired and it goes out of the oven door and to a sending unit.

Those are great for grilling BTW. It's pure luxury to go and do other things and forget about the grill until you get the beep telling you that the food is ready. Oh, and the "perfect chicken every time" part is nice, too.

the first one i had was right out of Basic, in the 80s. The consistency with that beer and the quality stands out. Sure nothing they do is cheap but it is at least reasonable by today's standards. i have seen some absurd prices for micro lagers made by guys that were lawyers a year ago.

They should open one in Plainview, so the Buc-ees deprived masses of Lubbock and Amarillo (at roughly the halfway point between the two cities) can converge there and spend tons and tons of cash there. But I digress. With the new H-E-B came their name-brand items, to include their amazing array of bacon. My favorite? The peppered bacon. OMB. That is some good eating right there, whether you are making it for breakfast or putting together a BLT. GOOD stuff. So much so I haven't even touched the jalapeno bacon, though if the jalapeno-infused sausage is anything to go by, it will be amazing as well.

Damn you! I'm wanting to make a trip down there right now though I am in no shape to do so.

in the spirit of economy and using up what is in my fridge, I'm making chicken tikka with rice, dal, peas and naan. Easy homemade naan recipe that is flour and greek yogurt. Butter, cream, spices and more spice for my kids.

I'm eating vegetable soup that I froze earlier, because all of the above reminds me of being pregnant in Dubai, when we ate Indian food and then I had to throw up while we were in the souk. Nuff said.

152 Tonight my wife is making chicken where she stuffs the skin with sundried tomatoes, goat cheese and herbs then bakes it. Very tasty. Some roasted carrots and a nice dinner salad will round it out. Sadly, it's hard to find good roasting sized carrots around here. Those bagged, peeled ones suck. Organic or "regular" are too big.

I being male, of course I am no authority on pregnancies. However, my birthday came and went recently (my birthstone is an amethyst) and this meant the reminder from my mother of various things. Among them: her practically inhaling liver during her nine-month sentence with me. And I suspect she does that for a good reason: I hate liver with a passion. So much so that just thinking of it right now, or seeing it in a store, or sitting by people eating it nearly sends me into a psychotic rage.

Slice a roasted pork tenderloin thin. Use decent deli-sliced ham. Slice pickles same thickness as pork and ham. Mix 50/50 mayo and mustard and slather a conservative amount on a crusty sammich roll on both sides. Top with a smokey provalone in same proportions as pork/ham/pickle. Use panini press. We use a George Forman on highest heat. You could probably get away with using a grill pan and pressing it down and flipping it once.

We got one of those new glass-top ranges last year, and I've been having terrible trouble finding frying pans that can hold up to use on it. When we had the old coil-top stove, any old pan would work, and I had a number of old ones, both with and without non-stick coating. Now with this new stove, the pans have to be completely flat on the bottom, so some of the old pans had to be thrown out due to their convex bottoms.

Now I can't seem to find good frying pans for making eggs - we've bought a bunch of them, from T-Fal up to more expensive ones, and they seem to warp in no time! Cheap Chinese junk, I suppose. Can anyone recommend a good, solid frying pan? I have a cast iron one, but we want a non-stick pan for frying eggs.

For non-stick, go to a restaurant supply house (cash-n-carry, here) and get a couple cheap omelet pans. Non-stick are disposable, as they ultimately get scratched, flake, or get an oily-polymer non-non-stick coating from use.

Last year, January, I was thinking, boy I’d like a good cubano sandwich. Called up a friend, said, why don’t we go to Miami for a few days? We ended up going in February to avoid superbowl issues. It’s nice being retired sometimes! And I did have a great cubano there, at Enriqueta’s.

We've got a very nice Frigidaire (owned by Electrolux, now I see -- hell, what's in a name any more -- all China, probably, and certainly controlled by the globalist oligarchy) glass top stove in the new house.

Miley jokes that I got that to make her slave away to keep that top nice and clean. She can't bear to see a smudge on it.

Those elements heat very uniformly and very fast. For example, I have a vegetable beef soup we like to make. With Miley's big stock pot and the glass top I can start heating it on high.

The old coil (and even cast iron elements) would have hot spots that would tend to overheat anything over them. You had to stir the hell out of it constantly. Medium-high was about as high as I dared.

But this glass top can do wide open with no hot spots.

I used to do Rum and Diet Coke almost exclusively, when the occasion called for it. I've been experimenting with store-brand diet cola as a way to ween myself off of soda altogether. After the initial shock of the 'difference' wears off, it is actually not too bad.

229 Thanks for the recommendations! Our stove is a Frigidaire too - really nice, with some great oven features. The old coil stove had a convection setting for the oven, and my husband insisted any new stove HAD to have that feature. He won't use anything else when it comes to roasts. I use it sometimes for baking, but I find the regular Bake setting is fine. I might just look into the copper pans, at least just for one good solid frying pan.

I love sushi but it took a long time to really enjoy it. The Japanese do eat some really weird shit, no question there. I recall Tony Bourdain gagging on some stuff, and this guy ate everything from anywhere. I love their culinary culture, it is very different and I respect that. The reality is they don't give a damn what other people like. One of the things they eat that makes must people gag is Natto.

This Frigidaire is convection (Miley was leery of that, and I told her it's nothing but a fan to stir the hot air around), and besides regular convection, which it calls convection bake, it has another setting, "convection roast".

I am not sure of the difference. The manual says preheating is not necessary with the convect roast setting. I did a rib roast for Christmas with that, but I did preheat it.

i have been to many. Even in the deep blue city they allow it sans mask but with fewer tables. in the real parts of the state, it is pretty much normal and has been so for a long time. Not saying they don't have rules, but come on now, the people are living their lives.

the first time i had sushi was in Raleigh NC. And that was back when it was a Southern town mumbeldy years ago. It was the last century, I will give you that. My mentor was a legit Japanese guy who went to school with us. I did not feel it that day, i think there was too much and again, it was Raleigh. But i did grow to like the stuff. We use ours a few times a week, but not for health reasons. It cooks fries, chicken patties, etc really fast and crisps them up really well. There's virtually no preheat time (one or two minutes}, so it's the fastest choice if it works for the food you're preparing.

Reheats pizza nicely, too.

low carb for a while....too much junk food at work on days....scrambled eggs with cheese and peperoni for breakfast, a salad with ranch dressing for lunch, ham salad on BBQ pork rinds and hard boiled eggs for a snack.
Also.I am on nights for a while, so no extra large boxes of donuts and bagels to tempt me...... I forgot how much prep it takes, but the results are worth it......

275 I'm going low carb as well. Wife had a hankerin' for Indian Food last night, so I put together a curry. Not hard, I use Pataki's sauces and a lot of vegetables, over rice. I made the main pot of Jalfrezi, which is mild, and a smaller side pot of Vindaloo (hot!) for her. Making it is easy; I chop up two big yellow onions, 2 bell peppers, about 5 cloves of garlic, 2 BIG jalapenos, 1 ancho chile, and add a can of stewed tomatoes. Cook that over heat until all vegetables are tender, add plenty of salt and pepper. Then add 2 jars of Pataki curry sauce, bring it all to a boil. Serve over rice! Jafrezi is tasty but mild, the Vindaloo has a lot more bite. And the jalapenos just kind of disapear into the mix once its cooked.

Basically, they have different feature sets.

Speaking of price, our builder (bless his heart) claimed he could deals with a local appliance outfit. Looking at the appliance invoice list, I saw he paid just under $1200 for that stove. I was wondering if that was good or bad.

And a week or so later, I was in Lowe's and saw they had a special on that exact model. $1600 and some change. So I guess our guy indeed got a deal.

i respect that. i haven't had it. But I do love how diverse Japanese cuisine can be. Some easy to love stuff is Tonkatsu and Japanese Curry. Some might scoff at the idea of Japanese Curry, but it is a famous dish that has been around a long, long time. A buddy from Japan, with a Japanese passport taught me to make the dish. We made it for everyone around and then we drank a bunch of Kirin Lagers.

a tenderloin or pork loin for sure should be pink in the middle. The USDA pork reccos are medieval. That was when Trichinosis was a thing, and American pork cuts had a lot of fat marbling. I would cook a lean slice of pork like I would a duck breast, it needs to be red in the middle or you will be chewing on rubber.

Trichinosis was the bane of pork. It's all but been eliminated, and is no longer a concern with commercially produced pork. It took the USDA this long to finally recognize that, and admit, yes, it's safe to not overcook pork now.

317 Ok,all the talk about bacon reminds me of an experiment I did over the (COVID-lockdown) summer, which is a BACON WEAVED MEATLOAF!!!!!

So while it may sound complicated at first, a bacon weave really isn't that hard to do. I just laid out a piece of parchment paper, and started a slice of bacon at a time. About 6 strips by 6 strips is plenty for a medium sized meatloaf. And the parchment paper makes it easy to shape the meatloaf once you deposit it on top of the bacon weave.

320 All bacon is basically "cured" using salt or smoke. Uncured bacon generally is not cured using nitrites which some people believe are bad for one's health. If you're looking for old time bacon, I really like Hill's Ranch Style thick sliced bacon.
