Food Thread: Mustards And Other Tarts

Last week's pastrami photo resulted in a deluded and frankly embarrassing conversation about mustard. There is only one mustard that belongs on a pastrami on rye, and that is a spicy brown deli mustard. Sadly, even world famous chef and gun writer "Weasel" chimed in with a cringe-worthy suggestion that yellow mustard...YELLOW MUSTARD! was an appropriate condiment for pastrami.

Obviously yellow mustard has its uses; on a good ball park hot dog comes to mind. But really, it is a child's mustard compared to the heavy hitters.

These articles are almost always click-bait, and I read them and almost immediately forget them. This one is particularly silly because at least three of those cities are well-known food destinations and nowhere near underrated.

I don't know whether is is a Southern twist, but the additional punch of 100+ proof rye is a big deal. My current mixing rye is Old Forester 100 proof, and I find that it is an excellent mixer for a reasonable price.

And...I use rye exclusively. I think that bourbon tends to be a bit too sweet and not spicy enough to stand up to the other ingredients in most of the brown liquor cocktails I make.

None the less, the next day I went into work and gave the British citizens there an earful.

38 Colman's dry mustard is really good. You don't even need to make an actual mustard sauce with it (though it goes well with roast beef), just adding a tiny bit to soup will wake it up without tasting like anything in particular by itself.

I ordered one of these to be delivered next week:

Ninja Foodi XL 5-in-1 Indoor Grill with 4-Quart Air Fryer, Roast, Bake, Dehydrate

I figure, we live somewhere where we are stuck inside away from grilling for half the year. We turn off our gas line to the outdoor grill over the horrible winters.

I think I will use this a lot. A burger, a steak. And the air fryer is something I have been wanting to try too. Fries.

The 5 in 1 versus the popular 4 in 1 has a dehydrater. I never really felt the need to dehydrate food until I got cancer. I was not allowed to eat store bought dried fruits due to the chemicals or preservatives, etc. Smoked items and dried foods were a no-no, as well as any cold cuts. So I thought I would give it a try on my own, see how that works. I like apricots and figs and cranberries for the winter months. We'll see how this works out.

I actually use it in all kinds of cooking. Great stuff to have on hand, and lasts indefinitely if well sealed (or keep in fridge).

I especially love a bit of it in a white navy bean soup with ham and spinach.

Pumpkin Ravioli with Sage Butter

Roasted Cauliflower Salad with Golden Raisins and Toasted Sliced Almonds (lemon zest, juice, coriander, parsley, mint, shallot, olive oil)

Broccoli Salad with Golden Raisins and Toasted Chopped Walnuts (mayo, balsamic vinegar, shallot)

Cranberry Apple Crumble with rolled oats.

59 CBD - Good choice in Old Forester 100 Rye. For around the same price, Rittenhouse is a great 100 proof rye.

Agree to disagree about bourbon vs rye - they are both mandatory at Chez Doof (borrowing your term).

For sipping, I recently discovered Willet Family Reserve 4 year rye. It's a little shy of 110 proof. Retails for around 60 bucks - but it's hard to find. If you do find it, don't think twice, just buy it!!

64 I mixed Dijon mustard with sage, thyme, garlic and olive oil and peppercorns (mashed with a mortar and pestle) and slathered it on a crown roast last night. Made some stuffing and stuffed the inside and around the roast in my cast iron Dutch oven.

Baked at 375 for just under two and a half hours.

I am not unwilling to negotiate most things, however, I refuse to drink pepsi. When I am at a restaurant and order a sandwich a "Coke" and the waitress says : we hav pepsi is that ok?" then starts to go to the next order I always say "no."

71 I generally hate anything but beans and good tomatoes from a can but here's one of my ma's that has to be from the 50's. It is so well liked by anyone who has had it it is called Mrs. Dartist's chicken.

-oven at 350 degrees
1-pkg. dried onion soup mix
1-stick butter
1-can cream of mushroom soup
1-can cream of chicken soup
1/2 can of water
2-cups Minute Rice (reg. rice won't cook right , Minute Rice gets a little crispy and that's a good thing)
One whole chicken cut up, chicken thighs, Cornish hens cut up or whatever you have to fill a 13x9 pan.

Melt butter and mix well with soups and water in pan. Cover with rice. Lay chicken on top of rice and sprinkle with dried onion mix. Cover with foil and cook 2 1/2 hours.

74 Insomniac.. I used to do that with our bathroom floor in the previous house we lived in. The tile had little grooves in it and the the only thing that worked to clean it was pure bleach. Yeah.. had open up the windows and still had to leave the bathroom numerous times to get fresh air.

I think that the Old Forester has better spicy overtones that go well with cocktails. I like Rittenhouse for sentimental reasons (my father liked it), but I'll take the Old Forester.

78 74 Insomniac.. I used to do that with our bathroom floor in the previous house we lived in. The tile had little grooves in it and the the only thing that worked to clean it was pure bleach. Yeah.. had open up the windows and still had to leave the bathroom numerous times to get fresh air.

103 I picked up some cheeses and sourdough at the quaint Tweeville Cheese Shoppe while visiting Eris yesterday. Raclette made an excellent toasty cheese sandwich. A little like Fontina, but milder and less salty. Morbier was one I wanted to like, but it smells and tastes like dumpster. Not like actively offensive hot garbage, but like a roller bin after you've hosed it out really well and let it air dry in the sun. A whiff of stale garbage. I might stick to known-good cheeses until they start doing samples again, because I was hoping for maybe gym sock, not stale garbage.

Still got Challerhocker, Meadowkaas, and Appenzeller to try.

111 Alrighty! Chez ABA did a 13 lb brined turkey for Thanksgiving and it came out *very* well indeed. In fact, the juices off the bird yielded up one of the very best gravies I've ever made.

Now it's leftovers time. The carcass has just been tossed into the stock pot and Alton Brown's "Bird to the Last Drop" is underway.

One minor modification: Alton calls for 2 qts vegetable stock. I like the soup a bit more robust and use 1 qt vegetable/1 qt chicken stock.

I used to love doing it for friends/family/entertaining. Makes a difference when there's a purpose behind it. After my divorce, I went from planning/cooking daily to barely being able to open a package to dump in a skillet. I've got to turn that around, and gave it a shot by actually cooking something on Thanksgiving for the first time in 5 years.

Also can tell how fucking rusty I am. It's NOT like riding a bike.

142 Used the food processor attachment for the first time yesterday (Oster Pro 1200 blender). Fantastic. Easy to use.

Made pesto hummus, using some of the last of the fresh basil and a portion of one of my frozen pesto batches from this year's crop. Very good.

Dropped by the .... well, eastern Mediterranean/Arab/Persian store to pick up the tahini for the hummus. Love that store. Has a Persian bakery, I think some of the audio announcements are in Farsi. But also has a great little deli counter that's kind of Greek/Lebanese, and the shelf goods are heavy on items from Bulgaria, Turkey, Bosnia, etc.

It's fun just to browse the aisles and read the labels (for a language/int'l geek like me, anyway).

The tahini turns out to be from ..... Syria! Kind of surprised any industries there are still exporting. Anyway, it was the smallest/cheapest option, didn't even check the label beyond seeing it was in Arabic, assumed it was Lebanese.

I am adding bits of turkey leftovers and make dumplings from bisquick. Makes tummy feel good, fills you up and makes a good lunch for tomorrow. Easy peasy and only one pot and one bowl, plus bowl to eat out of.

The deli I used to get pastrami sandwiches at in CA (Pastrami shipped in from NY) put a big ole tray of mustards on the table when you ordered. All of it Beaver brand. I went with their regular coarse, but they also had honey mustard and even one with cranberries in it. Strangely, those were always full.

I did just that with my turkey yesterday - made turkey pot pie and a big pot of stock.

And I have butternut squash roasting in the oven right now to make soup! I use Chef John's recipe for roasted butternut squash soup and he tells you how to cook the squash.

He has you put apple cider vinegar in art the end, which I didn't care for. So this time i will leave it out.

224 4th day of awesome T-Day food here. Brined turkey in a bag is so moist and tender its still yummy reheated in microwave (I do put stuffing or mashed taters on top of the turkey and then gravy to keep it from drying out)

225 Planning to return to some Brazilian cooking, but will probably be limited to central/southern stuff - the interesting stuff from up in Bahia usually has red palm oil (den-DAY), whose aroma is strong, and not something I want in the house (not like a fish smell, but not desirable).

The central/southern dishes of note are beef-centric, or chicken. Not really exotic to our palate, but a few twists here and there (toasted manioc flour, various dried meats).

All basically out of nostalgia, and the thinnest imaginable cover for having a caipirinha-soaked evening with friends (Brazilian rum lime juice sugar cocktail that drinks like water).

It's apparently a very common thing for taste buds to decrease in sensitivity as you get older. I'm seeing it myself, particularly with old recipes I knew used to be on point and now require more seasoning to get to the finish line.

252 Rhomboid, I love palm oil. My great aunt occasionally made it from scratch from palm nuts, which I like also like when boiled or roasted. When I used to cook, I used to add palm oil to stuff that didn't call for it. It doesn't have a fishy smell though.

I tried and liked cutting it into 1.5in rounds, a little oil, a little salt, 15min and then flip for another 20min at 400F (shamelessly paraphrased from another commenter a few days ago).

We defrosted some leftover spaghetti sauce and put it on top. Really good.

I also tried it with butter. I liked it.

Cut in half. Turn cut face down on a plate. Add water to plate for steam. Microwave on high for ten minutes. Use a fork to shred innards. Do the other half. While that is cooking, heat up spaghetti sauce.

Add shredded squash to sauce and treat like spaghetti.

This reminds me of an article I read years ago, about Brits trying to understand the lure of a peanut butter and jelly sandwich. 298 This year I had a 22 lb turkey cuz didn't buy until Wed. Because is was so huge I didn't think it would fit on the platter and just put it in a cookie pan to carve, then took all the meat off it right away and froze the carcass so I could wait a few weeks before I had to make turkey soup. I use my pressure cooker and get turkey broth, then add some turkey meat and the veggies for the soup. I've never had to add stock doing it this way, which is good because I'm a cheap SOB in the kitchen and only on rare occasions can force myself to buy broth. Feels crazy to pay good money for salty water with a hint of meat flavor.

326 I missed the 1st world problems thread today. Was out riding which was heaven. But mine this week was my $10 waffle iron gave up the ghost and I had to just thin the batter and cook as pancakes. The iron was working and indicated it was hot and I unplugged it cuz I wasn't ready yet and when I plugged it back in it never got hot. I thought maybe the light was just not working anymore cuz it felt hot, and poured in batter. It was an El cheapo design with no way to take anything apart plus with the raw batter in it I just chucked the whole thing in the trash. Which is an improvement for me. I used to hang on to stuff like that but never get around to even trying to go AoP on it.

Wild rice. Cooked in 50/50 water and gin. Teetotalers can just add ten juniper berries to the water. But gin's better. Throw in green onions, mushrooms, slivered almonds...whatever. But the gin in mandatory.

I like hand me down things like waffle irons.

They don't make things like they used to. I just bought my mother a new blender for Christmas. Her old one is Avocado green and must be from the 70s. Not all of the buttons work but she said it still crushes ice like a champ.

That was Mom's recipe. Cook the wild rice in chicken broth and gin till done. Drain it, add the whatever along with a big hunk of butter and then bake it for 30 min. Something about that piney flavor of the gin goes perfectly with the wild rice.

I don't make waffles as often as when I first got it and I can just do pancakes so I may not replace it. 70s vintage house with a small 'galley style' kitchen so cupboard and counter space is limited.

If anyone's collecting data points, I'd eat a cilantro salad with cilantro dressing. I choose recipes based on how much cilantro I can get away with using. The idea of a girl rubbing crushed cilantro behind her ears is very alluring, and I would buy cilantro air fresheners if there were such a thing, along with cilantro laundry detergent.

But banana is nauseating. Feh.

Krusteaz here on the west coast was usually only available if you were buying from a food supplier that catered to restaurants. Tandy Leather stores used to be common in the 70's and early 80's in cities all over. Only a few stores exist now.

Oue Thanksgiving was small but nice. Minus a few guests due to covid, but only one actually had it, which was my son, sohe didn't come home. He's completely fine, only had mild symptoms for a day or two, and has been out of quarantine for a few days now.

Put it back in along with some tomato paste, a cup of red wine and some chicken or vegetable or beef stock. Cook, covered, on low (just bubbling) for three or four hours until the meat seems tender.

379 When Chicago opens again, I hope the restaurants are still standing. Pritzker/Lightfoot have stabbed the small independent restaurant in the back, and then in the heart. I grew up in Chicago. For my money it's the second best food town in the US after New Orleans. NYC-->way too expensive, LA/SF are totally subpTChicago is better than anywhere else in the US. Chefs are untethered and not confined by convention. They are innovative unlike anywhere and because the competition is so tough service is awesome. Unfortunately, there are some bad business operators, like Le Bouchon. The son took over and he's a sheister. The father (RIP) was a great restraunteur.

I get Krusteaz at my local Nob Hill market in the South Bay (Raley's Bel-Air), they got the pancake and waffle mix too. I also think it's at Safeway. I also like the Jiffy-mix, it's pretty good and comes in the little yellow boxes.

They pissed me off though when they stopped carrying Goya after having it for 20 years. Everybody has to be a fucking hacktivist.

436 I think when people say "goat cheese", they're thinking of that soft creme fraiche kind of goat cheese. There are a couple of aged (or at least pressed) goat cheeses that are great and don't taste anything like the fresh stuff (which I happen to like).

462 Yellow mustard has no depth of flavor. I'm using a spice blend I found on the internet:
1 tablespoon of black pepper
1 tablespoon of cumin
2 teaspoons of coriander
1 teaspoon of whole clove
1/2 teaspoon of cardamom
1 1/2 tablespoons of paprika
1 teaspoon of cinnamon
1/4 teaspoon of nutmeg

I marinated cubed chicken thighs with eggplant, yellow squash, pepper, onions and tomatoes. I only used 1 tablespoon of paprika and the finish was too hot. Overall, it's a good blend. I'm thinking of adding expresso or coco powder. Anyone have a recommendation?

It's not hard at all. You just kinda roll it in..
And some people let it rise sitting in parchment paper, and lift the dough - paper and all right into the Dutch oven.
It really makes for a wonderful crust using this method.

Doesn't work near as well. I put a skillet in the over when I turn it on. When it's hot, I pull it out and put the cornbread mix in the skillet. Doesn't stick.

I use the 'top' of the dutch oven for the base and use the 'pot' portion as the cover.
After the initial oven-spring is complete I remove the 'pot' and continue the bake.
Oh, and I use parchment paper to move the dough onto the 'lid' portion.

well the OG parm is veal parm. I am sure there is some reason you can't call it beef but it is the same animal. It is all about age I suppose.

My parm tip is to go with pork scallops in lieu or veal or chicken. Veal at its best can be great, but i find much of what is in stores is over priced and not very tender or flavorful. Chicken is a nice alternative, certainly there is nothing wrong with it if done well. The pork give you added flavor, is more juicy in general, and is often as cheap if not cheaper than chicken.

The celery is more of an aromatic, I don't eat it. Used to pickle blue lake beans (dilly beans) just for Bloody Mary's. Can put all kinds of stuff in one. Just not clam juice.

Yep, 16oz cans. As I said, the Mexicans love the shit for breakfast. I'll be tanking up at 6am to head to work, and one of the worker crew will go in and grab a bunch (either the lite or the regular - but usually the lite), take them out to his ese's waiting in the truck and they'll be done before the truck is tanked up. Usually one for the station and one for the road. There's also a lime version IIRC.

I don't know if it spreads it more, but I do know that there is almost no evidence to suggest that the spread of respiratory illnesses can be stopped by using masks.

Same with social distancing. Or lockdowns. Or anything else.

When you exhale air, anything you exhale floats in the air for a while before it settles to the ground.

Watch someone smoking a cigarette inside. The smoke lingers in the air for a long time.

Same with viruses.

There is not a whole lot we can realistically do to "stop the spread" of covid, or any of the cold strains, or flu strains, etc. Once it's out "in the wild," it's almost impossible to contain it.

Michelada? It's all over the place, all different varieties and new yuppy flavors as well. I've only tasted one with tamarind, but apparently they do mango and strawberry and other horrific combos. I think chili and tamarind are naturals, if I had to have it on a beer glass, that's what I'd do.

That's just it. A man won't drink that. I mean, back in the 70's I sort of thought it was cool that every year Anchor would do a Christmas Ale, and sometimes flavor it with a spice. Now every year it's the same crappy mulled spices, and it's horrific. Barley, Hops, Wheat, Malt, all good for beer. Full stop. After that, proceed at your own risk.

I was funning one kid on IG who wanted to try a particular "sweet" beer, saying every GD thing he was drinking was a sweet beer. One thing the German's got right - executable offense.

There's one more crucial aspect I'd like to highlight regarding SCOTUS's ability and ample time to hear Trump's case and then justly remedy the 2020 Presidential election theft.

The potential legal procedure which I outlined a few threads back was based on the unnecessary assumption that a final SCOTUS ruling and remedy had to be issued before the electoral college convened on December 14. My point was to demonstrate that an expedited schedule could be successfully implemented even inside that somewhat tight time-frame. - And there'd still be a few days to spare.

But the real deadline is not December 14. And, unfortunately, it's not January 20. But fortunately we do have all the way until 1pm on January 6.
This year, that is the date that Congress has established when the president of the Senate (Mike Pence) will read out the certified results from each State and if a candidate has a majority (270 or greater) then according to the explicit wording of the Constitution that person "shall be president." It's precisely at that point that the Constitution declares that there is a duly elected President. - Not before.
Only Congress can change this date which would obviously require agreement between both House and Senate. So for all practical intents and purposes, it can be taken as the true drop-dead date of no return.

Now, let's say that contested States like Wisconsin and Georgia complete final certification of their State's election results for Biden and then on December 14, their slated electors vote for Biden in the electoral college.
If SCOTUS were in the process of reviewing Trump's case regarding these contested States, even though those States had already voted in the electoral college, it is still Constitutionally permissible to nullify their electoral votes if SCOTUS rules that their certifications are void due to being unconstitutional.

Let's assume that SCOTUS rules that just one State's election results (say, Nevada's) are null and void. So it doesn't change the outcome of the Presidential election. Biden still wins. But it is a near certainty that on January 6, Mike Pence (president of the Senate) would respect SCOTUS's ruling and discount Nevada's electoral votes in his final count. No one can make him include the voided results. And doing so is in no way a violation of the Constitution. Mitch McConnell would very likely give full support to Pence's decision to respect SCOTUS's ruling. President Trump sure would.
So you can bet that if SCOTUS's nullification of States' election results made it impossible for Biden to reach 270, Mike Pence would respect SCOTUS's rulings and allow the Constitutional mechanism to kick in where the Presidential election is thrown into the House of Representatives which must immediately hold a vote for President. (And where Trump is very likely to win).

Granted if SCOTUS has not decided to hear the case before December 14, there is a 99% chance that it simply isn't going to. But that near hopeless scenario is beside the point.
The main point is that if SCOTUS is willing to take up the case, they have a huge amount of time to deal with all problems to get to the bottom of the unconstitutional lawlessness and remedy it.

Finally, I'll just point out that while it's not Constitutionally necessary, SCOTUS could also issue temporary injunctions on States' certified election results before December 14 just for clarity's sake.
It would just be SCOTUS's signal to everyone that: "Hey, the Supreme Court needs to weigh in here on issues of the utmost importance. These certified results are being challenged as invalid, and it appears there may be merit to these challenges. Stay tuned. Some or all of these election results may not pass Constitutional muster and need to be discarded."
