Food Thread: Bagel With Lox And A Schmear, And A Side Of Lily White Rice

Tonight at sundown begins Yom Kippur, the most important holiday in Judaism, when even mostly-areligious Jews tend to do something to recognize the holiday. It is the Day of Atonement, when Jews fast and ask forgiveness for their sins against God. It gets a bit more complicated with sins against our fellow man...we have to seek forgiveness or reconciliation, and to try to right those wrongs. Yeah...it's complicated.

But we get to break the fast with some fun foods, and I have been using the quintessential Jewish-American food for years! Luckily I live in an area which has pretty good bagels, and smoked salmon is no longer a specialty item! Hell, Costco has excellent stuff, so I don't have to go to Russ & Daughters in Manhattan and take out a second mortgage to buy a few pounds of salmon, especially since most of it will be sitting on a pile of cream cheese and onions.

If I were serving it on its own I might consider buying the high end stuff, but for most uses I have absolutely no problem eating mass-market smoked salmon. By the way, it is a bit different than the more heavily smoked fish that I used to see in California and the Pacific Northwest. It is a more delicate cold-smoke with a bit less salt. Not better...just different.

A mostly ignored ingredient that is a key component of the perfect bagel and lox sandwich is the cream cheese! Whipped is mandatory. Sorry, there is nothing better. And Temp-Tee brand is the best of the lot. Oh, Philadelphia brand will do in a pinch, but no self respecting Jew will choose it over the classic.

The bagel needs to have a chewy crust and a tender but firm interior. Too soft and it won't stand up to the filling. And that crust is the difficult part of the bagel baking process. I've made them, and it's not as easy as it seems. The claim among NYC bagel makers is that the water is key, but the best bagels in NYC come from New Jersey, and I promise you that our water is crap compared to New York's last (only?) claim to fame.

Onion? Yes. Preferably a red onion. But tomato? Absolutely not, but I am in the minority. I think tomato muddies the flavors and makes the entire sandwich mushy.

Capers on the other hand? They add a nice briny pop. But that's it. no other silly accoutrements. And for fvck's sake...no butter!

Are there HR and marketing managers in these companies frantically looking for imagined slights to some aggrieved group so they can polish their PC chops and improve their standing in the virtue signalling contest that seems to be running perpetually?

Must they cleanse everything of any hint of Black America before it became woke and communist? The last time I checked, Black America had a vibrant food scene and it is certainly something of which to be justifiably proud.

David Attenborough: Eating Free-Range Meat is "Middle-Class Hypocrisy"
The planet can't support billions of meat eaters. If we all ate only plants, we'd need only half the land we use at the moment.

And I think that David Attenborough is a Champagne Socialist who needs a swift kick in the teeth and a nice medium-rare NY strip so that his brain begins to function properly after years of starving it of real food.

What are we supposed to do with all of that unused land? Last time I checked we really weren't hurting for open space outside of the densely populated cities, and none of that land is taken up by farms that support the evil red meat industry.

The obvious reality is that the planet can support billions of meat eaters just fine. Although the sooner Attenborough shuffles off this mortal coil and stops plaguing us with inane pronouncements about what we should do, the better off the rest of us will be.

Now excuse me while I go have my lunch of a large beef short rib.

Maybe two if I am feeling peckish.

This one looks good, and standard, but there is nothing wrong with that. Guinness Beef Stew may be right out of a 1950s cook book, but sometimes the simplest foods from our past are still around for a reason; they taste good.

Are bagels supposed to be boiled in alkaline water? I think that's the trick for making chewy soft pretzels. Lye, or, if you prefer, baking soda.

He seems to be suffering from the same ignorance that a lot of liberals suffer from. They assume that the world is heading toward over population.

The fact is that birthrates are below replacement rate, even here in the US now.

I was talking to a liberal lesbian a couple years ago, and she was bragging about how her life choices were helping to stave off over population. She was stunned when I told her the planet is decreasing in population, and showed her the stats. Shut her up real quick.

Curing your own salmon isn't that hard, but the high end stuff is meticulous. I just mixer it into the cream cheese after a cure with some liquid smoke a low temp bake.

I think the population is still growing, but it's just momentum at this point. Sometime soon, the absolute population will decline, although there are still hotspots, almost all in sub-Saharan Africa and Islamic countries. Nigeria is the biggest current problem, with projections of 800 million by mid century. That really is NOT sustainable. Iran, which used to have a very high birth rate, is now sub-replacement.

32 I am not having any food fun right now. Decided to drop some weight by cutting out carbs and sugar. I have had great success, but I am getting bored. Yesterday, I made a pizza bake because the mister misses it. It was tasty. Like sliding all the toppings off and eating it. Today, I roasted some pumpkins and pureed them for pies at Thanksgiving. In that situation, I usually defrost the in the microwave, but only to the point that they aren't brick hard. After that, you do the warm water thing, if needed. Microwaving to the point of complete thawing always "cooks" the perimeter, which then doesn't have the right texture.

Peel, cross cut the cop, insert garlic cloves and rosemary, pat of butter and either soy sauce or balsamic vinegar (balsamic vinegar ht CBD) close top of foil over onion, toss on grill for ~hour, serve with steak or chicken.

Adding bacon sounds like a wonderful idea and I will have to try it.

Cut the tops off the whole head of garlic.
Bake for half an hour or so at 350.
Squeeze the individual cloves on to toast or crackers.

Lay out the salmon slices, add the other ingredients, roll it up like lil cannoli. You won't be disappointed. You can just schmear and top a salmon steak on occasion too.

I've never had Temp Tee cream cheese, but Annalucia (a native New Yorker) swears by Philadelphia. I like to whip it up with finely chopped chives that I've picked from my garden: very, very good. Lightly toast a poppy-seed bagel, schmear on the chive-cream cheese, then serve with a freshly brewed cup of strong black coffee: *that* is a breakfast!

135 Back when I lived in the People's Republik of Kalifornua I was introduced to smoked Salmon. I bought a cheap tinpot smoker and got a brine recipe from an old hippy I used to work with.

I still smoke my own Salmon and will be on the hunt tomorrow for some passable bagels. Here in the Bluegrass they're not that common.

I'm not Jewish, but grew up in a Jewish enclave back in Maryland... so some things still ring true.

Damn, it was a hamburger bun with a hole in the center. Nothing remotely bagel about it. Not chewy, not crispy on the outside, just a bland, soft, homogenously textured bun. The wonder bread of bagels.

I think I must use less beef stock. I also bake it rather than cooking it on the stove, so perhaps that makes a difference.

With the bones and the trimmings (there's always a little meat left when trimming fat), I made a stock; after somewhere around six hours, I got about 3 cups, refrigerated it overnight, skimmed off the fat, strained it and froze that as well. Along with the chuck steak, I bought a bag of barley. This week, I'll buy a package of creminis, button and shiitake mushrooms (and oyster or other mushrooms if they have them, it not maybe two packages of creminis). With the stem trimmings, I'll make a small amount of mushroom stock, just because.

To cook, I'll brown the meat, add diced onions, celery and lots of crushed garlic, the beef and mushroom stocks (flavored water), unflavored water, some Better-Than-Bouillon-Beef (to flavor that unflavored water), an 8 oz. can or two of tomato sauce (for richness), bay leaves, dried oregano and cracked pepper, then boil until the meat is tender. Once the meat is done, 2-3 hours, I'll add the barley, small-diced carrots and medium thick-sliced mushrooms (the shiitakes I sometimes cut in half or quarters, depending upon size) and cook for an additional 20-30 minutes, until the barley is tender, adjusting for salt and pepper at the end.

So next week, it's a big batch of beef-mushroom-barley soup. And it freezes well.

In another couple of weeks, I'll make my annual batch of Navy Bean Soup, using two pounds of dried beans; it also freezes well and is another great winter soup. Just add a dollop of sour cream to each bowl of soup as a finishing touch.

Once you've had the stuff made with fresh cooked chickpeas, anything else is horrific. Kind of like going to market tomatoes after a summer of out-of-the-garden fresh.

Some guys at my farmer's market make the stuff, it's amazing. And big bags of pita chips (or fresh pita). Always a line. Although plain is my favorite for a lot of reasons, they make one from roast peppers (pimentos) that is amazing. A tub of the stuff will last me 3-4 minutes.

Downside? You don't want to be around me an hour later.

a Quart will hold about 1-3/4 lbs of shredded or chopped cabbage,
Put that amount of cabbage into a bowl and mix in two tablespoons of salt and let stand 30-60 minutes.
That should make enough brine to cover the kraut in the jar

you can add in shredded cabbage, garlic or chiles if you want to add extra flavor.

If you are the cautious type, cut out a round of leaf enough to cover the kraut in the jar so if you get surface mold you can get it off easily

I let them stand for a couple of days on the counter, burping them daily until they don't need it any more, and fill the bottom shelf of my fridge with them.

After a week or so you can start eating it, but it really gets good in a month.

Not a deli, but Rockland's BBQ in Alexandria VA is pretty good. And every year around this time, they have their " Grills Gone Wild." That's where for a week, they have exotic meats from around the world. A couple of years ago, it was Ostrich Fajitas, Yak Burgers and Bison Sausage.

257 Kindltot's post about making sauerkraut reminds me to get some cabbage. Home made kraut is so easy and can be tailored for you taste by how long you let it stand. We get some good commercial kraut at the local Lidl grocery but there is a certain satisfaction in making your own.

Same for Hummus. There are decent commercial brands out there but it really is better to make your own from scratch and adjust the ingredients to your taste. I use 3 times the usual amount of lemon.

277 I grew up in NJ and I can say for sure that bagels in SoCal suck compared to back East.
However, bear with me here, I had an excellent Cali take on bagel and lox at the Ferry Marketplace in SF years ago. The put tomato, capers, onion, cream cheese and salmon on amazing sourdough, squeezed a little lemon juice on it and finished it with a lavender flaky salt. It was amazing! Not East coast but a great Cal variety.

Try mass-market grocery stores (Giant, Whole Paycheck, Safeway, etc.) to see if they have bagels you like. Although these stores are chains, the quality of their baked goods varies from location to location based on the competence of the in-store bakery staff.

Same goes for meat departments except in brands that do central butchering (e.g. Giant and Wegman's).

328 Huh, when I was a kid we used to visit my relatives in NYC a lot (70's and 80's). We ate a lot of bagels and cream cheese w/lox and sometimes capers (I don't remember using onions). I seem to remember using non-whipped cream cheese but I could be misremembering. Maybe it's nostalgia but those childhood feasts were the best bagels I've had. A dozen or two would be laid out on the table and we'd just help ourselves over the course of the morning.

Today I find that whipped cream cheese usually just melts down to easily and squeezes out the back of the bagel. Maybe that's a function of the cream cheese being too airy?

And Philly block is the stuff, I can eat a ton of that by itself.

Add lox trimmings and continue until lox turns pink from orange. Beat five eggs and add to mix. Scramble and stir until fully cooked, but not too dry and serve immediately.

I accompany with bagel served as described, but obviously without the lox. A magnificent post Yom Kippur brunch.

Evidently they've changed the one I went to. I remember staying until closing around midnight several times. But now their hours are 6 am until 3 pm M-Th and 6 til 8 pm on Fridays, closed Sat and Sunday. Ain't the same place, but for sure the same building.

With a good fillet knife I can slice that stuff wafer thin and come up with slices that would make Mister Creosote proud.


I refuse to buy smoked salmon at the store. $15 a pound is way more than I want to pay for a slice or two.

Matter of fact the wife is debating on whether she wants smoked salmon or smoked crack bacon for her retirement party on Tuesday. I will probably wind up making both.

My admittedly basic understanding of kosher was that that the food and utensils had to be kept clean, the vessels used to prepare the food had to be cleaned in specific way (heat and time) and that mixing of ingredients (namely animal meat with dairy products) was to be avoided.

My admittedly basic understanding of kosher was that that the food and utensils had to be kept clean, the vessels used to prepare the food had to be cleaned in specific way (heat and time) and that mixing of ingredients (namely animal meat with dairy products) was to be avoided.

So how is pickled salmon and cream cheese kosher? Is Salmon, as a fish, not considered meat/animal (like Catholics look at fish with regards to abstaining from meat on certain days?)

I love some good kimchi. IMHO, it's an acquired taste. It helps to like pickles and not be hostile to vinegar. My father did three separate tours in Korea and bitched constantly about the kimchi. When it was my turn to go I went, and eventually developed the taste for kimchi.

One night, the owner of one of my favorite watering holes brought over her homemade cucumber kimchi, and I just about ate it all, I think, as I was putting it away. I totally agree: cucumber is perhaps the best thing to make kimchi out of, although you can use just about anything. Indeed, I probably have eaten more cabbage kimchi than any other kind.

503 Bacon wrapped onion is a failure. You get crisp bacon and crisp onion. I removed the bacon cap, which had slipped off anyway, and nuked the onion. Actually yummy but the technique needs work. Maybe smaller onions or shallots.

538 Dang, had to work, missed the food thread. Anywho, I'm doing prep work w/ tomatoes for making sauce/paste tomorrow. Too much to do the whole process after work when I was ding outside physical work.

Did one batch by first cooking them down. Forgot our food mill fell apart. I think I blended it at the end and we've got some nice sauce frozen.

Next batch I blended before cooking and then after, came out more like a paste. I just added onion, garlic, sugar and olive oil. Any other suggestions? I just wanted a tomato base for the future that I could adjust accordily later when cooking.

Opinion #1: the lox in the thread picture looks too dry

Opinion #2: Poppy seed bagels are awesome. Sesame bagels are awesome. Mixing the two is dumb. The poppy seeds will burn and taste bitter before the sesame seeds are properly toasted and taste ambrosial.

While Atlantic salmon is the archetype, Pacific salmon treated the same way makes a wonderfully characterful lox. Very available on the West coast.

Packaged whipped cream cheese falls fall short of the good deli stuff, IMO. Looking for recipes online suggests that the difference is that the deli stuff is whipped with heavy cream.

I had never heard of putting a tomato on a bagel-lox-cream cheese, and I never want to hear of it again.
