Food Thread: Haggis...The Other White(ish) Meat

If you think that Robert Burns Day is simply a vehicle for a discussion of Haggis, you would be mostly correct. And while it is Scotland's most famous dish, and one that is unfairly reviled, the Scots have a bit of a food tradition, and not just fried candy bars. And yes, I have had one or two, and they are every bit as good as one would imagine!

There is a recipe below the fold for "Cullen Skink," which is a marvelous smoked fish soup from Scotland. I have mentioned it before and I will undoubtedly mention it again, because it is easy and delicious.

It's easy to make fun of Scottish cuisine because so much of it seems so familiar to us, and that makes sense because a fair number of Americans can trace their lineage back to Scotland and England and Ireland, which share some culinary traditions, though not a common language.

But the English are doing wonderful things in their kitchens, and so are the Scots. Maybe not cutting edge stuff that, let's face it, nobody eats, but good quality traditional foods upgraded with some newer techniques and great quality ingredients.

Just take a stroll through a farmers market and you will see what I mean. It's happening here also (and has been for years)!

But back to Bobby Burns! Eat Haggis. Really. It's fantastic.

There are all sorts of varieties of these greens, which are just one species (Brassica Oleracea). I had these on Christmas Day at the oldest Dim Sum parlor in NYC, and they were pretty tasty. So when I saw them in the market a few days ago I was heartened, but as you can see, they were not in the greatest shape, so I bought baby Bok Choi instead (same species!) and cooked them using the same simple technique. And all was right and good in Chez Dildo!

They cook very quickly, and can be flavored with pretty much whatever you feel like, and not necessarily in the Chinese style. I made them with olive oil and garlic, and next time I will try it with shallots or caramelized onion.

The most common of the varieties is of course broccoli, but I think that is the least interesting of them. Those tough thick stalks are just boring. Sure, peeling the stalks makes them better, but also adds a step to what should be an effortless dish.

This isn't some revelatory food that will change your life. It's a vegetable, which means it isn't bacon or steak, so how good can it be? But it is easy and tasty and pretty cheap and a bit different than our usual fare. So give it a shot.

No reason other than I haven't had a good burger in a long time, and this one looks sloppy and juicy and pretty good. I would gut the bun before eating it, but aside from that nit, it looks solid.

There are lots of recipes, so poke a round to find one you like. The smoked haddock is easy to make if you have a smoker or a smoke box for your grill, so don't buy it. Hell, you can use cod if necessary, and that is everywhere.

One of the many conceits of much of the professional food world is that simple cooking needs to be upgraded and modified (by them) to rise to the level of excellent. But that simply isn't so.
Corn Bread Casserole
There is nothing in this recipe that the greatest chefs in the world can get that you can't, and I'll bet that your supermarket frozen corn is better than all but the best high summer fresh corn.

This is good food, easy to make, has no expensive ingredients or weird techniques, everybody has the pan you need, so what's not to love?

Made a batch of Salmon Cakes on Friday.
With Barley, Lentils and Mushrooms side dish.

I processed enough salmon (asking the fishmonger to skin them for me) to eat throughout the weekend. Easy to fry/cook stovetop.

I had something called haggis at a fair once that I really liked. I'm told it wasn't the real thing because the FDA doesn't like the cooking process.

For the lightest, fluffiest eggs EVAH!....

2 or 3 eggs, salt and pepper, regular milk and.....

put them in a blender and whip for 30 seconds until they froth on top.

Personally I use a small Ninja blender and it works perfectly.

Final touch (if you have it) cook the eggs in bacon drippings.

Dug up an old cookbook that someone in my husband's family was going to toss out and finally took a good look at it.

Italian Gourmet Cooking by "Master Chef Pasquale Carpino whom I have never heard up but looked up. I guess he used to be on TV.

It's an interesting book. Some unique recipes, but also fairy easy recipes with mostly common ingredients. It's always fun to find new recipes. The book was published in 1980, quite a while ago.

It was one of my husband's great aunt's cookbook who had passed away years ago. The best part are all of the notes she made, and all of the inserts of recipes from newspaper clippings and handwritten recipes and notes stuffed inside it. A treasure.

We sprinkled chicken breasts with ground black pepper from different heights--4 inches, 8 inches, and 12 inches--and found the higher the starting point, the more evenly the seasoning was distributed. And the more evenly the seasoning is distributed, the better food tastes.

60 I had beef ribs, oxtails and soup bones I wanted to use up so I made one of Lidia's beef stew recipes. Took 4 hours yesterday to get the meat tender, spent the morning picking meat off the bones. It's good but a giant pain in the butt. There was a ton of fat to get rid of and I got to try my new fat separator. Way better than the old style pour types.

Oldest I found was a jello package expired in 2004 sometime.

My vegan granddaughter brought some Spaghetti O's a week ago. I cooked them for her but the smell was so awful I damn near gagged. Hector Boiardi should have been shot, hanged, garroted and then burned.

While in college I worked at a large grocery chain. Used to put a 16oz. Pepsi (bottles then) in the ice cream freezer and when almost frozen pop the cap, and put salted peanuts into the bottle. Great stuff.

So I microwaved it, to be cooked later. Last nite I was going to throw it in with some brown rice. It didn't look right and appeared it had 'bled' out. But it smelled OK so I speared it with a fork. Here at Chez RMBS (aka The Fortress of Legal Solitude), I can report a perfect sous vide steak experiment last night. In fact, the hot water from my tap was hotter than the desired end temp, so I had to let it cool down before cooking. Go figure.

A beef tongue is curing in the fridge for a braised beef tongue and lentils next weekend.

And I checked out an amazing local butcher shop, recommended by a coworker, that carries everything from the normal stuff to alligator, wild boar roasts, whole goose, duck and pheasant, and a host of other hard to find items at incredibly good prices. This place will be a regular stop from now on.

They're easy to make. Boil the shit out of raw in the shell peanuts with a butt-load of salt for about 3 hours, then let them sit in the brine overnight. I usually add a creole seasoning for a little zip.

In the movie Holiday Inn there is a scene early in the movie where Bing Crosby goes into the dressing room of his fiance and notices that the hooks on the back of her dress are not hooked in the correct order and the hook at the top is unhooked. Soon thereafter Fred Astaire goes into her dressing room and notices the same thing about the hooks.

SPOILER ALERT

Is there something about the hooks that suggests that she is not committed or that she is romantically flighty since she dumps both Crosby and Astaire?

note: what made the Salmon Cakes extra-ordinary was the fresh Avocado-Orange relish that topped it. Fresh orange and avocado chunks with red onion, lime juice, jalapenos and cilantro. Wonderful and light.

A Tahini-Yogurt Sauce was drizzled over the Barley with Lentils and Mushrooms. Easy and so satisfying.

I live here, well here and in another state. Been here since 2016 so fairly recent. I was renting a house, but found a decent house that I bought. My house here is referred to has the frat house. Not the main home. Real estate has cooled off a little bit but is still strong. Around the time I bought if a decent house went on the market it would sell in 24 to 48 hours often above asking. Now not so crazy. There are decent places to live and some areas you really want to avoid. Where depends on where you are working and what you want to be close too. If you are going to be out north for work areas I would suggest would be other than what I would suggest if you are going to be more down town or to the south.

The other is to keep the temperature mild, and let the eggs cook long and slow, also covered.

Actually, the third method is to use water to mix the eggs, pull out a cold pan, put it on the burner, turn it on high, and then put the eggs into the still cold pan, bitch, and then watch as you get grey scrambled eggs that have BB sized curds. Then wonder why they always come out tough and unappealing.
That was an old girlfriend's patented technique. She got the same results every time.

Season the loin well. Sous vide at 140 for 4 hours. Chill down well. (I'm planning to refrigerate mine overnight.)

Then smoke at 325 degrees until it reaches an internal temp of 120. Idea is to cook it fully in the sous vide and then reheat and flavor it with the smoker.

Sounds appealing. I'll report back on results.

One 15 oz can Refried Black Beans (black beans are a must)
One 16 oz jar of your favorite salsa (I like smoked jalapeno or smoked chipotle )

Mix the beans with one-half up to the full jar of salsa, per your taste. Heat in microwave of small crock pot. Top each portion with chopped onions, shredded cheese, sliced jalapenos, or nothing, as you like.

I'd take those three and then throw in some artichoke hearts, garlic and whatever else you fancy and bet you'll get something good.

Anyway, as is typical, our youngest son rolled his eyes when he saw the dipping bowls next to everyone's dinner plates. After one taste, though, he admitted liking it and even asked if he could take some home -- said he wanted to try basting it on grilled ham slices.

He and I have been playing this game for years, and it never grows old!

I use olive oil on everything. I even fried some wings in it. you have to regulate the temperature but it is no big thing.

I will go with canola if it requires high heat and I want to save a buck. I guess peanut oil is the standard for serious frying.

I have messed around with lard and coconut oil but they didn't do it for me. For sure lard makes the best pies but that is beyond my skill level.

431 Found a sweet little vintage cast iron cornbread pan at Goodwill last week, one of the eight-wedge types. Reseasoned it in the oven and it has a lovely patina; probably about 50 years old. The same look an old locomotive has, that blue black shine. I made little quiches in it and they were great although awfully small. I have to eat two at a time. Tried cornbread last night and it stuck, I guess I didn't get the pan hot enough with the grease before filling the wedges. I'm still practicing!

Was out of electronic connection and just found out about Kobe Bryant.

First, real facts, not ABC News bullshit.
First call came into 911 at 9:47 am LA time. The fog was extremely thick. The pilot crashed into the side of the mountain, all died, and a quarter acre brush fire started.

There were nine souls on the helicopter, according to the LA Sheriff's office. Rumors are that Kobe, his 13 year old daughter, a friend of hers and a parent of that friend, were on board. Others unknown at this time.
He was on the way to a 7th and 8th grade bb tournament that his daughter was in, and he coached.


I used to be a true sports fanatic. Still follow some sports, but not like before contracts and politics became more important than statistics and wins.

When the NBA was politically stolen from Seattle, I gave up on that league. In the 12 years since, I don't miss it even a little bit, because the game is mostly one-on-one dunks and very little teamwork. But as a Sonics fan, the Lakers were in our division and so Kobe was a part of the news cycle a lot.

Kobe was certainly not a perfect person, nobody is. But he was one of the good ones. He didn't have to, but he helped a lot of younger people get involved with positive activities, during his career and especially after he retired.

He Paid it Forward a lot. He was an incredible roll model for young urban boys, something sorely lacking these days. He was the opposite of those negative stories we see these days about pro sports players.

Kobe won an Oscar as well as 5 NBA Championships.

I hate the NBA with a passion, but this Sonics fan will miss Kobe. Kobe Bryant was a lot more than a great NBA player. He was a good guy and a good citizen.

That has always worked well for me.. One whole brick shredded for a cookie sheet sized batch of nachos.
And I use Pace Picante Sauce (Medium) on the corn chips before the cheese.. then 450 degree oven. Crispy, spicy, cheesy.

Holy Cow! is that one delightful dish. There's a reason it's one of the Big Boys of Mexican cuisine.

And some Southwest style cole slaw.

Yum yum yum yum yum.

I used Diana Kennedy's recipes for both the fish and rice. She's almost always the guarantee of a great meal.

Around the time the movie came out, I and 3 friends had gone annually to fish in Canada for Brook Trout.

The 3rd year, 2 brothers joined us, and they were quickly named "The Hansens".

The 1st day, they flipped their boat, and almost crashed into other boats.

Of course, we drank beer. But those guys got drunk, and I mean DRUNK the first day. We went in to wash up for supper, and the one brother went to sleep on his bunk with his coat and boots on. Someone remarked on that and someone else said "He wants to be ready to fish in the morning", which sent us into convulsive laughter. The other brother, who at least had taken off his coat and boots, opened one eye and said drunkenly and slowly "Quit pickin' on my brother".

Any mention of the Hansen Brothers brings back memories of that trip.

656 San Antonio Chili Queens (circ. 1936 and going back several hundred years) were some tough women.

Generally the never used tomatos and beans were always in another bowl.

Chilies, onion and some seasonings and suet were used. Pork chunks often rounded out the beef.

On a trail drive i can see why beans were plenty and you looked hard for the meat.

659 I'm watching a documentary called Sheep Among Wolves. It claims the fastest growing Christian church in the world. It also claims mosques in Iran are empty and Iran's leadership are Muslim because that's where the wealth and the power are.
Interesting so far.
I can't know the truth of this but it confirms for me the absolute idiocy of the media in their grieving the death of Salami.
The movie also claims Iranian Christians are strongly pro Israel and Judaism.

I saw a V-22 Osprey in the air above stately Casa Backwardio this afternoon. Never seen a live one before. Also saw a fairly large transport plane that I couldn't identify on approach a couple of week ago. Been more military planes than usual, prolly because PDT's moving down here close.

672 My wife has a lot of Scottish in her background. There is or was a store in Chicago where you could order all kinds of Scottish foods. We have bought meat pies and sausage rolls, also have sent them to her folks as a gift. Don't know if they're still around.

My! but it wis waesome on Naebuddy's Land,
And the deid they were rottin' on every hand.

There wis skelpin' o' bullets and skirlin' o' shells,
And breengin' o' bombs and a thoosand death-knells;
But cooryin' doon in a Jack Johnson hole

"That's droll," says McPhun; "ye've jist speakit ma mind.
Oh I ken it's a terrible thing tae be blind;
And yet it's no that that embitters ma lot--
It's missin' that braw muckle haggis ye've got."
For a while they were silent; then up once again
Spoke Private McPhee, though he whussilt wi' pain:
"And why should we miss it? Between you and me
We've legs for tae run, and we've eyes for tae see.
You lend me your shanks and I'll lend you ma sicht,
And we'll baith hae a kyte-fu' o' haggis the nicht."

Oh the sky it wis dourlike and dreepin' a wee,
When Private McPhun gruppit Private McPhee.
Oh the glaur it wis fylin' and crieshin' the grun',
When Private McPhee guidit Private McPhun.
"Keep clear o' them corpses--they're maybe no deid!
Haud on! There's a big muckle crater aheid.
Look oot! There's a sap; we'll be haein' a coup.
A staur-shell! For Godsake! Doun, lad, on yer daup.
Bear aff tae yer richt. . . . Aw yer jist daein' fine:
Before the nicht's feenished on haggis we'll dine."

There wis death and destruction on every hand;
There wis havoc and horror on Naebuddy's Land.
And the shells bickered doun wi' a crump and a glare,
And the hameless wee bullets were dingin' the air.
Yet on they went staggerin', cooryin' doun
When the stutter and cluck o' a Maxim crept roun'.
And the legs o' McPhun they were sturdy and stoot,
And McPhee on his back kept a bonnie look-oot.
"On, on, ma brave lad! We're no faur frae the goal;
I can hear the braw sweerin' o' Sergeant McCole."

But strength has its leemit, and Private McPhun,
Wi' a sab and a curse fell his length on the grun'.
Then Private McPhee shoutit doon in his ear:
"Jist think o' the haggis! I smell it from here.
It's gushin' wi' juice, it's embaumin' the air;
It's steamin' for us, and we're--jist--aboot--there."
Then Private McPhun answers: "Dommit, auld chap!
For the sake o' that haggis I'll gang till I drap."
And he gets on his feet wi' a heave and a strain,
And onward he staggers in passion and pain.
And the flare and the glare and the fury increase,
Till you'd think they'd jist taken a' hell on a lease.
And on they go reelin' in peetifu' plight,
And someone is shoutin' away on their right;
And someone is runnin', and noo they can hear
A sound like a prayer and a sound like a cheer;
And swift through the crash and the flash and the din,
The lads o' the Hielands are bringin' them in.

"They're baith sairly woundit, but is it no droll
Hoo they rave aboot haggis?" says Sergeant McCole.
When hirplin alang comes wee Wullie McNair,
And they a' wonnert why he wis greetin' sae sair.
And he says: "I'd jist liftit it oot o' the pot,
And there it lay steamin' and savoury hot,
When sudden I dooked at the fleech o' a shell,

Then sudden the order wis passed tae attack,
And up from the trenches like lions they leapt,
And on through the nicht like a torrent they swept.

On, on tae the foe wi' a rush and a roar!
And wild to the welkin their battle-cry rang,
And doon on the Boches like tigers they sprang:
And there wisna a man but had death in his ee,
