Food Thread: The Bigger The Better! Make Something Huge For Christmas Or New Year's Eve...

There's nothing quite like a large hunk of flesh, still attached to the bones, and complete with the fat that the beast was kind enough to deposit in and on its carcass.

Who doesn't like a monstrous slice of prime rib, or a wonderful rich and fatty slice from a lovingly roasted lamb leg, or even -- dare I say it -- a double-cut chop from a luscious pork roast?

I guess, for the purposes of politeness and inclusiveness, I should include large birds, but please don't throw TURKEY! at me. Roast a goose or even a duck, but not (shudder) turkey again!

I think the prerequisite is size...there is something festive and wonderful about the idea and the sight and the aroma of something big. When the host has to get help to carry the damned thing into the dining room, you know that you are in the right place!

We had some friends over for dinner recently, and they brought cupcakes for dessert! "What?" Cupcakes? How very pedestrian*! But these weren't ordinary cupcakes. Two of them had small plastic vials of liquor embedded in them (it's sort of tough to see in the photo), and the idea was to squeeze the vial, thus injecting the liquor into the cupcake. Sounds...um...stupid? But it was brilliant! it worked fabulously well, I think in part because the liquor was not full-strength stuff, but rather what I am guessing was a mix of liquor and perhaps wine or even water. The guts of the cupcake was flavored but not overwhelmed.

Oh...the cupcakes themselves were great too.

Apple Pie Cookies
I wonder where I can get pie dough? Hmmm...Oh, I know one place I can't get it: Bluebell's kitchen. She promised to drop by before Thanksgiving to make me some of her famous pie doughs, but she never showed. Typical Red Sox fan.

By the way, these seem to be the kind of cookie that is best fresh and warm. I'll bet they are spectacular a few minutes out of the oven. It's just the sort of thing that I would eat a few seconds too early and burn the crap out of my mouth.

So who is coming over to Chez Dildo to make them? I am, as I have admitted in the past, a retard when it comes to pie doughs, so if I ever attempt this recipe it will come out weirdly shaped and lopsided. But hopefully still delicious.

Oh my! Some of these must be fake, because they are just so stupendously , outrageously, unbelievably ugly and non-functional that I can't believe anyone actually took them seriously.

I just spoke with an old friend who just bought a house. It has a 1970s kitchen, complete with a mural of a monkey on the wall. So maybe I am wrong...maybe these are all serious!

I have posted this recipe before, but it is a crowd pleaser, and one that, while it is a tedious process, can be done in advance.
Caramelized Onion Toasts

  • 1 stick (4oz) of unsalted butter
  • 3 big Vidalia or yellow onions, sliced
  • 4 anchovy halves, chopped
  • 3 teaspoons chopped fresh thyme leaves
  • Kosher salt and freshly ground black pepper
  • 1 baguette
  • Extra-virgin olive oil
  • Shaved Parmigiano-Reggiano

Heat ½ stick of butter in a large skillet over medium heat. Add the onions, chopped anchovies, thyme, salt and pepper and cook until the onions are golden brown, about 20-30 minutes, but it could take longer. Be careful not to burn the onions. If necessary, turn the heat down. The onions will eventually caramelize at the lower temperature; it will just take longer.

Preheat the oven to 400 degrees F.
Meanwhile, holding the knife parallel to the cutting board, shave off the rounded top and bottom of the baguette with a serrated knife so that it lies flat. Don’t cut too much; just enough so that the baguette doesn’t roll around. Then cut the baguette in half lengthwise and then each long slice into 3 equal pieces to make 6 slices of bread so that it fits easily on the baking sheet. Melt the remaining butter and brush both sides of the bread.
When the onions are cooked, put the bread slices on a baking sheet and spread with the onions. Drizzle with olive oil, but not too much; there is plenty of fat in this dish!. Place in the oven and bake until the bread is crispy, about 10-15 minutes. Sprinkle with Parmigiano-Reggiano shavings. Cut into pieces on the diagonal and serve hot.

13 Sorry you don't like turkey... If you do it on a rotisserie at very high temperature (500-550F), it will finish in about two hours, have a delicious, crispy skin, and both the white and dark meat will be juicy.
Done that way, it's quite delicious.

23 Ordered some of the wild rice from Lake Region Wild Rice Company in MN. They were mentioned in a recent Gardening Thread. It's glorious!

We tried the broken (soup) rice to start with. Perfect-- mild, nutty flavor with just a hint of smoke. Cooks up very well, solid as a rock.

One pot of wild rice chicken soup and we are hooked! Placing another large order tomorrow for gifting and for ourselves. Can't wait to try the full grain version!

Hubby is a sous chef at a casino, and he says it'll be added to and/or replacing any other rices in any recipe where he can work it in.

I'm one of those goofs who can't stand the texture of mushroooms but loves the flavor in sauces. I use just a teaspoon in a chicken marsala sauce and love the result.

Funny thing: A while ago, I started putting meat on the grill and smoking it for a bit then tossing it on the gas grill to sear the meat.

I recently discovered that's called a "reverse sear."

No matter the name, seemed an obvious thing to do.

And speaking of reverse sear, about to toss some sirloins on the pellet grill then on to the gas grill!

For a "pinky finger extended" reverse sear.

Sponge hit on it. I use Kosher salt so really that is not correct in the recipe. Cut it in half to 1 1/2 t of table salt if that is what you use.

92 Sponge hit on it. I use Kosher salt so really that is not correct in the recipe. Cut it in half to 1 1/2 t of table salt if that is what you use.

Friend of ours had their kitchen redone. Went to put in the new custom cabinets, oops, the wall wasn't square.

Kind of amazed me the guy had it done, because he's a master cabinet maker in his own right, though, he pretends he's just a hobbyist.

Yeah, well, if I had that kind of talent, it would be more than just a hobby.

You're right--when you eat one fresh out of the oven, you want to get down on one knee and weep. They're some work, but so pretty and so worth it, and they reheat well.

109 In my last kitchen, I had to open the refrigerator door in order to have clearance to open the silverware drawer. Also, the largest lower cabinet space, where normal cooks would store pots and skillets, had an 8-inch wide door opening. If you opened the next door over (under sink) you could reach the shelves from there.

The kitchen before that one had pink enameled metal cabinets with a matching pink stove. The original refrigerator had been pink as well. The next apartment over was turquoise.

At least the pink kitchen had adequate, functional storage.

Yeah if you want a very hard surface, soapstone is not for you. This is my third kitchen with SS but I like the 'lived in' look even if there are worn spots.

What I really like about SS is dishes right out of the oven go right on it without potholders or trivets and if I need to thaw frozen meats quickly, I plop it on the SS and in about 30 -60 minutes, it is thawed.

140 The best lomlettes I ever had were at a restaurant in Clearwater Florida called the Olde World Cheese Shop. They had the most delicate omelets with interesting cheeses and veggies. They made a hollandaise source that was so outstanding you'd want to drink it! Excellent Bloody Marys too!

Deshutes "Jubelale" - perfect mix of ale and spices very smoo0th. Immensely moreish.

Morbach "Yule Shoot Your Eye Out" Lighter version of Christmas ale . Think red ale with slight spicing. Super drinkable.

Great Southern(?) "Habitation Ale" - yummy winter warmer, thick caramel taste.

Avery "Sweater Party" - lotsa spice, like drinking gingerbread and snickerdoodle.

There you go. None of them are bad at all.

when I design a kitchen, I design the cabinets, down to the drawer runners. Nothing done a the back of a cocktail napkin
And many rooms are out of square or outta plumb. You either correct the situation or design around it
Any custom made cabinet will probably have to be scribed to fit. Just part of the job

and although I get paid for it, It's just a hobby

151 I made pear tartlets for work for last Friday.

I made an shortening crust, the basic recipe is:
3 C all purpose flour
2-1/2 tsp Salt
1/2 tsp baking powder
1 Cup Crisco

to which I added a shot of anise flavored rum while it was mixing in the mixer.

I rolled it out and cut circles and carefully teased them into the cups of a muffin pan, and then put in

diced up pears that had been canned in water and sufficient pear jam to fill up the rest of the pastry cup

I baked in a pre-heated oven at 350F for 30 minutes -- My oven is a bit hot so that may not be enough time for you -- and I had to use a butter knife to separate them from the pans so paper muffin liners might be a good idea.

The jam caramelizes, and the crust was a bit too short so when I put them in a bowl to take to work the ones on the bottom crushed

I get to brag because I canned the pears in water and made the jam myself.
And one of the responses I got was a mouth full "emmehgord" comment.

Most are. Usually these days depending on the food, it is not a 'safety' thing as much as a 'quality' thing. The flavor starts to degrade after a while, depending on the packaging and how good an oxygen barrier that packaging is.

Just want to say thanks and it's working out well! Only problem is I got it from Amazon and it looked like it had been returned by someone else. The seal over one of the openings appeared to have been removed and replaced, which makes me a bit uneasy. However, I've been using the supplied salt and pepper with no issues.

I've heard Amazon has gotten worse about allowing vendors to sell expired foods and not-quite-as-new-as-described items.

Had our compact galley kitchen gutted 4 years ago.Best $14K (Can= a big TEN SPOT?).
Went from the 1960's to sparkling.ONYX is the way to go Green flooring too. The markings on that surface run the gamut,WE chose (WINK!) a silvery white with blue grey veining(SOUND FAMILIAR Ha!).
The white custom cabinets amuse me daily with the "easy close" trick.
Great lighting sealed the deal,I've learned where cutlery and pots and pans live Who KNEW?

Somehow the 3* Michelin cooking stayed away...Hello FOOD HUB...2 greasy things please.

Yeah so I'm still skiddish on pulling the trigger for the crock pot. I don't know if I'll ever use it. Costco has a nice one on sale for $65.

They a $189 one that is also a "crisper" and a Dehydrater, which is nice in case I want to mummify something, I guess.

What I want is something super s-i-m-p-l-e. Easy to make stuff, and easy to clean.

167 My brother always cooks a yuge slab of meat for Christmas dinner. He's a chef, but currently in wholesale food sales, so he gets the meat from his employer - and it is always fabulous. However, when not celebrating at his house we like to do cheese fondue*. You can dip all sorts of stuff (bread, veggies, meat) and it's a fun interactive meal. Naturally, there's chocolate fondue for dessert.

My non-foodie Cheese Grits:

1 C. grits cooked
1/2 package cream cheese
1 c. grated cheddar or pepper jack cheese
1 T. garlic salt, to taste

Stir it all together and bake for about 30 mins at 350.

Mississippi Pot Roast

1 3-4 lb. boneless chuck roast
1 1 oz. pkg. Au Jus Gravy mix
1 1 oz. pkg. ranch dressing mix
Several pepperoncinis and some of their brine
1 stick unsalted butter cut up on top of roast and other ingredients.

Cook on low 8 hrs.

He raves about it.

1 cup butter (2 sticks)
1 cup sugar
1 egg
1 tsp vanilla extract
3 cups AP flour
1 tsp kosher salt or 1/2 tsp regular

cream butter and sugar until light and fluffy. beat in egg and vanilla. add salt and flour and mix until combined. roll out dough on a floured surface or between sheets of parchment to about 1/4 inch thickness. chill about 30-60 minutes then cut out cookies with cutter and place on parchment lined cookie sheets. bake 7-9 minutes at 350 degrees or until edges just barely brown. cool on wire racks. These cookies don't spread much and hold their shape.

My wife makes prime rib using her Grandma's recipe, a bit similar to yours but different. I think she cooks it at normal or maybe a bit high for a brief time, then shuts the oven off, never opening it, for a couple of hours. Then turns it on again to finish.

This Thanksgiving, I was tasked with defrosting and brining a frozen 16lb bird 2 PM the day before Thanksgiving. No Shit.

In addition to getting everything ready for my own family.

I succeeded. Everyone loved it (as I hear), and yes you *can* brine a frozen bird the day before if you absolutely need to.

I don't recommend it, but it is perfectly possible with good results.

298 Mom always made our "Spotted Ham" and it was always so delicious. We'd get amazing sandwiches out of it for days. The broth and bones were saved for pot of beans early next year. For New Year's Mom would do a wonderful prime rib that always came out the perfect med-rare with the nice crust.

But she passed this summer so it's just me and Dad now. There is no heart in the holidays this year.

The lady then used it to thaw a frozen fully-cooked rotisserie chicken.

So you can buy those $4.99 cooked rotisserie chickens at the market, freeze them, and then eat them later. Interesting.

Another on Mom's side arrived in Seattle from Finland around 1900, and got work as a longshoreman in Longview.

Spotted Ham - I guess others call it "spiced ham". It's a big ham shank where we score the fat and "spot" the ham with whole cloves, and dabs of nutmeg, cinnamon, and allspice. Roast it covered in the oven all day and this delicious thing comes out at the end.

441 I've just replaced the kitchen sink and faucet.

Twin basin, 9 in. deep stainless. Nothing fancy, but Deep Basin Sinks are an absolute must.

Faucet is a Commercial Overhead Sprayer, the kind with the spring-wrapped, braided stainless hose and heavy brass, chrome plated "grab-lever" type spray handle.

The kind that they do NOT sell at Home Depot or Lowes. The ones they sell at the big box stores are light-duty "looks-like" the commercial stuff, but with wee delicate and fragile internals. More toy than tool, but meant to make Suzy Homemaker feel all "professional" and stuff when she shows it off to her Wine Mom friends.

With a noise-dampened In-Sink-Erator disposal under the left-side basin, I can clear dishes at a rapid clip, with everything ending up on a drainboard to the right of the sinks.

Bonus. Being a Commercial Unit, the faucet does not use it's chrome hardware to "hide" tiny 1/4" I.D. plastic hoses as the actual water conduits. Nope. Full 1/2" I.D. within those metallic tubes. No more does it take between five and ten minutes to fill a sink.

So much faster in fact, that I'll not turn my back on it all while running hot water at full blast.

And so, one major portion of the kitchen has been brought up to a Pro standard, and what a difference it makes!

My grandparents on my Dad's side had electric blue shag in the living room. And this gigantic green sofa. I swear it was the biggest deepest sofa I have ever seen that was all one piece. Four or five people could sit comfortably on this thing.

480 Spotted Ham - I guess others call it "spiced ham". It's a big ham shank where we score the fat and "spot" the ham with whole cloves, and dabs of nutmeg, cinnamon, and allspice. Roast it covered in the oven all day and this delicious thing comes out at the end.

Umm... check the nic Bluebell

Blanch green beans for 3 mins. Season with olive oil, kosher salt, fresh cracked pepper. I usually do that in baggie. Wrap 5-7 beans with 1/3 - 1/2 slice of bacon. Roast in 350 oven for 10-15 min until bacon cooked.
(I will sometimes nuke bacon for 1 min if thick before wrapping.)

I've done something similar only with asparagus, swiss cheese and prosciutto...or bacon...or ham slices. Mix some bread crumbs and melted butter and sprinkle on top of the "bundles".

I always serve a ham dinner on New Year's Day, which includes sweet potatoes, black-eyed peas, green beans, applesauce, cole slaw, corn bread with honey butter, and lemon meringue pie.

Been serving this exact same menu for more than 30 years, starting with the two-year anniversary of my Dad's sudden death (on New Year's Day). I was truly a basket case that first year, couldn't find solace despite being surrounded by the love of a wonderful husband and young children. Soon after, however, I realized how my anguish was affecting my family and, maybe even more importantly, how unfair it was to myself to feel that pain.

So I took that negative energy and poured it into something positive, by preparing one of my Dad's favorite meals. He loved to cook, so it was easy to imagine the two of us working in the kitchen together. I set a place for Dad at the table and, after the blessing, requested the family to recall individual memories. The mood may have been melancholic, but the black hole was gone.

By year three, things improved to where I didn't need to fake any smiles. Even better, everyone in my world had stopped dreading being around me on New Year's Day.
