Food Thread: Keep It Simple Stupid, Or: Keep It Simple And Tasty Stupid

This is what you do when you are stuck for something to eat for dinner but aren't willing to settle for something crappy. That's a fried egg, some sauteed chicken, a handful of arugula, and some sauteed vegetables. The topper is out of a jar of chili-garlic crisp from Trader Joe's. That whole thing probably took 10 minutes to make and was, by all reports (it's not my concoction, but I trust the cook who made it) it hit the spot.

The point is: why settle for crappy and boring food? With a bit of thought and some spelunking into your spice rack or the back of your refrigerator you can make some mighty fine tasting food. There are hundreds of fantastic pastes and dressings and fun concoctions that are as close as the spice aisle or the oriental section at your local market.

So give it a try. It doesn't really matter what you make, just jazz it up with some thing bright and pungent and vibrant. Hell, plain old scrambled eggs topped with chili crisp are great!

After months (years?) of dithering and delaying and procrastinating, I finally ordered a "sous vide" machine from Anova. They came out with a new one recently, and by pre-ordering I saved a fair amount of money. I also added to my impatience level because I had to wait an entire month! By the way, I chose the Anova over the other popular brand (Joule), because it does not require an account and internet connectivity to operate. I'll be damned if I am going to cede more of my privacy to industry, however trivial it might seem.

So, the thing seems well built, it is simple to operate, and I can even control it from my phone via bluetooth or my wifi network. That sounds stupid, but it's sort of convenient and amusing.

For those of you who are unfamiliar with the whole idea, it is cooking food in a water bath at the exact temperature you choose. So if you like your steaks cooked to 131°, that's what you get, without the inconsistency of cooking in a pan or on a grill or in the oven. And it's not magic, it doesn't require any skill, and it really works.

But there is a kicker...the food is ugly. It's not browned or crisp or caramelized, so there is an additional step that is required for most "sous vide" dishes, and that is the tough(er) part. But with a little practice and some trial and error it is manageable. The technique is worthwhile, and for some things like fish I really think it is better, but it won't replace traditional cooking, and there are some dishes that you simply can't make with "sous vide," like my dinner tonight...roast chicken!

I found this video when I was poking around for "sous vide" information (did someone around here recommend her?). This is exactly the kind of dish I love. Simple, fun technique, and it looks like it tastes great.

There is nothing earthshaking about it, but it's simple and fast and clean up is a breeze.

And clearly there are some pompous asses in charge of headlines over at Bon Appetit. But that's not the best part of this list.

The first restaurant on the list was just shut down for failing a health inspection!

Although...I might quibble with the "stromboli" part. My impression of stromboli is that it is rolled, but this looks more like a calzone.

From garden - 2 ripe Anaheim peppers grilled and peeled, couple ripe sweet peppers , 1/3 tomato, basil leaves and oregano, and few slices of onion all sauteed. Chopped up 2" pepperoni and 1/4 pound of sliced ham placed all on a rolled out pizza dough, topped with mozzarella and provolone. Folded up and a wash with egg into 400 degrees with a pizza stone.

Speaking of sous vide and chili, I cut up a cheap roast (chuck or even shoulder) in bite size pieces, season with salt and pepper, and then sous vide for 24 hours. Mix with your favorite chili seasonings. Makes the best chili I've ever had (and I'm a native Texan).

Ditto on the disdain for turkey chili. If you've got leftover turkey and want to do something exotic with it, try turkey mole (pronounced MOH-lay), a more classic recipe. You can buy prepared mole sauce pretty easily.

15 I bought some dried habanero flakes and dried jalapeno flakes from Sonoran Spice Company to make Bloody Mary mix with for a 9 am tailgate party I was bartending.

If you like spicy chili peppers but don't like prepping them, these really add great flavor and heat. The Bloody Mary mix was a smashing success for those that wanted them spicy.

After the gym, just did great grilled cheese sammiches. Good bread, lots of butter [the essentials], good cheese - but then added something. Caramelized balsamic onions [from a jar - though I do make these occasionally to use on burgers or chicken], and a walnut-infused mustard. Fantastic.

Used to do it, years ago, and was amazing, so many layers of flavor. Friends/colleagues who'd had it would ask me if/when I was making it again.

Misissippi slow cooker pot roast. Jane D'oh originally brought it to my attention, here. Probably literally not even 15 total minutes of work. Great pot roast.


Another slow cooker fave: pulled chicken. Also almost no work, at all, and very very good.


Chicken thighs [trimmed; on sale, cheap is part of the game here]

Basic rub spices [for me: smoked paprika, cumin, black pepper, garlic powder, onion powder, salt]

Bottle of BBQ sauce [or home-made version]


Rub spices on chicken, toss in slow cooker, 7 hours later, remove chicken, shred, return to cooker, mix with BBQ sauce. Done. Delicious. By itself, in a sandwich.


Use all the time you've saved reloading 45ACP. Or doing push-ups. Or working on your Russian pronunciation.

49 Since YD mentioned tacos, it reminds me of 2-3 yrs ago asking for fish taco recipes on the Food Thread. Never had one, but daughter requested for b'day meal.

Got several suggestions from 'ettes. Ended up with some flounder, red cabbage, pico de gallo, guac, and blue taco shells and more. We had a wonderful meal for her b'day.

51 For the scotch fans (and really, who isn't): I just watched a wonderful show entitled Scotch: A Golden Dream, on Amazon Prime. It's part documentary on how scotch is made, part travelogue on the beauty of Scotland, and part biography of some of the old masters making scotch.

The main drawback is that it's not 5 pm yet. The other drawback is that they discuss and recommend Bruichladdich Black Art, which is $400 / bottle.
Otherwise, very enjoyable.

Few thing perk up a nice meal with rice in it.

CBD, if no one has suggested it, the traditional finishing for a sous vide meat is to run over it with the propane torch. A nice fan-tail nozzle might be what you need to avoid rowling burns across it.

when you are done, of course you can either finish that creme brule, or start silver soldering your copper plumbing.

I normally hate any kind of gathering involving anyone outside my immediate family (Hell, office parties are a friggin' chore - even though I work and chat with these people daily). But I've been to two Colorado meetups, and I truly had a great time both times. It's a rare thing that I feel relaxed around a group, especially since most of the group is stacked in tiny gray boxes. My retirement plans include visiting meetups all over the country.

The Horde is a unique phenomenon. We need to cherish it.

And one of these times someone needs to lure The Boss to a meetup.

I have two family members who are judges in this event.

We have discussed the chilis made at this competition. I say that they are all virtually the same in texture and flavor. I looked at dozens of the winning recipes and runner ups for the last few decades. I understand the need for NO one chili to look different from another for judging purposes may be necessary but then there is no truly individual, outstanding chili tho they may taste good.

They both have told me 'tis true.

Chili should be an extension of 'self' .

My chili would not be allowed at Terlingua.

Eggs and meat together is "big in Japan", with various styles of donburi being a common comfort food or restaurant 'fast food'. Donburi just refers to food served over a bowl of rice.

Gyuudon (beef bowl), katsudon (fried pork cutlet bowl), and oyakodon (chicken bowl) are common choices.

And while "gyuu" is "beef" and "katsu" is "cutlet", "oyako" doesn't mean "chicken". Since it's chicken and egg, oyakodon is the "parent (oya) and child (ko) bowl". Funny, but a bit morbid.

118 I did the no knead artisan bread recipe. I have the Kitchen Aid grain grinder so turned the wheat into flour last night. I did not weigh things but will the next time I try. I have a Romertoph and decided to use it for this batch of bread. It turned out fine. I'm going to do rye next time and hopefully sourdough. I think there are times I'd rather do a knead recipe as this dough is too sticky to shape.

139 I brought some toasted pecans to the MoMe yesterday (the Mother Pecan tree was from central Texas, after all) and in any wanted to make some yourselves, it is really quite easy and makes a great party snack.

Ingredients:
1 stick butter
1/3 cup Worcestershire sauce
2 cups shelled pecan halves
plenty of ground sea salt

melt the stick of butter in a bowl, add the Worcestershire sauce, add 2 cups pecan halves and stir until all are liberally coated with the mixture Place the pecans on a tray, salt liberally (to taste) and then roast them at 300 degrees for 20 minutes. (test for crispiness at that point, depending on your oven you may need a bit more time)

and that's it! Very quick, easy, and enjoyable party or snack dish to make.

"MAd cOW cHili" on it.

I have a bottle of Wild Turkey I purchased back in the mid 90's, what we used to call lead top. I found it in a liquor store in SF, and it was probably about 10 years old then. Back in the olden days before they were bought by the French, WT used to be 8 years old. It was much better than the small batch junk they make now, and I'd put it against most of the other micro distillers. WT has gotten increasingly worse over the years.



I was going to crack the bottle new years 2000, but didn't. When I moved out on my #$%^ ex, I grabbed my clothes, my camera gear, and this bottle. Thought I might open it on my 60th, but didn't do that either. So now, it'd better be a pretty special occasion!

Lots of foods taste better the 2nd day. We regularly do spaghetti with my edited sauce (use whatever you wish) and park it in the fridge overnight then reheat ON THE STOVE.


Never nuke it. I guess I should mention the spaghetti is sauced to your desire, even the extra gets the overnight thing.
The garlic knots are made fresh, of course.

Been working on brine/rub ratios, now at about 1/8 cup each of pink salt and brown sugar, into bag with fish, refrigerate overnight, then cold smoke for 6-8 hours. We'll see.

Surprisingly, I would say that less than ten percent of the lively and vastly fascinating conversation had anything to do with politics.

I think what was probably the greatest part is that we all could just talk openly on any topic without any concern that someone would be offended.

Much of what we say and do in real-life has to be guarded so that it isn't taken wrong. This is true whether at church, work, neighborhood block party, bar or family reunion.

What was special is that we all brought in our own stories, backgrounds, specialties, avocations and life experiences to color the conversation, so that on any thing, you will have the view from a lawyer, engineer, neurosurgeon, rancher, first-responder, artist, and mother's perspective.

We are much better for it.

223 I baked a Swedish apple cake yesterday - a recipe that I hadn't made in over 20 years, but used to make frequently. I cut it in half for a 9" cake pan, and it came very close to running over, but didn't. A moist cake. Measurements are weird due to conversion.
Prepare by bringing 10 T of butter to room temp (cut into 1/2" cubes). Butter the pan and use plain bread crumbs instead of flour to line the pan.
Beat 13 T sugar with 3 large eggs until pale. Add 1 cup flour mixed with 1 tsp baking powder, then 1/2 tsp vanilla. When thoroughly mixed, beat in softened butter. Spread evenly into the pan with a spatula (it's thick). Peel and slice 2 apples 1/4" thick and either press vertically into batter or lay nicely on top. Sprinkle with cinnamon and bake at 340F for as long as it takes - in my case, 60 minutes. Allow to cool before cutting.

I defrosted some meat sauce and made lasagna with it. It was very good, and so easy if you have the sauce ready to go. I'll be sure to make extra meat sauce next time and freeze a few bags. (Agree on the no nuke thing.)

244 I used the tomato overflow from Rutgers/San Marzanos for sauce this year. Peeled the tomatoes after dropping in boiling water for about 25 seconds, then strain the juice from the seeds and gelatinous liquid to extract as much yumminess as possible. 1 1/2 pounds, coarsely chopped, then maybe 10 pulses in the food processor. You can freeze as is in a bag laid flat, or continue to make a nice pasta sauce by slicing 2 garlic cloves thinly and sauteing with 1/4 tsp of pepper flakes in 1-2 T of EVOO. Add tomatoes and bring to a simmer. Add 4 fresh basil leaves and 1/2 cup of white wine. Simmer until thickened. Makes a little over 1 cup of very tasty sauce.

257 I made something along the lines CDB was talking about. Last night was thinking about a ham sandwich of some sort but I'm trying to go kind of low carb not extreme. So I put down a piece of krakus ham, then topped it with some mushrooms grilled Julia Child Style check that out makes em great, then top that with gruyere cheese and sharp cheddar in another piece of ham. Zap it in the microwave a bit and you've got a tasty meal. So I was in tune with the quick cheap and easy theme here today.

I reside near the People's Republic of Austin. You would either have to be in Seattle or San Fran to beat that.

I was working a quick rescue mission for a major financial services institution and an internal email went around showing photos of the new offices where the cubicles were very small. Soon after the Creatives in the department I was helping out Photoshopped images mocking the tiny sizes of the cubicles so I simply added a comment "If the cubicles were occupied with chickens rather than employees, PETA would be organizing a boycott". That quickly triggered several people who escalated it to where a SVP had to intervene and have people called in to account for the disruption.

Everywhere, a Normal must either walk on egg shells or have their head on a swivel and ready for violence or worse.

I found that true at the Las Vegas Momi. Just a bunch of good folks enjoying each other and getting to know each other better, although this place lets us I know each other pretty well. But very little talk of politics that doesn't consume Our Lives. The other Mommy I was too was to a small Wisconsin one miss him was there Donna and Hugo Chavez and we had a blast. Excellent folks The Horde is outstanding, and as you said probably a bit above the average intelligence. As evidenced by they don't vote for Democrats.
