Food Thread: Of Monster Chickens And Exploding Kitchens

This is what I had planned for this evening, but it is currently 46° and raining steadily, so I will have to postpone. But the backup plan is okay...cheese and ham stuffed chicken breasts. The problem is that the typical chicken breast I find at my local supermarket seems to come from 10 pound birds, so it takes some planning to make manageable portions. And they really don't get very tender in the oven, so today's plan is to butcher them into appropriately shaped pieces that I can then pound for extra tenderness. That will also make it easier to put them together, since I won't be stuffing a pocket cut into the pterodactyl breast but rather folding a wider pounded piece over the filling.

I'd still rather grill....

Sounds easy, doesn't it? In response to a surge in Hepatitis A, we should start vaccinating which, if it is warranted by the data, is fine with me, because vaccines are one of the wonders of the Western world.

But buried in the article is this tidbit (bolding is mine):
The researchers reported a large population of susceptible, unvaccinated adults who were not infected by being exposed to the virus during childhood remain vulnerable to infection by contaminated foods and other sources. The majority of people reported infected by the hepatitis A virus in 2016-2018 were either homeless, and substance abusers, or both.
So we are to roll out a multi-billion dollar vaccination program to stamp out Hep A in the homeless and drug addict population? I am confident that will work well, because the target population is famous for adhering to medical guidelines.

In reality the article is written in service to the publisher, who is a successful personal injury attorney specializing in...wait for it...food-borne illness!

DadCooksDinner is a solid website that is also loads of fun to read, because the guy doesn't take himself seriously and knows how to write a clear recipe. But he has recently gone off the rails (not really, I'm exaggerating) with pressure cooking everything! I'll bet that it's all pretty good stuff, but I'm just not that interested. However I know that some of you deeply deluded souls like to dabble in the dark arts of pressure vessels and the potential for explosive decompression in the kitchen, so have at it!

Looks good! Blood oranges are fun to use in cocktails, and they even taste good without gin! But some local brewery put them into a pale ale, and that is beyond the pale!

Awful. Gorgeous color though, which made it even more disappointing when i tasted it. This has been going on for several years and shows no signs of disappearing onto the ash heap of history. Don't put weird shit in beer just for the hell of it. Just don't!

North Carolina barbecue is one of my favorites, at least in part because it was the first truly regional barbecue that I tried. My dad came home from a trip to North Carolina one day, lugging a styrofoam cooler filled with the stuff that he had carried on the plane. it was a revelation!

Since I was poking around Garden&Gun, I had to take a peek at their recipes, and this jumped out at me. Meat pies can be crap, but they can also be fantastic. My grandmother used to make a version that she learned from..um...I have no idea, but it is called "borekas," and I could eat about 30 of them at a sitting (they were small...one or two bites).

When traveling to certain countries, you need this. I have most all vaccines (current), including a new tetanus. My husband has them all. I often thought he never gets sick because of this. It is very rare. Haiti, Myanmar, Peru, Philippines, etc. We both have our international vaccine booklets. I used to be scared of getting them and now I'm not. It's all coming here.

17 I made a lime pie. Did I say "key-lime pie"? I did not. Could not find key limes. Bought a bag of Mexican limes, Veracruz Mexican limes to be more specific. It has a homemade graham cracker crust and the whole thing was baked in the oven although no eggs in this recipe. I tasted the filling before baking, and yes, not "key-lime" but extremely tasty nonetheless. I will decorate with whipped cream and lime slices and take it over to my son and DIL's later today. Veracruz lime pie may become a thing.

My sister uses her instant pot a lot
couple times a week (which makes multiple dinners so I would gather most of the time).

I really like the pressure cooker function of the instant pot. But I am in no need for a slow cooker because I am always around to cook and plan to be home for long drawn out meals.

I had told CBD, my biggest pet peeve to the instantpot is the cleaning. I can make the same meals with less mess and a bit more time, or less. I now have multiple rings for the lid because they get saturated with the cooking vapors. No matter how long I soak them...

So I have some clean ones for baking only, etc. Stews and soups, etc.

But I haven't grabbed it since I made the cheesecake. I think the InstantPot will be my cheesecake maker over anything else!

23 I came across an incredibly simple recipe from an 18th century cookbook. It's for a roasted onion. Just take an onion and bake it at about 350 degrees for about 45 minutes, similar to a baked potato. Smaller onions might take less time. Don't pierce it or cut it in any way. When it cools enough to handle, cut off the bottom and squeeze out the onion. A bit of butter, salt and pepper (fresh cracked, of course, he said with a sniff) is all that's needed.

The process brings out all the natural sweetness of the onion. It is softened but not mushy. The texture is like very fine beef. Delish!

This is a colonial era recipe and onions are one of the crops that can be stored all year. Come late winter and early spring when veggies are getting low, these baked onions would be tasty and provide some major health benefits.

There is a video on Youtube about it. Search 'townsends baked onion' to find it. The Townsends channel has a bunch of Colonial era aspects videos including a lot of recipes.

I sent my mother-in-law, who is a very good cook, and has worked hard to have large family meals throughout the years, a gift basket of pre-made meals, soups, tarts, meat pies and other goodies today for Mother's Day. She really appreciated it.

It's from a local farm (that claims to be organic). They do seem to source out nice varieties of produce. I am going to try a week's delivery of their vegetables and see what I think. I also want to compare the price to what I could buy in the store in the same quantities. I bet it's close. Produce is so expensive.

They also sell their stuff at the local farmer's market. Delivery is included in the price, which I have to factor in.

Anyway, it was a "food thread" related gift.

43 We have long-ago handed-down recipe for meat pies. We call them "pastys." The recipe was from the wife of a miner in the U.P. who worked with my great-grandfather.

Slivered round steak, slivered potatoes, slivered onions, salt and pepper. Baked into personal-sized 1/2 moons, in a similar-to-a-pie, crust. Not as rich as pie crust, and almost as flaky.

Time consuming to make, but well worth the effort.

They are beyond awesome!

I'm sure it was. And it probably looked bigger in her actual house. I don't know how my husband would feel about my lining the kitchen walls with pegboard and hanging up all my pots and pans and tools. But I guess if I could make money selling cookbooks and a tv show, he'd let me.

I fried them. It didn't less authentic to bake, plus it was a good excuse to dig out the giant deep-fryer pot hiding in the back of a cabinet. I cheated by using pizza dough but that was it.

Towering over is right! I knew she was tall, but didn't realize she was 6'3", as tall as my husband--who is almost a full foot taller than me.

If you do it stovetop, the skillet does not need to be crazy hot--you're just going for some crust/color.

I pull thick (1-1/2") pork chops from the oven when they hit 125. They finish better in a skillet than on the grill.

Same method works great with roasts--especially strip roasts. Key is to wrap it in foil and put it in an empty cooler for at least an hour. Right before serving time, put it in a 500-degree oven or a superheated grill (no direct flame) for five to ten minutes for color.

121 We get those ostrich-sized chicken breasts from Sams Club. We deal with them by cutting them up into thirds. Still tough though. I never thought about smashing them and will try that.

I marinate the cut up pieces overnite in Italian dressing and a little Mrs Griffins' barbeque sauce. When they are almost finished on the grill I finish with a honey and dry mustard glaze.

I got one because I had this big idea that I was going to start canning things from the garden, but it went nowhere beyond the first season. It turns out, pressure cookers are pretty handy for demolishing beef roasts. You can do one in about 40 minutes of cook time, you can pull it apart with a fork, and it won't dry out. I've also used it for brisket to good effect.

168 Made a s'mores ice box cake. Wish I could say how it tastes but that comes later. The cool thing about ice box cakes is they don't require measuring anything. Whip up something whipped and grab something crispy like a cookie. I also learned you can make a killer chocolate ganache with just chocolate chips and cream. I layered that with Graham crackers and marshmallow flavored whipped cream.

Dipped in Modelo Negra, rolled in corn starch, then rolled in corn meal, and deep fried (outside on the deck) for supper. Served with fresh corn on the cob and green beans. When I was a Boy Scout we used to crush snack pretzels a bag, add some Italian dressing, and then bluegill fillets. Smush it around a little and then pull pull the fillets out and pan-fry them.

BTW, totally off-topic, a local Seattle HS (Roosevelt) won the annual prestigious Essentially Ellington jazz band competition in NYC last night.

Fifteen high school jazz bands, chosen from a field of 112 bands around the country, participated in the 24th annual competition and festival, which ran May 9-11.

There is a video of their performance at the ST article in the link.

Two other regional HS in the Puget Sound area were also in the final 15.


For all of the crap that drives me nuts around here, there are also fantastic kids doing great things, too.

From what I've read I think they're basically the same with the difference being how the hot air is circulated. Air fryer's heating element is on the top while a conv. oven blows the hot air around...like CBD.

Word of warning. It will likely not fish next week.

Not this far down in the system. Unless you are going out to stick Pike in the backwaters.

It will just be too volatile and dirty in the Lower River.

Head up towards Darby or higher and it might fish a bit. Especially on the big Stonefly Nymph / #6 Black or Dark Brown Bugger.

I'm trying to keep my carbs around 50 a day. I maintain my weight that way. I've found that the pumpernickel/rye swirl bread at the grocery bakery has about 15 carbs a serving, so I make grilled cheese on that once a week or so. Good thing I like rye.

248 I lucked into a big exhaust hood that had been dropped off of the loading dock at an unclaimed freight sale. Monster dent in the top of it - which is covered by the wood surround. Routing the exhaust outside was a bit of a trick though.

I'm use to cooking hot and fast since I have to start supper after I get home from work. Not optimal but you do what you have to.

Honestly, the best fishing this week will be Ice Out Fishing on the higher elevation Lakes and Reservoirs.

But if you have to float a river, West Fork of the Bitterroot and bumping buggers would be your best chance at success as the Salmonflies move to staging in the shallows.

262 Well, it works for me. Had my annual three weeks ago and all numbers are good. BP down, blood glucose fine and cholesterol okay. Weight down 45 pounds since Jan.

But yeah, it isn't for everyone.

269 I just had Dildo Chicken named of course after our food leader.

Marinate 2lbs of bone in skin on chicken thighs for 3 hours in
1/3 cup lemon juice
3 Tbs Olive oil
1 Tbs Dijon mustard
Zest of 1 lemon
1 tsp salt
1/2 tsp black pepper
1/2 tsp dried thyme

Pat skin dry if you want it crisp.

Bake on a sheet pan @ 400* for 45 minutes or until chicken temps at 160
