the last pic reminds me that I really need to get better tires on my Nissan Frontier. I love my truck, but do not trust the tires. Was in the Bighorns last summer and I was worried that I would punch a hole in the sidewall, what with the sharp granite. Need some beefy shoes for my truck.

"Happy Holidays" is not supposed to include a two foot by six foot section of hardwood flooring, soaked and rotted out by a poorly designed HVAC system.
No, the drip pan drain wasn't clogged, not was the secondary pan even slightly damp. 'Cause there IS NO secondary pan in the system. So, when the coils were overwhelmed by the summer's humidity, they slowly "rained" directly from the fins, through the uptake hole and directly into the return-air plenum, immediately below. Just enough leak, and just a SLOW enough drip, that standing water was never seen, nor damp wood felt underfoot. Till I moved the China Hutch today to clean behind it, only to be greeted by black, mushy rotted pulp where the engineered hardwood floor had been. Because we've run heat for about a week, every inspectible square inch in both the HVAC closet and adjoining laundry room, showed no moist areas, water stains or other signs of leakage. Two inspection holes cut through the sheetrock, in order to directly see the washing machine drain piping and HVAC drip line plumbing...nope, all dry as bones. A "patch test" on the wood floor of the HVAC plenum though...and now we have our answer. Lotsa condensate, with the patches only down an hour. Tonight's solution is a large, disposable aluminum catering tray (for such as lasagna), to catch any water dripping down from the coils above. For one, it'll capture and prevent any further water damage. For another, it'll prove to my HVAC contractor that the system as built by the manufacturer, ain't worth a damn in a Gulf Coast environment. I'd wager it'd work like a champ in San Antonio. Drier there. But with humidity so thick that you've gotta chew the air before you breathe it? Nope. Under-engineered, and completely inadequate. The only good news here, is I've got enough of the same engineered flooring on hand, leftover from when I installed all of this post 2008's Hurricane Ike, that I can and will repair the rotted area. But something better than an aluminum tray is going to have to happen with that HVAC, and that pursuit will be it's own post as it unfolds in the days ahead. You can barbecue it, boil it, broil it, bake it, saute it. There's turkey kabobs, turkey creole, turkey gumbo. Pan fried, deep fried, stir-fried. There's pineapple turkey, lemon turkey, coconut turkey, pepper turkey, turkey soup, turkey stew, turkey salad, turkey and potatoes, turkey burger, turkey sandwich. That- that's about it.

Usually get a turkey breast for us, make some of my favorite sides - big meal is at another house, but I love the T-giving basics and like to have them around the house. Making garlic mashed potatoes for the big meal.
Use the turkey frame to make turkey-rice soup in the slow cooker. Flying back tomorrow but might be too wiped out to shop before Thurs., so maybe can get some discounted turkey on Friday. Thanksgiving is one holiday Japan has not at least partially appropriated, so nothing on that. But the Christmas decorations and product packaging can be amazing. The breast will always be done before the thighs. If you cook the breast til the thighs are done, you're overcooked. Cook the breast to perfection, and the thighs are nasty. My Sis usually does Thanksgiving dinner but one year she got in a bind so I volunteered to do the turkey. This was back in the day before alcohol got the better of me. I was like freaking Julia Child, without the dress. Three sheets to the wind by the time the bird was done. Couldn't tell ya for the life of me what I did in cooking it but the whole family raved on and on about how well it turned out. We still laugh about it every Thanksgiving. Heh.

I went to Portillo's Hot Dogs in Buena Park for lunch today.
The food was halfway decent. I got an original Chicago-style hot dog, and a Maxwell Street Polish with the classic mustard and grilled onions on top. Not bad, but oh man that decor. Talk about sensory overload. Oh, and the location I went to had a whole salad section. I have a hunch they don't get a ton of business. Also, they had something called a "garbage salad." I fully sympathize with you. I can manage to choke down one small slice of breast meat on Thanksgiving for love of country, but as leftovers, the only way I can tolerate it is by dipping it directly in to mayonnaise, which won't help you at all if you don't like mayo, or by making a sandwich of with lots of avocado, lemon pepper and mayo but very little actual turkey meat. Back when I lived in San Antonio, I got to hunt on a lease up by Fredricksberg. Bagged a couple tom turkeys on that outing.
Brined both of 'em. One was roasted in the usual way, and it was excellent. More flavor than domestic, less meat on the bone, but just great. The second one? Took it down the road to a local smokehouse, and had 'em smoke it only "halfway". Brought it home, put it in the pan with and finished it in the oven. (temperature probe to be sure) That, my friends, was as close to the Perfect Turkey as ever I've had. All the wonderful flavors of a smoked turkey, but without the meat under the skin having turned to near-jerky, and the skin itself would surely make the Sammich of the Gods, nestled into the exactly right hoagie roll. Only thing we think it's good for is birds, cause at low temps, it doesn't generate enough smoke for pork. It will make the best smoked turkey or chicken you ever had, though. Goldilocks type smoke. Thanksgiving in the mid-west is weird. Since meat pie made with real meat. No stuffing in the turkey; just a stalk of celery and a chunk of onion in the bird for seasoning. Platters full of weird bread pudding made with onion, celery, and poultry seasoning. I was so disappointed my first Thanksgiving with my husband's family after I got married.
My kids are very well trained. They fight over in-the-bird stuffing while my husband has the out-of-the-bird dressing all to himself. Actually, my kids fight over everything to do with cooking. Round one was who was going to make the gravy. Me and my oldest son, the only two with actual restaurant cooking experience, were kicked out of the running because we blew the gravy last year. Round two was where was the turkey coming from. I was at dinner with some friends, and my phone chirped every two seconds. One of my friends said I could shut it off. I said "Hell, no!" God alone knows what would have happened without me keeping an eye on things. I know one of them would have come up with the bright idea of stuffing the turkey with kimchee. Round three should start tomorrow or Monday as we decide who brings what. Then Round one of the Christmas dinner will break out in the middle of Thanksgiving dinner. Geez, I love the holidays. Netflix version of She-Ra. Just from the trailer the character designs are so generic lets rip off anime it's not funny and is in fact insulting. Then trying to listen to the dialog - lots of snark and that's it. But wait it gets worse! She-Ra is actually gay and has the hots for her former Horde friend Ketra who is a cat-girl that looks like a cross between Tigra and Meruru. I am very afraid to see if anyone has mentioned that we got cross-species/bestial gayness in this pairing. As for the argument that adults/males should not be criticizing She-Ra because they are not the target audience... tell that to the Bronies. I seriously need more brain bleach. I'd just throw this out there, to be revisited on The Food Thread. Everybody has Turkey Day food dishes/rituals. But I'm also interested in the post-Turkey Day Food dishes/rituals. The food doesn't necessarily have to include turkey. For example, when I would visit my Aunt's house in WV (where the family travelled for the day(s); I flew), on the day after my Aunt and I would would take the leftover ham (we always had a crowd so we had ham AND turkey, just because) and make ham salad. It was a way for me and her to just be the two of us, picking through the ham (twice!), taking out the fat and the gristle while chitchatting. Of course, the end result was always worth it because homemade ham salad.
I have a friend who's Friday dinner is always Turkey Tetrazzini with mushrooms. It's the first of their leftover meals, with the rest of the meat and the dead body going into the freezer. The dead body ends up being a soup base sometime in the future. Were I doing Turkey Day today (I live alone and the work to create a classic meal for one is ridiculous so steak, or a nice thick pork chop, is my Turkey Day meal), I would work on my crust recipe and use some of the turkey to make pot pies.
