Food Thread: I Will Never Sour On Sourdough, And Other Stories From My Kitchen

I lived in the San Francisco Bay Area for a long time, so I have a soft spot in my heart (and palate) for its finest product; sourdough bread. Even the mass-produced stuff from the big bakeries was spectacularly good, and the local bakeries would occasionally produce ethereal loaves that were difficult not to eat in one sitting...or on the way back from the shopping trip.

Making sourdough is not quite as easy as the bakers writing cookbooks would have us think. The suggestion that the perfect ratio of yeast and bacteria can magically appear in a homemade sourdough starter is a bit silly. Sure, if you are lucky it will work, but sometimes it just doesn't work out. And even if you do get the right ratio of lactobacillus bacteria (they eat sugar and shit acid) and yeast (they eat sugar and shit CO2), you still have to keep it going, and that takes work.

So my years-old sourdough starter was a bit long in the tooth, and my attempts to revive it didn't work as well as I had hoped. The dough I made a few days ago simply did not rise. At all! Luckily it was a wet dough, so I figured I could make a slurry of yeast and water and mix it again. It worked, and I got a very nice dense loaf of sort-of-sour bread. I am pleased with the results, but it certainly isn't going to make those glorious San Francisco bakers worry about East-Coast competition.

Rotisserie chicken is one of the glories of cooking; simple, delicious, and wonderful to look at! I made it several days ago, but neglected to photograph the finished product. However our resident kitchen genius artisanal'ette sent me a photo of her efforts, and damn! They look great!

All I did was heavily salt a good quality chicken (Kosher salt of course) and then let it sit for a day. Then a few hours before cooking I dried it off and placed it on a rack in the refrigerator to dry a bit so that the skin would have a chance to get crispy. I stuffed the cavity with a handful of fresh thyme and a scrap of onion, and then I trussed it using Jacques Pepin's wonderfully simple technique. As for cooking temperature? Probably about 375 degrees, because the chicken took more than one hour to cook.

If you have a rotisserie by all means play around with it. Chicken is the obvious dish, but a bone-in pork roast is a revelation...crispy on the outside and wonderfully juicy and tender on the inside.

This is a fancy way of telling you how long and at what temperature you must heat the chicken to kill what wants to kill you, or at least make you feel like you want to die.

USDA Times and Temperatures to Obtain 7-log10 Lethality of Salmonella
Temperature Holding Time
136°F (58°C) 81.4 minutes
140°F (60°C) 35 minutes
145°F (63°C) 13 minutes
150°F (66°C) 4.2 minutes
152°F (67°C) 2.3 minutes
155°F (68°C) 54.4 seconds
157°F (69°C) 34 seconds
160°F (71°C) 16.9 seconds
162°F (72°C) 10.5 seconds
165°F (74°C) <10 seconds

What this means is that you can cook poultry so that it is perfectly done and not tough and dry. It just takes a bit of work and attention. But mostly a thermometer, which you have because you pay attention around here.

I built one many years ago and it still works fine but every so often got to buy a new motor.

Pork loin married w butcher twine is another great item for the spit.

Lucky that CBD doesn't live on the 'other' west side of the Delaware River where it has been nothing but incessant rain all summer. I don't bbq in the rain. I've tried it often and still don't like it. So I bought a cheap electric grill -- while cheap it is well engineered -- to put the quick sear on sous vide stuff. It has a water tray to catch drippings, and the engineering ensures that nothing drops on the electric coils and stinks up the place. Fifty bucks. Cheap.

Recommended for northern folks.

43 I have had some luck putting buttermilk in bread dough. It isn't exactly sourdough but it will have a tang. It does make a finer web and a fluffier loaf, especially if you add dried potato flakes or potato water.

Another thing to do to get that sourdough-y flavor is to set up a cup of flour and two cups of water and yeast to sit for 48-72 hours so it works fully. The longer you let it work the more sour it will get. Of course then there is the risk that it spoils.

My loaves turn out kind of pale, do you have any suggestions on getting that darker color? Higher temperatures than 380F or more alkaline for a better Malliard reaction?

Finally in my local store they make fresh sour dough and have very good starter. It is very very sour. Very crispy crust. So delicious.

You can buy some of the very old starter from San Fran, I read way back.

I see Amazon now has some too, claiming it is from San Francisco.

53 I just sent our sourdough starter to the bin. Forgot to feed it, and when throwing it out, had an asthma attack. No more for us.

But I do have a gorgeous chuck roast over a bed of potatoes, carrots , onions and garlic in my big pot Chrissy Le Creuset, roasting away in the oven. I love Sunday roast.

CBD, that is beautiful bread, and I am sincerely jealous that I can't eat it.

Are you humidifying the air in the oven with a container of water during the preheat or something like that? Moisture in the air makes a better crust, and once the crust sets, it darkens faster.

We slacked off and ordered a pizza last night.

So tonight we are having the knockwurst we had planned this weekend, grilled, with some "Coastal-Style" seasoned Sauerkraut on the side - something I found in the store that says Product of France.

The description is:

Savoury and mild Alsatian-Style sauerkraut prepared with onions, shallots, white wine, seaweed and coriander seeds.

We had tried another of these sauerkraut products with pork and whatnot, and that one was good.

Sometimes yes, sometimes no. I have a small cast iron pan with a lid that I put a cup of water in to humidify while cooking.

Are you talking about moisurizing it while doing the final raise?

I don't want to crank the temperature up because of the chance of burning the bottom and leaving the center raw.

75 WeaselWoman and I made a trip down the CA coast a few years back and stopped for a day in San Francisco. We had lunch at a place on a pier with lots of tourists, and the sourdough was amazing. I can't recall now what I had for the meal, or the color of WW's eyes, but that sourdough was awfully damn good.

76 I can't find really good sourdough bread in the area. Even the Wegmans version is kinda weak. But using the King Afthur Flour sourdough starter worked great. Worth the little bit of cost. And since we won't have to make any month long trips to deal with funerals and such, it isn't a problem to maintain it.

I love bread baking for some reason, enjoying the process as well as the result.

77 From what I've read of sourdough starters, it doesn't matter where the original yeasts came from. Eventually, your local wild yeasts will take over. So that wonderful starter you bought in San Francisco? It has to live there to keep tasting the same.

I would never buy one. But I did read some comments on amazon under the Breadtopia starter culture. They said basically what you said. It tastes just like if you used your own starter, etc.

Been enjoying a new (to me, anyway) technique for tasty fresh salmon. Works fine skin on or off:

Trader Joe's chili-lime rub
(Real) Maple syrup (you know, the kind that goes wonderfully on french toast)
Salmon (I've been using 2+ lb filets, but would work fine with smaller hunks)

Sprinkle salmon with rub, let sit for an hour or so, then brush with syrup just before putting on foil lined grill. I usually have grill pre-heated on lowest setting so can keep better track). Cooks for 10-15 minutes (depending on how done you prefer).

The zing of the rub plays well with the sweetness of the syrup and fattiness of the fish. I know it works qwell, since we've had guests that swear they hate fish, so I end up grilling some chicken for them, and they end up with seconds on the salmon

94 While I was growing up, my mother kept a sourdough starter in the fridge, she'd make at least one loaf every couple of weeks to keep it active. Oh that was so rich and good! Sadly it went by the wayside when she quit cooking so much. Supposedly it was a starter that was supposed to go back to the Pioneers or something - I figured that was mostly hype, but it was tremendously good to eat.

Well, keeping in mind that I'm neither a breadologist nor a breadonomer, I just do the final rise under a dish towel and don't bother with misting the dough or anything. I just put a couple of ramekins full of boiling water in when I preheat the oven and let them sit there during the preheat. When I open the oven to put the bread in, my glasses fog up a little.

When I didn't do that, the bread crust was pale and not well-defined, but with a noticeable amount of moisture just in the air, it's chewier and darker,. So it must be doing something. I bet it's down to molecules. They put those in everything these days.

I've read that a good way to humidify an oven during bread making is a separate cookie tray underneath your bread. Toss an ice cube onto the tray every couple of minutes.

I can't say that my bread comes out any better. Or any worse.

There are two recipes, a fancy-pants one with saffron and golden raisins, and another that is more lemony with dill. That is the one I will probably use.

Bucatini is harder to find than it should be and I don't know why. Same with gemelli, which is perfect for pesto.

Bucatini & the M.G.s, much easier to find.

What sardines are you using, if you can't find fresh or frozen? I kind of assumed they came out of the ocean already in tins, honestly.

131 Once again, The Spice House comes through. This time it's their top grade garlic powder (not salt). I used a tiny sprinkle on my breakfast eggs this morning. Later I used some in a chicken salad made from a Costco rotisserie chicken. So much flavor without drowning out all the other flavors. The store bought stuff just doesn't compare.

Now if I just had some of my homemade sourdough toast to go with breakfast. Time to start a new starter. I regard fall and winter as premiere baking times.

I don't see how. Wouldn't that require the oven to be open way too much? My oven's lousy enough already. I run the preheat (with the little water dishes) for the entire final rise just to bring up the heat in the pizza stone, which is there on the bottom rack as a heat capacitor sort of thing so I don't go fifty degrees on either side when the thermostat flips on or off.

You need water in a big pot, enough to cover the amount you want to make. The add salt. In a 3 qt pot about half full with about 2 pounds of peanuts I would add about half a cup of salt. That may be too salty for most people.

If I want the fancy stuff, I have to go to the big Meijer where all the swells shop, and if I'm doing that, I have to find my good sweatpants and turn the t-shirt inside out so the stains don't show. I re-read my comment and realized why it was misleading. The misting suggestion was for the very end of the cooking process. There wasn't any suggestion about adding moisture earlier. And, IIRC, it was with a very high baking temperature, too.

I had an awful oven, too, so I feel your pain. Fortunately (?) it decided to die while we were cooking Thanksgiving dinnner last year, so I now have a new oven that I love.

189 I haven't had much luck with the homemade sourdough starter. It never seems to get quite *right*. I bake a ton of bread and have for years but the sourdoughs seem a bit beyond my capabilities. I'd like to have one pan out but I am obviously doing something wrong.

I have the Bread Bakers Apprentice, Artisan Baking, Baking with Julia and even Suas's Advanced Bread and Pastry - which is really a textbook but somewhere, I am messing it up. For now, I'll stick with a normally risen bread.

I do steam the baking bread normally. Depending on the recipe I mist it once or twice but I also worry about losing the heat by opening the oven door too often.

Funny thing, there's a student ghetto Kroger right by my house that has an entire instant noodle aisle (but no bucatini or gemelli), and another, classier Kroger not two miles away that's the same size but has a much more varied selection.

I'm not allowed back in the fancy Kroger though, which is totally unfair because it is in no way my fault that the deli section has a gourmet cheese selection that a properly motivated individual could use like it was Scrooge McDuck's money bin. They should have put up signs or something.

It's more like pancake batter than bread dough, but yes.

You add flour and water to the crock, and let it ferment before you use it as an ingredient in whatever you're making (bread, biscuits, pancakes, waffles, etc.). You add enough so you've got some left (the starter). You have to feed the starter if you're not going to make something fairly regularly.

It's always a good idea to keep a couple chunks of your starter frozen in the freezer to recover from any accidents/disasters.

243 A local group here holds a threshing bee every year. Except last year. they used to have it at a nearby state park which was an early homestead. Park bureaucrats, in Olympia nixed it because...reasons.
A local hay outfit stepped up this year and they held it on their property. Great old farm equipment but also a demonstration of threshing wheat. They also have a field grinder to make corn meal. Breakfast by the local Kiwanis and it was great. Two eggs over easy, five sausage links, pancakes and coffee for six bucks. The sausage commes from a place nearby that is justly famous for sausages of all kinds.

If you want to make your own sourdough starter, this is my go-to recipe. (It's been recommended that one avoid starter recipes that call for potato.) I like this one because of the tang. It most resembles San Francisco sourdough to me.

2 cups flour
2 Tablespoons sugar
1 Tablespoon salt
1 Tablespoon vinegar (I use apple cider vinegar)

Mix in enough warm water to make a batter (much like pancake batter). Leave in a warm place for 4-7 days until it begins to sour. It should have bubbles on top if ready. To test, pour some of the batter in a dish, add a bit of baking soda and mix. The batter will nearly double and look very frothy, like meringue.

259 Pookysgirl, there is a traditional French recipe where you save back some of the dough for setting up the dough for the next day.

This is used when you make bread on the sponge or "levain" method, where you mix up sponge (yeast, 1 C of flour and 2C of water) or a levain (yeast, 2 c Flour and 1c of water) and let that work, and then mix in with the rest of your flour.

The problem with making apple crisp in a dutch oven on a trivit is the top does not get browned.

It is actually much easier because we're not constantly monitoring water level because it boils off. You can also better control the salt content.

You will need an afternoon to do it. A few hours till they're done.

For camp cooking, coals are put directly on the lid of the dutch oven (which is why it's got a rim around the edge). That doesn't help if you're cooking it over propane though.

The Dutch ovens we use are cast iron and cooked over campfires or charcoal. To brown a crisp, you just need to put some coals on top of the lid, so it cooks both underneath and over the top. This presumes a Dutch that has three legs to allow for the coals underneath and a rimmed lid that will hold the coals... old cowboy cooking technique.

570 Jazz up your sourdough starter.

The organisms come with the flour. One time I raced them, starting a starter from organisms on the flour and starting a starter from airborne organisms collected over a few days (with slurry from flour that has similar organisms already on it)

The plain flour starter won the race. Both made excellent sourdough starters.

But the last time I purposefully left it out in the rain.

It didn't rain very hard so kept waiting. It dried out. a wasp got into it. It rained a tiny bit in it again. I left it out longer up to two weeks trying to get more rain in it. The wind blew very hard and shoved organisms into it. It dried out three times. I just added more water and stirred the dry parts into it.

Finally I brought it in and cultivated it the usual way. BLAM! It took off like a rocket. Much faster than ordinary starter. I used it to make dough and put the sponge into the refrigerator but it was immune to the cold and the refrigerator hardly affected it. It kept growing inside the refrigerator until finally it slowed down. Took it out, stretched it out like a pizza to speed warming it and BLAM! It sprang back to life and took off like a rocket again. It is the fastest, strongest, most virile starter that I've ever used. (I collect them, I have several types) I'm convinced it's due to the hardship it endured through collection. Only the strongest organisms survived. They have a little war among themselves and only the strongest endure. It is the best starter ever.

I recommend doing this. Be insouciant, be careless about it, allow time, wind and rain, the chill of night, snow, whatever. Dynamic weather is an especially good time.

Incidentally, I collected sourdough starter three times on Maui. All within an hour. Hawaii is an unbelievably yeasty place. If left overnight the constant breeze and the heat has the starter bubbling away and reeking to heaven by morning. It has to be washed with fresh water and fresh flour to get rid of the stink. And it all goes incredibly fast.

574 I, tam bien, lived in SF for 13 years. It's why I'm now a conservative. Having said that, a local chain here in fly-over land, 801 Chophouse, makes in house sourdough. Really good. They put down half a round loaf along with the drink orders. Takes a ton of will power not to eat the bread and bring the steaks home. But, the meat is too good and $$$ to wait.
