Food Thread: If At First You Don't Succeed, Fry, Fry Again

I love the crunchiness of fried foods in sandwiches, but they are rarely executed well...the crust quickly softens from the moisture of the rest of the ingredients and from the fried food itself.

That is not to say that I won't eat them. Somebody has to do quality checks!

Oyster Po'Boys may be my favorite fried food sandwich, although at the risk of incurring the wrath of much of new Orleans, I think that there are better bread choices to be had. I think a loaf with a crispier crust and less interior would let the oysters shine!

Ravioli is one of those foods that makes me smile. Making it is a bit of a chore, but if you have access to a pasta shop that will sell you sheets of fresh dough then it is much easier. I have a mold that works fairly well, but I like my ravioli on the large size, so when I make it (that is a rare occasion) I usually do it free-form.

One of the nice things about ravioli is that they can be filled with almost anything that goes with pasta. Meat, cheese, mushrooms, pancetta, peas...whatever works. As I write this it occurs to me that a carbonara filling would be fantastic!

Here is an Alton Brown recipe for Chicken Parmesan Meatballs. There is nothing particularly special about this, but what I like is that he serves it in the pan. Too many chefs get wrapped up in complexity (and complexity means lots of dishes to wash after dinner). Most of us just want something good for dinner that won't take four hours and twelve cooking vessels, and this is it.

I am on a quest for clear ice cubes for my cocktails. I have a 2" silicone tray with which I experiment all of the time. I came close once, but that took about one week for six ice cubes. Very slow freezing so that the dissolved gases can escape seems to be the best way to do it, but since ice is less dense than water, it freezes on the top of the mold first, trapping the gasses in the water.

Yes, I am a bit compulsive.

This recipe is from Epicurious, and I made it a long time ago, but haven't found great pork shanks to do it again. I have complained about that huge hole in my life, but maybe the Moronosphere will have better luck.

Sigh...

One of the things I like about pork shanks (and pork in general) is that they stand up to a lot of flavor. Rosemary and sage are not the shrinking violets of the herb family, and cooked prosciutto is intensely flavored.

Braised and Roasted Pork Shanks with Prosciutto and Porcini Mushrooms

• 1 ounce dried porcini mushrooms
• 1 cup boiling water
• 4 whole fresh pork shanks with rind (each 1 1/4 to 1 1/2 pounds)
• 4 tablespoons olive oil, divided
• 1 large onion, chopped
• 1 cup chopped carrots
• 1 cup chopped leek (white and pale green parts only)
• 1/2 cup chopped celery
• 2 ounces prosciutto, chopped
• 6 garlic cloves, chopped
• 1 cup dry white wine
• 1 cup low-salt chicken broth
• 3 teaspoons chopped fresh sage, divided
• 2 teaspoons chopped fresh rosemary, divided
• Chopped fresh Italian parsley

Place porcini mushrooms in small bowl. Pour 1 cup boiling water over and let stand until mushrooms soften, at least 30 minutes. Drain and chop mushrooms; reserve soaking liquid.

Preheat oven to 325F. Sprinkle pork with salt and pepper. Heat 3 tablespoons oil in heavy large wide pot over medium-high heat. Add pork, in batches if necessary, and sauté until brown on all sides, about 15 minutes. Transfer pork to rimmed baking sheet.

Spoon off and discard all but 2 tablespoons fat from pot. Reduce heat to medium. Add onion, carrots, leek, celery, and prosciutto. Cover and cook until vegetables are soft and beginning to color, stirring occasionally, about 10 minutes. Mix in garlic and chopped porcini. Add wine and bring to boil, scraping up any browned bits. Add broth and reserved mushroom soaking liquid, leaving any sediment in bowl. Mix in 1 teaspoon sage and 1 teaspoon rosemary. Return pork and any accumulated juices to pot, arranging in single layer.

Bring pork mixture to boil, cover pot, and place in oven. Braise pork until very tender, turning over every 30 minutes, about 1 hour 30 minutes. [Do ahead Can be made 2 days ahead. Cool slightly. Refrigerate uncovered until cold, then cover and keep refrigerated. Simmer until just warm before continuing.]

Preheat oven to 425F. Transfer pork to rimmed baking sheet. Brush with remaining 1 tablespoon oil; sprinkle with remaining 2 teaspoons sage, 1 teaspoon rosemary, and black pepper. Roast pork until browned, about 20 minutes.

Meanwhile, tilt pan and spoon any fat from surface of sauce. Boil until sauce coats spoon lightly, about 7 minutes. Season with salt and pepper.

Spoon sauce onto large shallow platter or divide among 4 shallow bowls. Top sauce with pork, sprinkle with parsley, and serve.

10 Good afternoon! That sandwich looks good, but, oysters...not sure.

My husband has been making ghee for several months. He makes better batches every time, and has started making enough to give to family members, who are impressed and delighted.

Today, he decided he'd like to make his own butter. and I remember my grandma doing this with a crank churner that fit on the top of a gallon jar. A quick amazon search shows you can still get those churns.

Any of youse guys do this? He cracks me up.

I thought the trick to clear ice cubes is to boil the hell out of water, forcing all the gases out, then quick freezing. Hot water freezes faster then cool water.

They'd pour in the cream and shake until butter.

According to the mom, she pawned the job of shaking the jar off on the kids, which I thought was hilarious.

Never tried it myself but it sure sounded like it should work.

I make soap. The cold process type. Those churns are cool for doing that, although I have been using the Kitchen-Aide for that. I'm sorta lazy, and the mixer makes 10 bars at a time, so that's fine.

I love those churns, though. You can use them for ice cream, too. Very handy, and every so often you need to to lo-tech to remind yourself from whence you came.

21 I have a question about buttermilk which I've never used. One tbsp of vinegar per cup of milk has always worked well for me and if it ain't broke ...

However I'm going to be making a birthday cake from a recipe that calls for it. Is there something magical about buttermilk that can't be replicated with vinegar and milk?

We raised goats when I was growing up, and we made butter from goat milk a few times, just using the electric mixer to do the churning.

29 I remember in the 90s it was popular to serve chicken fingers with a very poofy batter. Hard to describe, but it wasn't dense or terribly bread-y, and you could still find and taste the chicken just fine, but the breading was almost clumpy.

I liked it a lot but haven't seen it in years. I always figured it had something to do with the whole TRANSFATS!! thing.

40 Po boys remind me of my this week's innovation. (I invent something, eat it relentlessly, get bored, and forget it).

This week has been fried fish sandwiches. Fish is cod, dredged in egg and panko. Nothing novel there. Bread is good bread, again nothing innovative.

But it was missing a spark. Tartar sauce didn't seem like enough. I wondered what was in a remoulade, but I know they're sort of reddish.

I took some wicked hot masala powder (it's a curry from the Indian shop) and mixed it with mayonnaise. Voila!

Them's good eating but I'm bored again.

I have come close to buying some of those SS cubes you freeze and then rinse them off when warm and put them back in freezer. Has anyone seen any of those in use? They are fairly expesiver and I would hate to buy a bunch and then find out they don't work well.

Just made myself two pieces of salmon; ate one and flaked the other in a lemon cream sauce with white wine and capers to top pasta for lunch on Tuesday. It will make going back to work a little less awful.

Yesterday I made an excelsior meatloaf using the brisket/bacon blend that my artisanal alchemist butcher grinds up once a week. Mmmm. I put in Mexican spices, peppers, onions, garlic, and shredded cheese. Very tasty. The leftovers would be good in sammiches or cubed in spaghetti sauce.

Actually, to me the disconnect is not the media itself, which is always improving, it's the 24/7 connectivity. There were times in my youth and youngish adulthood there NOBODY KNEW WHERE I WAS and it was okay. Imagine not being accessible by your work chain.

He got it into his head that he was going to make his own cheese. The one time the family was totally united in saying: stop. The stench was pervasive in the house and became noxious in the entire neighborhood as well. Do you think that is why creamery, dairy, and cheese houses were always separate from the main house?

85 Buttermilk is good in any bakery item. It also makes fantastic pancakes. I always have some in the fridge because it does last a while. That being said, not all buttermilks are created equal and I despise Deans brand anything which is very common here in the Chicago area.

I made a small batch of cinnamon rolls today. I rolled out the dough and dotted it with butter, and then folded it and rolled it out again, and did that a half dozen times.

It made the rolls very flaky

93 I've designated Thursdays as "Kitchen Day". That's when I try a new recipe as well as do baking and, usually, the hunk-o-meat for the next week's meals.

This last Thursday I made Welsh Rarebit, or at least something close, based on Alton Brown's recipe. I liked it (poured it over toasted homemade bread that had been in the fridge for a while) and Eldest Kidlet, who was the only kid to try it, said she'd like to have it again sometime. I call that a success.

One of the things I spent my Christmas money on was a 1.1 liter deep fryer. It's mostly for fried desserts and wontons so we don't need the large size, and it comes with a basket which is really nice. I finally tried my M-i-l's potato doughnut recipe, after failing miserably several years ago, and the kids liked them a lot. We have agreed that it is okay for me to make them in diamonds using a pastry cutter instead of the traditional doughnut shape, and that makes them easier both to make and to fry.

Yeah, that's nuts. But what I've found is that the mode of communication itself seems to have created unrealistic expectations in a lot of cases. For example, in dealing with clients, a good bit of the time they seem to think that because the forms of communication are instantaneous, and you're technically accessible 24/7, your responses and work product should be instantaneous.

Speaking of moms pawning off kitchen chores, my kids are now 20,18,16, and 14 so for the last year I have had them choose a meal and a day each week that they will make the meal on. I generally want them to choose on Sunday so that I can be sure we have the necessary ingredients after shopping, and am also available for assistance and advice if needed. That leaves three days for me to cook or for leftovers, so I don't get away with doing nothing, but my goal is that they all can make some basic dishes when they leave.

Husband bought me a butter churn apparatus 2 years ago for Christmas. Churning wasn't the big job. Squeezing the excess water out and washing it to finish the process was a pain. Pint of heavy cream yields very little butter. Hubby also dropped the jar and splashed the first batch of cream all over the kitchen.

The bread (kind of minimal) to crust ratio is good with out any adjustment (tearing out wise). Also good for serious soup dippings. It's a kind of wide and flat loaf that allows a lot of innards without precluding a all the way through mouthful.

159 I do a lot of my own frying. Eventually I just bought a pot and big wood handled strainer. Filled the pot up to half full of oil and turn the burner to medium high. I bought a candy thermometer to measure the temperature but most of the time I don't check it.

I also bought a smaller fine mesh strainer and use it to "filter" the oil by cleaning out the bottom when heating up. The stirring helps accelerate the oil heating process.

I used a Breckenridge Vanilla Porter, because I misread it as vanilla and coffee when buying and it was the least expensive of the (I thought) coffee flavored options. I learned how to turn my oven off using the ****ing timer. Furnace went out last weekend so I just opened the oven door for a while. Dog, Cat, and I were comfortable until soninlaw could come to fix the furnace.

Oysters roasted over hardwood. A roaring hot fire, sheet of metal, and wet burlap to cover the oysters.

They were delicious, and people brought other dishes for the oyster-averse. Cold, beautiful weather with dolphins appearing in the river as scenery.

My husband actually over-bought oysters, and one of my friends made oyster stew with some of them, that was quite good.

Anyhow, I'm roasting a chicken in an iron skillet tonight.

Just asked her and she said it was good. I seared the pork bones and vegetables in the pressure cooker on "sear" setting (put the vegetables in for about half the time as the bones) and then cooked in about 8 cups of water for an hour on the pressure "soup" setting. I love my electric pressure cooker and usually use it at least once a week.

241 I had a Sunday morning delivering poor boy bread in the Quarter for the Gendusa bakery. They invented poor boy bread. It was crisp to the point of crumbly on the outside and practically hollow on the inside.

They also invented Brennan's soup sticks (my 05:00 delivery), Acme buns (they cut the top off and serve gumbo in them), Maspero's buns, muffalella buns for the Central Grocery and New Orleans style french bread (which they did not invent.

Sadly the didn't make it back after Katrina.

The Kel-Tec sub-2000 is nice (I have one, takes Glock mags)

There is a new Ruger carbine that is getting great reviews.

Then there's the classic AR-pattern 9mm carbines.

If you're really pinching pennies, the Hi-Point carbine is good, though it doesn't take Glock mags if that matters.

The Beretta Storm is also a good-shooting 9mm carbine, not too hard to find or too pricely usually.

I've got chili cooking in the slow-cooker, I made hot and sour soup on the stovetop, roasted three trays of veggies and cooked chicken breasts with a Cajun rub. So I'm all set meal wise for the work week and will freeze some of the chili. I'll make either roasted monkfish and tomatoes or baked Salmon with Swiss chard on Friday because Lent. My place smells so good right now...

There are other low-carb, paleo- diet 'ettes and 'rons - have any of you tried this? Pizza is not one of those things I've ever made at home - too many good pizza places around here - so I'll have to go to Food Network and see if they have any recipes involving cauliflower crust that catch my fancy. I've had riced cauliflower with pasta sauce and Parmesan and it was really a pretty good substitute so I'm hoping to be able to enjoy pizza of sorts as well. IMO, the zuccchini spirals are not a good sub for pasta....

I assume it's because Milwaukee has a very large Catholic population. Something interesting I've discovered as a foody and a near top notch... something... homemade pizza is very very good. But if you're trying to keep the carbs lower... a ratio of about 1 to 3 whole wheat to processed wheat creates a unique flavor profile and tends to be much more filling.

You might be able to -- in an either/or thing to find either whole wheat pizza or traditional stores, but somewhere in the middle will fill you up to the point you push the plate away and are not hungry again for six hours or so after a single slice or two.

Two slices of pizza @ 100 calories per slice, making hunger disappear for six or seven hours? That's a very very good thing.

I thought it was very good, not even a compromise. But then, I eat pizza for the toppings and other people might eat it for the bread/crust.

The recipe used cauliflower, Parmesan, egg, oil and spices. You have to wring as much water out of the cauliflower as possible after processing. Otherwise you get a runny mess.

So get this. Buy a loaf of whole wheat bread and 'regular' white bread. Make a sandwich. Hide the slice of whole wheat on the bottom. Eat sandwich, ignoring the slice of whole wheat on the bottom. Look at watch. Note the time.

Notice the time half the day later when you're hungry again.
