Food Thread: Store-Bought Or Homemade: What's The Dividing Line?

Sure I can make fried chicken. I have on many occasions, and it's pretty good. But the question is: "Should I?" And the answer is: "Nope!" There is local supermarket that makes solid chicken, and a take-out place just a few minutes farther away that makes fantastic stuff, so unless I just feel like cooking it, I burn some hydrocarbons and go pick it up.

But...don't you dare suggest I buy a container of hummus. How DARE you! Mine is better and cheaper than almost all of the commercial stuff, and the one place around here that makes hummus worth a damn is in Brooklyn, and that is a very long way. It takes five minutes to make a quart of it, so in the time it takes to buy some overpriced and under-flavored mass-market hummus, I can have a great batch whipped up.

So...where is your dividing line? What foods can you make but choose not to, and what foods do you make even though there are reasonable commercial alternatives.

I stopped by my local fish purveyor recently and was delighted to discover that they had fresh blowfish tails on sale for a very reasonable price. Actually, I have no idea how much they were, because I was giddy with glee and was bouncing up and down with anticipation of the great snack I was going to make. They are ridiculously easy to make, loads of fun to eat, and absolutely delicious.

What's that? Blowfish? Yes. Tetrodotoxin? Well...yes, but not these! Just to be on the safe side read this: Consumer Advisory: Only Eat Puffer Fish from Known Safe Sources. And then fry the little buggers in a simple dusting of flour, then an egg-wash and a thin layer of plain breadcrumbs. They fry in about two minutes, and are worth every bit of the slight risk (really...no risk at all) of agonizing death.

The Justice Department, under President Trump, is backing the baker. In a brief filed with the court this month, it argues that the wedding cake case is at heart about the First Amendment and the right to free expression. Acting Solicitor General Jeffrey Wall wrote:

"The government may not enact content-based laws commanding a speaker to engage in protected expression: An artist cannot be forced to paint, a musician cannot be forced to play, and a poet cannot be forced to write."

I have played around with this recipe quite a bit. Some people don't use olive oil, preferring a less rich and creamy dip. I think they are nuts.
Hummus

• 15 ounce can of chick peas (cecci beans) packing liquid reserved
• 1 small clove of garlic
• Cayenne pepper to taste (I use 1/8 teaspoon)
• Pinch of Kosher salt
• Juice of one large lemon
• 7 ounces Tahini (Sesame paste)
• 2/3 cup Extra Virgin olive oil (Do not use a very flavorful one...neutral is best)

In a food processor with the metal blade, blend the beans, half the liquid, garlic, salt, pepper and 1/2 the lemon juice. At least 10-15 seconds....you want it nice and smooth.

Add the tahini (be sure to stir it thoroughly before using) and process until smooth...another 10 seconds or so.

Gradually add to olive oil, starting very slowly, until the mixture is emulsified and nice and thick. It might not need the entire cup of oil, so go slowly and check frequently.

Taste and correct for salt and lemon juice. After you add more lemon juice it might require a bit more oil to thicken. Or it might be too thick in which case use some of the reserved ceci bean liquid to thin it. The consistency is entirely up to you and your palate.

The traditional scoop is pita, but try it with pretzels.

I also don't buy it, at least not very often. Once in a while I'll order it someplace where I know it's good. The last time I had it was at the restaurant at Stratford Hall, home of the Virginia Lees and birthplace of Robert E. Lee.

Hahahaha There is no line. I have no line. Can it be bought? Yes? - then I'll buy it. Is there none to be bought? - then we won't eat it till we find something we can buy. We just had Weiner Schnitzel (is that how you spell it?) Anyway, a couple in our church gave us a gift certificate to a German restaurant, so off we went. Enough for two meals. We eat off the generosity of others.

It's always better homemade but laziness, time and clean up dictate I buy it. Popeye's is good and so is Publix's as long as it's fresh.

Also, I recently bought riced cauliflower in it's own steam bag by the Green Giant. Easy to prepare and low carbs for all you low carb folks, like my old lady.

Comes in several different flavor combos too.

I've pan-fried occasionally but that just ain't the same.

I think my wife would have a stroke (after killing me first of course) if I seriously suggested deep-fat-frying something in our house, and I don't know if I want to do it on the grill outside. The grill has a burner, but I don't know if I'd want to balance a big pot full of hot oil on it. (Unless the barbarians have breached the outer defenses of course.)

Hamburgers mostly. Mine are better than most of them. Although the local Hardies are good, but mainly because they have so many different things to put on them that I would not normally stock.


My steaks are also better than the local places, but that is because I have a good butcher shop to go to.

47 Bread and (flour) tortillas. Sometimes I make, sometimes I buy. Honestly, the homemade stuff is *way* better but sometimes it feels like a lot of work and picking up a package is easy. It does seem like tortillas have really gone up in price lately though.

The last couple of times I've made bread it's been Tajik naan which is a decorated circular loaf. I even got a package of flower-shaped fondant cutters at JoAnn to do the decoration with, which is fun.

As to clean up, most people just let the mess accumulate until the cooking is done. If you clean as you go, you won't feel overwhelmed by the task.

However, I always buy fried chicken from KFC and similar places, because I don't own a deep fryer. I tried pan-frying chicken once, but it wasn't the same.

Very little mess, easy to clean and cooks those hushpuppies to perfection.

63 Recently Middlest Kidlet get me a cheese-making kit for Mozzarella and associated Italian cheeses. I finally used it last night to make ricotta, and made another batch today. Today's batch will be used in lasagna, but last night's batch was used to make a Japanese/Indian fusion dessert that is a mix between Indian milk cake and Japanese mochi. I just used our standard 4C baking spice for flavor this time but think next time I'll use either matcha or a bit of jam in the water for softening the rice flour.

My wife can't help herself, she almost compulsively starts cleaning up while I'm still cooking (which of course is an element of why I cook most of our meals . . . we usually want to eat a meal the same day we begin preparing it . . .)

Of course, I'm kinda one of those cooks who does it with joyous, messy abandon, so there's always something to be cleaned up when I cook, any time after the first knife hits the first ingredient.

68 You won't get better results, and it seems like an awful waste of milk when you do it. If you're at the due date on a gallon, it makes sense to just spoil it the rest of the way and make farmer's cheese or whatnot.

Most basic recipe is to get it hot, not boiling, and dump in a little acid like lemon or vinegar [lemon is better] and let it curd up. Then press it out in cloth.

by the way, just off the subject, if you bite into a cayenne off the bush, you will discover what wonderful flavor they have for about a millisecond, and then the burn starts. Narf!

71 From the Better Homes and Garden Cookbook:

Spaetzle

2 cups flour
1 teaspoon salt
2 eggs
3/4 cup milk
1/2 cup fine dry bread crumbs
1/4 cup butter, melted

Stir together flour and salt. Combine eggs and milk, stir into flour mixture. Pour batter into spaetzle maker (I have to do this in batches). Hold spaetzle maker over a large kettle of boiling salted water, and grate back and forth so spaetzle drop into pot. Cook and stir 5 minutes. Drain well. Combine the bread crumbs and melted butter, sprinkle over spaetzle. Makes 4 cups.

Infidel, I never bother with the bread crumbs, but I ALWAYS bother with the butter.

Only under pain of death do I use store-bought bread. Of course, it isn't easier to make than to buy but Grammy made all her own and shortly after college, I started to do the same. My kids got use to eating my bread and complained loudly when I'd take a short cut and substitute from Mrs. Kroger.

To me, not a fan of fried foods, the ultimate chicken is planked, then quick flashed for char over hot wood/charcoal flame. Or chicken, in deep covered dish and bathed in water and white wine, then char'd.

Useless calories in the breading of fried chicken. Plus planked/deep dish chicken is more tender.

I live near Lake George (upstate NY). The economy is geared primarily toward tourism so the food industry is predominant.

Shorter--there's tons of good food to be found everywhere, and you can't count the ethnic variety, there is so much.

Only under pain of death do I use store-bought bread. Of course, it isn't easier to make than to buy but Grammy made all her own and shortly after college, I started to do the same. My kids got use to eating my bread and complained loudly when I'd take a short cut and substitute from Mrs. Kroger.

Some years back, I broke my ankle and was in a cast for over two months. I couldn't drive because it was my right ankle. It actually was kind of nice having a great excuse for not leaving the house - homeschool moms will understand that.

Anyway, it was easier to make my own bread than get to the store, so I made it all, 6 loaves at a time, and froze a few. We went through it like crazy. My kids loved it. They were sad when I got better.

You can easily make pita chips in the toaster, another of my favorites (from SmittenKitchen.com):

To make pita chips from store-bought pitas:

Separate the layers
of pitas and cut into wedges. Arrange on a large baking sheet and brush
lightly with 2 tablespoons olive oil and sprinkle with salt. Bake *
alongside chickpeas for 10 to 15 minutes, tossing occasionally to ensure
that they toast evenly. Let cool.

100 Back from Vegas. We went to this great steakhouse, I think it was called Bob Taylor's Ranch House. Been in business since 1955. If you are in Vegas I'd highly recommend it.

Also the Rio buffet was said to be one of the best in town. Didn't try any others this time but the Rio was great, excellent prime rib, better than most buffets.

107 Commercial hummus and baba ganoosh is bland and overpriced for what you get. They are so easy to make and can be done to taste. In my case that is LOTS more lemon. And we recently started using an Israeli tahini that is better than the usual stuff in the grocery.

I sometimes get a taste for rotisserie chicken. The best I've found is from Costco. Otherwise, we get very few prepared foods. I would feel like an idiot paying for pre-cut veggies or cooked shrimp.

I used to make my own mayonnaise. I haven't in years, but it had a side benefit.

I'd make lobster salad for things like Teacher Appreciation Day and people would ask my recipe. (I ran lobster pots then, so I wasn't dropping large cash on the bugs).

I'd start off with, "first I make mayonnaise" and no one would stick around to hear the actual sekrit in the sekrit recipe.

Also, making mayonnaise is tricky and sometimes it doesn't work so in a worst case scenario I would cut Hellman's with some balsamic vinegar and pretend I made it.

152 If you are going to grind your own flour from red wheat, you will be happier if you get an electric one. I have used hand-cranked ones and it is hard to get fine enough flour. When I bought the electric one it made life easier.

Also, I tend to mix a couple cups of the whole grain flour with a regular batch of white flour, since making it 100% of home ground makes a very heavy, dark and nutty loaf.

On the other hand, making "hearth cakes" with 100% home ground flour makes a tasty handfull of happiness with some cheese smeared on it.

Hearth cakes are pretty much flour water and yeast left to work overnight into a sponge, and then add in more flour in the morning to make a stiffer dough. Knead it out into a hand-sized patties and bake it covered on a skillet that had been brought up to nearly smoking hot and the heat turned off to let it start cooling when you flop the bread on the skillet. Turn it after about 5 minutes and let it cook another 10 or 15.
If you are tough don't use yeast and just make some sort of really stiff paste with flour and water.

It is a recipe I pulled together from stories from old guys who used to camp a lot, and information on how the Roman legions and re-enactors of the medieval period baked bread.

CBD & others: I finally just last year learned to make great, crispy buffalo wings at home. I basically just get fresh drummettes from Sprouts, toss 'em in the fryer, take 'em out in 10-11 minutes and douse them in sauce.

But... for years now, my nearest Albertsons has had a fantastic wing bar, where I can get "Zesty Wings" (coated in some sort of mildly Ranch-flavored coating) for $5.99-$6.99 a pound, and they're pretty dang good. So yeah, I understand where folks come from about making it versus getting it. It's oftentimes way easier/faster just to make the trip to Albertsons.

I make enough for two 12-14" crusts and put half the dough aside for later use... it keeps in the fridge for 7-10 days. I also make iced tea from scratch with tea bags, almost boiling water and sugar... tastes better and much cheaper than buying mixes. But I always buy any kind of cooked fish already made because hubby and I can't stand the fishy smell that lingers in our apartment if we attempt to cook it at home.

1/3 cup vinegar or freshly squeezed lemon juice or lime juice, or a combo thereof
1 teaspoon of sugar
1/2 teaspoon of salt
1/2 teaspoon of freshly ground black pepper
2/3 cup extra-virgin olive oil*

Put all this in a jar, and shake to blend well. Best if used immediately, or the next day at the latest.

*I use part olive oil, and part other oil (like safflower, sunflower, etc.) because I think it's too heavy with all olive oil.

You can add things like garlic, 3 T. Parmesan, etc. to this but it's a good basic recipe.

Twelve Bones in Asheville/Arden and Backyard BBQ outside of Durham have been the best I've found, but I don't live near either. That's probably why I bought my smoker, honestly. I can make better pork (and definitely chicken) than anywhere I live near now.

I use it every week, too. Smoking turkeys for friends and family at holidays makes you a hero, btw.

274 I choose not to make pizza at home. I had enough of that baking sheet Chef Boyardee stuff when I was growing up. Of course my hometown didn't have any pizza places AFAIK until I was 15 or so.

That said I make fried chicken that's as good as anyplace around here and save money too.

My hummus recipe is the one that was in Cooks Illustrated for roasted red bell pepper hummus (May 200. Tasty. I also like to use egg salad as chip dip, just make it a little creamier and finer chopped.

I've done it both ways. I can't tell the difference, but the canned has more salt.

On the other hand, you have to cook chickpeas a good long time to get them soft enough to whomp up in a blender.

I've done it both ways. I can't tell the difference, but the canned has more salt.

On the other hand, you have to cook chickpeas a good long time to get them soft enough to whomp up in a blender.

yeah, but buying dried chickpeas in bulk is WAY WAY cheaper than buying the canned kind, per pound, and they taste better too. Sure -- more work, more time -- but in this case it's worth it, because to "cook" chickpeas you just put them in hot water and simmer for a while -- just forget about them and do something else. By the time you remember them, they'll be done and ready to convert to hummus - a TON of hummus.

Secret to good hummus:

Extra Virgin olive oil
LOT and LOT of fresh squeezed lemon juice -- Meyer lemons if you have a tree nearby.
Large-grain salt and/or sea salt
Garlic garlic and more garlic.

I noticed the similarity too. I was always a MW guy but spent a while searching for "healthy" mayo. As I've said a few times, if you have the $$$, kensington's avocado mayo has that twang too.

Wegman's avocado mayo is more traditional in flavor, a bit cheaper too.

Do it. They are incredibly delicious. I don't have a tortilla press - I just roll them out with a rolling pin. I don't like corn tortillas so I make them mostly with whole wheat flour.

They are so much better than store-bought. Which can lead to other problems such as eating way more than is good for you, but never mind that.

Awesomely delicious. They had grilled quail too, so I would eat about 40 of them with fresh tortillas and a bit of fresh salsa and lots of crappy Mexican beer.

386 1. I couldn't fry chicken if my life depended on it. And yes, sometimes I do pick some up if my wife is too tired to do, and wants some. However, none I've encountered is remotely close to hers. (Well, her mother's is almost as good until age took away her sense of timing.) And that's not just me speaking, many of my friends agree. She also regards batter as an insult to the bird.

I'll also say that the next ones in line have all been home-cooked by Virginia ladies.

A couple days to a week. You're talking raw egg of course, so siding on caution is kind of encouraged.

Which is kind of why I went back to store bought. Shelf life.

Plus, could never hit that exact sweet/sour note between lime and lemon juice with any consistency.

If you can find the raw roots, make it yourself -- supreme!

But be careful -- the fumes really can knock you unconscious -- no joke. It almost happened to me.

What you do it random chop up the roots into smallish pieces, then put a bit of water in a blender and all the pieces, and VROOM blend 'em up good.

But when you op[en the lid of the blender, you get socked with a wall of horseradish fumes -- basically WWI-style mustard gas. I strongly recommend opening the blender OUTSIDE, while holding your breath. Let the fumes float away for 30 seconds.

Before you do all this, you actually have to prepare all the makin's, because horseradish recipes are extremely time-sensitive. The blending releases the chemical in the roots, and it hits maximum strength in about 90 to 120 seconds. So you must ALREADY have your jar and your chosen vinegar READY TO GO back in the kitchen.

The steps are, to make it clear:

choose your horseradish jar and some good vinegar. Get them ready on the counter.

Peel the roots.

Chop the roots into smallish pieces.

Blend the roots with some water.

Go outside, open the blender, wave it around for 30 seconds while holding your breath.

Come back in, QUICKLY pour or spoon the blended roots into the jar.

Try to drain off as much water as possible -- the drier you get it, the better.

If needed, wait a minute for 120 seconds to have elapsed since the blending. If not, move to next step immediately.

Pour a small amount of vinegar into the jar and stir. Keep adding until you think it feel about right.

SEAL the jar and out in fridge

DONE!

The vinegar, via some mysterious chemistry, halts the degradation of the horseradish chemical, at its maximum strength. Amazing! If you wait even five minutes, you will lose half the strength.

As far as homemade mayo, I just look at it on Day 1. Color, cut, clarity -- like a diamond. By Day 2 it's looking somewhat sad. By Day 3 I'm thinking I should pitch it.

Pretty sure I've never used it past Day 3.

It's a bit of work compared to store bought. Personally, I don't think it's worth the effort. Plus, little or no shelf life.

Now you can be an 'oil aficionado' who thinks that only X oil is worthy of partaking. But mayo is predominately egg, oil, and some acidic juice. *That* amount of oil in your diet isn't that big a deal. I go through a gallon of olive oil every six months and one or two jars of Hellman's during the same time.

I think you should buy store bought of what floats your boat.

I feel the same way about beer. Mostly because my fave ice cream is coffee (haagen dazs or TJ's coffee bean blast) but, since I don't do caffeine, I can only eat it in the morning, which is stupid. :-) I do like the haagen dazs strawberry and the rum raisin but I think they've messed with the formulas lately, not quite as awesome.

441 I have a confession to make. I am a Southern woman who cannot make fried chicken. Not to save my life. It's awful.

I can however, make awesome hummus, and would add that the brand of tahini makes a huge difference in the outcome of the final product. Kronos tahini is very good, and Ziyad, in the jar. If you can get Israeli tahini, do so. theirs is the absolute best hummus in the world.

I find canned tahini to have an off taste, and thus avoid it. I also add za'atar or coriander, for a tangy flavor as well. Carrot sticks make good dippers, but I love this as a spread for a sammich with fresh beef steak tomatoes, some roasted peppers, sprouts and leaf lettuce. Sliced roasted lamb works well to make this a meat-eater's version. Bread is better if it's homemade, but whatever you prefer works well.

I'm not saying that having the equipment and making your own mayo is a bad thing. It's interesting.

But if you're calculating the flavor profile of a sandwich - say a BLT - it's not huge. Neck and neck - first flavor is juicy vine-ripened tomato, second is sweet and smoky bacon, third is probably the sweet toasted bread, coming in tied for last place is probably neutral lettuce and the slightly acidic mayo.

Your mileage may vary.

529 The traditional scoop is pita, but try it with pretzels.

Nothing is better with hummus than pita but potato chips are also pretty good (but only when you're out of pita, really).

I don't add any olive oil and I put twice the garlic in that you do.

I also used to mess around with various hot peppers to put in (cayenne - the best, really, jalapeno, habenero ...) but I finally settled on putting no peppers in when I make it. It's easier for people to put in whatever hot peppers they want when they take it (or to put the pepper in before you put it on the table). There is just too much variation between people of how hot they like it, how hot they can take it and all that. Even for myself I find that I like it at different degrees of heat depending on the day.

But my chicken salad recipe (which I got from the Silver Palate cookbook 30 years ago) puts any store-bought chicken salad to shame. It's a surefire hit.

You slather a cup of creme fraiche on 4 chicken breasts before you bake them, which makes them incredibly moist and flavorful. Then you blend a 1/2 c of sour cream with a 1/2 c of mayo and pour it over the shredded chicken, and add celery, walnuts, salt and pepper and a tbsp of dried tarragon (make sure the tarragon is not stale - that makes a huge difference too.)

Great stuff.

The pricks at the PGA also came out in favor of illegals a couple of years back ... which is pretty cool, actually, since I guess that means that none of us have to pay greens fees any more. Just jump onto the course and you're good to go. And you can do just like the illegals - dig up the greens, shit in the fairway, drive your golfcart into people and then speed away ... it's all good for the PGA.

Good idea! To echo bluebell's comments earlier - there are a bunch of really great sounding recipes in the book. A lot of time I will be working with the manuscript formatting and not really reading the content - then I stop and look at the recipe and think how good everything sounds!

Hummus is easy. An Israeli friend taught me her recipe.
