Food Thread: It's Time To Have A National Conversation About Granola

Specifically, we have to take it back from the...um...granola-eating hippies with dreadlocks, body odor and knit rainbow caps. Because it tastes good. And it's easy to make, certainly after one peruses the cereal aisle and sees how stupidly expensive some of the boutique granolas are. Sorry, but it's oats gussied up with some nuts and fruit and sugar. It's not anything special, and it isn't particularly good for you or bad for you. It's just yummy, and convenient to carry because it is calorically dense compared to an apple (shudder).

But let's get back to "easy to make." It really is. Mix some old fashioned oats with honey and vegetable oil and some chopped nuts and some vanilla. Toss it, then spread on a baking sheet and stick it into a 350 degree oven for about 25 minutes, then take it out, toss it with some raisins or dried cranberries, put it back in the oven until it's as browned and crispy as you want. And that is it. If you want to make bars, compress the granola into the baking sheet with a another, smaller sheet. Really lean into it, because the more compact it is the better chance you have of keeping the bars from crumbling. This one is sort of tough, and you will have to play around with the recipe. I compress mine just because I like chunks of granola rather than tiny pieces.

I have been playing around with adding a fair amount of water to the oats to soften them. It seems to ease the dry texture a bit, and I will certainly keep playing around. But at the end of the day, it's just cereal, and there is nothing fancy or morally uplifting about eating cereal. What I would suggest is that you make your own, because it's better than most of the commercial stuff and much, much cheaper.

I haven't tried this recipe, but it looks extremely easy and straightforward. "Serious Eats" is pretty reliable, so I am confident they will be good. They seem like a Mexican version of brioche, only easier. And I love brioche buns for burgers and pulled pork, so this one may be a keeper.

One thing that puzzles me is weighting down the plastic-wrap cover during the last rise. Whenever I make rolls I tend to produce sub-optimal shaped though tasty little buggers. My assumption was that I was over-handling before the last rise, but this recipe seems to try to limit vertical rising. Weird. But what the hell.

Yeah...milkshakes are good. Anything made with ice cream is going to have a shot at being tasty, so why are milkshakes so special? Lots' of people swear by them, but I can't remember the last time I ordered one, or even made one. Sure, if someone orders a particularly tasty-looking shake I will ask for a sip, but As i mentioned to Bluebell (she sent the link), I prefer my ice cream unadulterated. 7 Unbelievably Scrumptious Milkshake Recipes might be a bit of hyperbole, but they do look good.

I have been poking through my recipes and nothing really jumped out at me, so you will have to be content with my recipe for drinking good Tequila, which is a rarity for me because good Tequila is a fortune. I'm not talking about the stuff that works in Margaritas...that stuff is fine, and can be found for a reasonable amount of money. But the great sipping tequilas are outrageously expensive, sometimes 4x what the equivalent quality Bourbon or Scotch Whiskey runs. But I was given a bottle of something lovely, and my technique is simple.

  • Pour into lowball glass
  • Sip
  • Repeat.

5 So, this is where granola lost me and it's totally alexthechick's fault. She asked me what the difference between granola and muesli is, which made me look at the ingredients.

Granola is all sugar. Even the hippie brands. That's no good for gainzz.

So I get muesli (Alpen). I add a banana, some blueberries or other fruit, sometimes some raisins, and in lieu of milk I put fruit yogurt on it and stir it around.

It's a great mushy crunchy fruity healthy gainzz breakfast.

Absolutely. Sugar subsidies caused soft drink makers (and others) to use less expensive High Fructose Corn Syrup.

And now corn subsidies (and ethanol mandates) have caused the cost of HFCS to go high enough soft drink makers are beginning to substitute it with sugar.

But that's not good for the consumer. I'd rather sugar fell in price to make it more attractive.

I use tenderloin instead of loin, and always use fresh rosemary. I marinate overnight, no less than 8 hours and sprinkle the meat lightly with salt before roasting.

That is how I've improved the recipe.

I always cover my rising bread with a towel. I don't consider it a weight, though, as it doesn't seem to prevent anything from rising high. The reason I do it is because it completely covers the bowl or tray.

Just watched "The Founder" last night. According to the movie, one of the big confrontations Ray Kroc had with the McDonald brothers was when he decided to go with Insta-Mix emulsifier milkshakes, and abandon milk-based shakes, to save refrigeration costs for his restaurants.

30 Regarding muesli. You can make your own by taking oats and soaking them overnight in apple juice or milk (just enough to moisten them). In the morning it is traditional to add grated apple - or I suppose applesauce would work - and other fruit, and possibly yogurt. I have never tried this, but clearly it has fiber galore and very little sugar.

Blueberry muffin, anyone? I made them this morning. Maine blueberries are a pain in the neck to de-stem, in case you were wondering. It took me about 10 minutes to clean a cup of them, though that could have been because I was uncaffeinated at the time
But the muffins were really tasty.

I make my own granola because, as you say, it's much cheaper. And it's a good way to use up those half eaten containers of dried fruit that would otherwise linger on into eternity in the cabinets. One thing I've discovered is that using quick oats is a bad idea. I did that once because it was what I had, and, nope. Not for me, thanks; it gives the granola a weird texture.

Maybe it's a holdover from when kitchens were full of flies, and a towel would help to keep them away? Or perhaps it helps to keep the heat in and stray air currents out?

Hi bluebell! I don't find it to taste of beer at all. The other ingredients in the sauce are really the predominant flavors in the sauce. The only other thing I recommend is that you really watch the sauce the first five minutes you boil it (and make sure you have it in a big enough saucepan) because it will foam quite a bit at the start and has a tendency to want to boil over.
I also think that if you are averse to beer, you could use chicken broth instead.

58 So, have you done a price comparison as to what it costs you to make granola versus buying granola? Not to be an ass, just curious.

I enjoy making lots of things but simply for the ingredients it is hard for me to compete with some big national chain or even local restaurants. Then when you factor in I am likely to upscale the quality of the ingredients it goes downhill quickly.

That is without even considering the opportunity cost for my time which could be spent working or doing something useful here.

61 I love shakes and malts. Have 20 extra pounds because of them. Moms assisted living is 2 doors away from a United Dairy Farmers location. I have zero self control.
Homemade shakes/malts contain a dense high fat ice cream. A touch of heavy cream in addition to whole milk. For a chocolate version I use a good quality hot chocolate mix for the chocolate flavor.
Like ice cream but shakes are better. Have always liked my ice cream runny. Shakes are perfect because of that.
And yes my cholesterol is elevated for the first time in my life due to these concotions.

I put a layer of plastic wrap or wax paper over the dough first, before I cover it with a towel, if the dough is soft and would stick to the towel. That roll dough has a lot of fat in it so I suspect it's a soft dough and maybe he does that for the same reason, but wants to throw around words like "weight" for some reason.

Which is not a nice word to use when one is giving a decadent roll recipe.

I just made a batch that cost me about $12.50 for about 3 1/2 pounds of granola that is better than anything I can buy.

So about $3.50/lb. for granola with lots of fruit and nuts.

I always assumed when making bread or rolls that using lard would make the softest, highest rising dough. Because lard is easy/sleazy for the yeast to push against and plump/fluff up.

But lard is like pure fat and calories.

What is it exactly that you are wondering? Using lard, or butter, or cream (any fat) will make a bread dough softer, and it will take longer to rise, but the resulting product will be softer than say, an Italian or French bread with no fat in it.

And yes, fat is calories, but the good kind!

I will eat nearly any pizza but you cannot get the stench of anchovies off of a piece of pizza, even worse, it is the colonialist topping of all pizza toppings and is constantly trying to annex other pieces of pizza when you are not looking.

144 I used the Instant Pot cooker to make chicken and rice. Came out very well. Once cup rinsed rice, one cup rinsed glutious rice (different texture for funsies), two cups chicken stock, two pounds of chopped up chicken breast.

Let the instant pot warm up first. Once you've got pressure, let it cook for about 6 minutes (probably 11 min over all). After cook, stir together. The chicken seemed to cook ok. I had to use a spatula to get some of the rice up but it wasn't too bad. Maybe add some sort of non-stick spray next time.

So that and eggs this thing can make. Hopefully I'll learn some new, useful recipies for it.

You can make a mighty fine steak on a stove. And if you have a broiler, it gets even more interesting.

161 Insomniac- Google tells me that covering dough with a towel helps keep the bread from drying out. Which only makes sense if you don't think about it. Towels aren't airtight, so the dough should dry out anyway. Maybe it dries out slowly enough that you bake it before it gets really dry.

I still like my theory that it insulates the dough- it really is warmer under the towel, even if the source of warmth isn't under the bowl (I put my bread dough on top of a low temp oven in temperate weather, but when it's cold out and the wood stove is running, I put it next to the chimney.)

One inch isn't too thick, so it will cook quickly.

173 The thing you want to avoid is the dough drying out while it is rising. You will get a hard dried crust on the surface of the dough that won't knead in correctly, and you will wind up with hard unrisen gobs in the dough if you try to knead them in to be reabsorbed.

The traditional thing to do is to grease a bowl, and flop your dough into it, and turn it once to make sure all parts of the dough is greased to keep evaporation down.
Actually, the bakeries I think use the proofing oven which keeps the loaves warmish and in high humidity too.
Alternatively the French used a basket called a banneton to hold very wet dough that was intended to pull some of the moisture away before placed on a baking surface or pan.

I use a towel because it keeps flies out of it, and at times the cats get on the counter and step in it. I have an old muslin tea towel that has so much oil in it it is nearly oil-cloth and will hold some of the moisture in.

The saran wrap will also prevent evaporation. As a side note the recipes I have for corn-flour arepas say to cover tightly with plastic wrap for the same reason.

(And if anyone has advice on how to make arepas come out correctly I would love your input.)

177 At the risk of inviting a hail of derision, I pan fry steaks on the grill (in order not to set the smoke alarms off). I find that the cast iron pan I use flattens the too rare-too well-done inflection curve that's too steep when grilling. The steaks cook in their own juices and turn out tastier.

197 I live less than half a block from a good little liquor store. They steered me to a reasonbably priced decent reposado tequila and the cheap Mexican knockoff of Cointreau, called Naranja, which I use for the nightly maragaritas.

Awhile ago I put a pork butt into the oven to braise in Chinese seasonings. The recipe didn't call for booze, but I splashed a little tequila in there cuz why not. I also used a little in peach ice cream a couple of weeks ago.

209 I used the Instant Pot cooker to make chicken and rice. Came out very well. Once cup rinsed rice, one cup rinsed glutious rice (different texture for funsies), two cups chicken stock, two pounds of chopped up chicken breast.

Let the instant pot warm up first. Once you've got pressure, let it cook for about 6 minutes (probably 11 min over all). After cook, stir together. The chicken seemed to cook ok. I had to use a spatula to get some of the rice up but it wasn't too bad. Maybe add some sort of non-stick spray next time.

So that and eggs this thing can make. Hopefully I'll learn some new, useful recipies for it.

Mark- you can sear the chicken pieces in the pot first, y'know. I bet your pot has the "Sear" setting.

Hey! It sure did - torrential rains yesterday and a couple of matches cancelled. I was in the team tent when the storms rolled through and managed to not get killed by lightning and with only mild wind damage to the tent. Before going to Mexico I looked around the net for recommendations. One site aficionados contucted a blind taste test. By the time I was buying tequila in Mexico I had forgotten so I just bought cazadoes because of the label. Got home and looked and lo and behold the winner of the blind taste test was what I bought!

Tami, I was just channeling this old neighbor of mine. Passed away a few weeks ago, 90 yrs. old.

He used to say stuff like that. His wife, "Mrs. June" ran a neat house, and basically wouldn't let him in unless he passed inspection.

400 My brothers' and my favorite on canoe trips were granola with peanut butter in it.

Or you can try Hudson's Bay Bread as used at the B.S.A.'s Charles S. Sommers' Canoe Base out of Ely, Minnesota:

1 1/2 lbs. (3 cups) butter or margarine - soft
4 cups sugar
2/3 cup corn syrup (light Karo)
2/3 cup honey
2 tsp. maple flavoring (Mapleine)
Cream together the above ingredients. Gradually add:
1 1/2 cups sliced almonds
19 cups finely ground rolled oats (see above)
Press into cake pan or large sheet pan about 1/4 to 1/2 inch thick. Bake at 325 degrees for about 20 minutes. Do not overcook, as it will get crispy and brittle. Take out of oven and use spatula to press down (keeps it from crumbling). Cut into exactly 3 1/2 inch squares. Package in plastic bags with as many as there are crew members (one each for lunch). If you measured correctly, they should just fit into 1/2 gallon paper milk cartons. They will be protected, easy to pack, and easy to find when you want to grab a quick lunch. Slather with massive quantities of peanut butter and jelly, and wash it down with some Red-Eye, and you will know you ate lunch!
