Food Thread: It's Just Food

The conceit of these new age shamans that 2,500 years of Western intellectual development is somehow flawed and that they can simply invent a new paradigm of health is a reflection of a very wealthy society that has many people in it who have nothing serious to worry about.

Food is fuel. Yes, there are some mixtures that are better for us than others, but in the end, food provides energy and the building blocks for growth of tissue.

Making it some sort of 21st century totem that symbolizes an ascent to some higher plane is just silly. I'm all for putting food on a pedestal, but only for the purposes of pleasure and as a social lubricant. I refuse to elevate it to something magical and mystical. And the people who claim incredible properties of food are doing exactly that. It's voodoo and astrology all wrapped up in baked quinoa and arugula until it is proven by a dispassionate scientific study that is then repeated, preferably a few times.

I ranted about this kind of crap recently, so I won't plague you again for awhile, but just take a look (or even better don't give them the clicks) at this thinly disguised attempt at anthropomorphising food animals. Before you put that fennel and garlic-scented chicken leg in your mouth, read this Yeah, I get it. Piglets and chicks are cute and have brains and feel. But they also taste good, and that is more important. Because they are simply not on par with Man.

artisanal 'ette sent me a bunch of links for charcuterie platters, and here is a good one. 5 Tips For A Fabulous Charcuterie Board is pretty straightforward and simple, but the writer gets it. Sometimes simple is better, and this is one of those times. Also, the portions are small, so even fancy stuff like Serrano ham isn't going to set you back a fortune.

HOW TO SERVE: Serve everything already sliced on one board. If you don't have room for the bread and crackers, serve on the side.

BEER AND WINE PAIRINGS: Almost everything pairs with cured meats - that's the great thing about serving a charcuterie board.

It ain't fancy and the booze isn't top shelf but it's mine and my X wife didn't get it! The roll up has some prissy shit for the ladies but the important stuff is easily accessible. LED lights are in its future and its twin is in my office and will likely be duplicated for my lower level when I finish it, can't be bothered walking up a flight of steps to freshen your drink, Cheers!

I like it. Minimalist and serious. It sends a message that you are a serious drinker. And really, what else is important in life?

This is my liquor cabinet, an old dry sink that was inherited from my grandparents. They had it restored, as it was a battered stack of boards when they got it. They inherited it from the side of the family that were total teetotalers. We joke that that side of the family is spinning in their graves from this.

This is from Mark Bittman, and I usually have some problems with his cooking. The dish sounds like fun, but I think the expensive prosciutto will be overwhelmed by the garlic. As usual, his first instinct is wrong. A better choice would be a smoky ham or something powerfully flavored. I think the bacon might be fun. Yeah...there's a stretch.

Pasta With Prosciutto and Whole Cloves of Garlic
(Maccheroni alla San Giovanniello)

•1/3 cup olive oil or butter
•10 cloves garlic, lightly crushed
•1/2 cup prosciutto or other salted ham or slab bacon, cut into cubes or strips
•6 plum tomatoes, or 11/2 cups drained canned tomatoes
•Salt and freshly ground black pepper to taste
•1 pound cut pasta, such as ziti or penne
•1 cup roughly chopped fresh basil leaves
•1 cup freshly grated Pecorino Romano or Parmesan cheese, or a combination

1. Bring a large pot of water to a boil.

2. Combine the oil, garlic, and ham in a medium to large skillet over medium-low heat. Cook slowly, stirring occasionally, until the garlic becomes deep golden, nearly brown, all over, 10 to 15 minutes.

3. Core and chop the plum tomatoes (or crush the canned tomatoes) and add them, along with salt and pepper, to the skillet. Stir and simmer while you salt the boiling water and cook the pasta.

4. Drain the pasta when it is tender but firm, reserving a little of the cooking water and adding it to the sauce if it appears dry (quite likely if you used fresh tomatoes). Toss the pasta with the sauce and most of the basil, along with the cheese. Mince the remaining basil, garnish the pasta with it, and serve.

10 I just made a grilled ham and cheese sandwich. The ham is leftover ham from Easter. It was a Masterpiece!!! It was also easy and the gloomy weather has me gloomy and lazy, mostly lazy. I'll whip up a pasta concoction later so I have something to eat when I go back to work tomorrow. 12 hour mids don't leave much room to cook. Eat, sleep, and work is pretty much it for 3 nights.

Away, point I'm trying to make: I tripled the amount of bacon I normally use and it elevated my mediocre potato salad to something quite tasty. It's not going to win an award but it might even get a compliment or two. (It's just mayo, mustard, pickles and bacon with a little onion powder and salt added, the increased bacon was probably heaping half cups worth of chopped bacon.)

Alright, he's over the top. But on the line of continuum he's off to one side, the deniers that food does anything good or bad on the opposite side, and me in the middle.

Food, specifically the foods we decide to eat, have a significant effect on our bodies. There are foods that contribute to inflammation, and foods that retard that effect.

I have, at times, suffered the debilitating effects of arthritis (a fancy-pansy term for inflammation) which disappear completely with modification of diet. No pills, no doctor visits. Simply adding or subtracting foods from my diet. My father ate a large amount of red meat and suffered gout. He would not take the simple step of reducing red meat intake. He suffered, I shrugged. His choice. A painful choice.

Inside our brains, inflammation is definitely correlated with the various dementias. In countries with large intakes of anti-inflammatory foods, these dementias are nearly non-existent.

I'm not the food police, telling people what they should or should not eat. Only suggesting that there's a definite link.

49 I'm all for eating healthy. I avoid certain foods and ingredients such as artificial colors, artificial sweeteners, fast food, etc. because I tend to feel worse after I eat them. But I don't define myself by what I eat or don't eat, the way some Leftists do. The problem is that it becomes a religion to a lot of people who don't have anything else to believe in.

Barb, best advice I can give you for gluten-free cooking is just try to find regular recipes that don't use gluten, rather than taking a recipe that contains gluten and trying to figure out how to work around it. That way heartache lies.

Cookie sheet, add aluminum foil to keep water in, wet plank, add about 1/8" water to inside of cookie sheet. Let sit around for a while so that plank absorbs water. Plop protein onto plank.

Into oven. Plank maintains contact throughout cooking cycle with wood, preventing your protein from cooking unevenly.

You can buy expensive cedar planks at a few specially stores or just go to Lowes or Home Depot and have an eight foot board cut down into many slightly less than cookie sheet length and keep for yourself or share.

Better than sous vide in my opinion.

85 Odd question, perhaps. I have heard that coffee and tea can actually taste better when sipped from a good porcelain cup instead of my usual 24 ounce ceramic mug. We have a set of Rosenthal china which includes cups and saucers. I think it does make a difference and prefer the smaller china cup. But I don't know if it is expectation or what.

Anyone notice this?

BTW, I no longer have to consume mass quantities of coffee just to stay awake. I drink it now just for the taste.

I tend to be very judicious using garlic--too much overwhelms the dish.

Also if you roast it before using it the flavor definitely enhances what your cooking.

98 Playing devil's advocate here: I gotta say that I can think of some times where food is better than meds.

Sometimes high blood pressure and diabetes are little more than your body trying to deal with your macronutrients being out of whack. Remember, it wasn't Science (tm) that told us that fat was bad for your heart -- it was a government program. Lowering carb intake can affect your blood pressure so dramatically that if you are on meds you should be in touch with your doctor to adjust your meds if you try low-carb eating.

So I don't think that exotic diets will necessarily cure all ills, but there are some conditions that respond well to a positive change in diet.

It's like a simple syrup made with pineapple juice and gum arabic.

Back in the 20s-30s, the gum arabic made the drink "silkier" but doesn't affect the flavor.

It used to be a common food additive.

Your local liquor store should carry it.

But if not, both "Small Hand Foods" and "Liber and Co." offer pineapple gum syrup on Amazon.

It's actually used in a lot of drinks.

Here's another good one:

Pisco-Apricot Tropical

1 1/2 oz pisco
1/2 oz apricot brandy/liqueur
3/4 oz fresh lemon juice
3/4 oz pineapple gum syrup
2 dashes of Angostura bitters

Shake with ice. Strain. Drink!

The wifes latest favorite meal is flounder. I take some cheapy snow crab legs, quick steam them lightly, then clean them. Throw the meat in a bowl. Throw a flounder fillet on the plank, then cover with crab meat. Sprinkle a little pizza cheese on top. Then throw another flounder fillet on top. Bake at 350 for about 40 minutes.

It would probably be a 20.00 entree. My cost about 3.00 per person.

I had a small gathering Saturday, where I served the Chacuterie board. It was a huge board, but simple to throw together. The only prep was blanching asparagus and washing and cutting up the fruits.

Pate's on my board:
Duck liver with cognac.
Pork & Elk Blueberries.
Pork & Game (Bison) Cranberries.
Pork & Apples.

Cheeses:
Camembert
Mirabo German Cheese with Walnuts (like a French brie/delicious!)
Goat cheese
Danish Blue
Havarti
Swiss
Cheddar

Meats:
A spicy Kielbasa
Genoa Salami
Prosciutto Cotto
Capocollo
Smoked Prosciutto
and another type of prosciutto for the asparagus. I wrapped pre-blanched asparagus spears in prosciutto (served them sushi style - cut short).

Other fruits and veggies:
artichoke hearts
tangerine segments
clementine segments
apple slices
grapes
mixed salad

Misc other finger foods and condiments:
Mixed Nuts
Cornichons (I used the small sweet ones)
A couple different varieties of olives
compotes, jellies and chutneys (fig, blackberry, etc)
Bararian mustard (sweet) and a whole grain Old Style mustard

Crackers and baguette slices
Wine
Coffee with dessert

Went over well. Was mostly gone, but enough for us to relax today and enjoy.

149 I has a sad. Yesterday I heated the smoked turkey we were given at Christmas in an oven bag with some soaked up bread and a bit of water just in the bag. Made the bread and sage dressing I like and it came out fine in spite of having to make substitutions because I hadn't shopped.

So why sad? Because today, hungry after riding I went to grab some leftovers and found I had put them in the freezer in garage rather than the fridge. Now I'm waiting on the microwave do defrost and knowing that freezing will have dried out the meat some.

Same here. Only, in my case, a biscuit, or a pizza, or a grilled cheese. I've lost 25 lbs, but every few days I just have to have something carby that I love.

I tried a few "substitute" bread recipes and such, but they suck. I'd rather just have the real thing once in a while and not worry about it.

I did create some low carb sesame seed cheese crackers yesterday, though. They're tasty.

Here's a great "bridging" cocktail then.

This one used to be served only on the Matson Line's SS Mariposa as it cruised the South Seas.

Lani-Honi

1 1/2 oz Benedictine
1/2 oz fresh lemon juice
1 oz light rum (though sometimes I use dark or Jamaican rum)

Shake with ice. Strain.

And serve one of two ways:

A wine goblet with with crushed ice

or

Pour straight up into cocktail glass. (My fave)

Sounds like it would be too sweet but it's not.

Delightfully light and refreshing. Easy to make.
Perfect summer drink.

Maybe. Doesn't have the tell-tale green color. But Cedar is naturally decay and insect proof, so no additional treatment is required and why it's the best for cooking on top of.

We went to a family dinner this past week. I hadn't seen my brother-in-law since Christmas. He looked amazing. He dropped 35 pounds since then and is now at 180, 6 foot tall. I asked him how he did it - he said he cut the carbs. No exercise, even some cheats once in a while. He said he had to stop because he went lower than he intended to go. The weight just fell off him.


Nicest guy in the world. Too bad that now I hate his guts.

Try it with bacon grease.

Cook the bacon slowly and remove the bacon, leaving the melted goodness.

Briefly place one of the two slices of bread on the pan to soak up some of the grease.

Replace it with the other bread with the bacon, shredded cheese of choice, and a light smear of spicy mustard.

Top with the first slice of bread, greasy side out. Cover to let the steam melt the cheese.

When toasted to preference (most of the grease will be gone from the pan by now), flip over and recover. The soaked in grease will keep the bread from burning if the grease in the pan is low.

When done, enjoy!

Lot of drugs are just juggling acts to keep and maintain copy write protection. derivatives of mostly the same thing in different configurations, but yes we are starting to to produce our own compounds. However, we don't even know what we don't know about compounds that exist in nature. I read an article a few months ago stating that we generally only study the types of bacteria that is easy for us to culture, which is only a small percentage, and that there is a world of possibility in your backyard that has never been completely explored.

I have experience with hard boiled eggs.


I was Brigade duty officer at Ft Hood one Saturday night in 1973. An Alabama National Guard unit had just finished their summer camp and were going home. They had brought their mess (they guys that feed them) for some reason and therefore the mess had to drive their vehicles back home. The main unit was flying back on military transport.

The mess guys were leaving early so they boiled a mess of eggs, peeled them and put them in mermite containers (a sealed, insulated container) for the troops.

I got the call early Sunday morning from the hospital that they had a bunch of sick Guardsman on their hands. When I went over they were all over the place, including the front lawn, expelling from both ends. Moral of the story, warm eggs are a perfect medium for bacterial, or viral, growth.

I left, called the Brigade commander and told him he had a problem.

A while back I started thinking about how I never use the two sets of fine china I inherited from my Mom (neither did she!) as well as my own 26-year old set of Wedgwood.

I got the cups and saucers out and started using them for my coffee on the weekends and I definitely have noticed a difference. I don't know if it's the way it cools at a different rate or if the shape of the cup distributes the the aroma differently, and you're right, it could just be the expectation.

I do, however, still consume mass quantities of coffee!

363 335 ... Skook, The 300 Savage uses a .308 diameter, 150 gr bullet at about 2,600 fps. That's in the neighborhood of a 30-06 out of a Garand. I haven't hunted big game so check with a hunting forum but it sounds like it could do the job.

Never used a Savage 99, so don't know about the sights or general accuracy.

There might be significant geographic variations at play there.

Personally, I'm all-in on the Hawaiian, if decently done. And while a good pepperoni is always a reasonable choice, I generally don't go for four pounds of ground beef and four different sliced sausages on a pizza.

There are certain pizzas that work best thin (margherita/cheese, anything involving a sauce that ain't red, most veggie-type pizzas) and those that work best thick (anything with a lot of meat, IMO.)

I will make a confession: I have developed a taste for the sam's choice thin crust philly cheesesteak pizza. It is a great snack pizza. Now their normal pizza's are about what you would expect from a $3 frozen pizza, but this is pretty good.

Nothing really special. There are some good bizarre regional pizzas (e.g. Senape's in Hazleton PA) that are barely recognizable as pizza, but Detroit style is like Chicago style that isn't even really trying.

Detroit coney dogs though, definitely worth trying.

Aldi is a bizarre little place. They have really good fruits and vegetables, and great deals on said fruits and veggies, but they have these other sneaky little delicious things, too. Their chocolates come to mind, but I'm sure there are others.

149 I has a sad. Yesterday I heated the smoked turkey we were given at Christmas in an oven bag with some soaked up bread and a bit of water just in the bag. Made the bread and sage dressing I like and it came out fine in spite of having to make substitutions because I hadn't shopped.

So why sad? Because today, hungry after riding I went to grab some leftovers and found I had put them in the freezer in garage rather than the fridge. Now I'm waiting on the microwave do defrost and knowing that freezing will have dried out the meat some.

Try defrosting by putting the sealed freezer bag in a pan of hot water from the tap. 5-10 minutes on one side, flip the bag and add some more hot water. Another 5-10 min, and everything's defrosted without that nasty nuke burn.

One of my baking pans fits perfectly over my sink so it's easy to fill, with little mess.

I've noticed that too! We just bought eggs there the other day...thirty nine cents for a dozen. And it's not like they were old/expired eggs.

The beer selection is very odd, but they have a decent meat selection there too. It's not fancy gourmet, but for easy and cheap protein they're tough to beat.

I think gin needs to have a healthy dose of juniper but apparently these goofs don't.

I recently had a "gin" where the major flavor was pear.

Not awful. A nice Pear vodka. But it was in no way gin.

553 So I came home from a choir fest to make FenSpouse dinner (sorry, CBD but it consisted of quinoa as well as ground chicken, with fire roasted corn, garlic jalapenos,salsa, diced scallion and diced red pepper mixed with chili pepper/lime combo, salt and pepper. On top of that I put slices of ripe avocado, sour cream and a little of chopped fresh cilantro (Insert groans here, everyone who hates cilantro).

In the fridge is a round roast bathing in apple cider vinegar, beef broth, water and brown sugar mixed with cloves. allspice and ginger, Tomorrow we are having sauerbraten with red cabbage and apples.

I think my cooking has gone up a notch because I like to have a really nice meal waiting for FenSpouse after his hard day at work.

One thing with gin, there's usually no reason to pay premium prices. I'm not a big gin aficionado, but when I have it around it's usually Boodles, which is usually quite highly rated, and it's about $20 per fifth.

Being single, I work that all the time. I'll buy a pound or two of ground beef, divide into 1/2 pound patties and freeze in quart freezer bags. I do the same with chicken leg quarters, and steaks.

Then I have individual portions that I can quickly defrost for simple evening meals, without having to save as leftovers.

It's quite easy, but you really need to have a spaetzle maker, which isn't a big complicated thing at all. It's basically a flat grater with a rectangular piece that sits on top, where you put the dough. You run the dough back and forth over the grater into the boiling water. Very easy.

It was less than $10 at Marshalls when I got mine.

597 Speaking of gin, last week I bought a bottle of Wigle's Ginever. I had never seen it before. It claims to be closer to the original gin recipe than most modern gins. So I gave it a whirl. Here is what the label says:

"Genever-style gin, very popular before the advent of large commercial stills, was the original gin. It has become a lost gem of distillation, hard to come by in America. With a grain mash made of local, heirloom rye, wheat and malted barley, and a complex family of botanicals, our Ginever is rounder and fuller than modern gins. Juniper berries remain forefront but are joined by a number of other aromatics including earthy cardamom, peppery cubeb, and fragrant lavender to create a layered flavor experience."

I tried it in a martini but didn't like it. It certainly has a lot more flavor than I'm used to in gin. Maybe it's an acquired taste, but I'm satisfied with my usual Bombay gin for martinis.

However, I suspected that it would make a good gin and tonic, and I wasn't disappointed. It was quite tasty.

I've used it in pork and chicken marinades. Equal parts olive oil and vinegar, and some seasoning if that's your thing (I like salt, coarse pepper, ground mustard, etc.)

Part of it is a desire to locate right at the perimeter of lower income neighborhoods, in order to bring affordable food to them.

Only downside is that there are no shopping bags. You have to bring your own.

They have really good prices, and outside of the fact that it takes forever to check out, I recommend them. Markedly cheaper than Walmart groceries.

Down here you have to carry a quarter if you want to operate the little slot-machine lock on the buggies, too.

There's always a ton of goodwill between shoppers that I've seen, though, and you'll usually get a smile along with a buggy handed off to you on the way in. I think I've had to use a quarter only a handful of times.

Most of the "chips" and "shavings" around here are generated in the workshop.

660 I made a side dish for dinner tonight that involves balsamic vinegar. Plus it's delicious: sweet pepper ragout.

2 large bell peppers, at least one of which should be red.
1 medium onion.
2 cloves garlic.
1 teaspoon balsamic vinegar.
1/4 cup olive oil.
1 large tomato or half a can of canned ones, peeled and diced.

Slice the onion thinly and melt in the oil. Mince the garlic and add. Then cut the peppers into strips (half to quarter-inch wide) and add. Salt and pepper to taste. Cook about 20 minutes, covered. Uncover, add the tomato(s) and balsamic vinegar, correct seasoning, cook uncovered another 10-15 minutes. Can be served warm or chilled.
