EMT 03/18/17 Day after St Patty's Day

A small sample of last evening's two corned beefs.

On the left: Store bought corned beef brisket. It's so PINK! Leprechaun magic, right? Or maybe it's just KNO2. Which everyone knows comes exclusively from the end of a shillelagh dipped in a rainbow, so yes, Leprechaun sorcery it is!

On the right: Home brined brisket. The only pink is in the finely developed smoke ring, which is a bit of misnomer. The pink ring is not smoke exactly, rather, NO2 released in the burning of wood (or charcoal) binding the myogloben in the meat, keeping it from changing color.

Add in some home-made colcannon, and it was the jubblies.

Cooked on the PBC. I say again: maybe the best 300 bucks I've spent in my life.

I got hooked on this program while traveling to UK a while back. Binge watched it several nights after work on BBC13tiventy0. Or maybe it was BBC15tiventy2. The station names all blend together in my memory for some reason.

My understanding was the US moved almost all of its gold out of Ft Knox decades ago. There is still some but it is a lot smaller than it used to be.

Absolutely. I still use LPG a lot for the convenience/pain in the ass/I don't feel like waiting 2 hours thing, though. I bought one of those Char-Broil, Gas Patio Bistro portables with the Tru Infrared grates. I was pleasantly surprised. Perfect size for me and works very well.

But, .... falls short of charcoal and the ol' stand-by Weber kettle I garbage picked and rebuilt for $30.00. Looks like an (almost) new one.

My buddy and I built the classic style horizontal pit with an end mounted fire box. Everything on the rig is stainless steel. We shipped it to Scotland when we moved and then to Texas finally. I have a lot of woods on my property with lots of twigs. When I cook with charcoal I first put twigs at the bottom, then align charcoal around it. In about 20 minutes I'm good to go.

85 This looks like a great smoker and slow cooker, but certainly not the best. While I would (and will) buy this cooker so that I can address high volume smoking needs, a ceramic smoker such as the Green Egg or Kamado Joe is simply superior in all aspects. Expensive for sure, but turns swine and other meats into magnificent works of culinary art. The drawback on the ceramic is surface volume which limits the amount of meat you can cook. A good rule of thumb is one large turkey, or two 12 pound butts per grill.

130 So - my brother made corned beef and cabbage in a crockpot yesterday and it was delicious - and I've never liked it. When my mom ate it it was like eatting red rubber bands, but his was tender. I normally have little use for cabbage that isn't coleslaw, but even that was good.

Since I'm doing the paleo thing now, it's was nice to socialize without going off the plan (I avoided eating the potatoes.)

Way ahead of you, pal. I've been not voting for* McCain for decades. IMO, he does a great job of representing the State of John McCain, while we pay him to represent the State of Arizona. True story: Son-of-ActionJackson and I made it to a D-Backs Spring Training game a couple of weeks ago, and as we entered the ballpark, we walked right past McCain on his way to his seat. It was all I could do to not stop him and berate him on any of a dozen or so topics. He ended up in a box seat in full view of the third base bench, and he spent the whole time he was there in a conversation with others in the box (as opposed to actually watching the game). After making an appearance of 3 innings, he was gone.

* I did vote "for" him in 2008 when he was running for president against a Marxist. IMO, after his loss to him, McCain missed a great opportunity to retire. We are all the poorer for it.
