EMT 03/18/17 Day after St Patty's Day

A small sample of last evening's two corned beefs.

2 corned beefs.jpg

On the left: Store bought corned beef brisket. It's so PINK! Leprechaun magic, right? Or maybe it's just KNO2. Which everyone knows comes exclusively from the end of a shillelagh dipped in a rainbow, so yes, Leprechaun sorcery it is!

On the right: Home brined brisket. The only pink is in the finely developed smoke ring, which is a bit of misnomer. The pink ring is not smoke exactly, rather, NO2 released in the burning of wood (or charcoal) binding the myogloben in the meat, keeping it from changing color.

Add in some home-made colcannon, and it was the jubblies.

Cooked on the PBC. I say again: maybe the best 300 bucks I've spent in my life.

Bonus St Patty's day trivia below the fold.

I got hooked on this program while traveling to UK a while back. Binge watched it several nights after work on BBC13tiventy0. Or maybe it was BBC15tiventy2. The station names all blend together in my memory for some reason.

You can catch a bunch of them in part or in whole on YouTube.

2 Good Morning Morons. Today is Saturday, March 18, 2017. On this day in 1968 after years of war spending, Great Society spending, and huge deficits congress was forced to remove the US from gold backing.

I believe I will just leave these things on the seat of my unlocked car while I pop into my Brooklyn home. I'm sure that would be fine.

Whoopsie, some bad man just got out of a vehicle, walked straight over to my car, stole all of these items and vanished in broad daylight, in what neighborhood witnesses described as a targeted burglary.

My buddy and I built the classic style horizontal pit with an end mounted fire box. Everything on the rig is stainless steel. We shipped it to Scotland when we moved and then to Texas finally. It's thirty years old now. Today some pico de gallo infused pork links are going on it before the band jam this afternoon. I like the way Saturday is shaping up.

Gillibrand on the national stage will come across just the same as Caroline Kennedy did in NY (when somebody had to replace Hillarity! in the Senate); she'll hem, stutter and valley-speak her way into a national laughingstock even MSNBC cannot save. Gillibrand is one of many Congress peeps with an IQ lower than Barry's testosterone level. Without the soothing blanket and Binkie of a safe blue state, she will fail spectacularly on the national stage. So let's hope the Dimwits trot out her dead-on-arrival carcass in 2020. That the Dimwits are even thinking of Gillibrand as a viable candidate continues to prove the Dimwits have learned nothing from 11/8-9/16. That is a good thing.

Bill is 'where the fuckable girls are'.

IMAO, the scary thing is if Hillarity! had ditched Bill for his horndog nature and being an actual rapist years ago, she might have pulled off a win in 2016. But after Trump made Bill's history known to millennials who had never heard of his antics thanks to the Fake News Media hailing him as an elder statesman, he's just so much Louis Vuitton now. And since Hillarity! is clueless as well, hanging out with Huma will harm her, and by extension Chelsea, more than it will help the Clinton brand name.

81 Two hours before the grill/smoker is ready? In two hours I can light the fire, cook dinner, eat dinner, do dishes, and be snoozed out on the sofa. The trick? Lump hardwood charcoal (NOT briquettes) and a chimney starter. Fifteen minutes, tops, from striking a match to throwing the steaks on hot coals; ten minutes more and it's suppertime. Sure, barbecuing (smoking) takes hours, but that's a different story.

85 This looks like a great smoker and slow cooker, but certainly not the best. While I would (and will) buy this cooker so that I can address high volume smoking needs, a ceramic smoker such as the Green Egg or Kamado Joe is simply superior in all aspects. Expensive for sure, but turns swine and other meats into magnificent works of culinary art. The drawback on the ceramic is surface volume which limits the amount of meat you can cook. A good rule of thumb is one large turkey, or two 12 pound butts per grill.

94 Burned half my pasture last night, and helped a neighbor burn her large brush pile. We had still air, a rarity in Kansas. All done, with no problems.

Alas, pasture burning is not any euphemism of spousal maintenance terms. To keep pasture cedar tree free, and to promote growth of good plants, you have to burn. Cows get 15% more protein from native grasses that grow after a burn.

95 If you have access to apple, cherry, or other fruit tree clippings, a handful of golf pencil-sized twigs tossed on the edge of the coals just prior to putting the meat on the grill will add a wonderful taste to grilled meat. Close the lid for the first few minutes, then grill as usual.

Of course.

The French cops obviously violated the terrorist's U.S. constitutional rights. He was on his way to apply for a U.S. visa, so he could come here and kill a bunch of American infidels. Now he won't be able to exercise his constitutional right to enter the U.S., like all the other foreign terrorists.

No doubt some lefty judge will soon be granting the terrorists' parents standing to sue the Trump administration for damages.

120 In the lowlands of middle upstate New York local legend has it that young people who venture into the mists late at night could fall under the spell of a mysterious creature known only as the Swamp Thing of Chappaqua. Lulled into a state of deep ennui, the Swamp Thing's victims fall into a deep sleep, only to awaken hours later by the side of a road, abused and aching with an empty wallet and an "I'm With Her" campaign button pinned to their naked chest.

Descriptions of the creature vary widely from the hysterical victims, but consensus seems to suggest that the creature is bug-eyed, with jagged yellowed teeth, jowls like an English bulldog and an unimaginabble girth, shaped like a side of beef. Its speech is largely unintelligible, but one young man who commented only on the condition that his identity remain secret, tells us that the creature intones in a vaguely Southern drawl, "Ah ain't no ways re-tahrrd." and "B-b-b-b-but I was up by five points in Florida".

Old timers in the area claim that the creature is the resurrected ghost of a former small-time politician's wife whose career died long ago but who keeps reappearing every several years with a vow to come out of the woods once again and ravage the countryside.

Beware!

141 @104 "Trump needs to come out and say, "Conservatives of AZ and SC, you voted for me to do a job. But your senators are preventing me from doing that job. Stop re-electing them......"

Way ahead of you, pal. I've been not voting for* McCain for decades. IMO, he does a great job of representing the State of John McCain, while we pay him to represent the State of Arizona. True story: Son-of-ActionJackson and I made it to a D-Backs Spring Training game a couple of weeks ago, and as we entered the ballpark, we walked right past McCain on his way to his seat. It was all I could do to not stop him and berate him on any of a dozen or so topics. He ended up in a box seat in full view of the third base bench, and he spent the whole time he was there in a conversation with others in the box (as opposed to actually watching the game). After making an appearance of 3 innings, he was gone.

* I did vote "for" him in 2008 when he was running for president against a Marxist. IMO, after his loss to him, McCain missed a great opportunity to retire. We are all the poorer for it.
