Seems he celebrated Friday so hard that he can't get out of bed. So you have me and this quickly prepared but delicious Food Thread. As many of you know I reside in the upper Mid-West. We enjoy fish at our home. So instead of buying fish, Mrs. MH kicks me out of the house to bring back some fresh fish. One of those fish would be the Black Crappie. Here is a recipe that we enjoy. It isn't fried fish, but it is pretty crunch nevertheless. 1 lb fresh crappie fillets1 egg or sub Evaporated milk 1/3 cup all-purpose flour 1 tbsp Parmesan cheese, grated 2/3 cup crushed corn flakes 1/8 tsp cayenne pepper 1/4 tsp. pepper Kosher salt to taste Preheat oven to 425 degrees Combine flour and pepper in a shallow bowl and mix well Beat the egg in another small bowl, add 2 tsp of water and mix it well Mix crushed corn flakes, Parmesan cheese and cayenne pepper in a separate bowl Sprinkle fillets with Kosher salt Dredge fillets first in flour mixture, then egg mixture then in corn flakes mixture Place coated fillets on a baking sheet coated with cooking oil spray Bake 10-15 minutes or until fish flakes. Don't have fresh Crappies or bluegills or perch. Cod and Haddock work well also. I've never tried this recipe with trout or salmon. So I'm not sure what the results would be. Pan fried Brookies with skin on don't need anything else. But, that's a food thread for another day. In the Upper Mid-West the Catholics brought with them the fish fry on Friday nights. A typical fish fry here consists of fish, cole slaw, French fries and bread/role. Your Misanthropic gourmet loves cabbage. Here's a recipe for cole slaw from Mrs. MH's grandmother that's very good. Cole Slaw 1 head cabbage shredded 2-3 carrots shredded 1 small onion minced Mix veggies in a large bowl Sauce 2/3 cup white vinegar 1/2 cup salad oil 1/2 cup sugar 1 tsp ground mustard 1/2 tsp celery seed Salt & pepper to taste Boil dressing 1 minute. Pour over salad and mix well, it can be served warm or cold. Our preference is cold. French fries, fried potatoes, hash browns all go well with this meal along with buttered dark rye bread. Wash all of it down with a cold beer of your choice, it's a damn fine meal. Us Lutherans can only add this to the meal. Food news? Well there is this little tidbit. Regarding tipping restaurant workers. For years, the restaurant industry has thrown legal challenge after legal challenge at a Labor Department regulation that bars kitchen workers from sharing in tips. The fight stretches all the way back to 2010, when the agency responded to a court ruling that allowed an Oregon restaurant to give cooks and dishwashers pooled tips by dashing out a federal law that prohibited the practice nationwide. Suffice it to say trade groups like the National Restaurant Association were displeased with the move, which was essentially a rogue act without congressional approval. But in September, the industry lost its final lower-court appeal, leaving the group with one option: Go harass the Supreme Court. Since we've covered the "fish fry" might as well see what Uncle Sam has going on. The gubmint has put out their latest advice. The Food and Drug Administration issued its “final advice” on fish and shellfish this week, warning against eating some species and encouraging Americans to eat three servings a week of others. The federal agency gave particular attention to pregnant and breastfeeding women, and in less than 24 hours the Center for Science in the Public Interest said the FDA’s advice is bad medicine. The FDA reaffirmed its 2014 advice with this week’s final advice and recommends adults, including pregnant and breastfeeding women, should eat 4-ounce servings of “low-mercury” fish and/or shellfish at least two or three times per week. “However, all fish contain at least traces of mercury, which can be harmful to the brain and nervous system if a person is exposed to too much of it over time,” according to the FDA’s final advice Get well CBD. Oh yum! They have black and white crappie in Louisiana. We call them sac-a-lait or just white perch. I absolutely love this fish. It's my favorite fresh water fish.

Just as a matter of personal preference, I don't like it that some restaurants want to require the wait staff to share their tips with others. Crappie is the best, imo, better even than catfish. I always just use cornmeal, salt and pepper with a little cayenne powder in the mix.

I used to love orange ruffie. I would lightly bread them and do them on the grill. Unfortunately when we lost our Harris Teeter we lost fresh fish. We have a local fish market down in the "bad side of town" but the odor in there is so bad you can hardly walk in so I don't get any fish there.

We used to go to Virginia several times a year to bass fish, but here lately, we've spent more time crappie fishing than anything else. Bring the propane fish fryer along, camp out, the whole thing.

On the restaurant & tipping issue, that sure seems like something a state should be regulating if indeed regulations are required.
I want departments of health to be involved at the local level, inspecting restaurants for cleanliness and safety. There's no way I can tell that as a customer in the front of the house. I know the libertarian way would be to let the market decide but I don't want to go home with norovirus or salmonella or ecoli along with my fish fry. I did not know it was against federal law to tip the cooks. I know for a fact that the cook in the small bar/restaurant that I used to frequent shared tips with the cook.

Mmm, that fish looks great, and the slaw recipe is the kind I like to make. I'm getting away from the mayo slaws and doing more slaws like this and Asian ones.
I don't fish good, so I hit the seafood stores in the our little beachtown instead. Sheepshead is one of the cheaper fresh fish there and it would be good cooked this way. Black drum would be good too. Hard to beat perch though. Posted by: stace at January 22, 2017 04:21 PM (ozZau) 78

Tipping in the casinos is a perennial issue. In the pits (blackjack etc.) all tips are pooled and split among the table employees, based on hours worked. In the poker rooms, dealers keep their own tokes. Cocktail waitresses/waiters give a portion of their tips to the bartenders. And in the restaurants, the waitstaff keeps all they earn.

Technical questions for the Food Thread Horde:
I started baking bacon to minimize the effort required to fry it properly. This made it very easy to pour off the bacon grease into a container for later use. I found that baking works pretty well for sausage patties as well, so the question is is the grease you get from sausage as universally reusable as pure bacon grease? MisHum, Mrs. Mis's grandma's cole slaw recipe is similar to mine, except I don't use nearly that much sugar (must be a Lutheran vs. Catholic thing) and I don't cook my dressing, just mix it all together and then pour over the veggies, which in my case also include chopped bell peppers.

ERned from Alton Brown for cole slaw. Put the shredded cabbage, carrots, and onion in a large colander. Park the colander in a large bowl and liberally coat with kosher salt. MH, Thanks for this food thread. I happen to know that the finest thing to ever come from Wisconsin is Mrs. JTB. However, the state has shown me just how wonderful fresh water fish can be. I am speaking mostly of perch but it also includes pickled pike fillets (I was shocked but they were delicious). The Friday fish fries are reason enough to have settled the state.

I really like a cole slaw I got from Ronni Lundi's cookbook. Very simple dressing (mayo plus small amounts of half-and-half, salt, sugar, and pepper), and just cabbage. But the real secret is that you shave the cap age into super-thin slivers. Somehow this seems to take away the bitter edge of the cabbage, and it's a pleasure to eat. But the thin shaving is a pain, so I don't make it much. You want a super-sharp, super-thin knife (or, even better, a Chinese cleaver like that).

That is an odd ruling for Oregon, and might be the reason for it.
In Oregon the waitstaff is required to be paid minimum wage, and any gratuity above that is not counted as contributing against the wages. Some restaurants pocketed the tips and others, especially if you put it on your credit card, will deduct the merchant fee against the tip, not the bill for the meal. In the past, the decision was that it didn't matter since the tip wasn't counted against the wage of the worker. The only forum for that would be to bring it up with the USDoL and dealing with required tips for banquet type bills, BOLI (Oregon's Labor division) did not have a legal standing. Granted, that may have changed in the last 5 or so years. When I worked as a busboy the dishwasher and busboys would get a precentage of the tips because we were the ones that made sure the glasses and spoons were clean and made sure the small stuff got done. Up around MisHum's neck of the woods I know some guys who run lines across the Wolf river for Mississippi Catfish. They keep them in a minnow tank to clean them out and then bleed them before cleaning them. Bright white, firm, non-greasy meat that I might take over almost anything else if I had the choice. Smoked or fried, that is some good eating.

There's a place in a slightly shady part of town here that does some pretty awesome fish. Hole-in-the-wall shacks with no seating that do amazing take-out isn't uncommon anywhere, and places that do fried fish isn't uncommon in Michigan. What's unusual is that it isn't panfish or walleye or smelt, it's seeing stunningly fresh grouper and swordfish and other saltwater stuff out here. They must have a really good supplier.

I should add a thanks to Mrs. JTB and the state of Wisconsin for introducing me to the glories of walleye fillets properly prepared. Growing up on the east coast, I considered cod to be the best of the white flesh fish. Walleye is better. However, I'm not aware of a fresh water fish that matches freshly caught mackerel for an oily fish.
We have two dishwashers in our house. I'm one and the Mrs. is the other. She does most of the cooking these days (thank goodness) but I handle breakfast. Food bit. I bought a proper meat thermometer with the probe that stays in the steak or roast while its on the grill or in the oven and tried it last Sunday on a deer loin steak for supper. Having the temperature gave me confidence to leave the steak rare instead of overcooking it because the color looked too red. This is going to be a great tool for me. I also used the CBD, Garret et al tip to sear the steak and then put it in a low oven (I used 200) to finish up.

I just got done making my 2nd batch of kimchi. I'm now using a 5L German crock. Last batch was with 2 Napa cabbages and one red cabbage. I add in onions, a lot of mustard greens with fish sauce and heavy on the garlic.
It really is delicious. The smell has been a problem. My wife had a get together yesterday and I had to agree not open any kimchi that day. I've got a small kitchen downstairs and have agreed to eat it down there. I fermented the last batch for 8 days. I had to extend the time on this one as it was at 65 degree environment. I need your help, horde. We bought an entire processed deer over the holidays from a friend. The ground meat is good and we have had excellent cheeseburgers and spaghetti sauce. But the roasts are baffling me. I did one as a sauerbraten (long, slow braise) and it was not tender AT ALL (very chewy). The steaks I cook very hot and quick (they are fairly small and thin) and they are OK but not great (I guess suffering from the lack of internal fat).

328. I've cooked deer round steak in pressure cooker which comes out like a roast and is tender enough.
The other option is crockpot with some kind of acidic broth (tomato, or cola with red wine vinegar works on the tougher buffalo roast and stew meat I've cooked so far). You might pound the steaks and do a chicken fried steak, or just fry them in bacon grease, possibly sear and then rest them in the low oven to come to temp if they are not so thin the quick sear cooks them through. The thing with cooking is that you have to take the time and some people just don't have the time, or know that they have it.
I make a mess of beans once a week, I refry them. Making them from dried beans needs one or two days of soaking, and then cooking them for 30 minutes in a pressure cooker with a ham-hock or with bone broth, or if you are being cheap, a ham bone, with 1/8 cup of vinegar. Cook up rice at the same time, they go well together You can take the 2-3 hours to slow cook a pot roast in the oven and have veggies and left over pot roast for a good section of the week. And of course there are things made out of left overs too. Popping the cover off of a microwaveable meal and pulling down a box with a mix is faster, and if all you have is 30 minutes to eat, you trade money for time and convenience. I know people with relatives in Southern California, and they all are scrambling for time - and who wouldn't there? Two to four hour commutes, taxes crimping down on what you earn and the drive to live up to your economic "level" like your neighbors and co-workers means two jobs in a family, child care and running everyone around. Put about a 1/4 inch of water in it. Dump a bag of baby carrots into it. (I rinse them off first but you don't have to.) Scrub or peel 2-3 pounds of potatoes or yams,* cut 'em into chunks, and spread over top of the carrots. Put chicken or pork on top of that. Season with salt, pepper and paprika. (I mix these in a 2:2:1 ratio into one shaker for convenience.) Put it in the oven and find something to do for an hour. Take it out an hour later, wait a few minutes and stick a thermometer in the meat just to be safe. Depending how much meat you buy and whether it was on sale, your total cost could be anywhere from $5-10 for a wholesome, home-cooked "meat-and-potatoes" meal for five people. YMMV. Total prep time is at most 20 minutes. Clean-up time is about 15 minutes. (* - Whenever I go the yam route, I like to drizzle some molasses onto that layer.) Yes, you have to bleed the big catfish. We caught some very large blue cats on trot lines this summer using live perch as bait. One was 42 lbs. The first really big one we had on the line got loose before we could land it. We didn't have a net and were trying to just flip it into the boat. My boy learned a lot of new vocabulary. 328 I need your help, horde. We bought an entire processed deer over the holidays from a friend. The ground meat is good and we have had excellent cheeseburgers and spaghetti sauce. But the roasts are baffling me. I did one as a sauerbraten (long, slow braise) and it was not tender AT ALL (very chewy). The steaks I cook very hot and quick (they are fairly small and thin) and they are OK but not great (I guess suffering from the lack of internal fat).
How can I cook these roasts to get them tender? Is it possible? I made waffles this morning. I pulled out the Better Homes Cookbook and actually followed the recipe, and I used the old chrome GE waffle maker I bought at a thrift shop years ago.
Apparently the secret is to separate the whites from the eggs and whip them into soft peaks before adding them last to the batter. *sigh* My aunt used to make waffles on a Sunday morning and would invite family over I used to make an old girlfriend waffles too, because I liked cooking for her and the only breakfast she could make was "buckshot scrambled eggs" that were greyish and were tiny clumps of hard egg curds. The food safety classes and food safety inspections weren't a joke. My boss was a witch on wheels, but we knew the food was prepared correctly and the place and people were clean. That was twenty five years ago. Recently I went to a fast food restaurant. I had a straggly blue-haired he/she with a cow ring in her nose and tats up her arm taking my order. If one is going to have fried fish, one needs homemade tartar sauce (made a day ahead of time).
I made a batch recently. The ingredients are below, but the proportions are up to you. I knew the basic ingredients, but looked on line for recipes to see what ingredients I missed/might add if they sounded interesting. The two ingredients that I added that made sense were the Worchestershire and the Tabasco. But I never thought of adding non-pareil capers or dried tarragon. The batch I created from the listed ingredients was absolutely delicious. The nice thing about homemade tartar sauce is you can made small batches as opposed to having a store-bought jar hanging around in the fridge until it goes bad. On top of that, you really can't use bottled tartar sauce for anything else, but mayo has plenty of other uses. The dried tarragon made the tartar sauce interesting. A lot of "fish" mounted on walls are entirely-artificial reproductions, from photos and measured dimensions. You can have your fish and eat it too. Actual taxidermied fish, I dunno. For the cabbage-loving Misanthropic Humanitarian: what the Swedes call "cabbage pudding" - it's a shallow, layered cabbage meatloaf. This is the typical Swedish "cuisine" that I ate during the near decade I lived there. Cheap, simple fare.
2+ lbs cabbage, chopped butter 1 1/4 c beef bullion/stock 1/8+ tsp plus 1/2 tsp black pepper 1/2 tsp plus 1 1/2 tsp salt 1/4 tsp allspice 1 bay leaf 1 lb ground beef or pork/beef blend 2 medium potatoes, boiled and peeled. 1 1/4 c milk Brown the cabbage in butter, then add bullion, bay leaf, 1/8 tsp pepper and 1/2 tsp salt. Simmer covered for 10-15 minutes. Mix the ground meat with1 1/2 tsp salt, 1/2 tsp black pepper and 1/4 tsp allspice, and mash in the boiled potatoes. Add the milk gradually until the mixture is blended. Spread half of the cabbage in a shallow casserole dish. Spoon the meat mixture over and spread carefully to cover the cabbage. Then spread the rest of the cabbage over the top. Spoon a little of the remaining cabbage bullion over the top. Bake at 350F for 40-50 minutes, spooning a little more bullion over the top occasionally. Serve with boiled potatoes and lingonberry dressing (whole cranberry dressing is a good substitute). My understanding is that if you went back into the kitchen area at most places you would never eat there again.
--- here in LA, i go into the restrooms first, if i've never been there before: if there is a trashcan with used toilet paper in it, i leave immediate. that means the Mexican help doesn't know enough to flush the paper, and management won't teach/force them. it also means they likely aren't following the pointless gringo food handling rules either. Really late to the thread, but here is kind of the skinny on tips. Wait staff are generally paid less than minimum wage so tips are supposed to bring that total up. Back in the 70's, some Dem congress critters decided that the government wasn't getting their cut, so they brought in some wait staff from some really high end restaurants in DC to testify. Some of these pukes were making several hundred a week in tips so the Dems decided that they wanted their cut and tips became taxable. Problem was, is that most wait staff across the rest of the country were not making those kind of tips, but the congress critters believed they were.
But there was a way around it that I used as a bartender. I only declared tips on credit card receipts. I never said anything about my cash tips. Old Blue, when I worked in a restaurant in the late 80s, waitstaff were taxed on a tip amount calculated on a percentage of the food you served.

Re. Mexican and other Third World crappers... the pipe system and water isn't strong enough to flush paper and waste just the waste so there are trash cans to take the soiled toilet paper. And, yes, they're stupid to not realize that they're in a country where the plumbing works better and they can do the more-hygienic thing and flush it all. (Even if you have to flush twice for Green low-flow toilets!)

Those low-flow toilets suck. Friend built a house after those were required in new builds. He had the toilets removed from the old house installed in the new build and put the low flow in the house he sold. There is usually around that stuff.

Saute the onions, peppers, celery and garlic in remaining fat (add more if needed). Add the parsley, bay leaves plus salt and pepper. Add the tomato paste De-glaze pot with red wine. Add stock, cover and cook for an hour or so, reducing stock. Taste and adjust seasonings. (I like a bit of Worcestershire as well) Add meat and cook for another hour, add in liquid if necessary. Sometimes I fix "bachelor meals" like from my college days for my husband. He seems to like them okay.
One style is to brown ground beef and add a bunch of cut-up vegetables like onions, peppers, celery, mushrooms, whatever I have on hand that seems like I could sauté it.
