5 Bacon-Burboun Dressing.

2-3 lbs of bacon
2 loaves of artisane bread (two differnt kinds)
1 onion, chopped
1 bulb worth of garlic, diced
2 shallot, diced
1 fistfull of celerey, chopped
1 fistfull of sage, chiffonaded
1/2 handful of parsley
2 eggs
1/2 cup of roasted black walnuts
1/2 stick of butter
2 jiggers of bourbon
Celery salt & pepper to taste

Chop the bacon up into little bits and cook in a cast iron pan on low until most of the fat has been rendered. Add the onion, garlic, celery, and shallot. Turn up heat and cook until onion becomes translucent. Add celergy and sage and cook until well integrated. Add this to a bowl of the artisan bread torn up. Add eggs (beaten), bourbon, roasted black walnuts, and enough stock to moiten without turning it into mush. Once mixed, add back to cast iron pan that has hat its sides butter. Add the rest of the butter on top and cover with foil. Cook in oven at 450 for about 20-30 minutes, depending on how your oven cooks.

16 Grits, duh. With plenty of cheese and cayenne.

Cranberry Relish
1 lb fresh cranberries
2 small red delicious apples
1 lg can crushed pineapple
1 cup chopped pecans
1 cup sugar
2 small boxes cranberry or strawberry or raspberry Jello
2 cups boiling water

Grind the cranberries and apples. Mix with pineapple and pecans. In a separate bowl, mix sugar and Jello with the boiling water until dissolved. Stir the liquid into the fruit mixture.

This recipe makes a beautiful mold - spray the mold with Pam first so it comes out easier. You can also substitute Splenda for sugar, and use sugar free Jello.

Somebody wanted a recipe for Scalloped Potatoes. This is the one I use:

2 lbs potatoes
3 tbsp butter
3 tbsp flour
1 tsp salt
1/4 tsp pepper
2 1/2 cups milk
1/4 cup chopped onion
1 tbsp butter

Peel and slice the potatoes as thin as you can. Heat 3 tbsp butter in saucepan until melted. Add flour, salt and pepper, stirring to mix. Cook over low heat until bubbly and smooth. Stir in milk. Heat to boiling, stirring constantly. Boil and stir for another minute.

Arrange spuds in a greased 2-quart casserole in 3 layers, topping each of the first two layers with half of the onion and 1/3 of the white sauce. Top with remaining spuds and sauce. Dot with butter (cut the tablespoon of butter into quarters and drop each one in a different quadrant).

Cover and cook in 325 F oven for 40 minutes. Uncover and cook another 60-70 minutes. Let stand 5-10 minutes before serving.

Yes. It takes 2 hours from start to finish.

Pour off into a small cup (sake cups are great) and dip bread into. (I don't like using cannabis as an ingredient in a meal because I prefer to eat *after* I get stoned since I will anyway.)

Or the slicer attachment for the food processor. That's how I do mine. 4 lbs of potatoes in about 1.5 minutes. All sliced the same size.

I may have mentioned that my mom was in the running for The World's Worst Cook. I grew up eating lumpy oatmeal that wasn't uniformly cooked -- and, sometimes, when no-one else is around, cook it that way to remind myself of "home-cookin'."

Hrothgar's Down South Stuffing based on an old Good Housekeeping Cookbook
(AoSHQ version)

#189; cup butter
#190; cup minced onion
#189; minced green pepper
#189; cup minced celery
16 oz of chicken stock (just not Campbell's or related companies)
1 package of sage stuffing mix (Stovetop)
1 package of cornbread stuffing mix (Stovetop)
#189; lb fresh pork sausage (mild)
#188; tsp salt
1/8 tsp pepper
#189; tsp poultry seasoning
2 eggs beaten
3/4 cup chopped pecans

Saut#233; onion, pepper, celery in butter until tender
Sprinkle #189; chicken stock over combined stuffing
Add saut#233;d vegetables to stuffing
Saut#233; sausage until browned then chop it into small pieces
To stuffing mixture add salt, pepper, poultry seasoning, eggs, pecans, then sausages and drippings and toss until mixed.

Refrigerate; then bake uncovered with turkey at 325 #186;F for last 45 minutes.

If you can get them, add turkey drippings, and perhaps toss in half a cup of red wine

94 1) You can cook hotdogs in the microwave in a container with just enough water to cover the dogs. It's basically boiling them.

2) Grits with a boiled egg on top. Cheesy grits are also good with the right cheese. I have to have special oatmeal (but it's okay I guess) and Cream of Wheat and MaltOMeal are both literally poison to me, so there's *that*.

3) DOH I forgot to get some ingredients, will have to wait til Friday 'cause I will be in hospital tomorrow. Making Brownie and Cheesecake Swirl Pie.

Hrothgar's Down South Stuffing based on an old Good Housekeeping Cookbook
(AoSHQ version)

half cup butter
three quarter cup minced onion
half minced green pepper
half cup minced celery
16 oz of chicken stock (just not Campbell's or related companies)
1 package of sage stuffing mix (Stovetop)
1 package of cornbread stuffing mix (Stovetop)
half lb fresh pork sausage
pinch tsp salt
eighth tsp pepper
half tsp poultry seasoning
2 eggs beaten
three quarter cup chopped pecans

Saute onion, pepper, celery in butter until tender
Sprinkle half chicken stock over combined stuffing
Add sauted vegetables to stuffing
Saute sausage until browned then chop it into small pieces
To stuffing mixture add salt, pepper, poultry seasoning, eggs, pecans, then sausages and drippings and toss until mixed.

Refrigerate; then bake uncovered with turkey at 325 deg F for last 45 minutes.

If you can get them add turkey drippings, and perhaps toss in half a cup of red wine

1. Preheat oven to 350F.
2. Remove film from dessert. Cut slit in film over mixed vegetables and potatoes.
3. Place tray on baking sheet on middle oven rack. Cook 40 to 45 minutes.
4. Carefully remove baking sheet with tray from oven; let stand on baking sheet 1 to 2 minutes. Stir potatoes.

LOVE pan-roasted snouts, but they take a while for proper browning. Recently started slicing them in the food processor (this goes REALLY fast), the toss with EVOO, salt, pepper and garlic powder, and THEN sautéing.

121 Grits??...When I was about 20...I lived around the corner from Stubbs BBQ before it was famous. In the early morning Mr Stubblefield would be getting things ready for the day and I would go in..poor and hungry with a long walk to work...he would cook me breakfast...Eggs Bacon Biscuits Gravy and Grits....they were a little sour from the day before and he would put them on the grill with about a 1/4 lb of lard and fry the crap out of them...they were fantastic....all for 25 cents...

The other drugs I'm on are stripping minerals from my body faster than 3000mg Potassium and 1500mg Magnesium daily can put it back in.

I think I figured out the villain this morning, but it will take a while to sort it out (of my bloodstream), meanwhile, I have to get the magnesium back up or my heart will fail shortly. Again.

Oatmeal's pre-hockey food (morning times), bland and filling. Instant is fine. Mac and cheese best for night games.

No cooking this year. Well, a very simple sweet potato/banana/pecan/peeecanh/etc. baked thing, which the SIL normally does. Oven died recently, so idea of reprising the killer sweet potato pie made last year was kaput.

About to see if the slow-cooker veggie chili is any good, probably needs seasoning adjustment. Over-filled the damn thing, too, right up to the brim/ledge for the lid. Many many excellent slow-cooker recipes to come, now that temps have dropped enough (cool, no real cold like all those exotic places some y'all live).

Get one. Seriously. I have a Cuisinart 11 cup. Comes with a regular blade, dough blade, slicing disc (use for potatoes) and a shredding disc (use for carrots and cheese). I've made pizza dough with the dough blade, shredded all sorts of stuff with the shredding blade, sliced, etc. Also make hummus in it all the time. Had it for about six years now and it is a workhorse.

Wonderful and I love it. I think you can get a 9 cup version for under $100 these days.

It's actually a much higher percentage in some case, like, for example, mine.

Seriously, on my Dad's side of the family we're walking side effects.

Besides, this is my speech, about how the human body makes the Milky Way Galaxy look like a tinkertoy and they throw piles of solar systems at it to "cure" it.

Their last fix was catastrophic, if I hadn't had a blood draw yesterday there would be a good chance of me dying within a week.

And that was as a result of them trying to fix it (as it turns out with a terrible tool for the job).

We have made some amazing strides but in other areas we're just banging the same rocks together.

Chopping, probably not. It will shred, it will slice. All of the above listed veg. But it will more or less puree before it chops. So, you shred, slice or puree. I use it with onion and garlic to make a paste I fry to make an Indonesian dish.


Chopping is best done with a knife.

But oatmeal rules as you can make it sweet or eat it like grits, with salt, pepper and butter (actually, I've been using a recipe I found in the WSJ: Korean oatmeal with an an egg and Sriracha sauce and salt and pepper mixed in. Sounds weird but it's good. The original recipe also includes tofu, which I don't use, but believe me, you eat oatmeal, egg and tofu in the morning and you will not need to eat again until dinner)

And you can make tasty cookies out of oatmeal.

Thanks for asking, she was judged to not be in good enough shape for the surgery this AM, but is recovering and the new schedule is for Friday afternoon (thanks to Thanksgiving). She's a highly likely candidate for a pacemaker in the very near future, but things look a little better than they did last night. I remember from my childhood my mom letting me have some of those fat pieces when she made ham for thanksgiving/Christmas and they were the best part. But now when I bake ham myself the fat parts are chewy and rubbery.

Do not mock the true Dickensian mincemeat.

Brisket, braised until it falls apart, a little suet (I use the fat cap from the brisket), raisins, currants, chopped orange and lemon peel, sugar, cinnamon, nutmeg, allspice, cloves, and chopped apples/pears. Put it in canning jars, cover completely in brandy/whisky/whatever is in your liquor cabinet, and let sit on the counter for weeks. Drain, heat in a skillet to drive off some of the spirits, cut with about 4 cups more chopped apples, and put in a pie. Bake. Achieve foodgasm.

In gratitude to FS for helping me chop up things I am making a mulled wine in the crockpot. I have never tried this before:

1/2 tsp whole cloves
1/4 tsp allspice
1/2 gallon burgundy wine (we're actually having this)
2-3 cinnamon sticks
1 tsp ground nutmeg
orange slices

1. Place cloves and allspice in cheesecloth bag or tea ball..

2. Combine spices and wine, 2 cinnamon sticks and nutmeg in slow cooker

3. Cook on high 1 hour, Reduce heat and simmer 2-3 hours

4. Garnish individual servings with orange slices or cinnamon sticks

It needs to be a real ham, not one of those canned jobs.

Before you roast it, put it fat side up in your pan, then score the fat/meat and slather it with some sort of sweet glaze. I prefer a mixture of honey and mustard. Stuffing whole cloves in at the vertices of the score marks is optional.

Not with the extras it comes with. There may be a dicing disc out there, but all it comes with are two blades (puree/chop and dough), and a slicing disc and a shredding disc.


I dice by hand with a knife if need be.

What fried rice recipe do you have that is a lot of work? Fried rice should be easy. Mince garlic/ginger, add some sliced protein, add veggies, add rice, add egg, add soy, add bean sprouts if wanted and eat.

So many ingredients. So much dicing. It takes me about an hour to prepare the ingredients, then I need to take a break before I cook them.

It's not difficult, but it's a lot of work, and a lot of cleanup afterwards. It's hard for me to overcome the inertia and get started. It's much easier to just heat up a can of spaghetti and call it a night.

I got the recipe from RickZ at another site a few years ago. I should get after him to repost it here. It's good eatin'.

Have eaten green grapes, pork sausage, ham, raw oysters, a boiled egg, both pecan and sweet potato pie, and fresh banana peppers. Drank lots of water, 2 cups of chicory coffee (one with Kahlua), one Pabst blue Ribbon, one big Stoli bloody mary, buttermilk and eggnog. I'm blessed and satisfied.

378 I just ran behind my mother and cleaned all day. Chopped stuff when she told me to. It's a good system. I made a harissa pork tenderloin for dinner. I couldn't find any harissa at the store. So, I just used red curry paste instead. It turned out great. The side was roasted butternut squash, apples, and onions. I think I'll use the leftover veggies for omelets in the morning.

I never had carrot cake made from scratch. Any cake I've ever had made from scratch was wonderful. Storebought red velvet cakes are but a shadow of my mom's red velvet cake.

Cake in general is just awesome. It's funny, there is a picture of me celebrating my first birthday, with the cake in front of me. My hair is sticking up, I have chocolate on my face and a look of crazed delight on my face. I had discovered cake and how good life could be (or maybe it was the chocolate).

If it's an enteric coated tablet, you might as well not bother, it can be 10% or less. Generally it seems to be 50-70% (gluconate seems highest) but there are skin absorption methods if your absorption is low, for example if you have diarrhea (often do because of meds) or Celiac disease (yep) or you're on treatment for GERD or stomach problems (ditto).

The research is not *great* and often seems contradictory because of the methodology.

I switched back to the powder form of oxide, citrate and malate instead of the oxide tablets that were as useful as tits on an asteroid. You know, the prescribed ones.

Magnesium *tends* to have absorption limited by the capacity of the body to use it (as in huge doses have low absorption).

The skin absorption thing is mostly hippy-dippy, but it looks like it might be *awful* useful in my current condition. That seems to be chlorate more often than anything else.

When I was right out of college, finally out from under the horrific cooking of my folks and on my own, I started experimenting with marinades. I'd buy a bunch of steaks and mix various liquids, herbs, and spices together and let 'em soak in ziploc baggies in the fridge. The only problem was that I didn't keep good notes, so when I came out with a steak cooked medium that was actually purple all the way through, I still don't know exactly how I did it. (I suspect wine and papain).




It was an interesting visual effect, and tasty as well.

464 Oatmeal and grits are a tie in my house, but only if the oats are steel cut. Once you've had steel-cut oatmeal, rolled oats are for cookies and animal feed. They still get enough brown sugar and/or maple syrup and cinnamon to take out the health benefits, though.

The grits are cooked from coarse corn meal. Simmer about 20 to 25 minutes. Add some salt and pepper up front, a tablespoon of butter, and a couple tablespoons of half & half. Then add enough water to keep them loose while they cook, and let the grits tighten to taste the last 5 minutes or so. Salt and pepper to taste and serve with crispy thick sliced bacon.

WRT cream of wheat, I grew up in a coco-wheat house, so cream of wheat didn't come near.

I don't have any Thanksgiving recipes because I have never hosted Thanksgiving. I normally bring wine or fruit salad but that's not interesting.

A Thanksgiving that stands out in my mind: once in DC, I wad celebrating an "orphan's Thanksgiving" with a bunch of other people from other parts of the country who did not have the time, the money or the inclination to go back home to wherever their families lived.

The turkey was cooked and resting and we were getting ready to file into the dining room when we heard screaming from the kitchen. The hostess had a big Rhodesian Ridgeback dog named Roxie. Roxie had dragged the turkey off the table and was devouring it. It was something to see - entire slabs of meat disappeared down that dog's throat without even being chewed.

The mashed potatoes and dressing and pie were good.

I don't know whether that's the case or not, but I saw a TV show about him a few years ago. Apparently he took some business courses in college.

Unlike many musicians of his era, he was a savvy negotiator and did not get ripped off by unscrupulous managers and record companies.

"American Pie" has been berry, berry good to him. He still gets royalties every time it's played on the radio. Which is a LOT.

IMO, buy a mandoline. Don't spend a lot of money. I have an old (15 years easy) plastic one made by some Swedish company. Workhorse. Great for potatoes and other things. Just remember to use the guide toward the end. Many cuts during those 15+ years.

586 Well, I tried making a sweet potato pie, but I didn't have the right spices. And I didn't have evaporated milk, so I used the sweetened condensed milk that I did have.

Out of the eight variations I found on the 'net, only one recipe called for sweetened condensed milk and since that was what I had, I used that variation. It also called for butter and 3 eggs.

So it came out kinda like a custard with sweet potato bits which is ok because the important thing is it has sugar in it. And it has nourishment which is also a good thing.

I call it 'good enough'.

603 Shoo fly pie is a fantastic desert. This is my recipe:

1C flour
3/4 C brown sugar
1 heaping Tbsp shortening
****
1 C molasses
1 Tsp baking soda
3/4 C boiling water
1 beaten egg

cut together flour, sugar and shortening together to make crumbs.
Divide this in half and put one half of the crumbs in a mixing bowl and mix in the molasses.

Then, bring the 3/4 C of water to a boil and stir the baking soda into the boiling water. When it stops foaming, dump into the molasses mixture and stir in.

Add the egg to the molasses mixture, stir enough to mix (make sure the mixture is not too hot to cook the egg on contact)

pour into a pie tin and then cover with the remaining sugar/flour/shortening crumbs as a "pebble dash crust".

Bake at 10 minutes at 375F and then lower the temperature to 350F and bake another 30 minutes.

My Wassail (mulles ale) recipe.

In a crock-pot heat up five bottles of brown ale, half a bottle of madiera, a sliced orange, a spicepouch/teaball of: cloves, alspice, cinnimun, and cristalized ginger.

In an over, core four apples/pears and fill with brown sugar and honey, and then bake at 400 deg F oven for half an hour in the sixth bottle of brown ale.

Combine and add biters to taste.

Weft, I'm like you, agonizing over getting a food processor or not. At this point the only thing I've identified where that tool would bea game-changer is hummus, which I love and is easy to make - depending on your tools. Even with a seemingly large kitchen, I'm on a jihad to minimize clutter and make storage more efficient, so every addition gets examined as if it were an 80-lb optional feature being added to the LEM in 1968, with all the engineers scrutinizing it ruthlessly.

Ramen - my wife uses the regular packaged ramen (forget the brand), but by the time she's added the roast marinated pork slices, sprouts,chopped scallions from our yard, and a few secret seasonings, it is damn close to the best stuff I've had with her in Japan (she's Japanese). Amazing.

647 Best fresh cranberry sauce:

1 12 oz bag of cranberries
1 orange
Zest from orange
1/2 cup port
1 teaspoon cinnamon
2 cups sugar (add more if you want very sweet)
1 tablespoon cornstarch

In a sauce pan, combine cranberries, juice from orange, orange zest, port, cinnamon and sugar. Bring to a boil, reduce heat to simmer. In a separate cup, mix cornstarch with about 2 tablespoons of water and mix to create a slurry. Add slurry to sauce while whisking. Continue stirring until cranberries are soft (they will start "popping") and mixture starts to gel.
Remove from heat.
This is best if done the day before so that you can refrigerate over night.
I promise you everyone will absolutely LOVE this cranberry sauce and you will be requested to make it every year.

I'm stringing lights across two portions of my roofline on either side of a gabled area. These are large lights (7 watt, intermediate base) spaced 1 foot apart. On one section, I will have about three too many lights. What do people who know what they're doing do about that? Then it has official apps, what doesn't nowadays, that allows you convenient access to streaming content from certain networks and services. Check Amazon and google for those. Saw one for FoxNews in there.

Finally, there are pirate-ish aps like Kodi:

So, gun-thread interlude.

Finally rented the CZ-75 at my indoor range today to try it out. Nice as I expected. Even the ergonomics/size seemed to work for me, and I have some challenges settling on a grip for semi-autos.

Fired a few rounds from the SP01 version last week at the outdoor range on my duty day. Also very nice. So - some day - CZ will enter the inventory.

We've seen some lights out already, but those were probably dual-purpose Diwali/Xmas lights -- which I happen to think are quite charming, as they show both a reverence for ethnic tradition and a respect for American community. Light 'em for Diwali, leave 'em up dark in between, and light 'em again for Xmas....



If they didn't do Diwali, we would all be poorer for missing 'em; if they lit 'em all the time, we'd be wondering about the weirdos; and if they didn't light them when so many were lit on the streets, they'd be holding themselves dark when so many are lighted.

T-giving memories.

1997, ocean kayaking trip, Abel Tasman Nat. Park, South Island, New Zealand.

We were kayaking, so weight was no problem. So - Marlborough sauvignon blanc - chilled it by standing/half-burying it in the edge of the surf on the beach where we camped. Gas stove heated up the high-end backpacker food (turkey dinner).

Picked up the wine at Cloudy Bay winery, now somewhat iconic for Marlborough sauv blanc, but then just emerging - I recall the tasting room was still under construction.

re: Fire Stick

A bit more. The package contains a USB Stick dongle* and an extension cable. For best reception, you're supposed to use the cable with the Stick.

Can run into a problem depending on the geometry of the ports and cabling on your TV. Works fire on one TV here, but on the other, when installed in the only available free port, the cord drapes over the power cord to the TV and gets interference.

Can probably fix that by moving stuff around or switching cables, but it can be an issue.

-Emmie: With the larger, (C-7 and C-9), bulbs, I'm not familiar with the fuse structure, nor the amperage involved. You run a risk of tripping a breaker, (depending upon the # in the string, # of excuded bulbsand the amperage), if you do that.

In a string of 25? I would not be comfortable removing more than 3 bulbs. At that, I would also tape the open sockets heavily.

My advice: Cannot Recommend.

Okay, okay, I was cutting the price tag off a pair of pants while I had them on, nessessitating a weird twisted position and awkward scissors grip and I still don't know how it happened. We were on our way to a fancy brunch and I kept my hand hidden in my lap with about a mile of bandages, gauze and tape around it and it still bled through.
