Food Thread: Yes, "Food Babe" Is In Fact An Idiot [CBD]

Kraft recently caved to pressure from Vani Hari (The Food Babe) and her army of ignorant sheep. They are removing that intriguing combination of yellow food dyes that create that unmistakable and marvelous color.

For many Americans, the color of Kraft Macaroni & Cheese is the color of childhood. Nothing triggers nostalgia like the sight of a steaming plate of sticky pasta, as unnaturally orange as a nuclear dawn.

Ignoring the cowardice of Kraft, the pressure came primarily from a blogger who has demonstrated time and time again her breathtaking ignorance of the most rudimentary rules of scientific analysis. Not to mention her complete and total ignorance of...uh...all of science and the world around her and, probably, the library. I present this quotation as proof:

A few facts about what airplanes do to your body -

When your body is in the air, at a seriously high altitude, your body under goes some serious pressure. Just think about it -- Airplanes thrive in places we don't. You are traveling in a pressurized cabin, and when your body is pressurized, it gets really compressed!

Compression leads to all sorts of issues. First off your body's digestive organs start to shrink, taxing your ability to digest large quantities of food. Secondly, this compression reduces the ability for your body to normally circulate blood through your blood vessels.

Additionally, the pressurized cabin reduces the humidity by 40% of what humans typically thrive at. The Sahara Desert has more humidity at ~25% than your airplane does at ~10%. Remember your body is made up of 50% water, if the humidity is reduced by 40%, your body becomes very dehydrated, very quickly and usually without you feeling the effects until after you get off the plane. Dehydration causes all sorts of issues from fatigue, headaches, constipation, light headedness and even death in extreme cases.

If you go to this [insert Boston accent] retahd's web site (no link...she doesn't deserve the traffic) you will find a mass of conjecture, unsupported statements, facts based on correlation, and many other basic logical fallacies. I cannot imagine why she is successful other than the fact that she is rather pleasant to look at.

But...there is another hottie who is actively combating this stupidity: The Food Babe Blogger Is Full of Shit is the actual title of a piece written over on Gawker about this clueless, brainless bint. Science Babe refutes everything that Food Babe says, and takes some well-placed shots at her from other angles. Both the article and Science Babe's website are worth a read.

60% of frozen shrimp is contaminated with various bacteria. Why this would be surprising is beyond me. The cultivation of shrimp has exploded all over the world, and most of the facilities are vile, disgusting places. So I guess the pro-tip would be not to eat frozen shrimp from Bangladesh and India and Thailand without cooking it first. And gee what a shock; fresh shrimp from the Atlantic (U.S. and Argentina) was the cleanest.

I am not a huge fan of Jaimie Oliver. He has become the poster child for politicized food and cooking, but he does know how to cook, and some of his combinations are wonderful. This one is a little weird, with mint and bacon in the same dish. But it is a damned fine pasta, and worth the effort.
Shell Pasta With Creamy Smoked Bacon and Peas


Adapted from "Jamie's Food Revolution," by Jamie Oliver.

Sea salt
10 slices smoked bacon or pancetta
1 pound dried mini-shell or other small pasta
2 tablespoons olive oil
1 tablespoon butter
Freshly ground black pepper
2 cups frozen peas
2 tablespoons creme fraiche or heavy cream
2 tablespoons finely chopped fresh mint leaves
Juice of 1 lemon
6 ounces finely grated Parmesan cheese.

1. Bring a large pot of lightly salted to a boil. Meanwhile, cut sliced bacon crosswise into thin slivers, or slice pancetta into julienne. Add pasta to boiling water and cook to taste.

2. While pasta is cooking, place a large skillet over medium heat, and add 2 tablespoons olive oil and the butter. Add bacon or pancetta and a sprinkling of pepper, and fry until golden and crisp. Immediately add frozen peas and stir for a minute or two. Add creme fraiche or heavy cream and chopped mint.

3. Reserve 1 cup of the pasta cooking water, and drain the pasta. Add pasta to the skillet and stir. Add lemon juice, and adjust salt and pepper to taste. Bring to a simmer, then remove from heat. The mixture should be thick; if desired, a splash of the pasta water may be added to the sauce to thin it slightly. Add Parmesan and stir to mix. If desired, serve with a green salad.

I can personally attest to it having made it many times. But don't take my word for it. You should validate it yourself.

And, by the way, instead of mint try adding wine. Not in the pasta, on the side in a glass. They call that "deconstructed" when you serve a meal in different parts. I looked it up.

Yeah, just as upscale hoity toity as the mint version, but with alcohol.

15 When I make my Kraft Mac, I omit the milk and butter. I throw in a can of tuna. Sometimes, I throw in a can of stewed tomatoes,too. You can also chop up a green pepper and onion and let it boil with the pasta.

I preferred to dice up a ham steak and add crushed broccoli florets. If you add extra butter, you can mix in some parmesan.

20 The brits are always eating Shepards and Cottage pies. I finally looked them up. Cottage is beef and Shepards is lamb. They are simply stews put in a baking dish and covered with mashed potatoes. You then reheat it in the oven and let the potatoes brown on top. Certainly looks good and filling. I am a hater of chicken pot pies. How do people eat that shit?

That's utterly ridiculous. We all know that there are cosmic rays whizzing around up there, and that they are a form of ionizing radiation. If you left the windows open, you'd have ions all over the floors, and the drink cart would just slide up and down the aisle. It would be far to easy for people to get at the drink cart without the stewardesses noticing.

You would cook it in the pressure cooker which was scary and like magic. Would run out of the kitchen when she wd take off the little thing a ma bob and let the steam out. Do people still use those? True, but the manipulation of the genome for our own benefit has been going on for a long time. That we have technology that allows us to do it more effectively is an evolutionary (no pun intended) change, not a revolutionary change.

I use the sauce portion of Kraft Mac all the time - becaue Kraft has
confirmed the *sauce* is gluten free (they used to even sell it
separately), and no I'm not a "trendy diet" person, I have Celiac
disease. Now, since they're reformulating it, we have to start all over.

For
people with no noticeable food allergies, changed recipes aren't that
big a deal. I can get *seriously* sick if someone screws up, so I,
unfortunately, have to constantly chase down ignorant company reps who
have no idea what's in their product, and it will probably be months or
more after a major change before things get straightened out.

This
is still not as bad as the pharmaceutical industry, who *genuinely*
have no idea what's in their product and change it regularly without
changing labeling.

I don't want a massive new bureaucracy
regulating food ingredients, I just want it to be legal to punch
everyone who changes ingredients without labeling accurately in the
face. Is that too much to ask?

Luckily Kraft is pretty good about
labeling - but unfortunately they label based on the whole package, so
they won't (obviously) label MAC and cheese as GF.

When you can't
have something that's common, you realize just how often products and
ingredients change. I wasn't aware of that before.

One of the people missing in Nepal is a woman from Santa Monica who has a fair trade art business specializing in Nepal Dogs (dont ask).

Again, it sounds like a rich person who has nothing better to do but look busy and politically correct. Maybe I'm being too judgemental. What do the hanger ons even do in Nepal? Oh G-d, I can't imagine what a mushy tasteless mess uncooked shrimp would be. Here's the secret to perfect, crunchy, safe shrimp from anywhere on the planet:
1. Toss frozen shrimp in pot. Add enough water to cover shrimp
2. Bring to boil. That's it, not a second longer.
3. Strain shrimp. Peel off skins while still warm, that's when it is easiest.
4. Serve warm or refrigerate immediately.

My general rule of thumb for killing any bacteria is -- would my cooking method kill me? I think being placed in a pot of water which was then brought to a boil would do the job.

The crafts are often export import ant refuced or waived tariffs etc. Beating your wife to death is the national sport in Nepal and these shelters are a way out for them. Most are very legit.

I'm admittedly ignorant here, but what are the risks of genetic manipulation? If you have a steak from a genetically modified cow, for example, won't cooking destroy the DNA structure anyway, and then your stomach will digest it. As long as the stuff doesn't contain something toxic, like lead, or a bacteria, or a prion, I don't see how GMO poses any danger.

92 Dinner tonight is a pan of homemade baked mac n cheese (though I do like the boxed stuff too for a quick meal), "fried" chicken (breadcrumbed, browned in pan then baked...I can't make real fried chicken for some reason) and broccoli.


Also, I made this last week and meant to post about it but didn't. Crunchy shrimp and garlic bake. I was in the mood to make something that had a sauce you could dip bread in and what better than garlic butter?

1 lb shrimp, deveined and shelled
1 stick unsalted butter
6 cloves garlic, minced
Juice of one lemon
2 Tbs white wine (can be left out)
1/2 tsp salt
1/4 tsp pepper
1/2 cup panko breadcrumbs
1 Tbsp freshly grated parmesan cheese
2 Tbsp fresh parsley, chopped

Preheat oven to 400F.

Melt the butter on low in a small saucepan, add garlic and cook 20-30 minutes (this will mellow the garlic). Add lemon juice, wine, salt and pepper.

In a small bowl, combine panko, parmesan and parsley. Pour just enough of the butter mixture over the panko/parsley to moisten it.

Place shrimp in single layer in a casserole pan (I used 8x. Pour remaining garlic butter mixture over. Top evenly with panko mixture.

Bake 15-20 minutes, until shrimp has just turned pink. Broil a few minutes to crisp up the top. Eat with warm, crusty bread to dip.

102 Well, there's a risk to manipulating your own genes. Still might be worth it.

It is possible that you might run into an allergy situation by changing a plant gene. That could be bad.

My big problem is not GMO but constantly shifting sourcing for a product. I know it's done to save money, but it makes food an administrative hell for me sometimes.

Maybe someday allergies will be eliminated by manipulating human genes. The FDA would probably never approve it, though.

About two-maybe-three years ago, Nabisco literally cut some corners that angered many people. It was a test-market experiment. Now, both shapes are available - but where I lived, for a while, if you wanted Nabisco saltines, they were round.

There were people in their 80s and 90s complaining, saying they grew up with square saltines, been eating square crackers for 80 to 90 years, and they wanted square saltines.

I felt so bad for these people, having a comfort food from the Great Depression taken away from them.

161 I bought a milk frother today. It takes regular or skim milk and when you push the plunger up and down it forces the milk through a fine mesh to foam it so you can make your low-fat latte. I suppose you could make whipped cream pretty handily with it too.

When I looked at it and realized it was actually a 16 oz french press without a handle. And it was cheaper than the full sized French presses.

There was a whole discussion just on all of the myths/bad advice you will likely get about eating foods rich in anti-oxidants (which would strengthen cells against chemo), organics, herbal supplements that can interfere with medications, etc. And then there was the guy who told my hubby that pot would cure his cancer.Hoo boy!
All of this mystical herbal/organic food nonsense is not even reverting to primitive medicine, since at least some primitive cures have actually been proven to be effective even though at the time they may not have fully understood what was happening chemically. It's just whackadoodle.

I picked up a truck load of food flavors at a processing plant in California. If I could remember the name, everyone would recognize it. Any way it was a load of garlic powder in big cardboard drums; a hundred to 150 pounds or so per drum, just slightly smaller than 55 gallon metal drums. I don't remember if the whole load was garlic. Some people might say that garlic powder isn't food.

Anyway, the load went to a distributor in New Jersey.

I never did get the smell out of the trailer, and eventually it was swapped out with another trailer that was already loaded.

Kraft changed the pasta in the box... it is smaller, looks whiter and cooks faster. AND TASTES LIKE CRAP... because it must be a different mixture on the pasta.

Consequence is that I get a better "kraft dinner" type from the generic ones sold. They have larger, better pasta and the equivalent of the cheese mix.

I stopped buying Kraft Dinner here in Canada because like all the food packaging companies, the dickheads are cutting back on quality and quantity and still selling it at the same or a higher price... more often at a higher price. For a worse product... welcome to the totally screwed up "no inflation" world when inflation is running rampant and the media and the government lie lie lie about it.

Pour the sloppy joe mix over the top of it. (I use turkey meat instead of ground beef.) Bake it for 15 minutes at 375. Then top it with shredded cheese of your choice for five more minutes in the oven. My son is eating a bowl right now. I'm having a hard time not going in the kitchen and grabbing some myself.

All of the good benefits of garlic, and they are legion, is destroyed by processing. Garlic is potent anti-cancer food. Start with fresh cloves, treat it like butter, heat it too hot and it gets bitter, under that temperature it's wonderful.

The Mrs, who goes to a sort of New Age, plus traditional, plus paleo diet, Dr group suggests she eat two cloves per day. That's a lot of garlic. We probably hit half that amount. She's never been healthier -- (her weight? -- actually less then when we married, believe it or not), nor have I.

208 Late to the thread, as usual, but wanted to weigh in on GMO foods. The major concern- among sane people, anyway- is not that genetically modified foods will turn us all into mutants of various stripes.
The biological reason for wanting to move slowly with these foods is that most of them are genetically modified to be 'round-up ready' crops. This means they are herbicide resistant, so farmers can spray weed killer on the crop without harming the plants they want to keep. There's a concern that these herbicide resistant plants might escape into the wild and become super-weeds. It's a valid argument, but unfortunately means that foods like golden rice are tarred with the same brush, with the end result that merely mentioning 'GMO food' is enough to send people into a stratospheric rage.

Heck - I live at the mouth of the Chesapeake Bay & Atlantic Ocean, and when I go to the grocery store, all the fish comes from Thailand or Argentina or wherever. Sometimes I see farm raised catfish from USA.

It helps to know people when I want/need fresh fish, crabs and such. That or hit a real fishmonger.

One of my friends also believed microwave ovens actually emit harmful radiation, and was really surprised when I told her that it heats your food by making it vibrate (essentially) and that it would not hurt me to have my desk across from the microwave. when I was about 19, I was working maintenance at a country club. Woody, my boss (what a character!) used to walk around with a paper towel in his pocket all bunched up.
Four or five times a day, I'd see him pull it out, grab something out of it and chew on it.

Finally, I built up the nerve to ask him "what do you keep chewing on, woody?"
Yep raw garlic cloves. I thought to myself "so that's what that smell is..."
But he was healthy as an ox. And looked 40, but was in his mid sixties.

240 Pisses me off, too, Y-not. I have a picky eater and he eats almost no other kind of mac 'n cheese except Kraft. I have no idea why this is comforting - maybe it's just the right cobination of creamy, cheesy saltiness that appeals to an unrefined palate. This is also what pisses me off about Michelle's school lunch menu overhaul. Most American kids food is very bland/simple - burger, hotdog, chicken nuggets - and then it can be made more complex by adding items, such as condiments or veggies. That makes it easy to appeal to a wide audience that craves all points on the bland--->spicy spectrum. Instead, Michelle wants to limit condiments (leaving bland choice only) or serve mixed foods/stews, like a pad thai, leaving the spicy/complex choice only.

A childhood friend's dad was a hippy type. Everything bought in bulk. All "natural." I remember staying over one time and being unable to eat half of what they served b/c the food had gone moldy or off.

Simplest solution to that is to drink more water. Your body will naturally reach equilibrium by pulling the salt out of your cells and into your bloodstream, then filtering it through your kidneys. People are terrible at replicating flavors, I've noticed. I think most people have big "blind spots" on their tongues.


I'd lay serious money that rather than it being a case of "blind spots", I'd say taste bud genetics are a lot more diverse than just the old "this set can taste this one bitter chemical and this set can't".

For example, let's use the most notorious fruit around: Durian. Some say it smells like sweat socks, some like a sewer, others claim it's like rotting bodies. I tried it and the odor/taste reminded me of a mango that'd passed through the sulfur-cracking unit of an oil refinery. Not bad but watch out for the belching after the fact.

On a different note,

erm the recipe for reals mac n cheese is melted cheddar in a veloute,
essentially a roux with cream, salt and pepper. not gross. kraft is
gross.


Well yeah, but not all of us have the time at lunch to go that kind of distance on our lunch breaks. My wife's braising some quail right now, but it doesn't mean I don't appreciate the quick and dirty instant Kraft as well.

Millsboro is nice, there are some nice places just outside of town, fairly rural. Lewes is closer to the beach but tends to be more crowded. Parts of Georgetown are good too, if you go west of Rt. 113, you get into rural territory. Avoid Laurel and Seaford cities. You can get out into their countryside though. Harrington is also good, but may be a little further out than what you're looking for.


That's basically where we're looking to buy in the future. Somewhere in the area south of Dover, north and east of the MD state line and west of Georgetown.

Lewes is nice, crowded during the summer, but it's a fairly upscale crowd. Some yuppies, some families, so no typical beach town bullshit.

Some of the other small towns are really nice too. Laid back, and within 20 or so minutes of the beach.

Pro tip: DE doesn't have a sales tax or an income tax. They gotta get that sweet taxpayer cash somehow. 55 means 55. My Grandmom got a ticket for 47 in a 45. Had to go to court too. Ended up costing her over $200.

Loin is a bit too lean for crockpot/long cooking. It's more of a roasting cut, as opposed to a Boston Butt or shoulder roast which is great for pulled pork sammies.

I'm in that boat. Don't eat just a whole of take out/fast food though. I buy lots of frozen, cooked stuff and canned items. Grilled chicken, fish sticks, steam-pak vegetables, etc. You can have a decent meal in less than 10 minutes. Drink at least one V8 a day as well.

Hi Glen,

If you can spare a few hours on a Saturday or Sunday, I'd cook something that you can use throughout the week.

Start with something you like.

Do you like pasta, pizza, chicken cacciatore, etc? Then make a big pot of tomato sauce, which you can use throughout the week. For example, do you know what's awesome? A tomato sauce to which you add sautéed onion, garlic, anchovy, and heavy cream. Best stuff ever on pasta.

Or make a pork roast. I like the cheaper, fattier cuts like a blade roast. Cook it in a big heavy pot on the stove or in the oven for several hours with garlic and milk. Then use that meat in other things -- add BBQ for a pulled pork sandwich. Add some "Mexican" seasonings (they even sell packets now) for carnitas. Add some teriyaki sauce and serve with Asian noodles and stir fry veggies (you can even buy a bag of frozen mixed stir fry veggies).

What do you like to eat?

Go to some good restaurants (not expensive, just good) that serve the stuff you like. You'd be surprised how you can train your palate on, say Thai food, and pick up the ability to cook it at home.

532 Chicken breasts are the easiest things to "doctor". All you need there is a pan. G. Foreman grills are pretty damn good, too.

You can make chicken with whatever you have, as far as sauces, dry spices, herbs, etc.

Put it between some bread, let it stand alone w/mixed vegetables, cut it into strips and dip 'em like chicken fingers.

Boil it, fry it, bake it, grill it...

...great way to start practicing "flavors" with a blank canvass.

New here? If so, welcome. You should definitely google any terms you don't understand. I just cooked a breakfast pie that will last all week.

Cook a pound of ground beef or sausage and remove from pan.

Poblano peppers, mushrooms, onions. Chop and cook with oil, maybe five minutes. Add two cans of sliced black olives, and 3 Roma tomatoes, chopped. Put the cooked protein back in the pan. Pour ten scrambled eggs over the whole mess. Cover and cook maybe five minutes.

Toss the pan in the oven on broil for another two minutes to set the top.

Flip the pan upside down onto a cookie sheet, and slice like a pizza.

Nomnomnom. Thirty minutes and breakfast is done for the the week.

Thimerosal is a good disinfectant/preservative. Unfortunately, some people are allergic to it, or become allergic after years of no effect, which was the case for me. Used thimerosal-containing contact lens fluids for years, then one day, my eyes became totally red, like an infection. Took the lenses out, eyes cleared up. Put the lenses in, became red again. Switched to a thimerosal-free storage solution, no further issues.

I need to free myself from take-out food and I don't have a lot of time or energy to cook. Can anyone share books/websites/videos that can get me up on the basics for quick, easy meals?

I bought the "America's Test Kitchen Family Cookbook".

I like it because it assumes no prior knowledge. In the beginning, it explains the different kinds of cookware you'll need, and also has a list of basic ingredients to always have on hand, which are used in a variety of recipes.

The recipes range from simple to sophisticated. One thing I learned is to make the whole recipe; don't resize it for one serving. If you make a recipe that "serves 4", divide up the leftovers and freeze them. Then you can nuke them in the microwave. That way you only have to cook once to have four meals.

My mom use to make pork loin. I think they were cheap cuts of pork that she wd pound the shite out of which was fascinating. We shd pound more meat. Then the egg, seasoning, flour, and fry. Good hot; good cold.
