Better Than NYC Salsa!![]() Cantaloupe outbreak declared over The Centers for Disease Control and Prevention has declared that a Salmonella Newport outbreak traced to cantaloupe has ended. At least 70 people across 25 states were affected by the outbreak, although the actual number is likely much higher since many people don’t seek medical attention or testing specifically for Salmonella when they get sick. The outbreak was traced to cantaloupes imported from Guatemala by Ayco Farms Inc. of Pompano Beach, FL. Maybe outsourcing food production isn't such a good idea? And maybe importing third world savages to do the processing in this country isn't such a good idea either. Making manual labor farm work a career is a terrible idea for most people, but there is absolutely nothing wrong with doing it for a few years to make some money while you figure out what to do. And working in food processing plants could be a lot worse. The paradigm shift in America from sneering at the trades and manual labor has already begun. I'll bet a combination of increased mechanization and the entry of young Americans into farm and food processing labor could solve our agricultural labor issues. I had a nice correspondence with a lurker we will call, "JC." I sent him one of my favorite chicken stew recipes: Chicken Verde Stew with Hominy. And of course he made it better! ![]() The store had a sale on turkey thighs so I went with that. Only later did I realize that the recipe called for skinless, boneless thighs. So I baked them 2/3rds until there was crispy skin. Then I removed the skin and chopped it. I put the thighs in the stew until I could pick the meat off and then served it with sour cream, cilantro and chopped crispy skin. What a good idea! By the way, if you do make the recipe, ignore the silliness about cooking "light." Use as much sour cream and fat and oil as your heart desires! ![]() Here's a fun video from Chuds BBQ for BBQ Duck With Dirty Rice. It's long and involved because he starts with the raw duck. And that's the interesting part. Look how big it is? I think it's a Muscovy duck, which are known for large breasts, but the one he butchered is a monster! And if they survive the deer and squirrel apocalypse, and actually grow into something edible, I will be in garlic heaven! I have seen no evidence of decreasing prices, but maybe the bursting started somewhere else! I think the sweet spot is $40-$60 for excellent and interesting bottles, and bumping that to $100 gets you an incremental improvement in quality, but nothing mind-blowing. More than that and I think you are paying for hype and rarity, which may look good in your liquor cabinet, but doesn't translate to more quality in the bottle. The problem...or the solution...is to buy lots of bourbon, take tasting notes, and eventually arrive at your favorites! It should take forty or fifty years, but it is worth it! Got some chicken wings soaking up some BBQ rub and a couple sweet Italian sausages to grill. Using the 0 - 400F method for the wings. Start the smoker, put the wings on then crank it right up to 400F. Will take about 75 minutes from start to finish.

Went to a Church reception this week. Did not realize that it's not just that this area of the country can't usually cook, but they also don't understand food safety rules. Never did I think I'd be explaining that deviled eggs and chicken salad can't be made and sitting out at 5pm, when folks weren't gonna even start touching the food til 7:15pm. I never eat at these, but I did tell the kids to stick to the shelf-stable and sweet stuff. They did put the stuff in the fridge when I told them, but you know, I wasn't there for the 2 hours of the rest of prep before the reception...and better safe than sorry... When I have a leftover orange like that, I usually slice the pith off and cut the orange in chunks to add to my salad. Delicious and adds a touch of sweetness.

I have stripped salmon roe out of a flopping fish and spread it on a toasted bagel with cream cheese and horfed it down. Same with an omelette. Stuff with roe, spinach and feta. I wouldn't eat wild salmon raw that hasn't been frozen, although I will eat farmed. I think farmed is better raw because it is fattier and has a better mouth feel.

It saves the extra step of cutting off the pith by paring off paper-thin sheets of orange peel, and you can modify the thickness by how much pressure you use. ....Only later did I realize that the recipe called for skinless, boneless thighs. So I baked them 2/3rds until there was crispy skin. Then I removed the skin and chopped it. I put the thighs in the stew until I could pick the meat off and then served it with sour cream, cilantro and chopped crispy skin....
Did something similar making gumbo a while back. Took the skins off 2 lbs of chicken thighs, and sort of melted the skins on low heat to render the fat from them. Added a bit more oil to brown the meat, removed meat, added flour and bacon fat to get the roux going, then stirred in the trinity. I placed a bit of crispy chicken skin on each bowl for presentation. Thighs are super easy to debone, BTW. Much easier than breasts. Richer end product, too... We used to go to a restaurant in South Ga right next to a catfish pond. While you were waiting to get in and be seated they would give you a cup of catfish food to throw over the walkway rail to the thousands of gaping catfish mouths in the pond below.

Here in Kentucky we don't see a lot of "fresh" seafood. There's a catfish pay lake that's stocked several times a week, but I'm not remotely competent in filleting fish. I hear the quality is pretty good and it's literally 2 miles up the road.

Used to be found in every grocery store until it got mysteriously shouldered aside by tilapia (gag). Catfish filets, corn meal, paprika (or Tony Chachere's), salt & pepper. Sauté in butter or bacon fat, maybe 2.5-3 min per side. I could eat that all day. My work once in a while does poke bowls with either ahi sp? or tofu. First time they had it when I was eating there that I got the ahi tuna version. Next time I went to pre-made sammiches and got a tuna fish. I've had sushi and liked it, so I had thought I would like the poke bowl but it was fairly large cubes of raw or nearly raw tuna. I was hungry that day and ate it in spite of finding the texture of the tuna cubes very off-putting, but hard pass on having it again and I'm not going to pay their meal prices for tofu.

New York strips with Monterey seasoning. Sliced spuds layered with onion and butter sprinkled with garlic powder on a bed of bacon, wrapped in foil and baked. Asparagus as our veggie. Dessert is The Pioneer Woman’s blackberry cobbler with vanilla ice cream. Everything cooked inside, potatoes in the oven and steaks in a hot cast iron skillet on the stove since winter has returned for a couple days. It’s snowing in the mountains and the wind is whipping at a brisk pace. Instead of sitting on the patio around the fire pit, we’ll be inside with a fire in the fireplace. Old Fashions will be served made with spiced brown sugar syrup. We’re enjoying our food with company.
