Food Thread: Ice Cream! It's What's For Breakfast!

There is a mom-and-pop ice cream joint in my little town that has been around for 50 years, making the same excellent ice cream for generations of kids and adults fresh from little league games and family barbecues and the movies on a scorching hot day. There is absolutely nothing special about the place...in fact, it's a bit of a dump. I doubt they have repaved their parking lot since they opened, there are no spaces marked, so people just stop there cars wherever there is room. But the floors and counters are immaculate, the teenagers behind the counter are polite and efficient, and the ice cream is delicious. Is it homemade in the shop? Yeah...I have no idea, and I don't much care, because all of the flavors are great, so if it's made in some big commissary kitchen in Newark and trucked in under cover of night? Well, that's okay, because I will go there for their Cheesecake ice cream until I die! And the coffee chip is pretty fabulous too!

As for the graphic up top? Nope, I am a purist, but that sundae looks better than a boring old photograph of a scoop of ice cream in a paper cup!

Those do look tasty, but I did something I have never done in my life! I overdid chicken thighs. It was a combination of a good baseball game and perhaps an overlarge Manhattan, but I lost track of time and brought these in from the grill to discover that they were a bit...chewy on the edges.

Did we eat them all? Why yes...we did! The meat tasted great, it was just a bit of a jaw-muscle workout to eat them. I think they were on the grill for more than 90 minutes, so it is a testament to thigh resiliency that they weren't inedible!

I was in...shudder...Philadelphia last week and stopped for lunch at a newish falafel place in Center City called "Goldies." It's part of a small restaurant chain that has impressed me with the quality of their food, so it was an easy decision. I had been several times before so I knew what I was getting, but I was unprepared for how delicious their French Fries were! Yes, falafel is fried, so somebody in the kitchen knows her way around the fryer, but these fries were perfect. blazing hot, impossibly crispy, golden brown, and tender in the middle!

The restaurant group is owned by an Israeli, so of course, soon after 10/7/2023, the leftist Nazis in Philadelphia protested and tried to shut Goldies down. That's why I went the first time...to show some support. But the damned falafel and hummus and pita are excellent, so I don't need an excuse to go.

Pretty much identical ingredients, except for the source of the mustard seed. The French jar's came from...duh...France, and the American jar's came from Canada. That right there is a tip off that something's not right in the state of Denmark.

The French mustard is simply better tasting. A bit spicier, and the texture was marginally better. But mostly there was an faint, odd flavor to the Canadian made stuff that the spousal unit described as "plasticy."

So everyone I know who is going to France now has a standing order of as many jars as they can bring back!

Do adults eat that crap? We have two little jars of it in our cupboard, for reasons that elude my rapidly failing memory. The jars are small enough that they seem to be some sort of throwaway, or in a snack box from an airline or hotel. But they will probably expire before they are opened.

In fact, do any of you like hazelnuts? I don't. I don't think they have any place in the chocolate world, in particular in an otherwise delicious combination of caramel and dark chocolate, but I seem to be in the minority.

I guess I will eat them if they are in a nut mix, but I will do so under protest.

I used to drink Cognac at every opportunity, but for some reason I simply stopped. And I have no idea why! But I was given a bottle of some very nice Cognac recently and I have been enjoying it. Is it as interesting and varied as Bourbon? No. But it is undeniably delicious and a lovely change on occasion.

I am not particularly squeamish when it comes to food safety, but salad bars and other self-service schemes make me pause. In fact, one of the things I avoid is strangers handling my food, so I am much happier cooking in my own kitchen than eating at a restaurant. Obviously there are many exceptions, because I love good restaurant cooking and will continue to eat out. But the risk is -- to me -- more significant in restaurants where you are at the mercy of the least common denominator...the low-level employee who has the job because he is simply too stupid to do much else besides simple food prep.

The garlic is busily growing, with pretty impressive green shoots that are pushing a foot tall! I even fertilized them! And if they survive the deer and squirrel apocalypse, and actually grow into something edible, I will be in garlic heaven! Rumor has it that the Bourbon Bubble is bursting. I have seen no evidence of decreasing prices, but maybe the bursting started somewhere else! I think the sweet spot is $40-$60 for excellent and interesting bottles, and bumping that to $100 gets you an incremental improvement in quality, but nothing mind-blowing. More than that and I think you are paying for hype and rarity, which may look good in your liquor cabinet, but doesn't translate to more quality in the bottle.

The problem...or the solution...is to buy lots of bourbon, take tasting notes, and eventually arrive at your favorites! It should take forty or fifty years, but it is worth it!

8 In Salina, Kansas, there is a little burger-sandwich-ice cream shop called Bogey's south of downtown. A brick building that looks like it began life as a bar. You order at the counter and one of the staff whisks your food out to you. I had a simple cheeseburger there ($4.99!!!) and a cup of their ice cream. With a cup they offer only vanilla, chocolate, and a combo of those two called "Twist." But in shakes they have twenty or more flavors. I wish I'd tried one! Great stuff.

Same with the Greek gyro joint near my mama's house. Fries are just like that, with a seasoned salt/paprika mix. And delicious felafel, and they make a mini felafel pita, which is just right for me. Big enough that I'm stuffed to finish it, but not so big that I can't finish it.

14 I have a bag of hazelnut flour in the freezer. I only use it for making "nutella" chaffles, which taste wonderful but tend to fall apart. Makes a nice snack when I'm actually watching what I eat, which should be more often.

15 I don't usually drink cognac/brandy being more of a liquer kind of guy, but I do note that cognac makes a quite noticeably better dijon cream sauce than VSOP brandy.

I have a question for Dash My Lace Wigs, if she sees this, or anyone as has know-how about sourdough starter. I left the starter she gave me unfed for long enough that I think it's an ex-starter, if you get my drift. So I'm starting over with some King Arthur Flour I had on hand, adding 50g of flour and 50g of water as instructed by their web site yesterday.

Is the initial starter supposed to have the consistency of Play-Doh?

My kids used to love PB Nutella sandwiches, til I couldn't have it. Then they switched to PB cookie butter. Nutella is about as healthy as cookie butter (maybe a touch better).

Lay's Bacon and Grilled Cheese potato chips. Lay's a somewhat local manufacturer who holds contests of customers to come up with unique flavors, and the contest winners see their entries developed into limited time runs. If the new product develops legs and sells, they put it into their long term product line.

This one has a chance. No artificial flavoring at all. Just bacon and a solid cheese flavor over a processed (unfortunately) potato.

39 Oh, on the Kashi Go PB breakfast experiment - spouse loved it...and I didn't (it's not terrible terrible, but raisin bran is much better - like I'm letting the spouse eat my box this weekend). He loved it so much, he wants to even go for the 12+12 one, and to try the other Kashi Go flavors, so as this experiment goes, I'll keep you updated. 12+12 arrives from Amazon this week, and probably gets tried next week.

47 Eddie's Sweet Shop on Metropolitan Avenue in Queens, the oldest ice cream parlor in NYC (since 1925)...one of the few things I miss about NY. Inside was old as could be, but clean and the workers friendly. And the ice cream was out of this world. Thanks for the reminder!

Breyers ice cream, when it was THE premium ice cream on the east coast, was made in Newark. Their sign was a fixture of the Ironbound skyline..

One summer, when I was a wee 17 year old lifeguard who ate dinner with friends after my 9pm shift (I got the 1-9pm that summer), dinner was Jersey diners and inexpensive choices. So, I ordered snapper soup and strawberry shortcake (perfect amount for that time before swim practice the next morning) almost every night of the week. I tried EVERY diner's version that summer. Back then, I could tell you who used real whipped cream, who used fresh strawberries, who used frozen, who baked that day and who took it out of the fridge a few days old, who did biscuits and who did cake, etc...

That was a nice summer and meal...

Pork Butt Burnt Ends
Prep Time 20 minutes mins
Cook Time 4 hours hrs
Total Time 4 hours hrs 20 minutes
Ingredients
* 10 pound bone-in pork butt
* 1 cup Sweet and Smoky Rub
* 2 cups BBQ sauce
* 3 Tablespoons honey
* 3 Tablespoons brown sugar
* 5 Tablespoons butter cubed
Instructions
* Preheat your electric smoker to 250 degrees Fahrenheit according to manufacturers directions.
Cut pork butt into 1-inch cubes. Put a cup of the pieces into a mixing bowl. Sprinkle rub over the top and coat each side of the pieces with. Put on non-stick disposable aluminum grill liner. You can also set them on your grill grates. Repeat until all pieces have the rub on them.
* Smoke for 2 1/2 to 3 hours or until they have a nice bark on them. Remove from smoker and place in two 13" x 9" aluminum pans.
* Mix together BBQ sauce, honey and brown sugar in mixing bowl. Divide between two pans. Toss to coat pork pieces. Top with cubes of butter in each pan. Cover pans with tinfoil. Place back on smoker for 1 1/2 hours, stirring every half hour, or until internal temperature reaches 190 degrees Fahrenheit. Remove from smoker and serve immediately.

63 Buffalo Trace is my favorite bourbon. When you can find it it is usually a very reasonable price and very tasty. The other bourbons from this distillery are excellent but they are hard to find and much more expensive. I won't say we are hoarders but when we find BT we buy it-in spite of the (several) bottles stored away somewhere in our home.

Hazelnut coffee ruined hazelnuts for me. Used to like to eat them out of the shell, then some food chemist took something that tasted nothing like it and sprayed it on a half-ripe coffee bean. Enough people bought it, and I can't stand to be around them. Ok, in some cases, it's not really about the coffee...

Yeah, NJ neighborhood pools do not feed their guards. That would have been a nice perk. So, it was breakfast after swim practice at 9am, a light lunch right before shift, a home brought snack around 5pm on the 30 minute break and dinner at 10pm...

Sometimes dinner was at midnight if my friends wanted to see a movie 1st...those were some bad movies that summer, too...

My other go-to was going to Denny's and ordering their nachos with all 3 sauces on the side. That was not good food, but by having no sauce on the nachos, you could tell they weren't spit in or sitting hours...

Since I realized I don't have to preserve the legacy of my mother's cooking, I've been going crazy with AI and "pantry recipes." What have you got in the kitchen that you need to use up? AI has some gourmet answer.

You could just spread nutella between the layers of 2 9 inch chocolate cakes...no frosting or other filling needed on the inside - just choco frost the outside...except maybe a sprinkle of some salt on the nutella to really perk it up.

Solid bourbon, and yes, consistently available at a reasonable price. I do keep Wild Turkey 101 on hand as a palate cleanser after a few days on the Trace.

Living in Florida finds me tending toward rum drinks. I like Doorley's and Diplomatico for straight quaffing or pairing with a cigar. Recently found Flor De Cano dark rum ($19.95/1.75L) makes an exceptional pina colada...

Even somehow at Denny's at 1am (that was the post movie dinner spot), I somehow avoided trouble...helps to be there normally on a weekday, I guess...

When Mr. bluebell and I were dating we went into an ice cream shop, and he ordered bubble gum ice cream. The guy behind the counter looked up sharply to see who ordered it, then said he had never seen anyone over the age of 12 order that.

My youngest son worked at ice cream during high school and part of college. Only "old people" ordered rum raisin so if they saw a group of -ahem- seasoned citizens coming up the sidewalk, they'd say here come the rum raisins. And usually they were correct.

For the record I always got the bittersweet chocolate.

I was introduced to Sushi while living in Mountain View, CA. This one place I was taken to had the various rolls all laid out in beautiful patterns on a huge table.

The other place we'd frequent did bento boxes and had a little river setup at the bar to grab whatever they were floating on it.

Having just arrived from WV this was all quite the culture shock.

98 Anyone who has lived in New England knows the Hood brand of dairy products. Been around forever. Their ice cream is ok for a mass produced brand.

One of their head ice cream makers was a Danish immigrant and settled in my old town in MA. He and his family opened their own shop and make the good stuff onsite. It's excellent. I sent RBMS there and he gave it a tumbs up and he's a food guy.

And right across the street is one of the better pizza places I've ever been. A deadly combo.

My daddy was born and bred a Texan.
He used to reminisce about his day off from cowboying on Sunday and sitting on the benches in the shade in the town square while cracking the pecans that grew wild there.
He never mentioned black walnuts and I did not know they grew in Texas.

My mom, a native of New Mexico, made black walnut cake or German Chocolate Cake with black walnuts and a cream cheese frosting.
My brother and I would be sent down to the creek to gather the black walnuts then beat our fingers black and blue while cracking them for her...
Totally worth it.
We used to get dropped off to gather black walnuts along the Sacramento River and could get $1.00 for a gunny sack full at the feed store in town.
$1.00 could buy a lot in those days...A tube of Daisy Golden BBs was 25 cents. A fifty round box of those new-fangled cheap Federal .22 long rifles could be had for a buck. A package of six #8 fish hooks was 49 cents. A gallon of whole milk with three inches of cream floating on top from the local dairy was $1.00
Life was good.

104 My wife, the lovely and accomplished Annalucia, picked up a top sirloin roast at the local supermarket. It was near its sell-by date, so it wasn´t as hideously expensive as beef roasts usually are. We had it the other day, with thyme, rosemary, and garlic rubbed into it. It had been years since I'd had a good roast of beef, and this one was superb!

We picked up a whole lamb from a sheep farmer in western Wisconsin, and I tried boning one of the legs before rolling and roast it. Worked out really well. The bone is in the freezer; later, we'll use it to make lamb and tomato soup. The trick is to split the bone before putting it into the stock, so all that yummy marrow can add its goodness to the soup.

112 Schnorflepuppy, if you've kept Dash's starter in the fridge, you can still revive it. Will take a few days but easier and quicker than starting over. You'll have to discard some but then feed it, leave it out, feed it again in 12 hours (discard first if you need to), etc.

Always save your discard in a jar and the fridge. There are lots of recipes you can find to use it up.

I saw Dubai style LINDT chocolate bars at Walmart now that I'm venturing outside again. Almost $15 Canadian!!! Dang, at Walmart. I was surprised.


Oh, on a late thread earlier this week, I was surprised at how surprised everyone else was that I buy bags of milk.

Maybe it's a Canadian thing. There are 3 plastic bags in another bags giving you 4 Liters. It's cheaper than the cartons. About $7 Can or less.

You plop it in a plastic milk container, cut the corner and pour.

My version of a salad: chopped up iceberg lettuce, green onions, radishes, with -- get this -- dill pickle juice as the dressing and dill pickle slices instead of cucumbers. Mix it up and let it "marinate" int eh fridge for a while, then serve. Cold and salty, and very good. Yeah, you can use romaine as an "extender," but I prefer the iceberg lettuce.

210 112 Schnorflepuppy, if you've kept Dash's starter in the fridge, you can still revive it. Will take a few days but easier and quicker than starting over. You'll have to discard some but then feed it, leave it out, feed it again in 12 hours (discard first if you need to), etc.

Always save your discard in a jar and the fridge. There are lots of recipes you can find to use it up.

234 My version of a salad: chopped up iceberg lettuce, green onions, radishes, with -- get this -- dill pickle juice as the dressing and dill pickle slices instead of cucumbers. Mix it up and let it "marinate" int eh fridge for a while, then serve. Cold and salty, and very good. Yeah, you can use romaine as an "extender," but I prefer the iceberg lettuce.

Surprised the iceberg would hold up for the fridge time...my kid loves romaine as his favorite lettuce so I might try your way but sub romaine b/c I have it more (I also have green leaf, but that would fail)...
