Food Thread: A Tisket, A Tasket, The Brisket's In The Basket*

Apparently I decided to make a brisket for the Passover Seder. I have no recollection of this decision, and in the only conversation I can recall, I was confident that I decided upon a tenderloin roast (The married men among the readers will understand how that came to be).

So brisket it is! And really, it's not a bad choice, particularity since my local Wild Fork Foods carries very nicely trimmed whole briskets. I really like using a whole brisket, in part because there is enough fat, and in part because the texture of the flat and the point are different, and add some nice complexity to the dish. I also get to render some of the trimmed fat so I don't have to panic when I want to make Yorkshire Pudding.

The only issue is searing the brisket...it's pretty big, so I have to use my largest roasting pan. It's not perfect because it's not particularly heavy, so I have to be attentive, otherwise I will get burned spots. The solution is to buy a very heavy and very expensive roasting pan, and because I am a cheap bastard I will choose being attentive every time!

The recipe itself is simple. Sear, then remove it and brown a ton of mirepoix, then return the meat to the roasting pan, along with a lot of red wine, some tomato, some ketchup for the sweet teeth among the guests, and some herbs. Cover and roast for a few hours, until it is nice and tender.

That's it! Easy and delicious.

I make it the day before so I can chill the brisket, slice it, and return it to the defatted mirepoix (which I blend into a thick sauce). For a big group it's a great choice, especially because I have a few relatives who are whiny little snots when it comes to rare beef, so that tenderloin would be more of a production.

I might not serve them my famous Chicken Tartare if they keep up the squawking about underdone meat!

A good meatloaf is a fine thing indeed, and I have written about Ina Garten's wonderful version before. But I haven't made it in a long time, and I feel silly! It is one of her easier and better written recipes, and it's just delicious. Individual Meat Loaves is absolutely worth a try, and I will bet that once you make it you will think more highly of Garten, who can be an out-of-touch little rich girl sometimes. Well...most of the time, but she partially redeems herself with this dish.

Never heard of it before I saw it in a wine shop, and I probably won't see it again. And that's okay, because there are many hundreds of small champagne houses that make their own champagne rather than selling their grapes to the big houses.

That was a delicious champagne for significantly less than the big guys charge. The small houses are wonderful because they don't have the size to make the same champagne year in and year out by blending many years into each release, so they make each year based on the vagaries of the growing season. Sometimes the champagne is rich and buttery, sometimes it is crisp and austere, but it is always different, and that is part of the pleasure of seeking out the small growers.

Well, the garlic is out in the sunshine, probably soon to be eaten by those vile rodents with bushy tails and a penchant for damaging my home. But if they survive the squirrel apocalypse, and actually grow into something edible, I will be in garlic heaven! Rumor has it that the Bourbon Bubble is bursting. I have seen no evidence of decreasing prices, but maybe the bursting started somewhere else! I think the sweet spot is $40-$60 for excellent and interesting bottles, and bumping that to $100 gets you an incremental improvement in quality, but nothing mind-blowing. More than that and I think you are paying for hype and rarity, which may look good in your liquor cabinet, but doesn't translate to more quality in the bottle.

The problem...or the solution...is to buy lots of bourbon, take tasting notes, and eventually arrive at your favorites! It should take forty or fifty years, but it is worth it!

The wife and I went to Bristol, VA yesterday to try out the Hard Rock Hotel & Casino. On the way back, we finally had a chance to hit the Buc-ee's east of Knoxville not too far from Dandridge.

Well! You know how there are regular Walmarts and Super Walmarts? Apparently there are Super Buc-ee's and this was one of them. This place was far bigger than the ones in N. Crossville, TN and Royse City, TX.

Got my beef jerky and candy-coated nuts too.

23 Tonight is Crockpot BBQ (red) Shredded Pork Sandwiches. I was gonna do baked beans, but it's been forever since I've been lazy and just dumped a bag of Aldi's fries into my air fry function on my oven - so fries it is.

With that I made a brand new coleslaw (pickled onion coleslaw with the 19 cent cabbage, green onions, pickled onion, cilantro, pickled onion liquid, olive oil, salt, pepper, and a PINCH of sugar b/c my pickling is a red wine vinegar and it's tart)...and a strawberry and jam grape salad (yes, another new type of grape, but if you sell it to me cheap, and it's seedless, I'll try it - and they are good)...

My garden is still dead...by now, I'd usually have my "couldn't kill it yet again" mint popping up and usable, but this winter...sigh.

I want to make my frozen pea salad, since it's mint, red wine vinegar, olive oil, red onion, and mint (with s&p) and is so cheap, tasty, and easy (b/c I got 2 bags of frozen peas for 42 cents and the mint is from my garden)...but it still sits in my freezer waiting...

47 PS - Meatloaf is not a recipe, it's a technique.

Ground meat, wet, dry, binder (egg, but doesn't have to be), seasoning. Shape, bake, the end.

It can be done a million different ways.

Kids always love my hamburger version with ketchup, yellow mustard, chopped pickles and onions, hamburger buns, eggs, salt and pepper. But I've done a million of them...

I'm sure its a bit of PITA, but actual SNAP recipients that need a bit of help with groceries probably just get the eligible items with the SNAP card, and then buy their treats with the EBT card or cash.

I get 12oz of 1/2" thick bacon from our butcher, only give it an hour on the smoker, then cut it up into 1" pieces and throw in the Dutch oven, cover with a cut up onion, 28 oz Bush's baked beans, 1/2 cup brown sugar, some ketchup and mustard and molasses to taste, bake at 225 for 6 hours and refrigerate overnight.

Served cold.

Yeah, I have salmon filet planned for tomorrow, but if we lose power, told the spouse it's probably PB with bananas and honey.

We lost power Friday with the last windstorm for 3 hours (hadn't lost power in years)...so I don't know which way this will go. Thankfully, we had a Church soup dinner to go to which had power (told the spouse if I'd have been in the middle of prepping dinner, it would have had to be tossed, so at least tomorrow is a 20 minute cook plan).

I'll probably prebake homemade blueberry muffins and serve 2 cold salads (fruit and cucumber), so it's just the salmon for the worst of the storms...

I kind of fell in the kitchen last night because I just got a shipment of all the meds I may have to take for my heart and arthritis and just general over-active sexual drive that I hadn't had for a week... so I took them all at once and sort of "got tired real fast"....

Anyway, when I fell some part of me hit and shattered the glass front of my stove.

I'm researching getting a new panel, but my question is- will there be any danger with using the oven with only the interior glass on the door?

And again, I want to stress, most of the problem that happened to cause the fall was my incredible and continued virility.

Roast the cabbage in wedges and the carrots separately (you can rewarm the carrots if you can only fit one at a time in your oven).
Make mashed potatoes.
Make the corned beef in the crock.

There is an air gap between the inner and outer glass panels...that's for insulating the heat of the oven from the exterior glass. The interior glass will be as hot as the oven, and it will radiate a lot of heat into the kitchen.

So...if you use the oven, your kitchen will get hot, and there is a significant risk of getting burned very badly.

82 I tried making a pot pie using a boiled water crust, instead of the usual rough pastry. I need to try a couple of tweaks to see if I can make it better, but on the whole it was as good as my poor rough pastry, and it was much easier to make. The downside is it had much the same texture as the Swanson frozen crust, which is why I need to try some changes.

I had enough dough to make two pies, one was with the leavings of a rosemary pork stew, and the second one was leftovers of my corned beef and cabbage dinner, with the gravy made from the cooking broth.

Wouldn't recommend slow cooking cabbage. Add all the other ingredients to your crock pot. About an hour before dinner time, Roughly dice your cabbage and saute in olive oil and maybe some carraway seeds. I usually would do this in a large stock pot so you can move the cabbage around as it cooks.

In fact, we did St Paddy dinner yesterday, and we did corned beef — duh — and only had time to roast for maybe 3-4 hours. Came out good, tasty, but I wouldn’t call it tender.

94 Smokey Bacon Brisket Chili

1 medium yellow onion
2 bell peppers, chopped
1 tbsp minced garlic
1 14 oz can fire-roasted tomatoes, diced
2 cups chicken stock
1 cup beef stock
1 bottle beer (I used Dead Guy Ale on hand)
2.5 lbs brisket, cubed*
6 strips of cooked bacon, cut into pieces
2 cans chili beans in mild sauce
1 tsp chocolate/cocoa powder
1 tbsp smoked paprika
1 tbsp cumin
2-3 tbsp chili powder (I used a chipotle blend)
1/2 tsp dried thyme
1/4 tsp oregano
Black pepper and salt to taste
2 spoonfuls of masa hating to thicken

I don't have a smoker so I used a smoky black pepper rub in the brisket and cooked it at 250 degrees for 5-6 hours in a pan, with a bit of liquid (tented in foil for the first two hours).

Sauté onion, garlic, and peppers; add seasonings, sauté for three more mins.
Dump in crockpot along with can of tomatoes and chicken/beef stock. Add brisket, bacon, and beans. Stir so the delicious gestalt of flavors can brood. Heat on low for 3-4 hours.

My wife brought home a Sunbeam counter top deli slicer from the church rummage sale, it is chrome and probably as old as I am. It has to be disassembled to be cleaned, and honestly it needs to be regreased as well.
It does, however, work very well at slicing roasts and corned beef very thin and even.

See if it turns out. If it starts burning before fully cooking, then you can just turn it almost into a beef scramble...

I bought one from cabelas about 10-12 years ago and it works fine. Very heavy but very adjustable, I bought the middle of the road one. Not the most expensive unit but a couple steps up from their lowest price models which are cheap plastic junk. Sort of a biotch to clean but disassembly is straightforward just time consuming. I use it for my jerky meat cutting as well.


Sucker is sharp and you need to wear cut resistant gloves when taking it apart to clean it or reassemble it or you are going to need a handful of bandaids.

127 Made my pork shoulder ala pernil earlier this week, aka, Puerto Rican pulled pork. After scoring the skin, the shoulder marinates in the following:

Sofrito (3 Tbspn)
Oregano (2 Tbspn)
Garlic powder (1 Tbspn)
1 teaspoon:
ground coriander
onion powder
paprika
cumin
½ cup olive oil
S&P to taste

After four hours (over night even better) make a braising liquid of 1 cup orange juice, 1/2 cup of water and a 1/4 cup of lime juice. Pour this into a roasting pan, add the shoulder, cover tightly with aluminum foil and bake at 300. 5-6 lb roast should be done in about three hours, then remove foil and blast at 400-450 for another 30 minutes to crisp up the skin.

Remove from the oven, skim fat from the braising liquid, add maybe two tbspns of cider vinegar then pour into a bowl filled with chopped parsley. This is your garnish. If the roast falls apart as you try to lift it out of the pan, you've done it correctly...

131 My eggplant experiment came out great. Peeled , cut into cubes, salted and left for an hour, tossed lightly in olive oil then pan fried at 400 degrees. Held its shape and cooked up just right.

136 As we had our St. Patty's Day party at church this afternoon (Yes! For the uninitiated, Catholics drink bigly!) And Father received bottles of Bushmills out the ass, so he gave me his unopened bottles of bourbon. A couple of Weller's in the mix along with some Knob Creek. My favorite is 'Free' so it's all good.

I brought home enough corned beef and Sheppard's Pie to feed an army so it looks like leftover this week.

All week.

138 125 No, no, no...grab a pan, coat it with oil, and just smoosh the meatloaf down into it on your stove top on medium heat...make it a skillet circle. Let it crust on the non-sauced side and flip it.

See if it turns out. If it starts burning before fully cooking, then you can just turn it almost into a beef scramble...

149 Did a Wild Fork-Tender Roast today.
Thought I'd switch it up,

Parboil those tiny potatos 20 mins

Trim and Halve brussels sprouts (you can stop here if you don't celebrate)
Parboil them separately the last 10 mins of the taters
arrange cut side down in the roasting pan
add Salt and a splash of vinegar

Drain and drop taters with gently but not arranged.
Salt if you haven't already.

Add your beef on top and roast as usual.

I had a hankering for some salmon yesterday, so got a previously frozen fillet of silver at my fish monger.

Because it was frozen, it needed some fat, so I melted some butter and threw in blackberries, lemon, a pinch of sugar and some salt.

Salt and pepper on the fish, then the blackberry sauce, oven for 10 minutes at 400.

Served with homemade coleslaw and turmeric spiked rice.

Beautiful colorful flavorful plate.

Leftover salmon will be a salmon salad sammich tomorrow. Because no one should reheat silver salmon in a microwave. Just. No.

162 The Bourbon scene is pretty much a "mean girls club." Distilleries purposely bottle a very limited number of certain blends and fete the "mean girls" to fork over big monies for them.

It's a business model as old as the hills.

And to be frank. There's not a whole lot "special" other than rarity between a bottle with a run of 250 bottles and the one before it, using the same equipment and mostly the same ingredients and mash bill that sells for $65.

167 Watershed Distillery uses lottery for their limited batches. They just had one for a 9-year straight rye, but I didn't get a lottery place. However, their bottle shop is nearby, and if lottery winners didn't come and purchase their bottle by yesterday, it goes up for sale in the bottle shop.

I really like rye, and I really like Watershed, so I'm going to stop and see if there is a bottle available tomorrow.

168 The recipe itself is simple. Sear, then remove it and brown a ton of mirepoix, then return the meat to the roasting pan, along with a lot of red wine, some tomato, some ketchup for the sweet teeth among the guests, and some herbs. Cover and roast for a few hours, until it is nice and tender.

This is what lack of exposure to properly smoked brisket leads to.
