Food Thread: Quiet, Young Dog!

Plain old Hush Puppies! I used to eat them... a lot...at a good southern-influenced restaurant in NYC, and of course I order them whenever I see them on the menu in the real South!

But making them? Yup, it's easy, but I can't remember the last time I tried.

Well...tonight that changes!

But I think I will make an interesting dipping sauce, just to be difficult. Maybe Tahini-based, or even Chipotle-honey!

Or butter. Plain old butter!

Am I overthinking this?

There is a huge difference between preferring foods that are not filled with unnatural chemicals simply because it is aesthetically pleasing to eat real food, and claiming that chemicals that contribute to safety, longevity, and taste should all be banned because of possible health effects.

I'm in the first camp. I prefer unadulterated foods, but I am not running screaming from the store if I see a food that has some sort of man-made preservative or stabilizer. The health effects are based on biomedical research that even in its best days is filled with errors. Nowadays, my supposition is that the research is politically motivated and is probably nonsense.

Why These US Foods Are Banned In Europe

The E.U.'s position is based on a report of the Scientific Committee of Veterinary Medicine about veterinary health published in April 1999. The report states that there's a risk of "developmental, immunological, neurobiological, immunotoxic and carcinogenic effects" from these hormones.

Notice the weasel-words used to describe the supposed dangers? "Can be..." May cause..." "linked to." Absent epidemiological studies that show causation, it's just feelings. And that is perfectly okay if it is admitted. But these puritanical scolds hide behind their increasingly discredited science (Covid vaccine anyone?).

Just say it" "We find food additives distasteful in our food-centric culture, and we prefer as pure food as we can produce without impacting populations on the margins." You know...the people who might go without because rich Westerners can afford more expensive food!

Cooking food on racks is a wonderful thing. The bottoms don't get soggy, cooking is more even, stuff gets crispier and browner...it's a win-win!

Except for when it comes time to clean the damned racks that are liberally coated with cooked on BBQ sauce.

Creamy Baked Ricotta

The creaminess sounds like a perfect side. I like creamy grits and risotto and stuff like that, so this might be right up my alley!

While I am not one of those lunatics who go to particular pubs in Dublin just to enjoy a perfectly pulled Guinness...I do enjoy a pint now and then. And two nights ago I was eating with family and the older brat ordered a Guinness, which sounded perfect for the rest of the meal (the Beefeater Martini I had just finished didn't go with pulled pork).

But to his and my chagrin, the Guinness came not in a pint glass out of a keg, or even a can with the nitrogen capsule! No, it came in a bottle.

And I didn't hear Simon & Garfunkel singing when I tasted it. In fact, it was pretty crappy! Frothy without being creamy, too cold, and it definitely was on the bitter, not mellow side.

Anyone drink this crap?

Well, the garlic is out in the sunshine, probably soon to be eaten by those vile rodents with bushy tails and a penchant for damaging my home. But if they survive the squirrel apocalypse, and actually grow into something edible, I will be in garlic heaven! Rumor has it that the Bourbon Bubble is bursting. I have seen no evidence of decreasing prices, but maybe the bursting started somewhere else! I think the sweet spot is $40-$60 for excellent and interesting bottles, and bumping that to $100 gets you an incremental improvement in quality, but nothing mind-blowing. More than that and I think you are paying for hype and rarity, which may look good in your liquor cabinet, but doesn't translate to more quality in the bottle.

The problem...or the solution...is to buy lots of bourbon, take tasting notes, and eventually arrive at your favorites! It should take forty or fifty years, but it is worth it!

15 Tonight is steak and eggs, budget style.

Spouse found one carne asada we need to use up - yeah, that doesn't feed multiple teen boys.

So, with eggs at $1.60/dozen, I'm making a western omelet egg pie (this is dairy free quiche that has more eggs and egg whites and less liquid than a normal quiche, since the liquid isn't really dairy, so no desire to put focus on it). Sauteed bacon, red onion, red pepper, and baby bellas with nutritional yeast, salt and pepper into the eggs. They are baking now.

Then I'll cook the steak and serve it over the Safeway $1 garden salad bag with the $1 grape tomatoes (and some pickled onions for the boys) with the $1 blueberries and blackberries they had.

Taking steak and making it affordable for teen boys.

PS - I made 2 egg pies b/c I want a lunch or two for me this week - if you have to make one, two is almost no more effort.

PPS - The Safeway ad is GREAT this week.

17 There was this little roadside dive outside of Millington, TN that did catfish... just catfish, really good catfish. But their hushpuppies were awesome. A lunch plate was about $4 back in the day. Fish, puppies, slaw and sweet tea.

Exercise tip:
Put the bed on the floor. As close to the floor as possible. It approximates getting up off the floor.

Being so close to the floor one can't hop out of bed.
It's hard at first but it requires all the forgotten mussels necessary to get up off the floor.

It makes a difference.

I hate the flavor.

I tasted hot sauce for a living for several years. I came to despise Chipotle flavor (smokey ass.) Not a fan of habanero either (too tangy-wangy.) Green and red taste too earthy to me (dirt.)

Cayenne is good (clean spicy.) Tabasco is good. When you get into even hotter peppers, you lose a sense of delicate flavor profile.

Chipotle has its uses...but it's not a love for me, either...then again, I don't LOVE anything in the heat category...I use just enough, not a ton (but nothing annoys me more than trying someone's lenten meat free chili and have it taste like literal veg soup - like you NEED some heat)...

On a related note, Local Hive Honey Hot Sauce makes a variety of sauces, including Siracha and Habanero Mango.

They pair beautifully with some Jose Ole' Taquitos and a beer.

Told spouse I know corned beef is cheap this year...but of all the beef buts/preps, it's my least favorite even when I do it right. I just don't love the corning flavor. When I want beef, I want beef...

So, maybe a cottage or shepard's pie this year - I have ground lamb and ground beef, and the lamb is probably more authentic...

I was told any Guinness outside of Ireland is a shadow of the stuff you get in Dublin. Or maybe the Irish bartender was just full of crap and it just sucked because Guinness sucks.

See the recipe I posted (and to be authentic, swap butter for more cream cheese and just use MORE cinnamon)...

It's a REALLY nice and easy (and kid can make friendly) dessert for St Pat's day that is not green dyed fake mint or fake pistachio...or even green. Maybe it's why NJ went for it so hard...

We made it in my Catholic school class the 1st time I had it...then I could never unsee its availability for 1 week a year...

I agree, IMO Lagunitas is just bad. Sierra Nevada has a big presence here in Western NC, but like Skip said, I'm pretty much done with IPAs and there are a couple of local small breweries that make nice beers and ales.

Both good, although I think Sierra Nevada has decayed somewhat.

Racer 5 is from Bear Republic, which used to have a great brewery/bar in Healdsburg.

141 cayenne and Thai hot peppers are much better than jalapeños, I think. Jalapeños are just hot, and not really flavorful. I grow Thai and cayenne, so I am probably influenced.

Before I quit drinking entirely, I absolutely hated IPAs, preferring stouts or brown ales. Eventually one of the things that drew me to bourbon and abandoning almost all beers was that it became virtually impossible to find a brewpub/restaurant that made anything non-IPA.

166 Ballantine did make a milder pale ale in the 70's or 80's, IIRC. Came in a squat grenade-shaped bottle and had those cool rebus puzzles under the lid. The IPA might have predated it. My first impression was something akin to what pine tar would taste like. A few belts of the regular pale ale got me to the point where I could appreciate the fruitiness of the hops that complimented the oak barrel character. It was a struggle, and a heavy burden, but I bore it for the betterment of mankind. I'm a giver like that...

When I see a “Woman Owned” label on a product, I immediately decide that I will not buy it. Not that I don’t want women succeeding; I just hate the virtual signal/attempt to shame people into buying a product.

Not long ago my store carried oatmeal that had, on top of the lid, a message “WOMAN AND BIPOC OWNED”. Fortunately that product didn’t last long on the shelves before the company stopped selling it.

Anthony Thomas is nice chocolate - they do a very nice tour and let you use your admission fee towards your chocolate purchase.

AT actually does most of the "big" companies specialty chocolates (like the egg shapes, the bunny shapes, etc) b/c they can still do batch chocolate making...

Very much this. I was homebrewing in the early 90s and there was some idea that bitter hops can give you an endorphin rush, much like a chili pepper. Our interest was strictly ambers and the occasional Belgian Ale. I see the price that a six pack of "craft" beer is getting these days, and I make a bee line for the Yuengling..

262 So you got three things going on with a Hush Puppy. Really, two with most anything you want to deep fry. But with a Hush Puppy ... its three.

One ... the grease. It has to be HOT !!! Because you have to be able to drop those little dollups of whatever in there and get 'em out quick. At least if you want them to taste good.

Two ... the batter. I've seen guys try to do an "outer layer". Good luck. All you can do is roll a batter into a ball, and if you've got the right mix, it won't fall apart and it'll actually crisp.

And when you get those first two ? Then you can start filling stuff in like minced onions. Or minced pepper. Or minced shrimp. But until you get those first two parts right ? Wasting your time.

The grease has to be hot. And clean.

It's my grandma's/mom's recipe.

He likes Luby's cornbread, which might as well be cake with butter and honey on it.
That's what I make now, but I use a mix. Because I can be petty sometimes.

272 beer goes straight to my feet, i have two per week. three sour belgians last friday, yum. guinness is pretty mild despite appearing like mud. we've got some taverns that move alot, and while not the same as an irish pour, unpasteurized is... different. the cans with the widget are pretty good. i grew up with bottled guinness, all three are a unique but they're all good. and then there's the stuff they brew under license in xaymaca (heineken also).
