Food Thread: Super Bowl Edition

Well! So Pete Bog can cook!

Those are baby-back ribs with a very nice looking sauce that he claims is "Stubbs spicy with added Fresh Ginger, Plum Sauce, fresh Garlic, Sesame oil, topped with Green Onions and toasted Sesame Seeds."

Do you believe him?

By no stretch of the imagination is the United States food safety Nirvana. We have significant issues...just like most industrialized nations, but I think they are compounded by the influx of illegals into the food industry. And of course we import food from all over the world, in part to satisfy the demand for weird shit among those illegals, and legals from the 3rd world who have settled here.

Like this! Dried fish recalled because of improper eviceration. Yum! And it's from Vietnam.

But we also are on the cutting edge when it comes to food production and processing, and we have a robust academic system to improve that.

This is on the menu today at Chez Dildo. Or maybe tomorrow, if my eyes are bigger than my stomach! I have the chicken thighs marinating in buttermilk, so it is only a matter of timing, not motivation.

But the recipe is sort of silly. Lots of ingredients, and it will turn out to be a sloppy mess, so I think I will modify the construction a bit. Hot Fire Chicken also is on the hot side...duh! Probably too hot for the rest of the house, but that's okay; that is what extra hot sauce on the side is for.

That was my Sunday Roast dinner two weeks ago. Damn, it was mighty tasty. Porchetta, but obviously made with pork belly, because it was amazingly rich and fatty and crunchy, all at once. And that Yorkshire pudding was excellent!

The restaurant was in South Kensington, and it had a marvelous name: The Hereford Arms. I love these sorts of places, and I will be saddened when the government of the UK makes it illegal to sell pork or alcohol.

Did I also mention that I have chili on the menu for today? And as a backup I can make Pork Milanese....bone-in, because I am not a savage!

No, I am not recommending this recipe, because it is the sort of food that doesn't require a recipe, and most of you make something like it already.

But Breakfast Croissant Bake reminded me of something my mom would have on hand when i was a youth and eating everything in sight. She would make it, or sometimes buy it from a place in Connecticut. And I would come home from swimming practice and eat several of them. Or all of them.

Food memories like that are immensely amusing. It probably didn't amuse my mother though...

A friend graciously gave me some genuine grown-in-the-USA garlic, and I tasted one clove and planted the rest, because my pathetic failure last year is an anomaly...right? I hope so, because it's in the ground (actually, a large pot), and it had better work this time!

Rumor has it that the Bourbon Bubble is bursting. I have seen no evidence of decreasing prices, but maybe the bursting started somewhere else! I think the sweet spot is $40-$60 for excellent and interesting bottles, and bumping that to $100 gets you an incremental improvement in quality, but nothing mind-blowing. More than that and I think you are paying for hype and rarity, which may look good in your liquor cabinet, but doesn't translate to more quality in the bottle.

The problem...or the solution...is to buy lots of bourbon, take tasting notes, and eventually arrive at your favorites! It should take forty or fifty years, but it is worth it!

Beef and black bean chili
Tostitoes
Starwberries and blueberries
and Super Smores Brownies for dessert.

For the brownies, take and prep your favorite boxed mix or homemade brownie and cook for 6-7 minutes less than normal. Then top with a mix of mini-marshmallows, semi-crushed chocolate graham crackers, and dark chocolate chips in a 2-2-1 ratio and cook the rest of your normal time. Have very happy folks more impressed than they should be.

I won my church's chili cook off last night, and it was damn well deserved. When asked my secret(s), I could only reply that it was my exquisite culinary skill set. That and 3 kinds of chili powder, demi glace as a foundation, and expertly prepared chuck. The down side was that it was all gone by the time I went to get a helping.

We have a local butcher here in our small town. He sells wonderful meat. We don't buy meat at the grocery.

Last week we bought boneless pork ribs, seared them on the grill and finished them off in the crockpot.

They were awesome.

1 smol carrot
Shred in a food processor
Dump into hot water and stir, drain.
1/4 cup of pickle juice, toss.
In fridge for 4 hours, uncovered in a strainer.
Drain, strain, and toss.
Mayo, salt, white pepper. Fridge 1 hour before serving.

19 Seeing the breakfast recipe...

Kids asked for fresh bagels and never ate them...and my spouse has a ground pork with sage he never ate in the freezer...so both are gonna become a cowboy breakfast casserole with those some eggs, garlic and olive oil, more seasoning, and some veg for a dinner this week. Usually I do a french bread cowboy breakfast with plain sausage...but what the heck.

Trying to decide if I'm gonna add some canned pumpkin to the egg b/c I have it, I don't use much "milk", and pumpkin and sage love each other...and it means I don't have to make a separate veg with dinner...

Oftentimes, the caterer will just take home the inferior stuff they tend to bring, and if you demand they bring the good stuff, they'll rape you on the price.

My current dilemma is prosecco vs champagne. I like prosecco, and have limited experience with champagne, but overall, my impression is that champagne is pretty bad unless you pay above $40/ bottle. You can buy a passable prosecco for half that.

We had our church luncheon today. For a small group a lot of food Two soups-chicken and barley and roasted red pepper and tomato. Some delicious Mexican type thing with beans and sausage and little pastry cups to go with it ( I don't know what it was called) as well as pasta with and without meat and a new guy brought home cooked carrots with a ginger sauce. I'm stuffed.

Same for Manwich sauce...my solution is brown and drain 2lbs of beef, then add one can of Manwich and one can of plain tomato sauce (8oz)...then just add extra salt/pepper...cuts the added sugar in half (which is astronomical) and kids (and spouse, who enjoys this a lot, so he gets it about every 6 months when I just don't want burgers again) still like it as much, if not more, than the real thing...

Husband grew up in South Carolina and loves the mustard based sauce. I like the vinegar BBQ sauce from North Carolina.

To me the NC sauce lets the true smoked flavor of the pork shine through.

You might like Salt Lick's Mustard Based BBQ Sauce. Being from Texas, it's more oriented toward beef than pork like a Carolina sauce.

79 An easy bbq sauce to use for sloppy joes Ingredients

1 cup True Made Foods ketchup
1/4 cup Worcestershire sauce
2 tbsp balsamic vinegar (I have also used cider vinegar)
2tbs brown sugar (or a blend of brown sugar and molasses)
1tsp salt
1tsp smoked paprika
1/2 tsp garlic powder

Sauté onion and green pepper, brown ground beef - really let it get brown before you start to break it up - add the above to your level of sloppy, salt and pepper to taste. I add in cayenne pepper, too, as we like a little heat. Easy peasy.

I'm not actually a coffee snob. I enjoy just about any coffee as long as it's not inexcusably bad. And I have never purchased any electric coffee equipment.

Occasionally we receive whole beans and in the past this meant I had to search out a place to get them ground. Also, I'm not the best at guessing the correct grind for pour over or stovetop moka pot or percolator coffee. I wanted a good quality burr grinder but didn't want to spend $100-200.

I learned about a manual burr grinder that is 80-90% as good as the fancy ones (James Hoffman says he likes it for the price point) and it only costs $22: KINGrinder P0 Lightweight Manual Hand Coffee Grinder.

I got one and I'm pretty pleased. I like being able to adjust the grind for different brewing methods. The only problem is that by the time I've done the grinding and brewing, I'm nose-blind and so the flavor improvement is more evident to my husband than it is to me. FWP.

They have been a powerhouse for over a decade...usually only in singles. But, they got a pairs team, so they compete amazingly in 3 of the 4 disciplines and accept the awful ice dance results. We won b/c our pairs team (which also was supposed to suck) did much better than their ice dance team.

To keep it just as simple - double the meat and liquid smoke and add a can of regular white beans and a little extra salt and pepper = again, you half the added sugar with no extra effort.

And I'd encourage bell peppers, onions, and even tomatoes if you want to put in effort. Above is just my no effort idea.

We'd always detect it with (I'm guessing) the same skill that a dog uses to recognize there's a pill in that strip of bacon or lump of peanut butter.

But I admit I never made it myself...and looking online, I think I could make one, more herby and punchy, that I would probably like...and since the Church soup dinners were canceled this year in favor of fish fries, I've now got 7 Lenten Fridays I need to make my own food, and this could be fun. I could see it as a roasted cauliflower topping, b/c cauliflower loves everything...some sort of white fish, roasted cauliflower, and berries with a homemade tartar sauce seems Lenten enough (I won't do expensive fish or splurgy items on Lenten Fridays b/c you are supposed to "go without" and lobster/crab is not going without)...

That was my kids. Tried hiding butternut squash once in my kid's mac and cheese and then she refused to eat mac and cheese for 2 years. Since she was highly food limited, I never tried that again til they got older and now they approve of it for their health and/or so they can skip having a dinner veg (hi pasta sauce)...

Having had a Lent where we gave up meat, I did a few roasted veg with rice dinner meals. I always roasted chickpeas with the veg and added a jarred Indian sauce and a couple TB of coconut milk to finish after the roasting and served over rice - made for a feeling of "actual meal" vs side dish...had enough fat and close to enough protein, too (lunches tended to be egg or tuna those days, to make sure protein was high enough)...

Butternut squash is what I make my "pumpkin" pies with. It is milder than pumpkin, and I've won over those who do not care for pumpkin pie. The freshly made whipped cream with added brandy or bourbon might make for an unfair comparison, but no one's complained yet.

Made butternut squash soup last week. The stock came from the drippings from a previously roasted chicken. Very simple and hearty cold weather fair..

182 Oh, variation on Rodrigo simple bean recipe:

1 lb ground beef
1 can red beans
1 can black beans
1 can crushed or diced tomatoes
salt/pepper

Brown the ground beef (do NOT drain), dump in the beans and tomatoes (also do NOT drain the beans). Let it all bubble. Serve over rice, tots, or fries. NOTE: the more burning and crumbleys you get from the beef, the better! Also optional note, add a small scoop of bacon grease!
