Smell it. As long as it is not discolored or smells off, then probably OK. Cook well, though. Lot's of preservative go in sausage. I routinely buy the 50% off Italian sausage from the store, which they mark down after several days in the refrigerated case. The way to cook sausages is to simmer them on medium in a fry pan win water halfway up the side for 10 minutes a side, flip, repeat for another 10, then brown on the grill or fry for a.couple more.
