Not radically different from beef (unsurprising), but IMO somewhat more flavorful (at least compared to the beef that normally goes into restaurant hamburgers). Which reminds me: can anyone explain why running beef cattle on the Great Plains is such a horrible thing "for the environment", given that the region was formerly inhabited by millions of bison, a creature so closely related to cattle that they can actually interbreed?
