You are, of course, free to disagree with me. No one is stopping you from seeking out “gender-affirmation care.” But one of the duties of a civilized people is protecting children from violence. If you tolerate children being subjected to needless life-altering surgery and synthetic drugs that destroy their development, you are abetting state-sanctioned child abuse. Studies have shown for years that "transgender" people who mutilate their bodies are no less depressed and no less suicidal after surgery. After all, you don't really change genders by having the surgery, and realizing that you've mutiliated yourself for no reason doesn't help your emotional equilibrium. I read a thing a few months ago when a tranny was sitting next to a table of 20-something women, who were effortlessly discussing jobs and clothes and boyfriends, and was absolutely consumed with rage realizing that he could never, ever, pretend to be 1% as feminine as these women so effortlessly were. Two reasons, one philosophical and one practical. On the practical level the left has been successful only in being completely dogmatic and hierarchical. Whether or not an individual leftist really believes in tranny ideology or not their leaders have. Challenging this then opens up the possibility of conservatives "winning" which must be stopped at all costs because history can only go in one direction. Then on the philosophical level the left has come to believe reality is merely a shared illusion. So what isn't a trans-woman actually a woman? Well because YOU PEOPLE won't believe she is. If you could be forced to thing the correct way, well, then she would be. I've noticed of late the claim that tariffs will raise costs for consumers. Well...duh? The nominal point of taxes is to take money from taxpayers and give it to the government to spend on all the crap the government spends money on. So does a tariff take money from taxpayers? Sure. But so do our current income, sales, capital gains, etc etc etc taxes. The question is what form of taxes is "best". And honestly penalizing people for buying foreign goods seems a lot better then penalizing people for working, investing, or owning real estate... To which I always ask, "What issues right now that you consider crazy and offensive will you grow to believe over the next 20 years? The outcome is that this cohort does not really understand what they have been taught, and pretty much only have their learned responses and the external direction of thought leaders to direct them, and this sort of externalization of understanding and morality causes a lot of the wild stampedes and swings. Setup: There was discussion after Thanksgiving about sweet potatoes and how many people don't like the two default ways (with marshmallows and as pie). Someone mentioned "inventing" a recipe using pineapple and cranberries. I wish I could remember who, but I just copied the comment and not the poster. So I decided to hold onto that until Christmas and try it. Well, congratulations, whoever-you-were, it was well liked. (One person commented the sweet potatoes should have been mashed and I said that would have missed the point.) I used cammed pineapple rings, but will use chunks next time. Absolutely. I have to avoid dairy, and while margarine is an okay sub for butter, none of the milk alternatives are very good. It's the texture - too thick or too gritty. And fake cheese/yogurt/ice cream is just sadness. It's easier and tastier to do without.

I have an unfortunate friend, was an Olympic class athlete in her youth. She had years of trouble with her sinuses, blamed everything from wood smoke to food of every kind. Finally decided she had egg /dairy allergies, celiac etc. Her diet became very regimented and it was exceedingly difficult to host her for meals of any kind. Going out to dinner was an ordeal. Talk about taking a microscope to the restaurant menu, sheesh. She sadly came down with dementia in the past few years. She has completely forgotten about her "allergies". She eats anything put in front of her, has gained 20 pounds, (was way underweight) and surprise , surprise, has had zero ill effects from her new unrestricted diet. I don't mean to mock her, but I think it is a profound statement regarding this new 1st world problem of being excessively picky about one's food choices. 345, I never thought I liked beets, but I followed a recipe from a guy on YouTube called cooking in Russia and he did a restaurant style borsch recipe. I followed that one to a t and it was a crap load of work. It’s probably one of the most memorable dishes I’ve made.

Most bone broths are not flavorful, but they do give a nice feel to any gravy or sauce you make with them. I will sometimes make a fake rissoto using bone broth in place of water, it makes it tasty.

I like lobster of course it has to be cooked properly if you go to a chain like red lobster, they usually overcook it, and they’re not exactly giving you the greatest lobster they can find. Mid Atlantic blue crabs are great as long as you have butter, vinegar and lots of beer. A lot of people would prefer a crabcake, in fact, I would not. In fact, I would go as far as to say crabcakes are overrated.

I’ve heard a lot of people saying recently. They think guacamole is overrated. If you have good ingredients and you make it all fresh, there’s really nothing to dislike unless you throw in some cilantro some will definitely hate that. It’s not something you could eat every day though. It will get old quick.

My compound was packed to the gills with family and more family (The air mattresses got a workout in the living room)...my wife's famous Vichyssoise with fresh baked sourdough rolls Christmas eve with High Latin Mass lit by candles only and a fog of incense. I have found pretty much all Latin American food outside of Mexico to be underwhelming. That’s a tough generalization, but in my opinion, never go to a Mexican restaurant that also sells pupusas, and there are many of them for a good reason because the cooks are not from Mexico. There is literally no other reason for that to be a thing.

Love pupusas. Got to love them going to Salvadorean places in NoVa back during the first wave of immigration from El Salvador. There are some places here, I've researched them but not yet gone (probably part of the pronounced/general aversion to restaurants due to price/value proposition collapsing a few years back).
Mexican food - which goes far far beyond the border and fusion food most people know - is clearly the king of Latin American cuisines. South American food I've had was solid and good comfort food, but mostly Euro in nature. Thick lome cut and local malbec in Argentina, wonderful. Brazil does have some regional variety of interest (as well as excellent straight out Italian, German, Japanese food - assimilation has been weak down south, so the European stuff can be very good). Minas Gerais has some excellent bean dishes. Bahia is the more exotic one, some excellent stuff with a tropical/African influence. A tie. Polenta. It wasn't in my family's diet from the Old Country, but later Italians raved about it. When I tried it (twice), I decided it was a poor-person's substitute for veal or pork medallions. Arugula. Spanish food from actual Spain can be pretty divisive. I think it’s great, I love Jamon Iberico, the salt cod fritters, and other tapas. Also, Spain, as I believe more three star Michelin, restaurants outside of France than any place, but don’t quote me on that. I think it’s true, but Italy would be in there as well I would guess.

I've had the Colombian fried corn empanada and it didn't do anything for me. I guess I don't like fried empanadas. I find the baked style to be not as greasy, especially if the place properly drains the meat before wrapping and baking. The place down the block (Uruguayan) are really dry inside, almost crumbly not greasy in the least. They use chopped green olives and chopped boiled egg slices along with seasoned meat in their mix. There seems to be a lot of confusion created by the temporal adjacency of Othodox Christmas and the Epiphany.
The Orthodox churches (Greek, Russian, Serbian, etc) celebrate Christmas on Dec 25th on the Julian calendar, which this year is Jan 7th. Look up Julian vs Grogorian calendars for a complete explanation. Epiphany occurs on Jan 6th, which is traditionally celebrated on the 12th Night, which is when the Wise Men (Magi) finally showed up. For me, sushi can be addicting if I can go forever without having it, but if I start eating it, I’ll start wanting it more often. I think with sushi it’s time and place. My first time was a massive plate of the stuff with a Japanese friend in a restaurant in Raleigh, North Carolina. I’ll just say it was just OK. But I’ve grown to like it. A big 2 kg tin was about 400-450 USD on the "black" or free exchange rate. I would buy a business class ticket to DC, and sell them to caterers for 5000 or 5500. I appreciate the skill it takes to make sushi, and the centuries long tradition. It can be ok, but I've never felt the need to write home about it. Maybe a sushi master in Japan can change my mind, but I don't get the people who still rave about it this long after the fad first spread across the US.

But after a while, the raw oyster-eating part of me said 'why not try some raw fish'? Came to really like it. My favorite was a joint in Jersey that had the best unagi or smoked eel sushi I ever had. Okay, not raw but best smoked eel period. Crispy delicate skin with a soft, buttery meat. Absolutely delicious. Over 30 years on, never found any as good since. I had the laziest day in recent memory, Horde, I finally feel rested. My bum is still very sore from the spill on the ice, I sit down and get up very slowly, I can tell that the doggie is most contrite that this happened.

I think they might not grow parsnips in the South-east, Miklos. If it is any consolation, it is hard to find collard greens up here, and we have to get by with Swiss chard.

Hey JQ, I keep hoping that your life will get better. I used to puree the parsnips with some unsalted butter, salt and pepper and nutmeg, it broke down the fiber a bit. One of my daughters must have it every Thanksgiving now.

Most overrated food is "gluten free". There is nothing wrong with gluten. It is not an unhealthy or fattening thing. The only issue with it is people who have Celiac disease. Their bodies cannot process gluten well. The fault is not gluten but in the disease. For those people they cannot eat gluten for their health. That's all legit. They are exonerated. It's everyone else who boast about eating a gluten free diet to feel superior. It's advertisers who promote their product is gluten free as a virtuous fashion statement.
