I just finished the last of my eggnog from last weekends Christmas party; will have to make more on Christmas Eve.
Also made some snacking food for the leadup into Christmas. Chickpeas, a small potato, and a little red onion, with enough olive oil to make it fluffy. Basically a hummus with potato added because potato makes everything better. And breakfast this morning was a surprisingly good rice pudding, with only honey for the sweetening. Last night I didnt think it had turned out, but this morning it was the best rice pudding Ive had. It was basically a dump recipe for rice pudding: beat the eggs in a casserole, then whisk in the milk, honey, and (cooked) rice. Bake, cool, and refrigerate overnight. I had two helpings of breakfast this morning. Posted by: Stephen Price Blair at December 22, 2024 04:16 PM (EXyHK) 25

So, folks who are hungry can load up...and those who want to eat like a bird can. My brother's kid is autistic, doesn't like food touching, and likes simple - he declared me the best chef ever b/c I buy his food and get him to try 1-2 things every visit. Last time, I hooked him on my chocolate chip cookie...which as a dairy free cookie is funny b/c he drinks milk and chocolate milk by the ton, but doesn't apparently want a milk chocolate cookie. Thus, I'm trying to see if he'll go for the hot cocoa ones, too, this time (I am adding an extra raw fruit/veg to see if he'll try those - last time, I also got him eating carrots, his 2nd veg)... I've enjoyed some epic gravies ladled over the mashed on many occasions, even green beans are edible smothered in the stuff. Baked ziti (actually rigatoni and penne) for din-din tonight. Had Tomatoes we canned a couple of years ago and had to use up. Pasta and sauce for the bottom layer, mozzarella and cottage cheese next, the sauce only for the top layer. Monterey Jack and Parmesan for the topping.
For an easy throw together recipe try Chef John's Lazy Hazy Chili. I have been making a standing rib roast for Christmas Eve dinner for quite a while. And because the fat that renders below the roast is miraculously there, I also make Yorkshire pudding. It was a revelation to my husband, who reaches a crescendo of anticipation by December 23. In honor of my Cuban relatives as well as what we had when I was growing up, I also make yellow rice and black beans. I used to make the full-on Cuban roast pork for Xmas Eve (my Cuban grandpa used to get the pork roasts from Ybor City every year and bring them to my mom (NOT Cuban!) to cook, and every year he brought a bigger one until the last year before he died he brought one so big my mom finally objected (she cooked it anyway)) but then I went to a German dish of cod on sauerkraut (delicious!!) and then tried the beef. We have done the rib roast now for 14 years.

The Moche culture (1–800 CE) cultivated lima beans heavily and often depicted them in their art.[10][page needed] During the Spanish Viceroyalty of Peru, lima beans were exported to the rest of the Americas and Europe, and since the boxes of such goods had their place of origin labeled "Lima, Peru", the beans got named as such.[8] The term "butter bean" is widely used in North and South Carolina for a large, flat and yellow/white variety of lima bean (P. lunatus var. macrocarpus, or P. limensis[11]). In the United States, Sieva-type beans are traditionally called butter beans, also otherwise known as the Dixie or Henderson type. In that area, lima beans and butter beans are seen as two distinct types of beans, although they are the same species. In the United Kingdom and the United States, "butter beans" refers to either dried beans, which can be purchased to rehydrate, or the canned variety, which are ready to use. In culinary use there, lima beans and butter beans are distinct, the former being small and green, the latter large and yellow. In areas where both are considered to be lima beans, the green variety may be labeled as "baby" (and less commonly "junior") limas

Forget that stupid 2-1 ratio for cooking rice. Use a hell of a lot of water, as if you're cooking pasta. Strain it when the rice is cooked and all the sticky starch goes away. You've got fluffy rice ready for some gravy.

re, the Sticky Toffee pudding.
In Australia, we call it Sticky Date Pudding as we reckon the dates are the star of the show. The dates need to be chunky also, none of that pureed stuff thanks. A suggestion on serving the pudding. Instead of fiddling around with muffin tins for individual portions, I use pretty cups to bake mine in. Sit them on a saucer and you also have a neat place to sit your spoon for eating It's a little thing, but the cups and saucers look lovely for special or not so special occasions. Don't forget the big jug of Toffee sauce. Merry Christmas from Oz. It's summer over here. Posted by: Pogria at December 22, 2024 11:05 PM (NqTUE) 248
