Food Thread: Hummus! Is There A Pun To Be Made With Humus? No.

Hummus is one of my favorite foods. It's stupidly easy to make a superior version at home, and it is also a fraction of the cost of the commercial stuff. Which I don't eat except on airplanes. That seems to be the snack of choice, and the ones I have tried are...how does one say this politely...sh*t.

Chick peas, lemon juice, tahini* (ground sesame seeds), olive oil, S&P, and maybe some cumin if you like that flavor. I start with dried chick peas, so I use some of the cooking water to punch up the flavor and smooth out the consistency. But you don't have to start with dried; canned is perfectly okay for your first attempts.

Anyway, as I have mentioned in the past, I use a recipe from a wonderful chef who started a tiny take-out joint in NYC that made fantastic felafel and hummus and pita. It's not perfect, but as a base it's pretty damned good. But I always make a half-sized batch...until a few days ago. Yes, I just wasn't thinking, and started with three cups of dried chickpeas, which translates after soaking and cooking into a metric f*ck-ton of hummus.

So I now have about a half gallon of hummus, and that is after serving a bunch of it (with Moki's fresh pita) last night for the Yom Kippur Break Fast.

I might go into business, just to get some room in my refrigerator!

Anyone ever do something like that? Make a monstrous amount of something out of inattention? I like the stuff, but damn! I wonder if I can use it as spackle?

Only idiots and Democrats don't believe that inflation is out of control, and has not dropped back to manageable levels. Most people don't buy cars and big appliances and houses every few years, but almost everyone buys food...at the supermarket and at restaurants. McDonald's sues major beef producers for price-fixing

In May, as McDonald’s continued to swat down lingering rumors that the chain was asking an exorbitant $18 for a Big Mac meal at locations across the country, company president Joe Erlinger wrote an open letter to Golden Arches customers, attempting to explain the inflationary pressures contributing to increased prices. He cited rising labor, food and paper costs among the factors affecting the price diners paid for their burgers, fries and sodas.

Erlinger denied that McDonald’s price hikes were double or triple the rate of inflation. But he acknowledged that, from 2019 to 2024, the average price of McDonald’s menu items had gone up 40 percent.

What the executive didn’t mention — but was painstakingly detailed in a lawsuit filed Oct. 4 in a New York federal court — was the company’s allegation that the world’s largest meat processors have been conspiring since at least 2015 to limit beef supplies, leading to elevated prices for the meat they’ve sold to McDonald’s and others.

“The goal of their conspiracy was to fix, raise, stabilize and/or maintain the price of beef sold to Plaintiff and others at supra-competitive levels — that is, prices artificially higher than beef prices would have been in the absence of their conspiracy,” McDonald’s attorneys allege in their complaint. The lawsuit names Tyson Foods, Cargill, JBS and National Beef Packing as defendants. Collectively, these companies control 82 percent of the beef market, according to a 2021 brief from the National Economic Council.


In spite of their control of 82% of beef processing in America, beef prices have not been inflated as much as many other foods. Eggs, butter, vegetables, and milk products all have gone up by outrageous amounts, and in my experience are worse than beef.

It's too damned convenient for me to believe it, especially since the CEO of McDonalds is Duke, then Harvard MBA, and the president of McDonald's America is a Georgetown alumnus. Eh...they are playing the elitist game, so I am immediately suspicious of them.

Is that fair? Nope.

But today's insane conspiracy theory is tomorrow's headline.

That is a tomato and shallot relish that I made for some halibut.

See the problem? Those shallots were lovingly sautéed, then forgotten in the pan until they were a lovely shade of black. I tried to resurrect them with the tomatoes and a fair amount of white wine, but no such luck.

The moral of the story is: PAY F*CKING ATTENTION!

I'm not sure why they are calling it "Cheaters" BBQ pork. Sure, there is no live fire and no smoke, but BBQ has morphed into many different things, so maybe a more polite term is in order.

Or not. I'm all for rigid definitions of things, because CHESTERTON"S FENCE damn it!

Anyway, it looks tasty, although their ridiculous elevation of plain old caramelized onions into some arcane ritual that requires a special recipe is just silly.

Who are those poor deluded soulsWe know who shake their Manhattans! These are the same people who drink fine bourbon with coke, and probably shake red wine with ice too.

And yes, I used to demand fancy bourbon, but let's face it, $1,200 for a bottle of bourbon is just stupid, insulting, and a ghastly affront to most people's palates and wallets. I think the sweet spot is $40-$60 for excellent and interesting bottles, and bumping that to $100 gets you an incremental improvement in quality, but nothing mind-blowing. More than that and I think you are paying for hype and rarity, which may look good in your liquor cabinet, but doesn't translate to more quality in the bottle.

The problem...or the solution...is to buy lots of bourbon, take tasting notes, and eventually arrive at your favorites! It should take forty of fifty years, but it is worth it!

A few weeks ago, we ran out of the regular wine, so I decided they'd been lying about long enough and needed to be consumed. When I used a corkscrew on the first two bottles, both of the corks disintegrated. The wine was still drinkable, but I had to put it through a fine mesh strainer to pour it into a glass.

Come to think of it, perhaps this is a FWP.

... and all the meat eaters scarfed the vegetarian food. I barely had leftovers.

17 Had the best allergy-safe restaurant app I've ever had for a birthday meal this week - whoever at LazyDog (dumb restaurant concept, but outdoor seating b/c of dogs allowed, so our 1st try with me needing to be a little safer eating out now) thought up spicy tuna crispy rice should get a raise...I love ahi tuna dishes, but this one was one I've never had before, and yet safe for dairy and tree nut allergies (aka, they didn't use a shared fryer to make this)...as the food critics say, it was cravable (yes, I've had more tuna dishes, but nothing that tasted bad for me, but was good for me, and tasty)...

Everything we ordered was good...and spicy...theory is that makes people drink more...

The edamame also gets special mention for being great...but not as original...

Here's the great Dill Pickle Dip:

Stir 8 oz cream cheese (room temp) in bowl until smooth. Add 1 cup chopped dill pickle,
1/4 cup chopped sweet onion, 2 Tbsp pickle juice,
1 tsp dry dill weed, 1/2 tsp kosher salt, and pinch of black pepper. Refrigerate for at least an hour before serving.

And I always make too many cookies. We don't eat them as much now, and since we are in a new, far less friendly, neighborhood, I don't feel comfortable taking them around.

Salmon steak and roasted cauliflower both with mandarin orange glaze (using up a Trader Joe's sauce)
Stir fried sugar snap peas with ginger and garlic
Strawberries/raspberries/bananas
Homemade sourdough bread

Cauliflower and snap peas get devoured here, so I figure if I make both, there will be enough (and both were way cheaper than the salmon, although that was only $6.99/lb fresh)...

25 Quality wine corks are a issue, the cork comes from trees, and renewable resources. But demand is hard to keep up so many have gone to fake cork. Get many and seem fine for short term, douany been around for 30 years yet.

No, I'm pretty proficient with a corkscrew. These bottles were 20-25 years old, so I guess it wasn't really a surprise that the corks had failed.

It sounds easy, but I find that things that used to be easy are now not (being 29 a couple times might be the reason). But it also sounds delicious, and making everything oneself is probably a good idea these days. I might have to try that

I have tried Tradoer Joe's Tahina, and its grainy and sort of goopy.

I use Whole Foods brand. It's made in Israel.

I'm very likely wrong, but i kind of remember that a regular food processor just wasn't fast enough to get the tahini smooth and really draw the oils out and emulsify it. Needed an actual blender. But really the hardest part was the cleanup.

You could probably do it with a molcajete or a big ass mortar and pestle. Probably how it was done before Edison. But.... just because you could, doesn't mean you should.

Interesting approach. Most of the recipes/references I have do what the Epicurious chef did through the aromatics and the alcohol, but then add the stock, reduce it and then add the heavy cream/butter.

Blanche. Shock in cold water. Dump into a big clean kitchen towel. Rub the crap out of them between the towel to get the skins off. Then let them dry out a little and you can winnow most of the skins away pretty easily, or submerge in cold water and do a little float-sink kind of thing.

Yes. But I usually have leftover relish so it goes on whatever makes sense the next day. Usually my lunch!

68 Hummus was a staple growing up. My mom's parents were first generation Lebanese and kept some of the food preferences which, fortunately, included hummus and baba ghanoush. I've never had a commercial hummus that came close. We learned to make our own from scratch and, as CBD mentioned, it is so easy and so much better. It also means I can add the proper amount of lemon juice which is a lot more than any sane recipe calls for. I use our best olive oil to top the hummus.

BTW, Moki's pita bread recipe works great for scooping up the hummus (and many other foods).

70 I did get lump crab, shrimp and some Asiago cheese to make stuffed poblanos with tomorrow. Char the poblanos and clean them. The shrimp and crab get mixed with some bacon and serranos, packed into the poblanos and then the whole thing gets roasted in the oven (or grilled) and then sprinkled with a little cheese. Served with pico de gallo, refritos and a cold beer.

I forget exactly what it was called. Process *something* Slice. Tasted like someone put just enough Elmer's glue into soybean oil to get an opaque non-Newtonian semi-solid just viscous enough to mash into a Euclidian figure betwixt gossamer thin sheets of low density polyethylene.

98 I love kefir. The tartness is so refreshing. Not cheap but delicious. Turns out it is incredibly better for probiotics than even good yogurt. I would have thought they were about the same. You can make your own using kefir grains but, like sourdough starter, they have to be maintained. I learned you can make kefir yourself by just adding a small amount to milk.

I took a quart of whole milk, added a few tablespoons of commercial kefir, shook it well and let it sit for 24 hours. That's all it took. I did put it in the proofer at 85 degrees. The taste is the same as the commercial stuff and costs pennies.

I loved those markets! My neighborhood's was every Thursday, and the fresh veg and flowers were amazing! One vendor blocked my parking spot, and we had words, but made up when I brought him chocolate chip cookies the next week. After that, he protected the heck out of my place, and gave me tomatoes. 137 As I do more baking I tried a Pullman loaf sandwich bread. King Arthur flour has the recipe. At this point every attempt at baking is not a guaranteed win but this worked. The loaf was a bit denser than typical sandwich bread from the grocery which suits me fine. And it is so much more flavorful. It also worked great for an onion sandwich: butter both slices, fresh ground pepper and salt, then a thick slice of sweet onion. That's it. Simple but is ambrosia for me. Goes great with my vegetable soup.

Next baking adventure: whole wheat sandwich bread.

Had a ton of leftover cabbage from the Bierocks I made for Oktoberfest dinner the other night. That was great too. Sauerbraten, red cabbage, potato pancakes, spaetzle, Jaeger Schnitzel, and homemade applesauce.

152 Another first this week: had my first grass fed steak. I was curious if the extra price was worth it. Well, it is. The thing was very tender and more flavorful. I've had wonderful steaks over the years and this was better. Since we don't eat mass quantities anymore at our age a ten ounce steak makes two portions. I think my cast iron skillet smiled as I cooked it.

I have a pound of burger in the freezer, grass fed, no antibiotics, etc. from a local operation. After the success with the steak, I'm hoping the burger will be as exceptional.

My Italian GF (RIP) was an excellent cook who specialized in Italian cuisine (duh). It’s said that he made a pasta aglio e olio to die for. He was a pasta purist: if you couldn’t make it delicious with only 2-3 ingredients (maybe 4 tops), you were doing it wrong. His pasta with garlic and oil was literally just that, although he added some red pepper.

A cursory search and Manishewitz matzo ball mix is available at several places, like Walmart. Not the soup mi, just the matzo balls. 2 eggs, 2 tbsp oil and a packet of mix. Chill in the fridge, and I use a small ice cream scooper to form them. boil in hot stock 10 minutes and it's ready.


I'll par steam some small carrots and then add to the soup to finish with the balls. Some fresh dill is nice too.

165 Here's a nice one pot meal... for your rice cooker.

One can of spam, diced and fried (Or other fowl or meat, of you prefer)
one can of whole pinto beans (seasoned if you wish)
one cup of rice.
garlic powder, salt, pepper, dry jalapeno dices

Toss the dry rice into the rice cooker.
Drain the liquid from the can of beans into a measuring cup. Do the same with the liquid form the canned meat, if any.
Toss the drained beans into to rice cooker.
If the liquid from the cans is less than 2 cups, add water (or broth, I suppose) until it is 2 cup.
Toss the liquid into the rice cooker.
Toss the browned/fried meat into the rice cooker.

Add the seasonings on top of the stuff in the rice cooker to your taste, and stir everything together.

Set the rice cooker cooking.

In 40 minutes you have a tasty rice and beans dish.

My brother gets half of a grass-fed steer every year to put in the deep freeze.

You can taste the difference in everything from the steaks, down to the hamburger.

In a blender, add 1 Can of chickpeas, reserve the liquid in a bowl
Tablespoon of tahini
several cloves of garlic
teaspoon of olive oil

Whomp it into a paste, adding the reserved liquid is small amounts until you get a consistency you like

Spoon into a shallow bowl, add a drizzle of olive oil, pepper flakes, maybe some lemon juice, and maybe pine nuts.

you can sub peanut butter and sesame oil for tahini if you don't particularly care, but it makes it taste more like peanut butter

To use an Ah-So, start the longer prong between the cork and the neck of the bottle, then the shorter one. Rock the Ah-So back and forth until it is all the way down to the top of the cork. Then slowly twist the handle and the cork as you pull them out of the bottle.
