Oysters and Salmon

Our normal host for this thread, Mr. CBD, is taking the day off from writing about food, presumably because he is currently researching the subject. There is a good chance that his research involves oysters, which he mentions in most every one of his Food Threads.

I share his gustatory passion for oysters. On a recent trip to Florida, I had baked oysters as an appetizer at one dinner, then I followed it with fried oysters as my entrée. When the plates were being cleared, my wife jokingly asked the waiter if the restaurant had any desserts that featured oysters. He said they could improvise if needed.

So where are the desserts or sweet & savory dishes involving oysters? How about an oyster sundae?

Anyhow, it seems inconsistent that I love oysters served any style (including raw), and I also love crustaceans, but as for finfish, I can take it or leave it. If fish is blackened, fried, smoked, or covered in a sauce, I generally like it, but if it’s just oven baked, I’d rather pass.

My wife, however, loves salmon. One thing she does that makes it more palatable to me is a simple, homemade dill sauce. Her quick recipe is equal parts mayonnaise and sour cream mixed with dill seasoning to taste. (She uses Spice Hunter Deliciously Dill.) The dill sauce is then slapped on a piece of salmon that was cooked in the toaster over. It’s quick, easy, and very good.

Artisanal Bologna

As homogenized as this country is, it’s still fun to seek out local food specialties. One of the unexpected treats that I found when moving to East Tennessee is artisanal bologna. And it’s good!

There are numerous trendy and semi-upscale restaurants hereabouts where homemade bologna is featured as a protein, and where “artisanal bologna” sandwiches are on the menu alongside gourmet sandwiches and burgers.

Pit smoked bologna is also a thing here.

As a latchkey kid who had the house to himself during summer, canned pasta dishes were a childhood staple of mine. Franco-American Macaroni and Cheese was a particular favorite.

As we all know, Kaboom cereal pretty much defined Ace’s childhood. Are any of you nostalgic for Kaboom or other discontinued cereals?

I felt very space age eating Breakfast Squares at the bus stop if I slept too late to have a bowl of cereal. (Selling shelf-stable brownies as a breakfast item was a brilliant marketing move by General Mills.)

Cooking for a Crowd on Short Notice

You find out on short notice from your spouse / child / in-laws / etc that a crowd is descending on your house, and you’re going to have to feed a dozen or so people. What can you prepare on short notice, with little effort, that will feed the crowd, and have them praising the meal?

An option that I am usually provisioned for is a pot of red beans and rice with smoked sausage. There are usually several cans of Louisiana-style, creole red beans in my cupboard at any given time, and I likewise have several packages of Texas-style smoked sausage in the freezer.

I can grill up the sausage in a heartbeat, cut it up, and throw it on the stove top with the red beans. In a separate pot I can boil up some rice, and I might even make some homemade garlic toast.

Not a bad meal in less than an hour to feed the crowd.

Mushroom Chive Toast

Look at this tasty treat that my wife whipped together, literally, for a recent party.

It’s chopped, sauteed, baby bella mushrooms mixed with cream cheese, garlic, Worcestershire sauce, salt, pepper, a dash of tabasco, spread on sliced French bread, sprinkled with chives, and baked.

It was a crowd pleaser, and since it used a baguette, I consider it French cooking.

Are Cupcakes the Most Consistently Disappointing Treat

I’m guessing there must have been a good cupcake somewhere in my life, or else I wouldn’t have bought so many over the years, only to be consistently disappointed.

I’m clearly a slow-learner, since it took me a long time to understand that most cupcakes are just flavorless, dry pieces of edible sponge, topped by frosting, which is sometimes then decorated with candy confections. I wouldn’t eat a serving of just frosting and candy, but that seems to be where the action is in a cupcake.

To be fair, there are also a lot bad full-size cakes that are similar, but there are also great cakes that are moist and full of flavor even without the frosting.

Any cupcake fans want to set me straight?

6 Salmon is my preferred fish. We usually have atlantic salmon but I recently got some coho and that was a different experience, the flesh was not as flaky, but it was still very good. I love the deep red color.

Sources I spoke with informed me that the USSS advance team was scouting the holes ahead of President Trump as he was golfing. Agents spotted the suspect in the tree line in possession of a semi-automatic rifle which they believe to be an AK-47 or similar. The agents either exchanged fire with him, or else it was only the agents shooting at the suspect—this remains unclear. Probably. It is also the miracle behind the Chinese restaurant smell. You can't stir fry everything with it, because it has a low smoke point (350 F), but that smell sets my mouth to watering.

78 The county library started a "spice club" for patrons. Each month the local branches offer a packet containing the current spice and a flyer with its history and recipes featuring it.

September's spice is dill. The recipes are dill pickle dip, salmon wraps, and simple dill potatoes. There's enough spice for 2 of the 3.

171 6 I made roasted halibut yesterday for my mom. It’s an excellent white fish that almost tastes like crab. I didn’t nail my roast halibut (it was very slightly overcooked), but it was very good. Probably better than 95% of restaurants making this dish.

I did go through a liverwurst phase when I was a wee Meanie, probably because my older brother hated it.

One of the fun parts about growing up in the 70s was Mom preparing food in the kitchen with the little 14" TV in the corner. One night, Cronkite was showing footage of some civil war in Africa, and they showed some little kid about my age with his guts blown out while his mother was sobbing. For a long time after that, I couldn't eat spaghetti. Thanks TV news!

What's funny is we all could eat at each others homes and the food would be pretty much the same. The stuffed cabbage, the Kolbasz, Chicken soup with dumplings, etc. All of the moms learned from their moms who came from "the old country" at the turn of the last century. And, then, there was the pastries. OMG! No wonder I've been fighting the waistline battle all my adult life. LOL!!

Lea and Perrins offered a "white" Worcestershire sauce for years, that was really a sweet sauterne sauce with some of the Worcesterspices. As the saying went, I put that shit on everything, and used it as a base for sauces and marinade. Great on fish, shellfish, pork. Late in its career they started calling it "Rooster Booster." Unilever decided to kill it everywhere, and no one offers a pre-made sauterne sauce.

Panni potato pancake mix was just done away with this year.

• Pepperidge Farm’s Mint Brussels cookies. They’ve apparently brought them back as a holiday-only item but I don’t need extra cookies during the holidays. I used to practically live on these in college.
• Wise Cheese Waffies. We called them Lich Waffles in my college gaming group. These plus Häagen-Dasz Vanilla Swiss Almond were my meals when the dining halls closed.
• Just about anything I used to like that is now made with HFCS or without lard.

Plan is to mix some into vanilla frosting this week and make a ginger carrot apple cake (carrot cake mix with apples and carrots shredded in and extra ginger added, and water reduced) with a vanilla maple frosting.

It's my Sandra Lee bake of the week - it would taste good as a cake or cupcake, I think, but cupcakes are just WAY more work than making a 9x13...and this will be a weekday dessert/cake, so easy is best...

Wood fire is the key, so you got the right idea. The technique is to put the flesh side down first, and let it go for no more than a minute. I usually spread bacon fat on the skin during this step. Then flip it and let the fire lick the skin for no more than a couple minutes. On my smoker/grill, I can close the vent and cover, which banks the fire pretty quickly and sends up a nice plume of smoke. Pull the salmon after another minute, depending on thickness. Pair with a frosty Chardonnay..

The backstory: my then girlfriend's grandma lived in Pella, IA and the Dutch ancestors make fantastic ring bologna. Dutch letters (pastry) too, but that's another thing. So whenever the family visited grandma, they would load up on bologna and bring it back with them. The way they prepared it to eat was by boiling, and then peeling the casing off.

So anyway, one day my girlfriend asked if I wanted some bologna. I said sure, since I was hungry. Well up until then I didn't know the backstory, and the only bologna I knew was the lunch meat kind. So she starts some water on the stove, and I'm like, what's that for. She said she was gonna boil the bologna, and I just about walked out. I was picturing her taking some Oscar Meyer and throwing it in the pan...shudder...

356 I am making apple cider vinegar on my counter right now.

I make it in a gallon jar, but I have made in in a half gallon jar too. My recipe is:

chop up apples, or use skins, and cores (I cut out the wormy cores because I am posh) You need the raw skins because that is where the wild yeasts live. I chop them to chunks about the size of the last joint of my thumb.

I then put them into a jar, and and fill the jar up mostly full with tap water. You can use distilled water, or bottled water, but I never found there was a problem. If you worry, then hold back some apples, and put them in the next day when the chlorine has had a chance to react out against the apples.

If you have apple cider with a live culture like Braggs, add some. Other wise just cover the jar with a loose top, or a cloth.

Stir the fruit down with a clean wooden spoon once a day until the fruit sinks to the bottom. It will smell like alcohol.
Then let it sit until there is a clearish white gooey skim on top of the jar. That is dead yeast cells, and the "mother" and it means your juice is going to vinegar.
When it gets thickish and smells like venegar, you can start using it.

I make a nice try of freshness and one dip...and folks are happy.

When I make the protein, if it's family, I splurge (salmon filet is my best and easiest, but my roast beef and mashed potato have also been demolished). If it's not (and it's teens), it tends to be pasta or chili...

Tripe was a much-feared dish when mom made it. The smell was horrid, so us kids opted for the liver. That was the choice. When she felt charitable, she'd prepare the liver with bacon, but most days it was either tripe or liver. Mom was a gifted cook, but she fell under the mistaken idea that organ meats had to be thoroughly cooked, i.e., vulcanized.

Anyhew, one day at the table, the tripe was looking good to me, garnished in a nice tomato sauce, so I asked for a taste. My brother and sisters thought I lost my sense, but whodathunkit, it beat mom's liver by a country mile. I don't trust myself to make it, but I may need to get over this and make the effort..

Pea soup is not hard to make, you need split peas, and pot to boil them in. It is good to have some sort of hambone or similar for the meaty taste, and you can shred carrots in for a bit of color. You do have to blend it though.

462 On the subject of oysters, there's a guy farming absolutely incredible ones off Tybee Island here. They're called "Tybee Salt bombs" (Tybee bomb, get it?) and they are wonderful. We had some at our annual oyster roast in January, which from now on will be a memorial roast in memory of my husband.

We fed nearly 100 people again, a variety of wood fire roasted oysters.

For some reason the sauce was better and tastier than their Spaghetti-Os and some others that were just too dang sweet. It was the only Chef Boyardee that I would eat. (OK, Mom made the pizza stuff on occasion, because we weren't always middle class.)

Also, the Progresso Tomato Florentine with Italian Sausage soup. The discontinued it ten years ago or so. It was good. And, now that I look at it, it had the same waxy pasta, and the little sausage bits look kinda like the meatballs in Roller Coasters......

Probably not, I buy distilled white vinegar for cleaning and canning, and I use the homemade stuff for mixing with water for drinking, and for cooking. I used about 2 gallons last year. It is however, free, which is my favorite price-point. I have apple trees and I hurt a little inside for every apple I toss into the compost heap.
It is supposed to be good for what ails me, whatever that is, so I do like drinking it. It kills the chlorine taste.

495 As a young'in, one of my lost favorites was one of those Banquet or other-brand frozen dinner trays. I think it was "Chicken and Dumplings", but unsure if it was Banquet-brand, or named differently.

It was chicken cubes in chicken gravy. On top of it was a layer of dough. All in a family-sized, large rectangular tray, so it wasn't a pot pie. Though it would be one of the best pot pies if it were.

It would have to cook for a while in the microwave, which would harden the dough on top like a crust. I believe the dough had indentations into 4 rectangular sections. so you could break apart and quarter the dinner for a family of four.

497 My family just had salmon for dinner. I seasoned it with a light fajita base and then added a hefty amount of orange thyme seasoning. I grilled it and paired it with ziti pasta in a garlic lemon cream sauce. Good stuff.
