Do you agree with the following statement? More Restaurants With Attitude Are Needed - Put “The customer is always right” axiom to rest.

I just heard about this chef who refuses to sell tuna cooked past medium rare. He also won’t give patrons ketchup for their steak, nor will he make substitutions like kale for spinach. This sounds like my kind of place.

As a piece of tuna goes from being cooked medium-rare to well-done, its texture moves towards resembling a can of StarKist. Chefs declining to wreck tuna like this are often called arrogant and elitist, but they choose their profession because of their passion for food, not to please every customer. Ruining a piece of expensive fish (fish isn’t supposed to be cooked dry) just to please a customer who should choose another fish goes against all their training and experience in the kitchen.

As for the ketchup refusal, if a fine-dining chef doesn’t want ketchup in their restaurant, that’s their prerogative. Not wanting to dumb down a cut of beef with ketchup makes perfect sense to me, especially if the chef has gone to the trouble of creating a sauce for it. To customers whining about this, I’d tell them to go to Golden Corral to get a kiddie steak, and get it well-done, like a seven-year-old. Refusing to substitute spinach for kale—or any of the other annoying substitutions finicky, self-centered customers commonly request, thereby messing up a kitchen’s rhythm—that’s fine with me too. Some overgrown brats behave as if they’re at Chipotle, where they can customize all the ingredients in a burrito.

I did that. Those that skipped a test for some 'valid' reason got to take it later. Usually I would prepare a new test with different questions but occasionally I would use the same test but scramble the possible answers order (multiple choice). Hilarious results. The day of the shooting I saw one pic of the dead shooter on the roof. It showed the lower part of his body, he had shorts on.

Later there appear photos of the shooter crawling on the roof, it looks like he has white pants on. Then today Grassley released bodycam video showing agents on the roof w/ the dead shooter. Twice you see the lower part of his body and he has shorts on.

How does any of this make sense?

We do that with the bikes. Thank god most riders understand that with 2 wheels there is no room for error. Occasionally I'll get a bike in for a service with bald tires, but nothing more than that, and they usually get the tires done soon. Well, there *is* the wiring. So many people think that because they wired their home stereo how hard can a bike be to wire. I'll see lamp cord, speaker wire, bell wire, house wire connectors, romex, etc. I have car mechanic friends that always tell me horror stories. After listening to them I realize I don't have any problems. lol

I've heard that potato chip origin story before. There's lot of food origin urban myths, some are so myth-y.

There's the chimichanga origin story.

The Buffalo Wings origin story. And others.

Many food origin stories are serendipitous in nature (feed the drunk/hungover customer 'something'!, especially after the kitchen's officially closed for the night), gastronomic in reality ('damn, this is good!'). The good ones make the menu, the bad ones 'well, I tried'.

Some chefs are like inventors, creating many new things in their heads and, rather than in a lab or garage, having their ideas come to fruition in a pan.

I've seen some audio experts state there were three shooters. The first two or three shots were not from Crooks. The next series were from him. Then one shot with a completely different sound. There were three overseas bit-coin accounts. Cheatle refused to say how many shell casings were found on the roof.

Most assassination attempts put the target in a killing zone of more one shooter, just to be sure. I don't think Oswald was the only shooter in Dealy Plaza that November day, he was the expendable one and caught (then assassinated). Crooks was the expendable one, and killed.

Went in, sat, the waitress dropped the waters and menus.

Three minutes into studying the menu, I left a $2 tip for the waters, and walked out.

Starting to show signs here with our dog. Flap down/right hind leg drags occasionally on walks. Leash is no longer taut and indifferent to gophers or other critters. Eyes and ears going but the snooter still works overtime! She has begun to not eat regularly so we are mixing up the food. They just don't live long enough. Damnit.

They loved finding "treats" in the couch cushions. Cheerios, fishy crackers, raisins(I think they were raisins).

Termites are DEAD, and I've had to replace precious little lumber in their wake. Caught them early.

Storm wise, I've got rid of the fence debris, and have the steel on-site to start fabricating one new, from scratch.

But, rain all week, and I'm not going to go out and spark up the MIG welder in the rain. It can wait.

I hear you. I didn't get my Mom's 'baking desserts' gene, I got the recessive 'eating desserts' gene.

My only creation is a chocolate wafer cookie crumb crust patted out into a pie plate, a cream cheese filling with sour cream, vanilla, Grand Marnier, orange zest and some fresh-squeezed orange juice. Baked until golden. Not really a cheesecake per se, more of a cheese pie. Still good. But my only attempt at baking.

Back in the mid '80s, when I was still reading the NYTimes, they used to have a section with a small list that showed restaurant names with health code violations. One was a Chinese Take Out near where my friend worked in downtown Manhattan, and where he and his coworkers had bought from before. Their their health code violation citation was for 'cats in the freezer'. His coworkers were appalled. He asked them if they liked the food. According to him, a few green faces were seen.

That's good to hear. We've been having afternoon rains knocking the high temps down to about 88-90 instead of 95 or so. The side of the street I usually park on for some afternoon shade has been flooding a little if the rain is heavy, so I've been parking on the near, sunnier side. The car may be hot when I get into it after work, but that's better than flooded like my late lamented BMW five years ago this month.

Maintenance did come to fix my central A/C a week ago, and it was blowing cool that afternoon . . . but you know, the window unit has been working just fine. I've left the central unit off and have been living with just the window machine. For June, with central, I paid $85. But this window box is off for ten hours a day. It'll be instructive to see what my bill will be like next month.

While I get most people here are 'older' or whatever I really just don't understand peoples' predilection for listening to the same stuff for years and years. Perhaps due to decades of night shift work and music feeds featuring 1970s-80s middle-of-the-road bands, I just can't stand any of that shit anymore.
I could not possibly care less if I NEVER hear Van Halen, anybody from Traffic or CSN/Y, James Taylor, Steely Dan, Fleetwood Mac, any 'arena band' and especially Journey, even Jimi Hendrix. Etc. If they were popular in those time periods, I'm just fucking sick of them. And my co-workers never seem to care, it's fine with them.

As it is, the two units (one upstairs, one down) cannot keep up with the heat when it's over 110. Can get house down to 80 or so, when it's only 100 out. Place is insulated okay I guess, but the windows are old aluminum-frame 1970s vintage. Leaky as h3ll.
