Food Thread: Using A Coq Is A Cock Up!

Coq au Vin! Oh...grow up. Not that kind of coq! In fact, I didn't use a coq...I used a couple of fryers, because the dirty little secret of this most famous French dish is that by the time the old rooster has been braised into tenderness, it's pretty tasteless. But the sauce is delicious, so that's why they serve it with something to soak it up...good potatoes or even noodles. In my case it was a cheesy polenta and a loaf of sourdough.

There's nothing particularly complicated about the recipe, but this is one of those rarities where the original just isn't quite as good as a carefully thought out modern version. For instance, instead of braising for hours in red wine, I marinated the chicken in the wine for a couple of hours. That way it picked up plenty of flavor but didn't overcook. And I cooked the thighs and wings (about an hour) longer than the breasts (20 minutes, and it should have been a bit less), because...duh!

Aside from that I think I kept it pretty straightforward. And the results were delicious. And since it is a braise (quick...yes...but still a braise), I made it on Thursday for Saturday's dinner, and it worked just fine. In fact, it was probably better after a couple of days.

And yes, now you get the obligatory, "The pompous nonsense about using a wine you would happily drink is stupid, not backed up by experience, and is a total waste of money." I want to drink a $100 Burgundy with my Coq au Vin (I didn't but still...). Should I buy an extra bottle just so I can cook with it? NO! Cooking destroys most of the subtlety of wine, and what you are left with is the bare bones, which can be gotten very cheaply from any $7 wine from a reputable store. I used a $6.99 bottle of California Syrah, and since there was some left over after cooking, I tasted it. And it was fine. Fruit, tannin, maybe a bit of acid. Plain, generic wine, but perfect for my needs!

The headline is a bit deceptive, because obviously they want idiots like me to click. The reality is a bit saner, but frankly, I am so sick of the whining and whinging from all sides of the food safety debate that a pox on both houses!

Republicans on the Ohio Supreme Court ruled that bones are a natural part of chicken so a consumer should be on guard for them -- even in boneless wings

Their arguments are dumb, balanced by the arguments on the other side, which are at least as dumb.

Yes, the guy was injured by a bone in what was advertised as "boneless." But "sh*t happens." Holding all of society to impossible standards...essentially perfection...is a recipe for a riskless society that descends rapidly into sclerosis. At the risk of expanding this profoundly stupid lawsuit into a critique of American culture in the 21st Century, it exposes the rapidly expanding fear of everything that has infected us.

We are terrified of the weather, of pesticides, of kidnappers, of tainted food and water, of cars that aren't 100% safe, of mean words, of playgrounds not lined with three feet of padding.

We need to return to the America of yore, when risk was managed, and sometimes embraced as the price we paid for achievements that astounded all of us. Most of us are here because our ancestors took a huge risk. Let's get back to that mindset, and eat "boneless chicken wings" without undue worry.

He has a new (to me) section for "Healthy Recipes," which irritates the f*ck out of me. Who the hell is he to say whether a recipe is healthy. In fact, you poncy Brit wimp, your grammar sucks. A recipe can be "healthful, not "healthy."

Anyway, I saw this: Homemade salt beef. As far as I can tell, it's corned beef, but the name "salt beef" has connotations of British ships of the line battling storms as they make their way into the Med to do battle with the French and Spanish navies, Lord Nelson seasick in his cabin, and sailors eating moldy hard tack and rancid salt beef.

And yes, I used to demand fancy bourbon, but let's face it, $1,200 for a bottle of bourbon is just stupid, insulting, and a ghastly affront to most people's palates and wallets. I think the sweet spot is $40-$60 for excellent and interesting bottles, and bumping that to $100 gets you an incremental improvement in quality, but nothing mind-blowing. More than that and I think you are paying for hype and rarity, which may look good in your liquor cabinet, but doesn't translate to more quality in the bottle.

We went to a really fancy Japanese place once when we were stationed in Yokoksuka Japan and I had the smoked octopus. It was fantastic. Unfortunately it made me sick for the entire three day inport. I showed back up to the ship still sick when we sailed. Good thing I never get sea sick.

Reading about the substandard food service at the Paris Olympics because "sustainability" and other woke and climate-related concerns had priority over providing sufficient nourishment to the athletes reminded me of a similar experience at our week in scout camp about a decade ago. The focus of the food service folks was to "minimize food waste" and they had set up a program to measure every possible aspect of that.

One way to minimize waste was -- surprise! -- to serve bare minimum amounts of items that were not popular, such as a single styrofoam cup worth of steamed vegetable medley for a table of eight diners. Other equally ridiculous strictures were put in place. No one, but no one, was happy, but the "generated food waste" weights and volumes were charted religiously after each and every meal!

Side benefit: We have some perfectly ripe peaches. Bake the biscuits, split, butter, sprinkle sugar, and top with pieces of the peaches. This is food for the gods.

We ate that Octopus and Waffles our first day in Madrid and it was so yummy it convinced me to try octopus every chance I got.

129 This might be common knowledge among the Horde but I have learned of a new to me whisk. It's called a dough whisk or Danish whisk. Came across it when learning to make biscuits. It makes mixing the dough faster and easier than a spoon, the round sides make it easy to scrape the bowl and it cleans up easily. (Did I mention it is easy?) Such a simple tool and I don't have to haul out the Kitchen Aid mixer.

If you work with dough, it's worth checking out. We got a two pack from Amazon for under nine bucks. No local stores carried them.

It's b/c of processing and farming...some farmers have multiple grain products growing and winds blow, so they don't always end up with "perfectly clean" product (aka, there can be a little wheat in the oats). Also, processing lines may or may not be dedicated solely to the grain.

I know allergies are tough for people, and this actually matters more to those with wheat allergies vs celiac (which as a huge intolerance, is still not immediately lethal). But, that's why you get the labeling.

It's also got to do with the fact that up until the 1970s or so most people with severe food allergies died young and never got the chance to reproduce. Now with more modern medicine and epie pens and the like most people with severe food allergies grow up and have kids who they pass those allergies down to.

152 In addition to the dough whisk I mentioned in comment 136 I rediscovered a simple tong that has been around for a long time but isn't seen so much anymore. Instead of the nutcracker style hinged at the top, it is a scissors type with angled triangular heads to grip. They work great for turning bacon and sausages and getting them out of the pan. Such a simple thing that works well. As I do more in the kitchen, I appreciate these small things.

BTW, Mrs. JTB inherited them from her folks when she left home. No telling how long her folks had them before that. So they have to be at least fifty years old but still look new.

Reading about the substandard food service at the Paris Olympics because "sustainability" and other woke and climate-related concerns had priority over providing sufficient nourishment to the athletes reminded me of a similar experience at our week in scout camp about a decade ago. The focus of the food service folks was to "minimize food waste" and they had set up a program to measure every possible aspect of that.

One way to minimize waste was -- surprise! -- to serve bare minimum amounts of items that were not popular, such as a single styrofoam cup worth of steamed vegetable medley for a table of eight diners. Other equally ridiculous strictures were put in place. No one, but no one, was happy, but the "generated food waste" weights and volumes were charted religiously after each and every meal!

I remember 1st time I cooked for the youth group at my Church...I was the only person all year that bought and made enough food (I did chicken thighs and bought 50lbs for 55 people...and then had 3 sides and dessert)...they might have had 1-2 thighs left...

Try it. We have a soul food kitchen in Mobile that makes it - I always get greens when we get food from there, because you want to talk about heavenly. Normally, I like a good cornbread to soak uo the juice, but you can’t get nuts when you are eating waffles, so sacrifices need to be made.

175 The biscuit recipe I use is from Cowboy Kent Rollins. He did a YT video on them and always includes the recipe and instructions for making the dish in the kitchen instead of a campfire.

I've tried at least a dozen of his recipes and each one has been delicious.

Enzoni

1 ounce gin
1 ounce campari
3/4 ounce lemon
1/2 ounce simple syrup
4-5 grapes, muddled (green or red)

Add ingredients to a shaking tin, muddle grapes, add ice and shake. Double strain into a rocks glass over a large clear cube.

This basically turns a Negroni into a kind of punch or English summer cup.

Very refreshing and fruity. Also works well straight up should you wish.

If you're someone who finds Campari too robust for your shy and retiring, delicate pink taste buds like CBD. I'd suggest you flip the amounts in the recipe between the Campari and lemon juice.

That'll make things a bit more sour yet keep the good things the Campri does for the drink.

Give it a whirl. Esp with Mediterranean chow! That's a good combo.

203 We are at peak season for beefsteak tomatoes around here. Besides the local farmers market, a local grocery has a section for produce grown in the area. Time to celebrate with a tomato sandwich. Whole wheat bread by preference, mayo and salt and pepper on each piece and a good thick slice of tomato. One slice will cover the bread if the tomato is the right size. Some chips and a cold beer on the side. Seriously delish.

After draining and rinsing the chickpeas, place them in a bowl and mash them with a fork or use an immersion blender.
Add all the other ingredients to the bowl and use your hands to mix very well.
Use your hands to shape the mixture into into 6-8 patties.
Cook on the BBQ at 400 F for approximately 10 minutes per side or heat 1-2 tsp oil in a nonstick pan over medium heat and cook the burgers for about 5 minutes per side until browned and firm. Also ca oven-baked at 400 F for 20-30 minutes, flipping half-way through.

I would take those clams and set them aside while I chopped up green and red pepper, and onion and sauteed that. Chopped some Monterrey Jack cheese into small slices. Then popped the clams into the steamer, dropped the onion, peppers and cheese atop, broiled, then ate an entire hour of prep in about five minutes.

OK, this is how I used to make it for my kid when he was young and a very picky eater:
1. Have pre-cooked pasta in the fridge.
2. Put 1 or more slices of American cheese in a bowl with a little milk, microwave for 30 seconds, or whatever, so that it melts.
3. Stir it, then stir in some pasta.

374 Strip steaks are salted and resting in the fridge. Grilling to commence in about 90 minutes.

Made a very nice beef lo mien earlier in the week, marinating 1/2 lb of petite sirloin strips in 2 tbspns each of soy and oyster sauce, 1 tbspn dry white (cheap) sherry, 1 tbspn sesame oil, 2 tbspns corn starch 1 tspn sugar (optional) and 1 tspn ginger powder.

Prep your bok choy/cabbage/celery while marinating, stir fry with a sliced onion and clove or two of garlic. Plate when cooked to your liking, oil your wok again (I'm using a cast iron skillet, because 'Merica!) and add the meat. When about medium rare, add your veg and turn off the heat. Cook your favorite noodles (I think Udon works best, but you do you). Put in serving bowls when done, and add your wok/skillet product over the top. Garnish with green onions or peppers. Eat with chopsticks. Fingers also acceptable...

409 Doing up 10 mini pizzas for dinner for the family starting with a 10-pack of naan bread as the base. Pizza tomato sauce, mozzarella cheese, then a selection of 3 meats depending on who wants what (sliced pepperoni, finely diced roast beef or finely diced roast chicken), black pepper for the chicken, sliced mushrooms, diced Spanish onion (for extra flavour!) and diced red/yellow/orange bell peppers.

Placed on metal trays, 2 large, 1 smaller, then into the oven at 400 deg F for 10 mins, then swap the top and bottom large trays and back in for another 10 mins, then take those two out and if the middle smaller one needs an additional 5 minutes it gets that.

I go thick on the toppings (because why wouldn't you?) If you prefer going thinner on your toppings, drop the temperature to 350 instead of 400 to avoid burning the naan.

Oven racks: We've got the standard two that came with the oven as well as a useful little riser-rack that clips onto the top two of the normal racks. Very useful for doing up pizzas or larger batches of cookies.

It gets past the $20 a day parking and you can use the bike path, put your bike on the ferries and avoid having to bust ass up the rather steep hills we have here. I don't think they're in it to save the world as much as being able to get to work without becoming a sweaty mess.

e-bikes are rapidly becoming one of the leading sources of fires in NYC. There have efforts to ban them completely from indoor storage. The city is even talking about building separate facilities where they can be stored.

They can be useful but I'd bring a live alligator into my house before I'd bring one of those things in.

I will grant you that e-bikes have some legitimate uses, but ultimately they would not exist were it not for the great Gerbil Worming hoax. The people who ride e-bikes would be riding bicycles with little gasoline weed-whacker engines on them. Which do exist. And mopeds, of course, which have been in the market for 60 years or more. Unless one is a an athlete in great shape, riding up steep hills on a pedal bike is damned hard work.

True celiacs are only 1% of the population, so it’s more odds are it isn’t than it is. As for money, normally, it’s insurance companies that balk at testing because of the odds. In a child that age, he would then go to a dietitian and nutritionist, both of who would be attached to the treating hospital. It’s not necessarily a money thing, but an insurance company thing.
