If it's just a plain ole run of the mill hot dog on a white bun, mayo and dill relish. Possibly chili and white onions, but no cheese! If it's a real beef frank, mustard, grilled onions, and the bun should be toasted. Brats are a whole different conversation.

I am not cooking today.
My girls made me Belgian waffles with a fresh berry sauce (strawberries and blueberries) and bacon for lunch. My boys and spouse are making my fakeout meatball subs with sweet potato fries and roasted okra for dinner. I would have asked for sushi or fish, but they took me out to a sushi lunch Friday (where weekday lunch specials make sushi affordable - lunch for 6 "adults" for under $100 including a 20% tip is kinda amazing)...and the boys don't trust themselves with fish, so I'll probably make something this week... Mother of my children is getting crab clusters for dinner. To dip in 'drawn' butter. Not sure where the name came from except it's a long drawn out process to skim the foam off, then extract the 'good stuff' from the top, middle, and almost bottom. What settles at the bottom, the grit? Toss. Worth the effort. For (insert CBD level snobbishness here) 'mouth feel'. Posted by: Divide by Zero at May 12, 2024 04:11 PM (RKVpM) 22
As for hot dogs, made them for the 1st time in 9 months this week.
I had picked up a wildly on sale sauce - Sabretts Onions in Sauce. It was wild. It was almost horseradishy vs oniony, but it did make a great topping with relish and yellow mustard for the dogs. Usually, I am just raw onion, relish, and dijon, but this was a fun sub...for about $2/jar. (I think Safeway originally wanted $12, so this was another "buy the discount thing and figure it out" purchase). Posted by: Nova Local at May 12, 2024 04:12 PM (exHjb) 23

I have no problems with the hot dog condiments, but I would also add (wet) crushed hot peppers, because I add this to most everything, and I'm also somewhat partial to relishes.
However, with condiments, less is better. Just a touch of a few. Oh, and celery salt. Posted by: From about that Time at May 12, 2024 04:13 PM (4780s) 27

What's the difference between ketchup and catsup?
Grape Catsup. Wash and stem the grapes, and stew them slowly, with a little water if necessary, until they are soft enough to rub through a colander. Measure the pulp, and return it to the preserving pan, allowing to three quarts of it 2 lb. of brown sugar, a pint of vinegar (white wine or cider), an ounce each of ground cloves, allspice, cinnamon, salt, and black pepper, and a saltspoonful of cayenne. Boil all together until the quantity is reduced to about one half, and is very thick. Skim, take from the fire, and when cold bottle and seal with wax. Gonna use some frozen salmon with some on sale krab this week (and almost cook through the salmon so I can flake it like the krab). I think I'm then gonna layer a 9 by 9 with cooked white rice drizzled with soy and furikake seasoning...then topped with the fish and baked for 5-10 minutes to warm through...then topped with diced cucumber, diced avocado, diced green onion, diced pickled ginger and then soy and this Aldi's siracha aoili I tried tonight on the sweet potato fries which I think should rock on the fish as the "spicy" version of sushi...and some salt and pepper somewhere. Very budget, so if it fails (fish is under $8 total for 1.5 lbs)...well, it's a Monday dinner...and I might let the kids make homemade muffins (and we'll have some more Mother's Day sale strawberries), so there will be something else to eat... I went a local rodeo yesterday. The only substantial food being offered was hamburgers, hot dogs, French fries.... Except for the firefighters, who had sausages with onions and peppers (though, you could have it without). Excellent food with no additional toppings, suitable for the strength required to stand for 2 hours (it was a standing room only crowd when we got there, an hour before the events started - 3,000 people). FETA CRANBERRY PINWHEELS
I just tested this recipe for upcoming summer get-togethers, and all my tasters loved them: 8 oz. cream cheese, room temperature 1/2 c. feta cheese crumbles 1/2 c. finely cut green onions 3/4 cup dried sweetened cranberries 2 large flour tortillas (burrito size) Combine the cheeses and onions in a bowl; mix well. Divide and spread mixture evenly between the two tortillas, pushing the cheese mixture nearly to the edges. Sprinkle dried cranberries evenly between two tortillas. Roll up tightly, wrap in plastic, and refrigerate at least one hour (or overnight). To serve, cut each roll into 12 slices. Spinach tortillas will yield a festive look for the holidays ... Can also be made with gluten-free tortiillas. Posted by: Kathy at May 12, 2024 06:25 PM (p69D5) 176
Marcus Rieker of Rieker's Prime Meats in Philadelphia had this to say Weisswurst vs Bockwurst:
Weisswurst. Type of bratwurst, which translates to "white sausage," is a very mild, finely textured veal and pork sausage native to southern Germany. Seasonings might include lemon, nutmeg, and white pepper. In German tradition, weisswurst is poached, served in a bit of its cooking water, and eaten by sucking the meat out of its delicate casing. Bockwurst. Essentially a weisswurst but a little smaller and seasoned with fresh chives or sometimes parsley. The fully cooked sausage is commonly eaten at breakfast https://riekersmeats.com/ collections/meats Posted by: olddog in mo at May 12, 2024 06:26 PM (ju2Fy) 177
Kathy, that sounds fantastic! Thanks for sharing. I have four packages of tortillas in the freezer BTW. Guess they were on sale.

Hot dogs didn't become a classic because they are good - they became a classic because they are cheap. Being the least meaty form of meat, they need something to kill the taste, and something to provide broader nutrition. Chili and cole slaw do this the best. Onions and mustard can be included.
Better forms of sausage, like brats and 'gourmet' hot dogs, need less cover. Real German brats get mustard or sauerkraut. Sabretts onion sauce is great, but at its best when served from a pushcart in NYC. Posted by: Penultimatum at May 12, 2024 06:32 PM (1QSX/) 181

I made a red curry last night over rice noodles. I used a different recipe that called for coconut milk and peanut butter, and included bananas added on the end so they would get cooked but not cooked to paste. It made it more like a satay, which was surprising.
The red curry paste I have is spicy as can be, but my wife still put more spice on it. Posted by: Kindltot at May 12, 2024 06:46 PM (D7oie) 187

Posted by: gourmand du jour seed oils are linked to inflammation, and may be toxic to your liver if (the oils are) cooked to hot. I have heard a lot of biochem supporting these two statements, but on the whole there are actual studies linking chronic inflammation correlation to seed oils. If you add the studies coming out that seed oils really don't reduce heart problems at all, the only reason to use them is cost, and the fact that vegetable based margarine spreads better on bread at room temperatures. If butter was bad for you I'd have been dead decades ago... Posted by: gourmand du jour at May 12, 2024 07:05 PM (MeG8a) there are a lot of speculations about that, one is there was a better profit margin on the seed oils, and another was the idea that animal fats are bad as a matter of faith from influential madmen like John Harvey Kellogg and Ancel Keyes, and a third is that the seed oils being cheaper hide inflation caused by the Federal and Fed policies. I can say that since the adoption of "seed oils are good and animal fats are bad" policies to combat heart disease, the incidence of heart disease has gone through the roof in the last 60 years. whatever seed oils do, it doesn't seem to reduce heart problems. Posted by: Kindltot at May 12, 2024 07:12 PM (D7oie) 204

Posted by: Kindltot ------------- Well, Brave AI says seed oils high in omega-6 fatty acids can be inflammatory. I just bought bottle of canola oil cause supposedly healthier. It's high in omega-6. Oh well. Posted by: olddog in mo at May 12, 2024 07:12 PM (ju2Fy) 205
The only reason canola is supposedly "better" is because it contains considerably less erucic acid than rapeseed oil, i.e. a bad omega-9 fatty acid. Unfortunately it doesn't make it any better in terms of omega-6's.
