I mostly don't care whether people drink or don't drink. But if you are going to drink...DRINK! That's why lite beer and non-alcoholic wine is sort of silly. Anyone who claims that they drink only for the taste is probably lying. But...the alcohol is a vital part of the taste! There is a particular mouth-feel to the alcohol; "burn" is a good word to describe it. I don't think I am alone in enjoying that part of it, particularly in mixed drinks and liquors drunk straight. So what's the point of Ritual Zero Proof? They claim to have duplicated the taste experience of liquor, but I find that difficult to believe. And at more than $30/bottle, that's more than I want to spend to avoid a hangover I don't get anyway because I am an adult and don't drink to excess. I don't want to slam them, because contrary to my expectations they aren't preachy and irritating. Sure, they are "sustainable," but that's just marketing. They are not anti-alcohol, so I'll give them a pass. I just don't really get it! However, I will give dispensation to those who use maple syrup on Brussels Sprouts! I tried that and it worked nicely. I still prefer Agave, but still... And yes, I used to demand fancy bourbon, but let's face it, $1,200 for a bottle of bourbon is just stupid, insulting, and a ghastly affront to most people's palates and wallets. I think the sweet spot is $40-$60 for excellent and interesting bottles, and bumping that to $100 gets you an incremental improvement in quality, but nothing mind-blowing. More than that and I think you are paying for hype and rarity, which may look good in your liquor cabinet, but doesn't translate to more quality in the bottle. Comments(Jump to bottom of comments)1

I made shrimp scampi last night. It's ridiculously easy, but also ridiculously easy to do badly by overcooking.
Melt butter and olive oil in a pan, saute some garlic, add the thawed and peeled shrimp, and saute for 1-2 minutes. Then add a dry white wine (1/4 cup) like Sauvignon Blanc, flip the shrimp, and cook for another 1-2 minutes. You want them to have a C shape (for cooked), not an O (for overcooked). If we are going to fry fish in our house we use Kentucky Kernel seasoned fish fry. Love it, comes out crisp with some flavor and it is not overwhelmingly spicy like most other fish fry mixes. Plus a small box goes a long way.

Some little dumpy place in Lakenheath Village, England had the best fish and chips. Batter wasn't too thick and it was crispy and delicious. Great fries. Served in a newspaper.

I had a really nice deep-fried food a few weeks ago. From a cookbook ca. 1881, slice an apple thin and deep-fry it to golden brown. No breading or anything else added, although I also salted them. The recipe didnt call for that but I suspect salting is left out of a lot of older recipes.

I have a small oil fryer that I take to a table out back when I make my personal favorite batter fried dish, fried oysters.

I made a very enjoyable cocktail from the 1946 Joy of Cooking today. One part benedictine, two parts cognac, and one part lime. Stir together. I made one part be about ¾ ounce, as I recall, because thats how much lime was in the juice. I also added a single ice cube.

Long John silvers only has one restaurant within a hundred miles of me but I know where it is. It’s both LJS and A&W. An eight piece family meal will feed me at least three times. And their coleslaw is the best.

I stopped eating fried food about a year and a half ago but treated myself to Raising Cane’s Chicken Fingers a couple of days ago. Really good but my stomach let me know not to surprise it any more with fried food since it got used to not having it.

I like fried everything, but the chickens is the best.

We have a $40 Black and Decker toaster oven that has an air-fry setting. The thing gets used more than any other appliance besides the coffee maker.

Better to dry brine then baste during cooking with whatever marinade you have. Or, board sauce; chop up a bunch of herbs and some garlic on a board. Then rest your steak on top of it. I'm making Chicken What today. It has a long French name: Supreme de Volaille au Pavillon. Something like that. Try telling that to a six-year-old who asks What's for dinner? So in our house it became Chicken What.
Pierre Franey never had it on the menu, but always in the kitchen for the guest who would come in and say, Pierre, I'm having a terrible day. Make me happy. Chicken What would make anybody happy, so it's my go-to for the sick or new neighbors or whatever. Speaking of booze, I had some killer beer yesterday. Lochiel Brewery (Mesa, AZ) Thorfinn Berserker. A barley wine, really, and 20% ABV. I could really taste the alcohol. Overall, very tasty, but a 5 ounce glass was enough for me.

I’ve been making 2 minute chicken Caesar wraps.
I buy baked chicken breasts from my grocery deli that I shred and a bag of shredded lettuce. I dice up a couple of tomatoes and just refrigerate until I’m ready to make the wraps. Seasoned spinach burrito size wraps are my preference, After packing and folding the wraps I put in the microwave for 25 -30 seconds. I think though it’s the Caesar dressing on the wrap that makes it taste so good as I’ve had just the wrap and dressing before when I had used up the other ingredients. Again , palate of a hobo. I have never been disappointed by it. Another good spot for Brit comfort food is the George and Dragon pub on Center Avenue in downtown Phoenix. City Fish in Wethersfield, CT and the Portuguese Holy Ghost Society in Stonington Borough, CT. Best fish and chips I have ever had in the US. Sadly the City Fish place was sold soon after we moved from CT. I do not know if they still exist. The Holy Ghost Society only does the fish during Lent. There is a line out the door and around the block on Fridays during Lent there. Best get there early and be prepared to wait 45-60 minutes before you can order. I make air fried potato wedges in mine, but instead of using oil, I throw a slice or 2 of bacon in with the wedges. 20 minutes at 390, pause every 5 minutes and stir.

I would have cooked her recipe for pickled pig dick wrapped in dirty diapers to try to impress her, but the adobe is very good and I’ve been using it ever since. It’s one part red vinegar mixed with one part soy sauce and then seasoned heavily with bay leaves, garlic, and pepper. I use it as a dipping sauce or a sauce rather than a marinade. The adobo has a Lea & Perrins flavor profile to it, but I think it’s “cleaner,” a little more complex, and accentuates the flavor of good steak better. It's VERY important to make sure you feel the hummus (squeeze it together) before you roll and breadcrumb b/c it has to hold together. Interesting Bloody Mary fact: the original drink was invented at Harry’s in Paris. But it was basically just tomato juice and booze. When it was introduced to NYC, the customers weren’t impressed, thinking it was weak and bland. It didn’t help that it was renamed the boring “red snapper” because the bars were too squeamish to call it a “Bloody Mary.” So lots of spicining agents were added — pepper, horseradish, Tabasco, etc — and the drink took off as one of the all time classic drinks.

My kid did make me allergy-safe cranberry chocolate "American" scones (she was at pains to tell me she made the American style, not the Brit style...okay. Since I can't have all the dairy in either version, I'm not sure I could tell if she went one way or the other, other than shape). They were really good.
Her trick is to start from the allergy-based recipe and ask me how to sub. When she said "mom, I need a sub for heavy cream and buttermilk", I told her it had to be Asian canned coconut milk b/c she was gonna need that fat level. Other times, when it's a recipe for just milk, I'll tell her my oat milk (if sweet) or rice milk (if savory) will work. Ive been researching potato chip cookies. About a year ago I found some kettle-style jalapeño potato chips ridiculous cheap because they were a few days from expiration.
Between one thing and another, I didnt get around to using them until last week. I was prepped to throw them out if they were bad, but I would never have known they were a year past their expiration date just by tasting them. I made some somewhat standard cookies but using potato chips as well as pecans. And I made what were basically potato chip sandies. That took about half of an 8-½ oz bag. Found a dive bar (Saloon don't you know) that has specials of $1 wings 3 times a week and fish and chips on Fridays (4 pieces for $14) with a side of coleslaw, and fries or onion rings. The fish is battered really nicely done. The wings are okay; but, their 'hot' sauce isn't. I'm going to have to try their other sauces.

I just got home and saw the fish picture so decided to jump in with a recipe I made up yesterday.
I had a piece of orange roughy and so me home made cole slaw so decided to fry it.The fish that is. Dipped in egg and then a mixture of bread crumbs and cornmeal. Fried in avocado olive oil. When crisp, took it out of the pan. Squeezed some lemon, chunk of butter and some capers and poured it over the fish. Call it fish piccata. Big step up from tartar sauce. Home made cole slaw, roasted asparagus. I really like the Orange roughy. Last time I broiled it and it was equally as good. About the thickness of cod loin and a very clean flavor. 9 -- I do an adulterated Korean galbi. Throw steak in plastic bag, add sesame oil, soy sauce, crushed toasted sesame seeds, finely chopped green onion, sliced or crushed garlic.Throw baggie into the fridge. Turn it and squish it a couple times a day. I've left it meditate upon its sins for five days, giving the marinade a good chance to soak into meat. I have also used it after a couple of hours. Don't ask me for amounts; I guesstimate.
