Food Thread: Old Blighty And Older Holiday Edition

Passover! It's a remembrance of 400 years of slavery in Egypt, and our ultimate liberation, courtesy of God. That led to all sorts of interesting things, like monotheism, the 10 Commandments, Judaism, the creation of the kingdoms of Israel and Judah, the building and destruction of two temples in Jerusalem, Christianity, the Jewish Diaspora, the founding of the modern state of Israel, and of course Matzoh Brei!

But the Passover Seder also requires a meal, and I'll be prepping one for 12 people, so this Food ThreadTM will be long on photos and short on snappy commentary.

I don't have much time (you'll see why down below), so I have planned a meal with as little prep as possible, but still...12 people eat a lot, especially since there will be five documented trenchermen at the table.

And there are traditional foods that are a requirement. The big one is Matzoh Ball Soup. That's actually easy to make, but it does take a fair amount of time, and even more refrigerator space! Luckily I have more than a gallon of homemade chicken stock in the freezer, plus more than a quart of "Glace de Viande," which is a concentrated meat stock that packs an incredible punch. I use it to fortify the chicken stock and make it intense and satisfying (Pro tip...if you want to make it, try to find chicken feet and put them in the stock pot. They are loaded with collagen, which really helps).

There is also the traditional fish course, usually in the form of an amazingly unappetizing food called "gefilte fish." I have omitted it, and usually replace it with something more pleasant, like a salmon tartare. Bu that requires a fair amount of prep, so I am cheating this year and serving salmon sushi rolls. The rice is problematic for Askenazi Jews, but I have Sephardic blood in me so I will happily adhere to the tradition that rice is just fine for Passover!

Then, a large amount of beef, a potato gratin, some roasted green beans with shallots, and a superb flourless chocolate cake (PDF), whose recipe is courtesy of shivmaster Bluebell.

That's it. Although now that I look at it I realize that there is a fair amount of prep to be done, so off to the pictures!

Why am I rushed? Because we just got back from the UK, and then yesterday our delightful new(ish) neighbors had a Crawfish Boil! The weather was perfect, the crawfish were the best he's ever made, and I got my ass kicked in the Corn Hole tournament.

Roast Lemon Sole sauteed in butter, served with tiny little brown shrimp (quite briny...and tasty!) and fresh capers. The Brits know how to cook fish, and they are not shy about using fat.

They also know how to make chips. In fact, I will go out on a limb and say that the Brits make the best in the world. They have the technique down, and their potatoes are excellent.

I stopped into a Marks And Spencer store for a sausage roll, and saw this shelf as I was wandering around (click on the photo to enlarge it). The store was a small convenience store...nothing like the flagship stores, but the cooking supply shelf was amazing!

Sadly, they had run out of sausage rolls, and I had to settle for a thoroughly pedestrian sandwich. I'm still upset.

That's beef tartare on a bed of crispy layered potatoes. The beef was good, but nothing special. The potatoes were great! Crispy and crunchy and just delicious.

By the way, these are not fine dining restaurants. I would describe them as "Fine Pub Food" joints. That's why I tout English cooking. They have upped their game in the last generation and the traditional reputation of English cooking is no longer deserved.

Good butter, and Flap Meat...whatever the hell that is...just send it, Broccolini that isn't $6/bunch, garlic...lots of garlic!, well-marbled hanger steaks and elk chops to: cbd dot aoshq at gmail dot com.

Who are those poor deluded souls who shake their Manhattans? These are the same people who drink fine bourbon with coke, and probably shake red wine with ice too.

However, I will give dispensation to those who use maple syrup on Brussels Sprouts! I tried that and it worked nicely. I still prefer Agave, but still...

And yes, I used to demand fancy bourbon, but let's face it, $1,200 for a bottle of bourbon is just stupid, insulting, and a ghastly affront to most people's palates and wallets. I think the sweet spot is $40-$60 for excellent and interesting bottles, and bumping that to $100 gets you an incremental improvement in quality, but nothing mind-blowing. More than that and I think you are paying for hype and rarity, which may look good in your liquor cabinet, but doesn't translate to more quality in the bottle.

6 Two years ago I dug up compost next to the horseradish plant, and managed to get a bit of horseradish into my garden
It grew into a big plant last summer, and this year I dug it up to plant in better sites in my yard. I didn't get all the root, so when I tilled the garden this spring I made the tractor smell like horseradish sauce.

21 Most store pizza can be made better by adding your own meats, extra cheese, gochujang, or veggies.
I used to keep baggies of stuff to add onto freezer case pizza. It may never make it ideal, but I wouldn't have been buying supermarket pizza if "good enough" wasn't an acceptable option.

Safeway was a random mix of way discounted/clearance ingredients that will inspire some future recipes - 1. pickled ginger for my TBD sushi bake where I take a terrible and dairy filled online recipe that's a good concept and try to actually make it work well and 2. preserved lemons that will inspire something Morrocan or something crazy and 3. a 29 oz jar of Libby's pure pumpkin for $1.50 that may become a future chili and bread...

Hmart is tonight's dinner - Marinated chicken thighs with my kid's homemade sourdough, an arugula/green leaf/cucumber salad, and a dragonfuit blueberry salad. Red Velvet cake (vanilla icing for dairy free) for dessert.

I had a batch of home-made mayonnaise that wouldn't emulsify for some reason, so I used it to make cookies - it has egg and oil so I figured it wouldn't be a stretch

My sister came up hot for Ashkenazi Jew in a DNA test, so guess I'm hot too. Don't know the traditions very well but are we supposed to be like the Hatfields and McCoys? 'Cause I'm in PA across the Delaware River from 'Jersey and there's some tradition there too, about crossing it in the middle of the night.

So confusing. Anyway, roast beef wrap tonight. Sous vide roast beef. Tender, succulent beef.

I make beef bone broth and save the tallow that rises to the surface, strain it, cool it, then keep it in small mason jars in the fridge. It's indistinguishable from the expensive store bought kind.

To be fair, I would only try mayo now b/c I can't do butter. I was a northern "butter is supreme" fan, but in the south, they don't think that way for grilling sandwiches (probably b/c they put so much butter in everything else)...

PS - And since I get campfire mayo at Red Robin for sweet potato fries (and that's just BBQ sauce and mayo), I am willing to keep an open mind for how "X" might work in a mayo for sweet potato fries (which can't be dipped in ketchup b/c that's gross) - normally, my home go-to is a homemade maple mayo with a ton of black pepper...chocolate doesn't seem right for sweet potato fries, but I'm not against a sweet co-concept in mayo...

Now I know no one is going to believe this but I scored a number of cases of Cento brand San Marzano tomatoes on Saturday. Not only that, they had high protein bread flour along with imported Tippo 00 flour for pizzas. So, what's the big deal?

I bought them at some farmer's coop and grain mill in the middle of nowhere central Tennessee with no Italians in sight.

The owner was terrific - I will definitely go back. I have bread dough rising right now.

And it was!

Easy to make and a really luxurious tasting meal. Punches above its weight in the Yum! category.

I recommend that you give it a whirl. Easily made within an hour or if your knife skills are faster than mine, you can probably get it done in 30-40 minutes.

Budget shouldn't mean bad. Canned chicken isn't cheaper ounce for ounce vs "fresh" chicken, so it really shouldn't be a choice unless you are getting food donated from a church (and that's less a "budget" class than a social services class). Fresh drumsticks or legs are the way to go if you have to save a lot.

That's the big trick with salmon chowder. Either you or your fishmonger need to remove the skin and get rid of that nasty skin/fat.

Then your salmon chowder will be ethereally and delightfully but not overwhelmingly salmony and velvety and delicioso.

Though I do like the idea of getting then eating a recipe from Moby Dick. I'll have to try that out.

There’s this fruit and nuts thing (don’t remember the name) that’s also tasty. But gefilte fish is the nastiest shit on the planet. I'm a big fan of buying what healthy things the stores want to sell you the cheapest and figuring out how to let them shine in the easiest way (b/c the more people you cook for, the easier the prep you want - says the person who helped her kid make Madagascar beef curry sambos on Friday...and he rolled 3 and I rolled 22 - yeah, they were great, but not doing that again for awhile - thank you cooking class!)

I'm borderline curious about the beef. Not sure what would be a good meal to make with it. It's not seasoned, but is salted and in some sort of broth like substance. The expiration date on the cans are desirable...

If it were me, I'd open it, drain it, rinse it, and then pull out red wine, onion (caramelize it for a base) black pepper (and now salt b/c you rinsed it of) - and probably dried rosemary, thyme and garlic - and a cornstarch slurry. I'd almost make a gravy for a mashed potato or a biscuit. Something you expect very wet meat product with a very strong sauce. And something that doesn't cost you a lot of money if it sucks...

I'd serve a green like spinach, kale, or green beans even to complete the meal...

189 I mentioned finding preserved lemon and marinated ginger on clearance at Safeway this week (and those being the odd buys), but what's been weird is that for the last 2+ months, they've been rotating and clearancing out some high end salsas for under Aldi's generic salsa pricing (so $1/jar). If you happen to see them, they have made some pretty great marinades for both shrimp (salsa verde) and chicken thigh (chipotle) based tacos. I even picked up salsa macha (tree nut free - uses pepitas) for under $2.15. That's sitting on my shelf for use, but I imagine it would pair well with pork or chicken Mexican dishes.

AKA - if you have a Safeway, walk the Mexican aisle (I've also gotten the 100% whole grain hard taco shells for 80 cents the last 3 months, so we have had a bunch of tacos)...

Just got here. Saw my name being tossed about. I can personally attest to the deliciousness that is Miley’s chicken bog recipe. She was kind enough to share if I kept it a secret from everyone else.

I will forward the Chicken Tagine recipe to CBD and he can post or otherwise disseminate as appropriate. I tuned up a couple of recipes to creat Frankenstein’s Version.

240 CBD - Re previous thread, my mother always kept the candles used for the dinner table in the refrigerator until use. She claimed that they burned more slowly and evenly that way.

It is also a fact that candles age, more or less depending on what was used to make them, and it is likely that refrigeration will extend that process.

255 I need an argument settled. At the Jewish deli's I frequented in Chicago, it was one matzoh ball in chicken broth. Jewish Penicillin. I went to a deli in Las Vegas, and got a huge bowl with 2 matzoh balls, some short curly noodles, chicken, and vegetables.....seemed like it was wrong. A NYC Jewish person who relocated to Vegas says that's how they do it in NYC.

Never seen it that way before and even when I went to deli's in NYC never saw that.
