Food Thread: I'll Gladly Give You A Slice Of Beef For Your Vote On Tuesday!

Passover is coming soon, and because of a confluence of events I will have just a short time to prepare for a dozen people's holiday dinner.

So how to plan something delicious and festive while keeping the prep to a minimum?

What I do is think through the steps for each dish, and if there are too many, then I swap it out. And if it requires a bunch of utensils and dishes and bowls and pans...I swap it out.

Cooking time isn't a big deal. I can be doing something else while the Matzoh Balls cook. Besides, I'll make those the previous day, and that makes it smoother on the big day! Of course making stuff in advance is a huge time-saver and is probably the best way to streamline a big dinner, so choosing foods that can be made the day before or at least prepped in advance is a very big deal.

Sometimes money fixes these problems, but I just feel funny about buying premade stuff. Part of the joy of holidays is the careful preparation, and Passover is no different.

Yeah...that is a Pistachio and Parmesan Crusted Tenderloin. I spoil my damned guests! I think I will make that for the Seder meal but extract a promise of a vote for Trump before anyone gets a slice.

Is that not one of the most irritating, passive-aggressive, smug, condescending, inaccurate terms ever to emerge from the maws of the progressive movement?

It is absolutely impossible for anyone living in the United States to go hungry. It simply can't happen. There are hundreds of federal, state, municipal, and local programs designed to make sucking the government teat effortless, especially for food. Show me any American who can't get enough to eat or is malnourished and I will show you somebody with other problems that cause those issues. Drug addicts, drunks, children and dependents of those people...they are the ones with food problems. And no amount of government largesse will fix that!

That's a "GrapletTM," which is nothing more than a Gimlet with grapefruit rather than lime. Grapefruit juice isn't as tart as lime juice, so the drink requires less simple syrup, but other than that it is pretty straightforward, and pretty tasty!

The garnish is a half slice of grapefruit that I dried in a cool oven (proofing setting) for many hours. I don't have a dehydrator, but the oven worked pretty well.

Is it as good as a classic Gimlet? No, but it is fun, and as I mentioned recently we have a huge box of grapefruit because I am a sucker for earnest teenagers selling door-to-door to raise money for their school band/orchestra.

I have been thinking about seafood stews, in particular the great Cioppinos I have had in California, and made in New Jersey. It's sort of an Italian version of the French Bouillabaisse, and I think it is better. So off to the bowels of the internet to find out what the newest thoughts from our cooking elites are.

And this one stood out! Best of the best seafood stew. But not because it looked good...because it was incredibly irritating, pompous, woke, and everything else that is bad about cooking.

Okay, I am being a bit histrionic, but if I see the word "sustainable" one more time I'm going to start throwing things. Why stop at "sustainable" fish? Why not vegetables? Herbs? Pots and pans?

Screw them. Try this recipe (PDF). It's the one I always use and it's solid. I have changed it up over the years, and don't remember where I got it, so...

From naturalfake, one of our serious amateur bartenders, comes a great idea for some day drinking tomorrow!
Cosmo Apocalyptico

  • 1.5 oz Citrus Vodka (lemon, etc)
  • .75 oz Blue curaçao
  • 1 0z Cranberry Juice
  • .25 oz fresh lime juice

Shake, strain into cocktail glass, float a thin slice of blood orange on the surface.

As you can see, it's basically a Cosmopolitan cocktail using the blue curacao instead of triple sec. The cranberry juice and blue curaçao mimic the eclipse darkened sky and the blood orange slice mimics the sun at full eclipse with the corona showing.

It tastes good, looks appealing, and the theme is on point. Also the ingredients are easy to find.

What more do you want from a cocktail?


My suggestion for the eclipse drinking plan is: one when you see the first decrease in the sun's size (First Contact), one when it reaches maximum coverage (Totality), and one when the moon just leaves the sun (Fourth Contact).

And since there is no math on this blog, that adds up to one drink, which is fine for a Monday afternoon.

Who are those poor deluded souls who shake their Manhattans? These are the same people who drink fine bourbon with coke, and probably shake red wine with ice too.

However, I will give dispensation to those who use maple syrup on Brussels Sprouts! I tried that and it worked nicely. I still prefer Agave, but still...

And yes, I used to demand fancy bourbon, but let's face it, $1,200 for a bottle of bourbon is just stupid, insulting, and a ghastly affront to most people's palates and wallets. I think the sweet spot is $40-$60 for excellent and interesting bottles, and bumping that to $100 gets you an incremental improvement in quality, but nothing mind-blowing. More than that and I think you are paying for hype and rarity, which may look good in your liquor cabinet, but doesn't translate to more quality in the bottle.

So, you could make that kosher subbing out parmesan for nutritional yeast + salt...

Honestly, I just commented b/c I've never seen non-kosher Jewish food for Passover. I had a lot of Jewish friends (since I grew up in NJ), and I admit that dish is a new one for me...

10 I made some food in advance this morning.
5lbs each of Monterey Jack, Pepper Jack, and Medium Cheddar smoked for 6hrs using Maple pellets.
I divide each 5lb block into about 10 equal pieces and then place them upright on a rack in the smoker. I don't use the pellet smoker's heat or fan, just a 'smoke tube' as the cheese temperature needs to stay under 68F to keep the fat from coming out. (I didn't know this the 1st time and that cheese was smoked; but, not tasty.)
I'll wait 3 days before waxing each piece, again being careful not to over heat the cheese while dipping in hot wax (I screwed that up once too, sigh).

And orange curacao is made with orange food coloring. Like most distilled spirits, curacao is clear right out of the still.

They make other colors, too, but orange and blue are the ones you can find in every corner liquor store.

But the herb crust doesn't need the Parmesan...I think it is a bit strong. I will just use nuts and parsley and olive oil and maybe some fresh thyme...

The NJ ones I knew only kept kosher on the holidays.
The VA ones keep kosher ALL the time.
It is a change.

Then again, VA Catholics are way more observant than NJ Catholics, so it's probably more a NE vs SE thing...

It does good though...and I bet it is WAY better without the cheese...

40 Dinner tonight is Aldi's fresh salmon filet baked and then served with Trader Joe's vegan tzatziki (one of the very few vegan sauces that rivals the original - my kids love it and I made it to Trader Joe's this week, so we got a restock).

With salmon are homemade double blueberry muffins, an Aldi's salad bag with extra green leaf lettuce, and bluberries/clementines/pineapple.

I had a 3 hour college walking day for the 2nd...so energy was lower for this planning.

Also saw that even in NoVA, you make the event big enough, and allergy accommodation goes out the window. When you list allergen ingredients on all your prepped lunch boxes BUT the allergy safe one, and when your menu board doesn't match your box labels, which don't match the interior of your boxes...yeah, someone in catering dropped the ball.

Funny enough, 2 weeks ago, at a smaller event, they rocked accommodation. So, it really does get harder as you get more folks (I was prepared, so tossed the prepped lunch except for the fruit and chips, and ate when I got home).

47 Fud thred! What a coinkydink! Seeing as I just ate a while ago. Deep-fried calamari at the Riverfront Bar in Florence, AZ. They were yummy. With Bloody Mary's to wash 'em down.

And just got done squeezing all the lemons, grapefruit, and oranges in the house into a glass, and pouring the juice into a half-full bottle of unsweetened tea from WalMart, and topping off with a little water. Resulting beverage is very refreshing.

Grill to 450 with a skillet that I have had for 40 years.

Wood chips in aluminum pan and beer in another.

Steak with salt at room temp about 4 hours.

Down about 8 to 12 minutes.

Flip and then down 2 mins.

Rest at least 10 MINUTES

71 Broccolini soup. Brown sausage and sweat diced onions. Add chopped garlic. Add carrots navy beans diced potatoes for five minutes. Add chicken stock to simmer. Add broccolini then chopped spinach. Season how you like but I like Italian seasoning. Serve with grated Parmesan and some nice bread.

That's what I get believing without research.
The NY strip can be either bone in or boneless
The KC strip is with the bone.
One place said they are both from the loin; but, one is from the top and one is from the bottom.
Oh well. I like them so I'll keep eating them.

Have to be really careful if Toma is a soft cheese, the Monterey Jack is almost too soft to smoke. I do it anyway because it tastes so good. The Pepper Jack is much harder than the Monterey even though they are both Monterey Jack.

Kid had opened a manwich can and used 1/2 of it. So, I took the manwich sauce, 2 TB of harissa sauce, and a can of diced tomatoes into a pan with carmelized onions, bell peppers, spinach and garlic and dropped a dozen eggs in. Served it on toast for a poor man's shakshuka. Kids loved it.

Central Market in Austin used to have two mixtures called "Fruits de Mer." One was random ends of fish and the other was random bits of seafood. A combination of the two made an awesome cioppino.
Well, of course, the food police in Austin nuked those two very intelligent uses of stuff that would otherwise be thrown away.

Oh wait, we're answering questions from the content? Oops.

If we are, my trick has always been don't over-serve. Make as many dishes as you eat with a normal dinner plus 1-2. That's it. So, if you are normally meat+2 sides, make 4-5 things for a meal. If you are meat + 3 sides, make 5-6 things. No way will you need to make more, and by concentrating on what you really want, you can make things great.

This also helps for accommodating a lot of eater needs. Have a vegan top 9 allergy safe dish in your pocket as the 2nd extra - pumpkin black bean chili for Thanksgiving, quinoa with spring vegetables for Easter/Passover, etc, etc...something everyone would eat b/c it's normal, but will have proteins for a main dish...

And for dessert, keep a lemon or strawberry sorbet with some matching fresh fruit in your back pocket for those same folks and older folks who just don't want much after dinner. Easy, peasy, happiness.

There are great steaks available in a lot of places. I didn't find the run-of-the-mill strip steaks in KC any better than I can get in Ohio, but it was just fine. There are, of course, many great restaurants of many kinds in Kansas City. We usually go there once a year basically just to eat.

Best steaks I've ever had were in Sidney Neb. and Emporia Kansas. Beef in the west of England is quite respectable despite what you may have heard.

Saw a letter from a new local NGO asking for a donation from my employer: a free food bank that gives them culturally correct handouts.
Because apparently free American food isn't enough.
No, they come to our country, get free housing, healthcare, public education, but -- no assimilation, they get to keep their native language and now, food.

I am not insensitive to wanting your own cuisine, really. It's comforting, makes life easier/predictable, etc.. I just don't know why it becomes someone else's job to provide it to invaders for free. Why not create a program to feed them in their home country, skip the whole trip to America to then recreate their homeland's lifestyle top to bottom on our dime?!

I just checked recipes and I'll be smoking it tomorrow at 200F for somewhere around 3hrs (actual time unknown as I'll pull it when internal temp is 125F and then wrap it in tin foil and let it sit for 25-30 mins).
Then I'll reverse sear and serve with potatoes, onions, carrots, and celery sous vide to 190F for 2hr.

I'm (obviously) not Duncanthrax, but it's commonly called "The Blue Ghost".

MUCH harder to see in the brush, than you might imagine. Incredibly stealthy for an animal so large.

And bring plenty of rifle. .30-'06 with 180 gr. Nosler Partition or Hornady Bonded would be a good starting point. .300 Win Mag would not be "too much gun." And, be accurate. They're a TOUGH animal to put down.

My endorsement. I've enjoyed those steaks on the 7-Bar Ranch in Hebbronville, TX. DEEE LICS IOUS!

169 Rufus, I just use garlic powder on the outside of my room temp steak. Cook the first side until.you have a nice crust, about 6 minutes, depending on heat source. Turn. Don't hesitate to cut into it after about 4 minutes on the second side to gage what you want for doneness. You will soon learn the timing.

In a past home I had three baby owls in the big tree in the backyard - so cute! The ones I'm familiar with are real hunts. You drive out a ways, then either drive around hoping to spot some, or glass from a high point. There's usually some stalking involved, and 200-300 yd shots are not uncommon. They're well-camouflaged, have good eye sight, and are pretty wily. They learn quickly what a jeep driving around means. You're not guaranteed a 'successful' hunt. I'm meat hunting, so I go for a cow. The guides are pretty good at knowing what they're looking for, which helps.

They are tough. I've missed a .338 Win Mag I used to have, and have seriously considered getting a .375 H&H or a 9.3x62 if I go after another.

242 We went to VDH's favorite restaurant, Sal's in Selma, on Friday at noon. Cloudy day, sooo crowded, sooo noisy. But the crowd was happy.

Definitely a working class restaurant. Mister's favorite area restaurant too. In a residential area off the 99 freeway.

Sal's Fancy Burrito, full sized (Chile Con Carne) recommended if you're really hungry. Better than the half-sized. If you plan on leftovers, get the Chile Con Carne from the Comidas Especiales section, with rice and beans on the side, or the James' Special. The burrito loses something on the ride home.

Chile Con Queso is in the appetizers, too.

I have a nice recipe for roasted eggplant, fried tofu, garlic, ginger, soy, sugar, garlic chili paste, and I'm probably forgetting something. Very tasty, especially with some ramen. I make it a lot during Lent.
