And So Is Beef...Don't Think I Am Getting Soft!![]() One of the maddening, irritating and frankly stupid conceits of our modern society is the tendency of the urban elites to wax poetic about food's elevated status in our lives. Eating a proper (read: leftist, post-modern bullsh*t) diet will connect us to the real, essential world and allow us to understand ourselves and our place in nature. And to be fair, that could be a carnivore diet, or Michal Pollan's omnivorous diet, or some lunatic bee pollen and lamb testicles diet. The fact remains that while food is obviously important, and we should probably eat a varied diet to help maximize our health; it is at its most basic, just fuel. Eat a diet that will keep you from getting too fat and keep you from getting too thin, with enough of the essential nutrients that we need, and you're done! Trying to elevate it to be some ridiculous talisman or, even worse, a marker of one's position in society is offensive. I know a few people who don't give a rat's ass what they eat as long as they are fueled up for the day. Hey! Good for them! It saves time at the supermarket and probably saves them money. But, it's none of my business. Our society has become so wealthy that we have the leisure time and the excess capital to agonize over which side of the farm your pasture-raised lamb came from, or whether your buffalo mozzarella has ever seen any GMO feed. or worse, criticize others for their choices. Carnivore, Vegan, Vegetarian, Pescatarian...who cares? As long as you don't preach to me that I am making the wrong food choices and your particular food church has the one true answer, I don't particularly care what you eat. Just don't try to make me eat the bugs or the fake meat! [Unless it's maple syrup on French Toast, in which case we will have a problem] Pat LaFrieda is a meat juggernaut, with both brilliant marketing and a very good product. Obviously there are dozens of meat purveyors who can supply glorious stuff to restaurants, but he seems to have captured the branded high-end beef market. There are lots of places that proudly advertise "Pat LaFrieda Beef!" Ah...traditional foods. I love 'em. Well, at least most of them. Or some of them. That's potato kugel, which is a traditional Eastern European Jewish dish, and because it doesn't have flour and doesn't rise, a perfect food for Passover. Perfectly boring too. I have rarely had good ones. But that doesn't mean that potatoes and onions and eggs is a bad start. On the contrary, all I require is a good recipe, and all will be right and good and tasty at the Dildo Seder. ![]() ![]() ![]() ![]() Well, I had some asparagus and it was pretty good, so..., and Flap Meat...whatever the hell that is...just send it, Broccolini that isn't $6/bunch, garlic...lots of garlic!, well-marbled hanger steaks and elk chops to: cbd dot aoshq at gmail dot com. Who are those poor deluded souls who shake their Manhattans? These are the same people who drink fine bourbon with coke, and probably shake red wine with ice too. However, I will give dispensation to those who use maple syrup on Brussels Sprouts! I tried that and it worked nicely. I still prefer Agave, but still... And yes, I used to demand fancy bourbon, but let's face it, $1,200 for a bottle of bourbon is just stupid, insulting, and a ghastly affront to most people's palates and wallets. I think the sweet spot is $40-$60 for excellent and interesting bottles, and bumping that to $100 gets you an incremental improvement in quality, but nothing mind-blowing. More than that and I think you are paying for hype and rarity, which may look good in your liquor cabinet, but doesn't translate to more quality in the bottle. Comments(Jump to bottom of comments)1

I should have also mentioned my kids were in the mood for Red Baron pizza (1st sale in 6-8 months at my Safeway as I shopped today - we can only have pizza on days I shop b/c my freezer can't fit 3 pizzas plus extra food). So the kids and spouse are having pizza. I'm having leftovers of my St Pat's Day egg pie (made yesterday - everything was green, except the bacon, that I added - spinach, parsley, basil, leeks and wild garlic with nutritional yeast, salt, pepper, and real bacon bits). To go with, I bought more cheap cabbage b/c it's cheap. Since I roasted it yesterday, today it's a coleslaw, but a German based one with apple cider vinegar, Dijon mustard, raw honey, olive oil, and s&p. And then we'll have raspberries. "Free Range" chickens just means that they don't live in a 12" wire cube their whole life.
Unless the range is large enough that they chickens get unlimited bugs etc. you won't see much between any store bought eggs. That said, any backyard chickens will give better eggs. For St Pat's day, my kid made a scratch vanilla matcha log cake with a coconut matcha icing and cranberry spread (acid to cut matcha). I haven't tried it yet (it's not dessert yet), but the spouse did. He loved it, and said my kid put JUST enough sugar in...but only barely. And it's St Pat's green.
Yup, this kid is the one going to school next year to start her path to be a registered dietician. We talk all the time that food can't just be nutritionally and allergy perfect - it also has to be food people will eat and not just toss in the garbage. She's been getting much better on that point. A good fish to try is steelhead trout.
I got some the other day and steamed it with garlic and lemon juice and olive oil and some herbs and it was fantastic. Yes it's trout. But it's a relative of salmon. So the flesh is pink. But it's less strongly flavored than salmon. Also, the skin is more finely scaled. It's an excellent alternative to more common fish. (I'm making fish stew for the final Lenten supper of this year. I like red snapper and NZ snapped. Parrot fish was good, too. The wife made a garlic, onion scotch bonnet vinegar sauce that was the only reason to have fish.

PS - We got a lb of organic matcha thanks to Amazon and another person in NoVa. Apparently, delivery drivers can't read and delivered me something that was supposed to be delivered 20 minutes away from me. Since it was delivered, Amazon didn't want it back (I guess it's liability on what I could have done with the package) and told me to keep it. It was a fascinating box (and of course, my oldest has now decided she loves matcha tea, so I guess I have a birthday/holiday gift idea)...

Red Snapper is my favorite fish.
Our maids (that's right, commoner, we had maids, my dad was the Naval Attache) back in Mexico City would make a whole red snapper that would make you cry it was so good. My mom learned how to make it from them, and I learned from her. I also sampled shrimp literally just pulled from the ocean and steamed on a boat in Veracruz. Man, that was eating. I finally did my cold quinoa dish b/c it was 78 Friday and it was a huge success. I did not make a tabbouleh exactly, and I did not make the norm chickpea and quinoa. Instead, for a full bag of GF quinoa, I added a 10oz Cherubs tomatoes (quartered and deseeded), a lb of persian cucumbers (deseeded and diced small), 1 1/2 red bell peppers (diced small), 1/2 bag of green onions diced, 10 sprigs of parsley, and 1/2 oz of basil...and then 3-2-1 olive oil, lemon juice and red wine vinegar with salt and pepper. The measurement is Rachel Ray-esque, but I'd say it was about 6TB oil vs acid. So light and fresh and asked to be brought back next year. It was a home run. Our game group met last night, so we did St. Patricks day then. It was at my place, so I did marinated pork loin (in a crockpot), gravy from the juices and marinade, rosemary soda bread, and Irish mashed potato pie. The latter is something I discovered in a ca. 1877 cook book from a baking powder company. It does not contain baking powder. (If I used their recipe for pie crust, it would have.)

Tipperary Cocktail 1½ ounces Irish Whiskey 1 ounce sweet vermouth ½ ounce green Chartreuse ½ ounce chilled water 2 dashes orange bitters ½ teaspoon cane sugar syrup Orange twist, for garnish Mix, shake with ice, strain, drink! My wife is one of those people who can't stand the smell of fish, or any seafood for that matter. So I have to get creative with it. But, she's slowly chilling out to the periodic fish fry, baked, or broiled fish, shrimp, scallops, whatever. But, if the weather cooperates my go-to method is grilling.

Halibut for me. It’s unfortunately obscenely expensive, but at least it’s a thick cut of fish with a nice mouthfeel. So if, say, 10 oz of snapper is filling for you, then probably 8 oz of halibut would be.
I love walleye but I almost never see it in the northeast. Tonight? Nice fat lobster tails. Steamed. Saw some sexy 10 oz tails at Costco for $25 a pound. Bought a dozen of them. Halibut is one of my favorites but the price has gotten outrageous. At least here in the DMV. The one thing I miss about MA was the ability to get just about any fish for a reasonable price. The worst is lobster. A lobster roll here runs close to $30 for 6 Oz . At over $20/lb, I can't make it much cheaper by buying one.

Oh and just so my Irish ancestors (I’m part Irish but not a lot) don’t send angry transsexual leprechauns after me for having lobster on St Paddy’s, let it be known that we did St Paddy’s dinner yesterday. It was traditional: piles of corned beef, cabbage, potatoes, Guinness, Irish whiskey, lots of boisterous vulgarity, and overall too much food and booze was consumed.

51 Halibut is one of my favorites but the price has gotten outrageous. At least here in the DMV. The one thing I miss about MA was the ability to get just about any fish for a reasonable price. The worst is lobster. A lobster roll here runs close to $30 for 6 Oz . At over $20/lb, I can't make it much cheaper by buying one.

One of the fish dishes we make here is to take catfish fillets, large gulf shrimp, and scallops, put a drift of fajita seasoning for a base and Zatarain’s Cajun seasoning for flavor. I get a grill basket ripping hot over a charcoal fire, and sear them with some melted butter.
It’s important that the catfish is thin. If you use a thick cut, it will swell from the internal moisture and be wet. Ideally, the catfish quick-fries and dries a bit in the heat and the shrimp and scallops are just marked. Serve with orange rice (white rice cooked with some mandarin orange juice and mandarin orange sections and orange zest stirred in hot) and roasted asparagus. If you don't know how to make biscuits, watch and do this. youtube.com/watch?v=cyMRX2N-C8c Her name is Brenda Gantt and she makes biscuits in an almost failsafe/foolproof way. If you don't have a biscuit recipe or can't get consistent biscuits, you do now. I bet it won't take you more than two batches until you have it perfect, and that will mostly be seeing if you need to cook them for 10 minutes or 12 minutes because your oven isn't exactly 500 degrees. I'm sure I'm eating much less seafood since moving to California. Other than salmon or halibut, it's a virtual food desert out here. Growing up in New Jersey, our summer menu included clams, crabs, mackerel, bluefish, fluke, weakfish, and striped bass. I can't even find farm-raised catfish out here anymore, something that was in my weekly rotation because it was cheap, and easy to prepare. I think it got pushed out by tilapia, which is just ok on the grill, and tasteless prepared any other way...

On St. Patrick’s day, we make Alton Brown’s shred head, butter and bread cabbage. My wife never ate cooked cabbage until she tried this. It even reheats very well.
Shred the cabbage and quick-cook it in a LOT of water. Melt butter and brown some bread crumbs. Drain the cabbage in a salad spinner and stir it and some spices into the browned bread crumbs. Good stuff. One of the problems cooking cabbage is it releases some nasty chemical compounds that distort the flavor. I appreciate the offer Ben Had, but I am looking at variations on sourdoughs, I like rye in spite of the low gluten so it doesn't rise, and I adore buckwheat for fast batters. I used to make an oat loaf that I could never get right that I want to work on that. I am really not in favor of low gluten flours because they are a pain to get to rise.
My current loaf is one where I grind a cup of hard wheat berries and use that for the basis of my "sponge" to let it ferment for a day, and then use that as the starter using standard flour, it is a nice moist loaf with a good flavor, and I can eat half a loaf in a day if I don't stop myself Posted by: Kindltot at March 17, 2024 05:07 PM (D7oie) 92

I fished alot in FL.
The marina in Lighthouse point had a cleaning table and Captain Mike of Fish City Pride would cleay your catch on site for a couple dollar tip. We caught King Mackerel. Spanish Mackerel, red, mangrove and mutton snapper. FL sinks wrecks off shore for fish habitat and the boat captains have the coordinates. "Gentleman drop your lines were in 80 feet of water". While my corned beef slowly braised in a 300 degree oven, I chopped up half a head of cabbage and sautéed it with a diced onion in bacon fat and a bit of oil. When we used to go to the Gulf Coast for vacation I'd make sure every single dinner was at a place that served good seafood. It was hard to find a bad joint, but some were just glorified fish fry places.

Im a nut and sometimes in a supermarket I think to myself ' How mush damn tuna is there in the world'? I mean for my whold life no matter what market or location we can by tuna fish. meh is that normal' Also sometimes I get emberrassed and grateful at all the food choices we have. When I see the line at the deli and people are sooo particular about the cold cuts and how they slice it. Gimme a break... Especially here at the Jersey Shore being invaded by New Yorkers.. the most selfish IMO

Made with the right fish they are very good. There's a place in Islamorada called Lorelei's that makes them with mahi, grouper, shrimp or snapper and they are all fantastic. Same here. My fishing buddy recently sold his business and moved pretty much full time to Marathon. We can leave his dock down there and be in the stream in less than a half hour if the sea is flat but you almost don't even have to go. We catch all sorts of pelagic fish just a few miles offshore. Dolphin/Dorado/Mahi Mahi and (wild)Brook Trout have two big things in common...
Both are by far and away the most BEAUTIFUL fish in their respective habitats, and that magical appearance fades verrrrry quickly, neither looks that good in a fish shoppe, nor even an hour after being caught. Second...Both are also the best tasting fish from their respective habitats, but again, what is magical in the 1st hour or three of being caught quickly fades, to "Still pretty good" but NOT anywhere near the flavor of "Immediacy". I have a LOT of experience with both, and NEVER order trout anymore, will only eat it fresh caught. I will still order Mahi when at a restaurant that gets "Fresh never Frozen" fish flown in,but I always ask about WHEN exactly it was flown in.. I cannot eat any reef fish any more...too many years of living aboard boats in tropical waters, fishing and spearfishing for most meals...ended up with Ciguatera poisoning, a accretion of neurotoxins from corals into the several layers of food chain that feeds upon them. No treatment, no cure...just HAVE to avoid anything that also contains it to keep the results from becoming permanent. So I am very careful about what fish I order, and am at risk if anyone markets fish under false names.
I CAN eat pelagic, open water, oceanic fish...like Mahi, but grouper can be a risk, as can any toothed predator fish. I don't particularly like swordfish, or "Large Tuna", smaller ones are good. mahi is simple to make. Hot cast iron with avacado oil. sear both sides. Finish with fresh lime.
